Significance and Method for a More Balanced Development of the Restaurant Franchise Business - Focused on Performance-Sharing Examples Between Franchisor and Franchisee - (프랜차이즈 산업 균형발전의 의미와 방안 -외식 프랜차이즈 가맹본부와 가맹점 성과의 공유사례를 중심으로-)

  • The purpose of this study is to review the theories and cases of performance sharing in the franchise industry to present a method for more effective franchise performance-sharing. To that end, this study reviewed the theory on resource dependence and the theory on inequality to describe the performance-sharing between the franchisor and the franchisee and their relationship. It also looked at the cases of a week-in cooler system at 'Beer Market', the allocation of fees for alcoholic beverage sales to franchisees, the scholarship program of 'Onigiri and Ikyudon' and 'Bonsamo' which is a franchisees' committee for Bonjuk to introduce examples of performance-sharing. Through a theoretical review and case review, this study presents five types of methods for performance-sharing. First, 'the sharing of core competence by the franchise company; second, 'the establishment of a royalty culture'; third, 'scientific analysis of markets and establishment of a revenue forecast system'; fourth, 'reinforced financial support from the franchisor'; and lastly, 'the positive application of franchisees' committees'. Such methods are expected to provide a groundwork for mutual benefit and co-prosperity between franchisor and franchisee.

  • 최근 다양한 업무형태가 등장함에 따라 특정업종이나 기업을 대상으로 기업간 비즈니스에 대란 정보시스템 구현 및 업무 프로세스 리엔지니어링을 통한 혁신을 지원해 줄 수 있는 체계의 도입 및 구현에 대한 요구가 증가하고 있다. 기업이 해당 업무의 정보시스템 구현과 업무의 경쟁력 강화를 뒷받침하기 위해서는 현행 업무프로세스에 대한 표준화가 중요란 사항이나, 현재 기업간 업무에 대해서는 이를 뒷받침 해줄 수 있는 프로세스 및 데이터의 분류와 분석을 위한 통합화, 표준화 작업이 부족한 상태이며, 이를 기반으로 이루어지는 업종별 핵심 기능 프로세스에 대란 표준화와 개발 분야도 미비한 실정이다. 특히 보편적으로 기업간 업무가 많이 발생하는 유통 분야의 경우 이러한 업종내 업무프로세스의 표준을 체계화 하는 필요성이 크게 대두되고 있다. 최근 매우 활성화 되고있는 프랜차이즈 산업의 경우 프랜차이즈 비즈니스의 특성상 경영효율을 높이기 위해 본사의 관리 통제 하에 운영되고 있으며, 상품도 본사에 의해 통일적, 정형적으로 기획되는 둥 프랜차이즈 비즈니스 특유의 경영 특질을 갖고 있다. 그러나 업무에 대란 표준화가 되어 있지 않은 상태에서 프랜차이즈를 운영한다면 본사차원에서는 오히려 인원과 경비만 늘어 프랜차이즈의 가장 큰 장점인 다점화의 장점이 없어지게 되고, 프랜차이즈 사업을 하고자하는 가맹점 입장에서도 프로세스의 차이와 비표준에서 오는 혼란인 많아 이를 쉽고, 체계적으로 접근 딸 수 잇는 표준 프로세스 작업의 필요성이 높다고 할 수 있다. 본 논문에서는 보편적으로 기업간 업무가 많이 발생하는 유통 분야의 프랜차이즈 산업을 대상으로 기업정보시스템 구현 및 경쟁력 강화를 뒷받침하기 위해서, 기업간 프로세스 협업(collaboration) 부분의 데이터 및 서식, 이를 취급하는 기능과 프로세스에 대란 분석을 통해 업무 프로세스 모델링 방법론과 관련한 모델링 지침 및 메타모델을 이용한 표준 업무 프로세스 모델을 개발하여 기업간 업무 프로세스 표준화에 대한 체계적인 관리에 대한 방안을 연구하고자 한다.

  • 프랜차이즈 사업에 있어서 지역 정보 관리 시스템은 고객의 편의 제공 및 프랜차이즈의 수익 구조에 큰 영향을 준다. 프랜차이즈 사업에 있어서 중요한 점은 다양하게 존재하는 지역 정보들을 효과적으로 이용하는데 있다고 할 것이다. 현재 국내 사이트에서 구축되어 있는 지역 정보 관리 시스템은 분리된 해당 지역 정보만 제공하고 있는 실정이다. 즉, 통합된 체계의 정보 서비스가 되지 않고 있는 실정이다. 본 논문의 부 프로세스에서는 지역 사업을 하는 데 있어 필요로 하는 다양한 지역 정보를 데이터 베이스화하고 그에 따라 여러 가지 형태의 UI(User Interface)를 제공하고, 또한 상점에서 사용하는 사용자 프로그램의 개발과 상점의 특성을 파악하여 그에 맞는 컨텐츠를 제공한다. 본 논문에서는 이러한 부 프로세스의 개발의 기반 구조가 되는 관리자 시스템을 설계 및 구현한다. 즉, 지역 사업을 함에 있어 초기 데이터 구축 및 사업권 영역의 확장 및 관리라는 측면을 고려할 때 각 지역을 관리하게 될 MF(Master Franchise)와 F(Franchise)가 협력하여 현지의 현실감 있는 정보를 즉 시적으로 반영하며 구축해 나갈 수 있는 관리자 시스템을 개발한다.

