  • Pollution caused by fecal solids released from recirculating aquaculture systems (RAS) is a growing global concern requiring immediate attention. Thus, this study investigated the physicochemical characteristics of fecal solid feed from RASs used for eel and rainbow trout farming. The concentrations of proteins, lipids, crude ash, and moisture in eel fecal solids were 10.9%, 1.2%, 85.8%, and 72.2%, respectively, while those in rainbow trout fecal solid feed were 20.5%, 3.2%, 70.9%, and 87.0%, respectively. The control group was fed a mixture of sea cucumber and dried sea mud. The protein digestibilities of eel and rainbow trout fecal solids were 25.43% and 23.96%, respectively, while the respective lipid digestibilities were 35.62% and 36.80%, respectively.

The Factors for the Formation of Carcinogenic N-Nitrosamine from Dried Marine Food Products (수산 건제품중 발암성 N-NITROSAMINE의 생성 요인)

  • A total of 31 commercial dried marine food products, consisting of 14 fishes, 2 shellfishes and 2 seaweeds species were analyzed for their contents of precusors of N-nitrosamine such as dimethylamine(DMA), trimethylamine(TMA), trimethylamine oxide (TMAO), betaine and nitrate and nitrite nitrogen as factors of N-nitrosamine formation. Carcinogenic N-nitrosamines were extracted by a steam distillation apparatus and were analyzed for their components using a gas chromatography-thermal energy analyzer. N-nitrosodimethylamine(NDMA) was confirmed by a gas chromatography-mass spectrometry. The contents of betaine nitrogen in samples were in the range of $5.2{\sim}373.8mg\%$ and were significantly higher than tertiary amines such as TMA and TMAO. DMA nitrogen in those samples was in the range of trace-31.2ppm and was high, in the dried shark(31.2ppm), alaska pollack($22.9{\sim}24.3ppm$) and octopus($17.9{\sim}18.4ppm$). In dried laver and sea mustard, however, amines were not detected at all. The levels of nitrate nitrogen in the dried marine samples ranged from zero to 16.8ppm and were high in the dried stingray(16.8ppm), alaska pollack(16.3ppm) and squid($2.2{\sim}12.4ppm$), but were less than 1.0 ppm in other samples. The levels of nitrite nitrogen were lower than those of nitrate nitrogen and it was not detected in dried sea cucumber, laver and sea mustard. Twenty eight of 31 samples contained NDMA($range=1.2{\sim}86.0ppb$), which was the only volatile N-nitroso compound found. The NDMA levels of dried stingray($2.8{\sim}86.0ppb$), alaska pollack($8.2{\sim}55.5ppb$), squid($3.3{\sim}53.2ppb$), yellow corvenia($45.9ppb$) and plain dried shrimp($15.4{\sim}17.9ppb$) were high. However, it was not detected in dried sea cucumber, laver and sea mustard. Samples, containing high levels of NDMA, also contained high nitrate and nitrite nitrogen. From above results, it can be concluded that nitrate and nitrite were major factors for the formation of NDMA in dried marine food products.

Changes of Proteolytic Activity and Amino Acid Composition of the Tissue Extract from Sea Cucumber Entrails during Fermentation with Salt (해삼내장(內臟)젓갈 숙성중(熟成中) 단백질분해효소(蛋白質分解酵素)의 활성(活性)과 아미노산(酸) 조성(組成)의 변화(變化))

  • This study was undertaken to ascertain food and nutritional evaluating data on the processing of fermented sea cucumber (Stichopus japonicus) entrails. In the experiment, the crude proteolytic enzyme from the entrails tissue of raw and fermented sea cucumber during the days of ripening was extracted. The optimal activity condition for the crude enzyme and the compositional changes of amino acid of the protein and free amino acid in the raw and fermented sample were also investigated. 1. Less than three kinds of proteolytic enzymes that each enzyme has optimal activity condition at pH 3.1 $50^{\circ}C$(A-enzyme), pH 5.7 $50^{\circ}C$(B-enzyme) and pH 7.7 $45^{\circ}C$(C-enzyme), respectively were believed to be exist in the entrails tissue of sea cucumber. 2. A-enzyme and C-enzyme were strongly inhibited with the increase of the salt concentration, and B-enzyme was activated at the 1% salt concentration and was inhibited above the 5% salt concentration. 3. The result of the effect of several salt ions on the proteolytic activity showed that A-enzyme was slightly inhibited in the presence of all salt ions added, B-enzyme was activated in the presence of the all salt ions except $Cu^{2+}$ and C-enzyme was activated in the presence of $Ca^{2+}$ and $Mn^{2+}$, and inhibited by $Cu^{2+}$, $Co^{2+}$ and $Mg^{2+}$. 4. When the effects of the ripening days on the proteolytic activity of the crude enzymes were analysed, the activity of the A-enzyme was slightly weakened with the lapse of the fermentation days, whereas the B-enzyme was not influenced by the fermentation days. 5. In the analysis of amino acid composition of the protein of the samples, the 8 days fermented sea cucumber entrails showed the diminution of all kinds of amino acid. Apparently diminished amino acids were arginine, alanine, glutamic acid, glycine, serine, valine, threonine and lysine etc., and methionine, histidine and isoleucine were slightly decreased. 6. In the analysis of free amino acid composition of the 8 days fermented sample, glutamic acid, aspartic acid, leucine and lysine were rich, while histidine, methionine, proline and tyrosine were poor. The most of free amino acids were increased during the fermentation procedure and especially in lysine, histidine, threonine, glutamic acid, methionine, valine and leucine.

