생강 엑기스의 국산화 및 산업화를 위한 연구

  • 양질의 국산 생강엑기스 제조기술 개발을 위한 본 연구결과를 요약하면 다음과 같다. 1) 본 연구에서 시료로 사용한 생강은 전라북도 봉동산과 충청남도 서산산이며, 이들 건강은 수분이 약$10\%$, 회분 $8\~9\%$, 조지방 $4\~5\%$이다. 2) 생강엑기스의 유효성분들은 건강입자에 내포되어 있는 상태에서 추출 속도는 반응층을 통한 확산모델로 설명된다. 침출 효율을 개선하기위해서는 다음과 같은 조건이 필수적이다. 3) 건강의 입자는 $10\~20{\mu}m$정도의 전분입자가 될수록 많이 노출되도록 160목을 통과하는 작은 입자로 분쇄하면 추출효율은 최대화 할 수 있다. - 추출온도는 엑기스의 주요성분의 손실이 무시되는 최대온도, $40^{\circ}C$가 최적이다. - 160목, $40^{\circ}C$에서 추출시간 3-4시간이 최적이다. - 이같은 조건에서의 엑기스 회수율은 약 $8\%$이다. 4) 엑기스내의 비자극성 성분은 회분 $0.5\~0.8\%$, 조지방 $1.2\~1.8\%$, 조단백 $2.8\~3.5\%$이고, 유리당은 거의 침출되지 않는다. 엑기스내의 주요 지방산은 Linoleic acid가 가장 많이 함유되어 있다. 5) 기계건조보다 일광건조에 의한 건강에서 추출된 엑기스의 품질이 양호하며, 외국산 고급 엑기스와 품질면에서 대등한 것이다. 6) 위와 같은 결과는 TLC로 분리하고 분리된 각 Spot를 HPLS로 분석, IR, NMR, LC/MS를 사용하여 주요성분을 확인 및 정량화하였다. 이로부터 엑기스내의 주요성분은 gingerol이 약 0.38, Shogaol이 약 0.027, 그리고 Paradol이 0.03의 농도분율을 가지고 있음을 알았다. 7) 기계건조 건강으로부터 얻은 엑기스는 상온 $\~100^{\circ}C$ 범위에서 휘발 및 열분해에 의한 무게감량이 양건강에 비해 약 2.7배나 높다. 그러므로 생강엑기스를 사용하여 제조되는 생강차 제조시 열풍건조($60^{\circ}C$, 30분)는 품질에 지대한 영향을 미친다는 것을 발견하였다. 8) 생강엑기스 제조는 건강 재배방법 저장기간과 방법, 건조방법이 건강특성을 좌우한다. 9) 본 연구에서 제시된 열분석(DSC와 TGA)방법을 도입한다면 신속하고 경제적으로 생강 엑기스 품질을 평가하는 데에 큰 기여가 있을 것으로 생각된다. 10) 양호한 생강차를 만들 수 있다고 선정된 엑기스는 수입 엑기스와 함께 양건강의 제품이다.

Quality and Volatile-Flavor Compound Characteristics of Hypsizigus marmoreus (느티만가닥 버섯의 품질 및 휘발성 향기 성분 특성)

  • Hypsizigus marmoreus is a wild mushroom commonly consumed in South Korea due to its beneficial effects on health. In the present study, the general chemical and inorganic-element composition, the total amino acid contents, and the volatile-flavor compounds of H. marmoreus were investigated for food uses. The proximate compositions consisted of 60.1% carbohydrate, 32.0% crude protein, 8.98% moisture, 5.0% ash, and 2.0% crude lipid. The minerals in H. marmoreus were found to be as follows; potassium (429.5 mg), phosphorus (101.9 mg), sodium (20.3 mg), magnesium (54.86 mg), calcium (2.7 mg), zinc (0.8 mg), iron (0.7 mg), manganese (0.2 mg), and copper (0.1 mg), based on 100 g of mushroom dry weight. Seventeen kinds of total amino acids were found in H. marmoreus, with the glutamine acid content being the highest (2,340 mg/100 g), followed by the asparagine, serine, arginine, and leucine contents. The volatile-flavor components of H. marmoreus were collected via simultaneous steam distillation extraction (SDE), and were analyzed via gas chromatography-massspectrophotometry (GC-MS). A total of 17 volatile-flavor compounds were identified, including eight aldehydes, seven alcohols, one acids, and one other compounds. The most abundant compound was 2,3,6-trimethy1 pyridine, which accounted for more than 40% of the total volatiles; other important compounds were 1-octen-3-o1, buty1hydroxytoluene (BHT), isoocty1 phthalate, 3-octanal, 1-undecanol, and 2-amylfuran. These results provide preliminary data for the development of H. marmoreus as an edible food material.

