A Study on the Flavor Constituents of the Citron (Citrus junos) (유자의 향미성분에 관한 연구)

  • To accept basic data of utilizing of citron (Citrus junos) as a raw material of industrial produce, major chemical components of citron were investigated. Weight ration of poet flesh md seed of citron were 44.7, 42.9 and 12.4%, respectively. Comparing proximate composition of peel and flesh of citron, peel showed higher in crude protein crude fat and crude ash than flesh but lower in moisture, carbohydrate and soluble solid. The major free sugars of citron were fructose, glucose and sucrose. Peel contained higher in sucrose than flesh, but lower in fructose and glucose. The content of K md P were 309 and 15.9 mg% in peel and 175 and 22.4 mg% in fresh, respectively. The main organic acids of citron were citrate, malate and oxalate. Total organic acid content of flesh (6.6%) was higher than that of peel (4.6%). Total amino acid content of peel and flesh were 671.9 and 315.7 mg%, respectively. Free amino acid content of peel and flesh were 324.3 and 280.7 mg%, respectively, and the major ones were proline, serine, glutamic acid, aspartic acid, and histidine. Total 49 volatile compounds were detected and 26 of these ones were identified in cion. The major volatile component of citron was limonene, which consists of 80% among the total volatiles in peel by all extract methods.

A Preliminary Study on the Potential Source of Cadmium in the Boseong-Jangheung Mine District (전남 보성-장흥 광화대의 잠정적 카드뮴원에 대한 예비연구)

  • Cadmium occurs as a minor element in sphalerite ((Zn, Fe)S) from the Boseong-Jangheung gold-silver mine district. We analyzed the abundance of cadmium in sphalerite using an electron probe micro analyzer (EPMA) and discussed the natural sources of cadmium in terms of bedrock geochemistry, in order to preliminarily reconnoiter the potential cadmium contamination in mine districts. Cadmium contents of sphalerites from the Au-Ag mines (Bodeok, Mundeok, Jeonbo, Boknae, Keumsan) in the Boseong-Jangheung district are considerably high, compared with cadmium contents of sphalerites (average = 0.5 wt.% Cd, maximum = 4.4 wt.% Cd) in the world. Sphalerites from the Keumsan mine (average = 9.49 wt.% Cd, maximum=11.22 wt. Cd) are highly enriched in cadmium. Our data suggest that the Boseong-Jangheung area is an important potential site of cadmium contamination in Korea. Based on bedrock geochemistry, natural causes of cadmium enrichment in sphalerite from the mine district are thought to be the mixing of cadmium leached from organic-rich, metasedimentary rocks (including coal) and/or black shales. From this study, we propose that the pinpointing of potential sites of pollution by toxic heavy metals can be done effectively through detailed reconnaisance study on mineralogical compositions of ore minerals such as sphalerite from the mine area.

Studies on the Estimation of Growth Pattern of Meat in the Edible Parts of Broilers in Growing Stages (육용계에 있어서 성장단계에 따른 부위별 가식육의 증가양상 추정에 관한 연구)

  • A study was conducted to investigate the possibility of improving the effectiveness of the existing method(s) to estimate the edible meat weight in live broiler chicken. Four. breeds of chicken, white Cornish broiler chicks(parent stock), Single Comb White Leghorn(SCWL) egg strain chicks (parent stock), and two reciprocal cross breds of these parent stocks were employed in this study. A total of 480 birds, 60 male and 60 female chicks for each breed, were used. Ten male and 10 female chicks from each breed were randomly sacrificed at 0, 2, 4, 6, 8 and 10 weeks of ages in order to measure the body weight, edible meat weight of breast and 1eg(thigh and drum-stick), various components of body weight and various body shape measurements. In addition, chemical analyses of edible meat were carried out. Results obtained from this sturd were summarized as follows. 1. The average body weights of White Cornish broiler chicks and SCWL egg strain chicks were 1.82${\pm}$0.048kg(X${\pm}$S.E.) and 0.67${\pm}$0.029 kg. respectively, at 8 weeks of age. The feed to gain ratio for White Cornish and SCWL chicks were 2.24 and 3.28, respectively, for 0 to 8 weeks of age. The reciprocal cross bred chicks (White Cornish ${\times}$ SCWL) showed intermediate values in both parameters.

