Sensory Quality Assessment of Reheated Cook/Chill and Sous-Vide Spinach Soup for Foodservice Operations (단체급식소에 적용하기 위한 cook/chill 및 sous-vide 시금치국의 재가열 방법에 따른 관능적 품질평가)

  • The purpose of this study was to compare the effect of several reheating treatments (immersing the package into hot water, heating the soup in the pot and convection ovens after taking out of the opened package. heating the soup package in microwave) on the sensory characteristics of cook-chill and sous-vide spinach soup. Sensory evaluations were made on 5 sensory attributes by a 12-member panel using quantitative descriptive analysis(QDA). The fresh cooked spinach soup had a significantly(p<0.01) higher score in color than the reheated sous-vide one. The latter, however, had a significantly(p<0.05) higher score in taste than the former. Overall acceptability of the sous-vide spinach soup was not different from that of fresh cooked one, which supports the potential of the product in foodservice operation for the efficient management of meal plan. Reheating treatments didn't show any differences in taste, flavor, color, texture, appearance and overall acceptability. Therefore, any reheating treatment nay be used for cook-chill and sous-vide spinach soup.

A Study for the stability of chopped garlic quality (다진 마늘의 품질안정을 위한 연구)

  • Preservative effects of natural preservatives, citric acid and salt on chopped garlic were investigated. Citric acid was very effective for the repression of bacteria multiplying and browning of chopped garlic in 0.5%~1% concentration. Salt had an effect on the repression of bacteria multiplying and browning color of chopped garlic except for 1% NaCl. Synergy effect between citric acid and NaCl was also very good for the decreasing of bacteria multiplying and the maintaining of Hunter color of chopped garlic. Compounded effect among the GF, CA and ascorbic acid was somewhat proper in the sensory evaluation of chopped garlic. And the sensory evaluation score was best in chopping size 3mm(diameter) of chopped garlic and viscosity 4500cp. of chopped garlic.

Quality Characteristics of Noodles Supplemented with Dried Beta vulgaris L. Root Powder (비트 건근 첨가에 따른 국수의 품질 특성)

  • This study evaluated the quality characteristics of noodles added with dried Beta vulgaris L. root powder (BV powder) in order to determine the most preferred noodle recipe. When amount of BV powder increased, both L and b color values decreased, whereas a value increased due to the red betalain pigments in BV powder. Weight, volume, and water absorption of cooked noodles decreased, whereas turbidity of soup increased. For textural properties, addition of BV powder to cooked noodles increased springiness, chewiness, and brittleness. Overall, according to the results of the sensory evaluation, noodles added with 1% BV powder were the most preferred.

  • Meat emulsions containing 0, 15, 30 and 45% of soy protein isolate(SPI), Na-caseinate(Na-CN) and their mixtures were prepared in order to determine the effect of these non-meat proteins on the physical properties and their sensory quality in emulsion type sausage. It was found that SPI was better fat stabilizer and better binder than Na-CN. The mixtures of SPI and Na-CN didn't exert any significant effect on emulsion stability. From the texture profile analysis by using Instron two-cycle compression tests, decrease in the substitution levels and increase in the ratio of SPI/Na-CN resulted in a significant increase in the textural values of hardness, adhesiveness, gumminess, chewiness. The finished products showed that the substituted product for 15 % meat protein had higher textural values than the unsubstituted product. The sensory quality evaluated for the final products showed no significant difference between the SPI substituted product for 15 % meat protein and the unsubstituted product. However, all of the substituted products for 15 % meat protein and some of those for 30 % substitution with SPI and 67 % SPI received higher scores than average.

Quality Characteristics of White Pan Bread with Chungkukjang Powder (청국장가루를 첨가한 식빵의 품질특성)

  • The quality characteristics of white pan bread prepared with chungkukjang powder were investigated. Breads were prepared with the addition of 0, 0.5, 1.0, and 1.5% of chungkukjang powder to the basic formulation. The bread volume slightly decreased from 0% to 1.5%. pH was nearly unchanged. As the added amount of chungkukjang powder increased, lightness (L-values) decreased while redness (a-values) and yellowness (b-values) increased. During storage, total viable cells of the control bread increased. In preference characteristics, the highest sensory scores for color, air cell, smell and softness were obtained when chungkukjang powder content was 0.5%. The intensity characteristics related to color and smell were the strongest with increasing chungkukjang powder. These results showed that the white pan bread with 0.5% chungkukjang powder was acceptable.