  • Spatio-temporal distribution patterns of the major dominant species were assessed from bimonthly monitoring of macrotidal flat in Cheokjeon, Incheon, Korea between September 1990 and July 1992. Overall, macrofauna comprised a total of 111 species, 25,491 inds.136 ㎡. The result of Le Bris index, dominance ranking of the lead-ing species showed that the top 15 species accounting for 74.8% (19,072 inds.) of total density. In Cheokjeon tidal flat, some species were especially habitat-restricted such as genus Nephtys (Annelids; Polychaetes) and Mac-rophthalmus (Crustaceans; Decapods). Based on the density data, the five dominant species were the polychaetes Het-eromastus filiformis, the bivalves Mactra veneriformis and Solen strictus, the brachyurans Macrophthalmus japonicus, the holothuriodeans Protankyra bidentata. The results of one-way ANOVA, mean value of H. filiformis and M. ven-eriformis did not show significant changes with tidal elevation and sediment composition (p>0.05). But, other species (S. strictus, M. japonicus and P. bidentata) showed significant variations (p<0.001). In conclusion, these indicate significant spatial fluctuation with tidal elevation and sediment characteristics in some species.

Analysis of Catch and Effort by Diving women in Tonggui-ri, Cheju-do (제주도 동귀 어촌계의 잠수노력량 및 어획량분석)

  • Using the eight-year-working diaries($1984{\sim}1991$) of the fishing co-operative in Tonggui-ri, Cheju-do, as well as the records of consignment sale in the fish trust market as the corporate body in Aewol-up, the results have been analyzed as follows. 1. The monthly catch of Turbo cornutus was high from September through December, representing $58.2\%$ of the annual total catches. The maximum sustained yield(MSY) of this stock was estimated to be 2.5 tons. 2. The maximum sustained yields of Haliotis spp. and Sulculus sp. were estimated to be 800kg and 750kg, respectively. 3. The maximum sustained yields of Stichopus sp. and Octopus sp. were 500kg and 2, 500kg, respectively. 4. The total yield of Hizikia fusiforme has been decreasing a little and that of Gelidium sp. has been increasing. The total yield of Gelidium sp. in 1984 was about 5 times greater than that in 1990. 5. The daily catchability by divers have been high at thirties, and the individual mean working day of divers was 101 per year. 6. The consignment sale rates were $100\%$ each for Turbo cornutus, Hiziki fusiforme and Gelidium sp., $25.5\%$ and $61.1\%$ for Haliotis sp. and Stichopus sp. respectively, and $0\%$ each for Sulculus sp. and Octopus sp.

Observation of External Injury and Morphological Movement for Analysis of Recovery Possibility after Storage of the Juvenile Sea Cucumber, Apostichopus japonicus (돌기해삼(Apostichopus japonicus)의 보관 후 회복 가능성 파악을 위한 외상 및 형태학적 변화의 관찰)

  • The observed external injury, movement and survival rate according to storage and recovery of the juvenile sea cucumber, Apostichopus japonicus(wet weight $1.0{\pm}0.2g$). The investigated application possibility of external injury(grade I~IV) and movement variation(buccal tentacle, motion, obversion, movement) for estimate of survival rate. The survival rate was observed through the recovery after storage of the sea cucumber in various water temperature(10, 15, 20, $25^{\circ}C$) and hours(3, 6, 12, 24 hour). Grade of external injury lower in the 24 hour experiment group of $20^{\circ}C$ water temperature and 12 hour experiment group of $25^{\circ}C$ water temperature. Buccal tentacle and movement strong related survival rate and external injury. In the case of $20^{\circ}C$ water temperature, survival rate was observed decrease 24 hours experiment. $25^{\circ}C$ water temperature was high to 6 hours but 12 hours experiment group observed decrease of the survival rate. The lethal time(LT10) of the juvenile sea cucumber was 15.73 hours($20^{\circ}C$) and 5.57 hours($25^{\circ}C$). The results of this study provided various measurement method of survival rate according to transportation of the juvenile sea cucumber for release.