Optimal Condition of Torrefaction for the High-density Solid Fuel of Larch (Larix kaempferi) (낙엽송(Larix kaempferi) 고밀도 에너지화를 위한 반탄화 최적조건 탐색)

  • In this study, torrefaction was performed to improve fuel properties of Larch. The optimal condition for torrefaction was investigated by response surface methodology. The torrefaction temperature and time ranged $220{\sim}280^{\circ}C$ and 20~80 min, respectively. As the torrefaction temperature and time increased, the carbon content of torrefied biomass increased from 49.36 to 56.65%, while its hydrogen and oxygen contents decreased from 5.56 to 5.48% and from 37.62 to 31.67%, respectively. The weight loss and calorific value increased with SF, while energy yield decreased. At the severe torrefaction condition (SF 7), the weight loss and calorific value were 26.58% and 22.30 MJ/kg, respectively. The energy contained in torrefied biomass increased to 20.41%, when compared with the untreated biomass. As the torrefaction severity increased, the energy yield decreased due to the relatively high weight loss of biomass. Therefore, the highest energy yield was obtained at high calorific value and low weight loss of biomass (SF 5.72).

  • This study characterized groundwater quality and the influence of agrochemicals in a part of Ilgwang-Myeon agricultural area in Gijang-Gun, Busan Metropolitan City, using factor analyses. From the 1st, 2nd, and 3rd analyses of groundwater samples, the mean concentrations of $Ca^{2+}$, $Na^+$, $Mg^{2+}$, $K^+$, $Zn^{2+}$, $Cu^{2+}$, $Fe^{2+}$, $Al^{3+}$, $NO_3\;^-$, $Cl^-$, $SO_4\;^{2-}$, $F^-$, and $SiO_2$ were higher in the 2nd analysis than the other analyses. Pesticide carbofuran and herbicide alachlor were detected at the wells more than a half of all the wells in the 2nd analysis but not in the 4th analysis. This fact may be explained by that a higher precipitation induced higher infiltration rate of contaminants into groundwater during the 2nd survey. According to R- and Q-mode factor analyses, and chemical composition, inorganic constituents excepting $SiO_2$, $HC0_3\;^-$-, and $F^-$ may be influenced by anthropogenic sources (manures, synthetic fertilizers, and domestic wastes), seawater as well as water-mineral interaction. A typical indicator of groundwater contamination, nitrate, exceeds around 4-5 times over the Korean standard for drinking water. Additionally, the influence of seawater diminishes from the seaside to inland.

Manufactures of Functional Materials by Using Xylan from Agricultural & Forest Residues(I) - The Isolation and Purification of Xylan - (농산 및 임산폐자원의 xylan을 이용한 기능성 물질 생산(I) - Xylan의 단리 및 정제 -)

  • This study was carried out to find the optimal isolation conditions of xylan from steam-exploded materials, such as rice straw(Oryza sativa), barley straw(Hordeum vulgare) and oak wood(Quercus mongolica), In the chemical composition, we found that the contents of water-extractives and ash of rice straw and barley straw were more than those of oak wood. Rice straw, barley straw and oak wood were steam-exploded at 20kgf/$cm^2$ for 3 minutes or 6 minutes. The content of lignin in three different steam-exploded materials was higher than that of non-treated materials. The crude xylan was extracted with hot water and 0.5% KOH solution from steam-exploded materials. In the sugar type of crude xylan extracted with hot water and 0.5% KOH solution, the oligomer content of crude xylan extracted with hot water was much more than that of crude xylan extracted with 0.5% KOH solution. The crude xylan was purified with 5% barium hydroxide Solution and ethanol precipitation procedure. The content of xylose of purified xylan was over 85%, but other sugar residues(arabinose, mannose, galactose and glucose) were not removed completely.