Frozen Storage Stability of the Frozen Seasoned Anchovy Meat Products (멸치를 이용한 식품가공용 중간소재의 동결저장안정성)

  • In present paper, we investigated the quality stability of frozen seasoned anchovy meat products during storage at $-25\;{\pm}\;2^{\circ}C$. The pH and VBN contents of the products revealed a tendency to increase slightly during frozen storage 150 days. Viable cell counts and histamine contents of products are $0.8-2.6\;{\times}\;10^5/g,\;70.6-76.7 mg/100g$, respectively. In changes of fatty acid composition, percentage of polyenes such as eicosapentaenoic docosahexaenoic acid slightly decreased, while that of saturates and monoenes increased during frozen storage, The results of changes in POV, TBA values, color values, drips and salt extractable nitrogen contents during frozen storage showed that lipid oxidation and freeze denaturation of products could be retarded, and flavor could be enhanced by adding 0.2% sodium erythorbate and 12.8% emulsion curd.

Effects of Supplemental Vegetable Oils on Ruminal Characteristics, Digestibility and Formation of Fatty Acid Soaps in Sheep (식물성유 첨가가 면양의 반추의 발효특성과 소화율 및 지방산염 형성에 미치는 영향)

  • This experiment were conducted to determine the formation of fatty acid soaps, digestibility and ruminal characteristics when vegetable oils were added. Three Corriedale${\times}$ 3 Latin square design. Sheep were fed one of three diets consisting of alfalfa hay and concentrates in a ratio of 70:30. Dietary treatments were 1) no oil, 2) 7% soybean oil and 3) 7% corn oil. At the end of each experimental period, rumen contents from each sheep were collected before feeding and at 1, 3, 6 and 9h after feeding. pH decreased up to the 3 hour after feeding and increased until the end of the collection(p<0.0001). Whereas the concentration of $NH_3$-N showed inverse changes to pH(p<0.0001). Type of oil did not affect the molar concentration of total VFA, acetate, propionate and butyrate. Acetic/propionic acid (A/P) ratio decreased with increasing time(P<0.0001), but the ratio at the end of the experiment became similar to the initial value. No effects were found in the digestibility of dry matter, total-N, crude fiber, ash, NFE, NDF and ADF. The formation of fatty acid soaps(FAS) increased after feeding than 1 hour before feeding(P<0.05) and increased in 7% oils than no oil addition(P<0.05). Long chain fatty acids formed mainly FAS. ince the formation of FAS might decrease negative effects on ruminal haracteristics and total tract digestibility.

  • In present paper, we investigated the quality stability of sardine burgers during storage at $-20{\pm}2^{\circ}C$. During frozen storage of sardine burger, the PH were decreased, while volatile basic nitrogen contents were increased. The results of changes in peroxide values, thiobarbituric acid values, fatty acid compositions and color values during frozen storage showed that lipid oxidation and discolorization of antioxidant treated sardine burger and vacuum packed sardine burger could be effectively retarded. The changes in the taste compounds such as free amino acid, nucleotide and their related compounds, total creatinine, betaine and trimethylamine oxide, total amino acids and texture profile analysis of vacuum packed sardine burger were negligible during frozen storage. From the results of sensory evaluation and chemical experiments, the vacuum packed sardine burger could be preserved in good quality during frozen storage of 90 days.

  • Characteristics of hydrogen production from various food wastes in anaerobic batch reactors were evaluated to assess the energy potential of organic wastes. Organic wastes which were used in this study were scallion as vegetable, apple as fruit, rice as grain and pork as meat. Ultimate hydrogen yield of scallion, apple, rice and pork were 0.46, 0.47, 0.62 and $0.05mol\;H_2/mol\;hexose$, respectively. On the other hand, hydrogen production rates of scallion, apple, rice and pork were 0.013, 0.021, 0.014 and $0.005mol\;H_2/mol\;hexose/h$, respectively. These results indicated that anaerobic hydrogen fermentation from food waste except for meat was effective in removing organic material as well as producing renewable energy. Volatile fatty acids increased as hydraulic retention time was increased. In the hydrogen fermentation, acidification degree of rice was measured as the highest rate of 75.8% whereas pork was found as the lowest rate of 35.2%.

