  • 본 연구의 한계는 설문대상이 주로 대학생들로 나타나 표본선정에 있어 고루 분포되지 못한 직업군 등으로 연구결과의 대표성에 문제가 제기된다. 또한, 이용자들이 피자 배달 전문점에 어떠한 이미지를 가지고 있는지에 관한 부분들이 결여되어 있다. 따라서, 향후 연구 과제에 대한 제안으로 인구통계적 특성이나 라이프스타일에 따른 보다 구체적인 피자 배달 전문점의 서비스 품질 등을 가미한 연구가 필요할 것이며, 이용자들의 피자 배달 전문점의 서비스품질에 대한 정확한 지각을 측정하기 위해서는 지각된 품질을 구성하는 보다 심층적인 연구가 필요한 것으로 사료된다. 향후 과제로 이러한 부족한 점들을 보완한 연구가 요구되어진다고 사료된다.

Estimating Effects of Attributes on Choice of Pizza Restaurants by Purchase Frequency (구매빈도별 피자전문점 선택에 미치는 속성의 영향 평가)

  • The purpose of this study is to measure the pizza purchasing behavioral characteristics of respondents and importances of factors affecting pizza purchase, to estimate the effects of attributes on choice of pizza restaurant, and to predict probability of selecting a particular pizza restaurant. The questionnaire consisted of two parts: The paired experimental profiles, purchasing behavior and importances of factors affecting pizza purchase. This study generated profiles of 16 hypothetical pizza restaurants based on seven attributes. The profiles comprised 16 discrete sets of variables, each of which had two levels. For this study, researcher randomly selected 150 university students as respondents. Twenty one students did not complete the survey instrument, resulting in a final sample size of 129. All estimations were carried out using frequencies, $X^2$, independent samples t-test, phreg procedure of SAS package. The results were as followed: Some purchasing behavioral characteristics and importances of factors affecting pizza purchase were significantly different by purchase frequency. Based on the estimated models developed for the two purchase frequency groups, the Chi-square statistics were significant at p<0.001. The parameter estimate for late delivery time with frequently purchase frequency group was highest, and the parameter estimate for price with frequently purchase frequency group was highest. The pizza restaurants that charged 20,000 won, offered 100% discount on eleventh pizza, promised to deliver pizza in 20 min, usually delivered the pizza as promised, offered 2 or more types of pizza crust, delivered steaming hot pizza, and did not offer a money-back guarantee which was favored by each of the two purchase frequency groups. The results from this study suggested that there was an opportunity to increase market share and profit by improving operations so that customers can receive discount and money-back guarantee simultaneously, and by reducing price, delivery time.

Application of HACCP System on Establishing Hygienic Standards in Pizza Specialty Restaurant - Focused on Salad Items - (HACCP제도를 활용한 피자 전문 패스트푸드 업체의 자체 위생관리기준 설정 - 샐러드를 중심으로 -)

  • The study was conducted to establish hygienic standards of salad items for pizza restaurant located in Seoul by applying HACCP system during the summer of 2000. The study measured temperature, time, pH, Aw and microbial assessments. The hygienic conditions of the kitchen and workers were on the average(1.21, 1.0 out of 3 pts.), but some improvement should be made: separate use of trash can and leftover disposal, separate use of knives and cutting boards, habits for hand washing and wearing hygienic gloves. For salad production, all procedures were peformed under food safety danger zone ($5{\~}60^{\circ}C$). The ingredients were mostly above pH 5.0 and high in Aw($0.94{\~}0.99$). Microbial assessments for salad production revealed that TPC($1.8{\times}10^3{\~}1.0{\times}10^{10}CFU/g$) and coliforms($1.5{\times}10{\~}5.2{\times}10^5 CFU/g$) exceeded the standards by Solberg et al.(TPC: $10^6CFU/g$, coliforms: $10^3CFU/g$). S. aureus was not detected but Salmonella was found in three food items(egg, macaroni and macaroni salad). Moreover, the workers' hands contained 3.1 104 CFU/g of TPC and 4.2 102 CFU/g of S. aureus requiring further remedy since it exceeded the safety standards suggested by Harrigan and McCance (500 CFU/g of TPC per $100cm^2$ and 10 CFU/g of coliforms per $100cm^2$). According to the critical control point(CCP) decision tree analysis, vegetable receiving, vegetable holding, mixing, display on coleslaw, macaroni draining, display on macaroni salad, egg peeling & cutting, apple cutting, and display on salad bar were determined as CCPs. From the findings it would be suggested that purchase of Quality materials, short holding and display time, storing food at right temperature, using sanitary cooking utensils, and improvement of workers' food handing practices are needed to ensure the safe salad production in this specific pizza restaurant.