A Study of the Disaster Sign Data Analysis Technologies Based on Ontology (온톨로지 기반 재난 전조 정보 분석 기술 연구)

  • Disaster sign data is confirmed data by the experts to the collected data from web and users. In this paper, we focused to make the risk scores to the data based on ontology technology. To analyse the data, first of all, we defined the ontological structure for 4 kinds of disaster types which consists of the bridges, workplaces, buildings, and walls. Base on the ontologies, collected the accidents examples, and then extract the risk rules from the examples. The rules are adjusted with frequencies and weights, and managed to the ontology DB. The rules apply to the disaster sign data, and then calculates the risk scores. It plays role of the index to the risk rates. The disaster sign data management system was implemented and the rules were verified to the system. Because the quality of the risk scores to the disaster sign data depends on the data of the accidents examples's qualities, we assure that the system's performance will be monotonic increasing following up the data upgrades. Continuously, data management is needed. Also the quality control of the rules are needed.

Quality Characteristics and Antioxidant Activities of Sulgidduk Added with Almond Powder (아몬드 첨가 설기떡의 품질 특성 및 항산화성)

  • The purposes of this study were to evaluate the quality characteristics and antioxidant activities of Sulgidduk added with almond powder (0, 6, 12, or 15%). As the amount of almond powder increased, soluble solid content ($^{\circ}Brix$) and reducing sugar content (%) decreased, whereas pH and acidity were unchanged. The L (lightness) value in the Hunter color system of Sulgidduk added with almond powder decreased, whereas a (redness) and b (yellowness) values increased. Total phenolic content of Sulgidduk increased according to the amount of almond powder. The antioxidant activities, including 1,1-diphenyl-2-picrylhydrazyl and hydroxy radical scavenging activities, increased in Sulgidduk with almond powder compared with that of the control. It is concluded that Sulgidduk with almond powder may be of high quality with antioxidant activity. In the sensory test, Sulgidduk added with 12% almond powder showed the highest score in terms of overall preference.

A Plan for Improvement of Usability in Extreme Programming (극한 프로그래밍의 사용성 향상 방안)

  • Extreme programming is the most representative methodology among agile software development methodologies that is agile in business environment which change fast. As software industry is matured, usability of software quality characteristics is emphasized gradually, but effort to obtain usability in extreme programming is insufficient. In this paper, three things lacked in extreme programming are reinforced. First, roles of user interface expert are defined. Second, usability testing method to extreme programming are introduced. Third, development process and products are proposed. The proposed plan is validated by four methods, which analyze supporting software development life cycle, analyze satisfaction of CMM key process areas, analyze satisfaction of CMM practices, and analyze development of green tea shopping mail. Green tea shopping mall is improved 23% in the estimated running time, 21% in the learnability. Also, usability is improved 18% in the heuristic evaluation and 16% in the questionnaire method.

Quality Characteristics of White Pan Bread added with Red Wine (적포도주를 첨가한 식빵의 품질 특성)

  • This study was conducted to investigate the effect of baking on the physicochemical and sensory properties of white pan bread with red wine (RW). RW was substituted for water at four levels (0, 19, 38 and 63%). For bread crumb color, lightness decreased with increasing levels of RW, whereas redness and yellowness increased (p<0.05), in proportion to RW levels. Compared to control bread, specific volume of breads added with RW was decreased. The degree of dough raising power decreased significantly depending on the amounts of RW. The hardness of control bread was $87.35g/cm^2$ while the hardness of breads with RW ranged from 85.37 to $94.19g/cm^2$. Hardness, cohesiveness, springiness and gumminess of breads added with RW showed higher scores than the control group. In the sensory evaluation, the highest flavor and taste preference scores were observed in bread containing 38% RW, whereas the lowest score was observed in bread with 63% RW. Accordingly, the quality of bread can be improved by addition of 38% RW substituted for water.

Analysis of e-Learning Contents in Distance Teacher Training for Quality Improvement (콘텐츠 품질 향상을 위한 교원연수 이러닝 콘텐츠 분석)

  • The purpose of this study was to analyze the quality of 67 kinds of e-learning contents in an attempt to boost the effectiveness of distance teacher training. As a result of analyzing, the e-learning contents were rated highest in terms of 'training content,' followed by 'instructional design,' 'teaching & learning strategies,' 'evaluation' and 'interaction.' The scores of 'teaching & learning strategies,' 'evaluation' and 'interaction' were below 80 that was the standard of quality certification. In mean comparison(ES) of contents quality level between certified contents and non certified contents, 'instructional design' had the largest ES(effect size), followed by 'teaching & learning strategies,' 'evaluation'. In the analysis of evaluation factors, most of factors had a large effect such as 'webpage layout', 'selection of instructional design'. The findings of the study are expected to suggest what improvements should be made in the development of e-learning contents for distance teacher training.
