  • Following the Animal genetic resource for food and agriculture (AnGR) is considered as an independent resource for the possessing country, ensuring the sovereignty of AnGR is important. The present study investigated the growth and egg production performance of six breed enrolled in DAD-IS for the purpose of securing scientific data on AnGR in Korea. A total of 323 chickens (female 181, male 142) were used in this study, with the following six breeds: Korean Leghorn (LEG), Gyeongbuk Araucana (ARA), Korean native chicken (KNC), Korean Ogye (Ogye), Hyunindak (HIL), Heongseongyakdak (HYD). The body weight of male ARA from hatching to 32 weeks of age was the highest among the breeds, and LEG and Ogye were relatively lower (P<0.0001, excluded body weight data of HYD). The body weight of female ARA was the highest and HYD was significantly the lowest among the female chicken breeds (P<0.0001). The laying percentage was the highest in LEG and was the lowest in HYD among the breeds (P<0.0001). The average egg weight from 20 to 40 weeks of age was the highest in ARA, followed by LEG and was the lowest in Ogye (P<0.0001), and the adapted breed including LEG and ARA was higher than indigenous breed (P<0.05). Egg mass production was the highest in Korean Leghorn. Collectively, these results show that ARA has the best growth ability, and LEG has the best egg production performance among the used breeds. This suggests that the adapted breed with high commercial performance is important AnGR in Korea.

  • The study aimed to evaluate the antioxidative effects of rosemary (Rosmarinus officinalis L.) and clove (Syzgyium aromaticum L.) essential oils on fried Korean native thigh meat, including their impact on processed characteristics and flavor compounds. Clove essential oil showed higher DPPH scavenging activity, FRAP and total phenol content compared to rosemary essential oil (P<0.05). The treatments with the addition of 0.005% and 0.01% rosemary (0.005RB and 0.01RB) and clove (0.005CB and 0.01CB) essential oils to the batter weight compared to control that did not include essential oils in batter. The addition of rosemary and clove essential oils to fried Korean native chicken thigh meat did not significant affect proximate composition, pH, TBARS, sensory characteristics. Except for 0.005CB, treatments adding essential oils decreased cooking loss (P<0.05) and 0.005CB showed significantly higher pick-up value than control. Addition of clove essential oil in fried Korean native chicken thigh meat resulted in higher levels of arachidonic acid compared to control (P<0.05). Volatile organic compounds (VOCs) analysis showed that addition of rosemary essential oil might mask its own VOCs, while clove essential oil addition reduced some pyrazine compounds. Although addition of rosemary and clove essential oil did not have significant sensory characteristics on fried Korean native chicken thigh meat, instrumental analysis revealed changes in the compounds that influenced flavor. Further studies are required to evaluate the stability of flavor and sensory characteristics of fried Korean native chicken thigh meat with added essential oils during storage.

  • This study aimed to identify the growth performance of Korean indigenous chicken pure-line by sex and twelve strains conserved in Poultry Research Institute, National Institute of Animal Science, Rural Development Administration. The effect of sex and strain on body weight was significantly different in every period, with males being heavier in all periods than females. In the case of biweekly weight gain, the tendency to increase rapidly from birth to six weeks old, and to decrease in the period from twelve to fourteen weeks old was common across all sex and strains. Depending on sex and strain, there were significant differences in age and the number of peaks. Regardless of sex and strain, the determination coefficient and adjusted determination coefficient showed high goodness of fit (99.1~99.9%) to growth functions. However, for each model, the goodness-of-fit had variations by sex and strains. von Betalanffy function had the best fit to growth curves in all the female strains except strain D. On the other hand, Gompertz function had the best fit for all the male strains except strain C. Logistic function showed the lowest goodness-of-fit in all sex and strains. Mature weights were in the order of von bertalanffy, Gompertz, and Logistic models, while growth ratio and maturing rate followed the order of logistic, gompertz, and von bertalanffy functions. This information could be useful for Korean indigenous chicken management and designing crossbreeding tests and breeding programs.

  • In this study, the effects of feeding citrus byproducts on nutritional properties of Korean native chicken eggs were investigated. Two samples of Korean native chicken eggs were used for this study: T0 (Eggs of chickens that were not fed with citrus byproducts until they became 30 weeks old) and T1 (Eggs of chickens that were fed with 4% citrus byproducts when they were between 17 and 30 weeks old). There was nostatistically meaningful difference between T0 and T1 in terms of various properties, such as general components of egg albumen and yolk, total structural amino acid, and total free amino acid. Also, no significant difference was noticed between T0 and T1 in terms of various components of egg yolk, such as amount of mineral, vitamin, and xanthophyll, which showed that those components are not affected by citrus byproducts. However, the amount of cholesterol of egg yolk for T1 was 1,168 mg/100 g, which was significantly lower than that for T0 which was 1,207 mg/100 g (p<0.05). The amount of L-glutamic acid, one of the free amino acids, of the egg albumen was 39.22 and 58.54 ppm for T0 and T1, respectively. The results of this study show that citrus byproducts can be used for the feed for Korean native chicken by adding them to general feed.

  • To estimate the genetic characteristics within two brands of Korean native commercial chicken, we used a total of 302 genomic DNAs from two groups (Woorichicken: 152, Hanhyup3chicken: 150). Sizes of 10 microsatellite markers were decided using GeneMapper Software (v.4.0) after analyzing ABI 3130. Genetic diversity indices including expected heterozygosity (Ex H), observed heterozygosity (Ob H) and polymorphism information content (PIC). Frequencies of microsatellites markers were used to estimate heterozygosities and genetic distances. LEI0073 showed the highest value in all genetic diversity (Ex H, Ob H and PIC). On the other hand, MCW322 showed the lowest value in all genetic diversity. The calculated genetic distance of the two brand groups is 0.199 (standard genetic distance) and 0.132 (DA distance). Genetic distances of the two groups were relatively close to each other. Each individual is ramified to two brand groups in phylogenetic dendrogram.