  • 본 논문에서는 기존의 POS정보시스템을 이용하는 소형프랜차이즈 업체의 원가관리시스템을 개발하기 위해 표준화된 데이터모델을 개발하고, 사용하기 용이한 UI개발하는 방법론을 제안한다. 표준화된 데이터모델 개발을 통해 redundancy 없는 시스템을 개발하고 운영함으로써 개발 비용을 줄일 수 있으며, 사용하기 편리한 화면은 소형프랜차이즈 업체들의 이용성을 높일 수 있을 것이다. 가맹본사에서는 가맹점별 원가관리를 분석하여 가맹본사와 가맹점들은 투명한 점포경영이 가능하게 될 것이다.

  • Domestic franchise industry is growing rapidly as a promising business in 21st century and also ordinary people business. Domestic franchise headquarters and franchisees have increased exponentially. However, because of tough competition in the industry, headquarters' lack o fawareness of recruiting and managing franchisees, and reckless expansion strategy for the structural problem of profit structure and lack of experts, systematic management and support system are not going well. For these reasons, the need of franchisee management system is growing up in this industry. Domestic franchise industry is focused on appearance, the volume, while absence and lowness of internal management systems are making stores shut down and conflicts proving necessity of management system. In this study, we find and study the way to compensate these problems and systematize by cooperating within surance companies to manage franchisees, and eventually to be able to set up and use new systems including franchise management system, initial services, on goin gservices, lega lservices, tax services, labor services, and financial analysis and planning services.

  • The relation between franchiser and franchisee participated the franchise system was studied focused on brand for the correlation of relationship dissolution. Basically the relation among brand equity, internal brand, conflict and relationship dissolution based on brand on franchise system were investigated. The study of external factor and internal one of brand recognized by franchisee was conducted. The questionnaire was carried out for franchisee participated of national franchise system. The results showed that the brand external factor of brand transaction cost, brand equity and brand communication had influence on brand dissolution by the affection of brand identification and conflict classified as brand internal factor. In addition, brand internal reinforcement factor affected brand dissolution also. The structural causal inference between internal factor and external one was examined. Finally, the theoretical and managerial insight were suggested on the brand role for the consecutive relation as well as the limit of the study and future suggestion were included.

  • This study attempted to investigate comprehensively the impact of support and dissensus on economic satisfaction, conflict, trust, and commitment in the franchise system. Data collected from the food and beverage service industry supported all of the twelve hypotheses that were proposed. In accordance with the results, the following conclusions were made: it is very important to establish trust and commitment in a franchise system, and the core means for that would be the enhancement of the economic satisfaction of franchisees through the reinforcement of the franchiser's supports, and the effective management of conflict between a franchiser and its franchisees through dissensus settlement.

  • The objective of this research is to find out antecedents and consequences that would affect franchisee's fairness in a franchise system. The factors of antecedents include support, reward and communication, and those of consequences consist of commitment and profit. With a survey of the 120 stores of N franchise, the country's outstanding food service company, the results of structural equation model show that support and reward in its headquarters scheme had an effect on distributive fairness in franchisee's fairness sense, but did not influence procedural fairness. However, communication affected both distributive fairness and procedural fairness. On the other hand, distributive fairness and procedural fairness impacted relationship of a franchise system and commitment in variables. And only distributive fairness influenced profit.

A Study on the Cooperative of Franchise Industry : Focusing on the Case of US Dunkin' Donuts (프랜차이즈산업의 협동조합에 관한 연구 - 미국 던킨 도너츠를 중심으로 -)

  • This study intends to suggest the cooperative, win-win collaboration, as methods for settling disputes with the existing self-employed people over back-street business areas and disputes and conflicts between a franchiser and franchisees. In addition, it intends to analyze the Dunkin' Donuts purchasing cooperative in the US, where the franchising industry has been well developed; and to find the implications of cooperation strategies between Dunkin' Donuts and its franchisees that may be helpful for the South Korea's franchising industry. This study tries to discover a new model of the Korean-style franchise cooperative out of the basic principles and practice guidelines of cooperatives ranging from an early American franchise cooperative in 1955 to ARCOP, KFC, and Dunkin' Doughnuts in the late 1970s. Further, it looks into successful programs of a purchasing cooperative at Dunkin' Donuts such as TDP (Total Distribution Program), SFP (Shortening Futures Program) and DCP (Distribution Commitment Program). The case of the US Dunkin' Donuts, which operates the purchasing cooperative, suggests the following for the improvement of franchisees' profitability. First, relations of cooperation rather than of power are necessary between a franchiser and franchisees. Second, mutual solidarity of franchisees is necessary. Third, problems proper to the Korean franchise system should be improved. Fourth, an entrepreneurial spirit of going together rather than going fast is required. Fifth, complete satisfaction management is required. Considering different system environments between the two countries such as quantitative expansion within a short franchising history of 30 years or so and franchise profit models, there is a limit to generalizing down to a successful model of the win-win partnership cooperative. It is hoped that the sustainable management of the domestic franchising industry will be promoted in the future through the in-depth analysis of successful cooperatives.