  • In order to obtain basic data on the effective utilization of cockle shell, food compositions and lipid components its the raw, cooked meat and cooked meat extracts were analyzed. Cooked meat($95^{\circ}C$, 15 sec 3kg/200l water) showed a slight lower content in moisture and total crude lipid then raw meat but those meat had more crude protein and ash then raw one. Non-polar lipid of the raw, cooked meat and its extract consist of $25.4\%,\;22.4\%\;and\;48.7\%$, of total lipid, while polar lipid, $74.6\%,\;77.6\%\;and\;51.3\%$ respectively. Non-polar lipid was mainly was consisted of triglyceride, free fatty acid, and polar lipid mainly was consisted of phosphatidyl choline, phosphatidyl ethanolamine. The major fatty acids of total lipid and fractionated lipid were 20:5(n-3), 22:6(n-3), 16:0 and 18:0 in the raw, cooked meat and cooked meat extracts and showed higher contents in polyenes such as 20:5(n-3), 22:6(n-3).

Changes of Physicochemical Properties of Gamma Irradiated Porks during Storage (감마선 조사된 돈육의 저장중 이화학적 성질 변화)

  • The changes in physicochemical properties of gamma irradiated porks were investigated during storage at different temperature and periods. TBA values increased according to the increment of irradiation dose levels. TBA values of nonirradiated and irradiated samples drastically increased with storage period and temperatures at both $5^{\circ}C\;and\;-20^{\circ}C$. The acid value of porks stored at $5^{\circ}C$ was increased rapidly with the elapse of storage period in both nonirradiated and irradiated samples. However, the value decreased with increasing irradiation dose levels. VBN values increased more rapidly in nonirradiated samples than in irradiated samples with the storage period. Especially, VBN value of nonirradiated pork was four times higher than that of 3 kGy-irradiated one. No significant differences in the composition of fatty acids were observed in gamma irradiated samples. Free amino acids were changed with storage periods, but were not significantly affected by gamma irradiation.

Changes in the Contents of Non-Volatile Organic Acids, Fatty Acids and Poly phenolic Compounds during Air-Curing in Burley Tobacco (버어리엽 건조과정에서 비휘발성 유기산, 지방산 및 폴리페놀화합물의 함량변화)

  • This study was carried out to investigate the changes in composition of the non-volatile organic acid, fatty acid and polyphenolic compounds during air-curing in burley tobacco leaves, and the effect of curing methods on the contents in air-cured leaves. The air-cured variety, (Nicotiana tabacum cv KB108) was normally grown at the Chonju tobacco experiment station in 1998. Plants designated for the each curing methods were harvested on the same date, and the ripe leaves for primed curing were harvested at the tenth leaf position from the top on the stalk. The major compounds of non-volatile organic acid and fatty acid were malic, citric, oxalic, palmitic, and linolenic acid. The concentrations of malic acid, unsaturated fatty acids, chlorogenic acid and rutin in cured leaves were remarkably decreased during curing, while citric acid was increased. The changes of these compounds showed the similar pattern during both primed and stalk curing. In connection with curing methods, the contents of malic, linoleic and linolenic acid were higher in excessive cured leaves than those in primed cured or stalk cured leaves, while the content of citric acid was lower in excessive cured leaves than that in primed cured or stalk cured leaves.

  • Field experiment was conducted to investigate the effects of stalk position, compound fertilizer application rate (N-P2O5-K2O : 10-10-20 : 75, 100, 125kg/03), paddy and upland soil and varieties, NC82 &KF103, on nonvolatile organic and higher fatty acids of flue-cured tobacco. Followed by stalk position, malic, citric, malonic and succinic acid contents were significantly increased with higher stalk position, but oleic and linoleic acid contents were decreased with higher stalk position. The higher application rate of compound fertilizer results in increasing citric, malic, malonic and succinic acid contents, but the contents of higher fatty acids were not significantly influenced by fertilizer application rate. The cured leaf cultivated in paddy soil was higher citric and malic acid contents than in upland soil, but the contents of higher fatty acids have no difference between paddy and upland soil. The variety of KF103 was higher citric and linoleic acid contents than that of NC82, but the contents of higher fatty acids have no difference between varieties.