The results were as followed Based on the estimated model, the -2LL(B) statistic for a model with all explanatory variables was 5585.761 and the Chi-square statistic is 134.786 with 7 df (p<0.001). At p<0.001, we would reject the null hypothesis that the attributes do not influence choice. The parameter estimate for price was highest, followed by late delivery time, promised delivery time, money-back guarantee, discount, pizza variety, and pizza temperature. The result from this study suggested that there was an opportunity to increase market share and profit by improving operations so that customers receive discount and money-back guarantee simultaneously, and by reducing price, delivery time.

University students' eating behavior and consumer attitude in social commerce service (소셜커머스 이용 대학생의 외식 행동 및 태도 분석)

  • Purpose: The purposes of this study were to investigate eating behavior of university students through social commerce and to analyze factors affecting university students' attitude regarding social commerce. Methods: Questionnaires were distributed to 445 university students in Changwon, Korea from March 28 to April 28, 2013. A total of 339 questionnaires were used for the final analysis, which excluded improperly-completed questionnaires. Results: The major factor considered for eating behavior through social commerce was price (37.2%). Purchasing experiences of foodservice products according to types of foodservice were 64.9% for coffee shop, 59.3% for fast food restaurant, 53.4% for family restaurant, 46.0% for specialty restaurant, 35.7% for pizza restaurant, 35.4% for buffet, and 31.9% for bakery. Factors affecting satisfaction with social commerce for purchasing foodservice products were 'service quality of foodservice company', 'communication of social commerce', and 'discount rate of social commerce'. Factors affecting repurchasing intention of foodservice products through social commerce were 'service quality of foodservice company', 'site design of social commerce', and 'discount rate of social commerce'. Conclusion: In order to increase satisfaction with social commerce, 'service quality of foodservice company', 'communication of social commerce', and 'discount rate of social commerce' should be increased. And, to increase repurchasing intention of social commerce, 'service quality of foodservice company', 'site design of social commerce', and 'discount rate of social commerce' should be increased. In addition, two factors 'service quality of foodservice' and 'discount rate of social commerce' were found to have an effect on satisfaction and repurchasing intention of social commerce. For development of social commerce and foodservice industry, cooperative relationship between social commerce and foodservice industry is needed, and a reasonable price strategy should be established. The university students considered price as a major factor of eating behaviors and did not consider menu and taste as a major factor. From a longer perspective, such an eating behavior would have an effect on university students' dietary life and it would cause nutrition and health problems for university students. Thus, it implied that further studies from the perspectives of nutrition and health regarding eating behavior through social commerce service should be conducted.

A Survey on Breakfast of Commuting Local College Students and Suggestions for Desirable Breakfast Menu (통학 지방대학생의 아침식사 섭취실태와 바람직한 아침식단에 대한 제안)

  • This study was to investigate regularity of breakfast and food habits of commuting local college students. The regularly breakfast eating rate was found to be 32.9% in man and 26.5% in woman. The mean score of food habits was pretty low, 36.7 out of minimum possible score 12 and maximum 60. The mean score of nutrition attitude was 58.1 out of minimum possible score 18 and maximum 90. This survey showed that skipping breakfast or irregularity of breakfast led to overeating, high fat diet, lot of alcohol and imbalanced diet. It was known that breakfast was the most important among three meals. But having balanced breakfast daily was very difficult according to loss of appetite and busy schedule early in the morning. I suggested carbohydrate food, protein food, and vitamin & mineral food items desirable for nutritionally balanced, easily digestible, tasteful, quick and easily cooking breakfast menu. It was recommended to choose on item out of each of three food categories considering calory(1/3 of daily recommended calory intake for breakfast).