Effects of Dietary Protein and Lipid Levels on Growth and Body Composition of Juvenile Sea Cucumber Stichopus japonicus (배합사료의 단백질 및 지질 함량이 어린 돌기해삼 Stichopus japonicus의 성장 및 체조성에 미치는 영향)

  • We investigated the proper dietary protein and lipid levels for growth and body composition of juvenile sea cucumber Stichopus japonicus. Three replicate groups of the sea cucumber(average weight of 1.1 g) were fed the experimental diets containing different levels of protein(10, 20, 30 and 40%) and lipid(3, 7 and 11%) for 10 weeks. At the end of the feeding trial, survival of each group was over 87%, and there was no significant difference among the groups. Weight gain and specific growth rate(SGR) of sea cucumber were significantly affected by dietary protein(P<0.005) and lipid levels(P<0.001). The highest weight gain and SGR were observed when sea cucumber fed the diet containing 30% protein with 3% lipid(P<0.05). Weight gain and SGR of the sea cucumber fed the diet containing 3% lipid were higher than the other groups at the same protein level except for 40% protein group(P<0.05). Protein content of the sea cucumber fed the diet containing 30% protein with 3% lipid was significantly (P<0.05) higher than those fed 20% protein diets with 7% or 11% lipids and 10% protein diet with 7% lipid. Moisture, lipid and ash contents of the whole body were not significantly different among the groups. Fatty acid compositions such as linoleic acid, EPA(20:5n-3) and DHA(22:6n-3) of the whole body were affected by those of dietary lipid sources. The results of this study indicate that the diet containing 30% protein and 3% lipid is optimal for growth of juvenile sea cucumber.

Literature Review on the Jeonuhwa in the Royal Cuisine of Joseon Dynasty (조선왕조 궁중음식(宮中飮食) 중 전유화(煎油花)의 문헌적 고찰)

  • This article examined the different types of Jeonuhwa as recorded in 16 royal palace studies from the Joseon dynasty (1392-1909). The ingredients used in Jeonuhwa during the Joseon dynasty were categorized as follows: 16.0% for gray mullet(秀魚) and fish(生鮮), 14.2% each for liver and cow stomach, 12.3% for sea cucumber(海蔘), 4.7% each for crab(蟹), clam(生蛤), and chunyup(千葉), 3.9% each for pork meat(豬肉), octopus, 2.8% each for oyster(石花), pheasant(生雉), and chicken(鷄), 2.0% each for croaker(民魚), and brain (骨), 0.9% each for duck(鴨子), pigeon(山鳩), dobi(都飛), snapper, white fish(白魚), mussel(紅蛤), haeran(蟹卵), quail(鶉鳥), egg(鷄卵), and sesame(實荏子). This observation may be associated with commercial industrial development that prevailed during the late Joseon dynasty. Further studies will be conducted on recipes and ingredients recorded in Euigwe in order to develop a standardized recipe for Jeonuhwa.

Fauna of Echinoderms from Jindo Island and Its Adjacent Waters, Korea (진도 해역의 극피동물상)

  • The joint faunal survey of Jindo Island, Korea was performed by the Korean Society of Systematic Zoology during June 29-July 1, 2004 in commemoration of the 20th anniversary. In this study, 20 echinoderm species of 13 families, ten orders in four classes such as one crinoid species, seven asteroid species of four families in three orders, five ophiuroid species of three families in two orders, four echinoid species of two families in one order, and three holothuroid species of three families in three orders collected from six localities (Bealpo, Chopyung, Supum, Hoedong, Seomang, and $34^{\circ}11'N\;and\;126^{\circ}21'E)$ were identified. Of these, one crinoid (Antedon serrata), two asteroids (Solaster dawsoni and Distolasterias nipon) and one pohiudoid (Astrodendrum sagaminum) are newly added to the echinoderm fauna of Jindo Island and one holothudoid (Pseudocnus sp.) is newly recorded in Korean waters. The total 31 species are presently listed with some brief remarks and their distribution patterns are discussed based on the composition of geographical distribution forms.