  • Cortex Phellodendri (CP) is derived from the dried bark of Phellodendron amurense. It has been widely used as a drug in traditional Korea medicine for treating diarrhea, jaundice, swelling pains in the knees and feet, urinary tract infections, and infections of the body surface. Many analytical methods have been used to study oriental herbal medicines, such as thin-layer chromatography, column liquid chromatography, and high performance liquid chromatography (HPLC). In this study, preparative centrifugal partition chromatography (CPC) was successfully carried out in order to separate pure compounds from a CP methanol extract. The optimum two-phase CPC solvent system was composed of n-butanol: acetic acid: water (4:1:5 v/v/v). The flow rate of the mobile phase was 3 mL/min in ascending mode with rotation at 1,000 rpm. The CPC-separated fraction and purification procedures were carried out by preparatory HPLC. The $^1H$ NMR spectrum revealed that the resonances at ${\delta}$ 4.10 and 4.20 ppm corresponded to three protons ($-OCH_3$), whereas those at ${\delta}$ 6.10 ppm corresponded to two protons ($-OCH_2O-$). Further, two aromatic protons (H-11 and H-12) conveys a doublet-doublet pattern. The H-11 doublet and H-12 doublet appear at ${\delta}$ 7.98 and 8.11, respectively. The $^{13}C$ NMR. spectrum showed a tetrasubstituted with a methylenedioxy group at C2 and C3, and two methoxy groups at C9 and C10. The chemical structure of the berberine was identified by $^1H$, $^{13}C$-nuclear magnetic resonance and electrospray ionization-mass spectroscopy spectral data analysis.

A Study on the Adsorptive Removal of Heavy Metals Using Inflated Vermiculites (팽창질석을 이용한 중금속 흡착제거에 관한 연구)

  • The main objective of this study was to examine the removal of heavy metals from water by inflated vermiculites. The component of vermiculites was analyzed by XRF, and the concentration of metal ion was measured by ICP-AES. Serial batch kinetic tests and batch sorption tests were conducted to determine the removal characteristics for heavy metals in aqueous solutions. As a result, solution pH values of tests with the inflated vermiculites generally increased and then stabilized. Equilibrium pHs were generally established within 5 hrs. In addition, removal rates of inflated vermiculites were tested at the initial concentration of 3 mg/L. As a result, at equilibrium concentration, except for chromium (36.23%), Most of the heavy metals were effectively removed (96.08~98.54%). Finally, sorption data were correlated with both Langmuir and Freundlich isotherms. The Qmax obtained from Langmuir isotherm were determined to Pb $725.4mg\;kg^{-1}$, Cd $568.8mg\;kg^{-1}$, Zn $540.2mg\;kg^{-1}$, Cu $457.2mg\;kg^{-1}$ Cr $0.9mg\;kg^{-1}$ respectively. The results of the study indicate that inflated vermiculites can be properly used as an adsorbent for various heavy metals because of its outstanding removal rate.

Physicochemical Properties and Palatability of Loin from Crossbred Jeju Black Pigs (제주도 개량 흑돼지 고기의 이화학적 및 관능적 품질 특성)

  • The physicochemical properties and sensory characteristics of loins from crossbred Jeju black pigs from 4 different farms (Jl, J2, J3 and J4) were investigated. The approximate composition of loins were as follows; moisture 73.26∼74.75%, crude protein 22.78∼23.85%, crude fat 0.85∼1.81% and ash 1.23∼1.35%. The unsaturated fatty acid (60.21∼62.33%), pH (5.57∼5.70), water holding capacity (64.22∼69.40%), cooking loss (28.27∼30.45%), Hunter's L* (53.02∼55.64), a* (8.71∼9.87) and b* value (6.95∼7.29) of loins were not significantly different along the 4 samples (p>0.05). The crude fat contents and total amino acid (21.29%) of loin from farm J2 were higher than those from the others, and the hardness and chewiness were lower compared to those from farm Jl (p<0.05). The loin from farm J2 had a good score in sensory characteristics with regard to the taste (5.22), aroma (4.80), tenderness (5.30), juiciness (5.09) and palatability (5.33) of loins evaluated by the 7-point hedonic scale.

Comparative Studies on the Aroma and Taste Components of Korean and Imported Kiwifruits (한국산 및 수입 양다래의 향미성분의 비교)

  • This study was carried out to investigate the differences of aroma and taste components among three kinds of kiwifruits from Korea, New Zealand and California. The moisture contents, pH, titratable acidity, organic acid, free sugar and volatile aromas were compared. The free sugar and organic acid were measured simultaneously by GC. Volatile aromas were extracted by simultaneous distillation and extraction and analyzed by GC and GC/MS. The moisture contents, pH and titratable acidity showed almost no differences among the three samples. Among the organic acids, malic acid contents were different. Citric acid contents were similar level. Quinic acid in Korean kiwifruits was extremely low compared to other samples. The total sugar contents were similar in three kiwifruit groups. The composition of major flavor components such as ethyl butanoate, hexanal, propyl butanoate, ethyl pentanoate, 2-hexenal, hexanol, hexanal, linalool oxide, methyl benzoate were different among Korean, New Zealand and California Kiwifruits.
