The Effect of Coffee Shop Selection Attributes on Revisit Intention: Focused on Mediating Effect of Brand Trust (커피 전문점 선택속성이 재방문의도에 미치는 영향: 브랜드 신뢰의 조절효과)

  • In Korea the consumption of coffee has been continuously increased last 10 years. During the period the market size and the numbers of the coffee shop also has been expanded dramatically. The purpose of this study was to examine whether the consumer's selection attributes of coffee shop affect the revisit intention of coffee shop and the brand trust had moderating effects between consumption attributes and revisit intention. Also it was analyzed whether there were statistic differences according to the demographic characteristics. For this study the survey was conducted on Seoul City and Kyeongki-do province and 600 questionnaires were distributed and 480 were collected and 470 samples were analyzed. The results of this study were as follows. All the factors of the consumer's consumption attributes of coffee shop had affected the revisit intention. And the factors of brand trust had moderating effects on revisit intention. There were statistic difference by gender for the additional services and there were also statistic difference according to the age group for the new technology environmental service of the inside of coffee shop. The implications of this study were the selection attributes of coffee shop were diverse and the brand trust were considered significant and the consumer's preferences were different according demographic characteristics such as gender, age, and incomes.

  • 오늘날 인터넷 대중화로 다양한 분야에 걸쳐 누구나 쉽게 정보 공유가 가능한 환경 속에 살고 있다. 최근 모바일 기기들의 확산으로 커피전문점 방문 할 때 정보검색의 영향력이 커짐에 따라 인터넷 후기 등이 작성되어 있는 블로그는 목적지 선택에 많은 영향을 미치고 있다. 본 연구에서는 정보검색을 포함한 기존의 커피전문점의 선택속성의 커피전문점의 만족도와의 관계를 살펴보고자 하였다. 정보검색을 통해 방문한 적이 있는 커피전문점 방문자를 대상으로 176개의 설문지를 회수 하였고, SPSS 18.0를 이용하여 분석하였다. 본 연구에서는 정보검색 일치성을 포함한 커피전문점의 기존의 선택속성들을 독립변수로 두고, 커피전문점의 추천도를 종속변수로 두어 회귀분석을 실시하였다. 분석결과, 정보검색을 통해 커피전문점 방문시 '분위기와 정보검색결과의 일치성', '일반적 선택속성', '커피의 맛', '주차 편리성' 요인이 추천에 유의한 영향을 미치는 것으로 나타났다.

Analysis of University Student' Perception of Coffee Shop Prices through Price Sensitivity Measurements (가격민감성 측정 기법을 이용한 대학생의 커피전문점 가격에 대한 인식 분석)

  • The purpose of this study was to analyze university student' perception of the price of coffee shops using price sensitivity measurements. The questionnaires were distributed to 640 university students in Changwon, Korea from March 13 to April 8, 2011. A total 571 were used for the final analysis, which excluded improperly-completed questionnaires. The results of this study were as follows. Indifference prices (IDPs) were \2,200 for on-campus coffee shops and \2,850 for off-campus coffee shops. The optimum price points (OPP) were \2,300 for on-campus coffee shops and \2,850 for off-campus coffee shops. The price stress range (PSR) was \100 (\2,200~2,300) for on-campus coffee shops and \0 (\2,850~2,850) for off-campus coffee shops. The point of marginal cheapness (PMC) was \1,100 for on-campus coffee shops and \1,500 for off-campus coffee shops, whereas the point of marginal expensiveness (PME) was \3,600 for on-campus coffee shops and \4,100 for off-campus coffee shops. The ranges of acceptable prices (RAP) were \2,500 (\1,100~3,600) for on-campus coffee shops and \2,600 (\1,500~4,100) for off-campus coffee shops. On the basis of IDP percentage, university students were more sensitive to off-campus coffee shops than on-campus coffee shops. In contrast, on the basis of PSR and RAP, university students were more sensitive to on-campus coffee shops than off-campus coffee shops. Therefore, the price increase for an americano should be recommended to be from \1,100 to \3,600 for on-campus coffee shops and from \1,500 to \4,100 for off-campus coffee shops. The manager of on-campus coffee shops should be careful when increasing the prices, and the manager of off-campus coffee shops should make it possible for customers to perceive service quality.

  • 국내 커피산업에 있어서 2020년 기준으로 개인 커피전문점 점포수는 7만 5520곳으로 전체 커피전문점 점포수의 90%를 차지하였으나, 국내 3대 대형 커피프랜차이즈(스타벅스, 투썸플레이스, 이디야)의 매출액 비중은 60%으로 대형 커피프랜차이즈의 매출비중이 매우 높다[1]. 개인 커피전문점의 경우 대형프랜차이즈에 비해 자본력과 브랜드 파워 부족으로 어려움을 겪고 있는데, 본 연구에서는 마이클포터의 Five-Forces Model을 커피산업에 적용하여 한국 커피산업 외부환경을 분석하고, VRIO 분석을 통해 개인 커피전문점 내부자원을 분석하여 개인 커피전문점의 발전을 위한 경영전략을 도출하고자 한다.

Identifying Differentiating Attributes of Local Coffee Shops in Daegu (대구 커피전문점의 시장 경쟁력 요인 도출 - 지역 자생 커피프랜차이즈 성공 요인을 중심으로 -)

  • Domestic coffee franchise market in South Korea has been rapidly growing along with developing the global coffee franchises as well as entering domestic franchise companies into the beverage market. Competitions in the markets are getting more accelerated and local franchises and owner-operated coffee shops are losing their market shares gradually as a result. Local franchises and owner-operated coffee shops in Daegu, however, are notable in that they are maintaining the competitiveness in the markets. This is a unique phenomenon, which deserves to be analyzed to identify the successful attributes as a case study. Important Performance Analysis (IPA) method has been employed for analyzing and its gap(i.e., difference between importance and performance) analysis shows that the price and quantity of coffee are the most important differentiating attributes of local and owner-operated coffee franchises in Daegu.

Importance-Performance Analysis of Quality Attributes of Coffee Shops and a Comparison of Coffee Shop Visits between Koreans and Mongolians (한국인과 몽골인의 커피전문점 품질 속성에 대한 중요도-수행도 분석 및 커피전문점 이용 현황 비교)

  • The purpose of this study was to compare the coffee shop visits of Koreans and Mongolians, and to determine the quality attributes that should be managed by Importance-Performance Analysis (IPA). The survey was conducted in Seoul and the Gyeonggi Province of Korea, and at Ulaanbaatar in Mongolia from April to May 2012. The questionnaire was distributed to 380 Koreans and 380 Mongolians, with 253 and 250 responses from the Koreans and Mongolians, respectively, used for statistical analyses. From the results, Koreans visited coffee shops more frequently than Mongolians, with both groups mainly visiting a coffee shop with friends. Koreans also spent more time in a coffee shop than Mongolians. In addition, they generally used a coffee shop, regardless of time. In terms of coffee preference, Koreans preferred Americano and Mongolians preferred Espresso. The most frequently stated purpose of Koreans for visiting a coffee shop was to rest, while Mongolians typically visited to drink coffee. The general price range respondents spent on coffee was less than 4~8 thousand won for the Koreans and 2~4 thousand won for the Mongolians. Both Koreans and Mongolians obtained information about coffee shops from recommendations. According to the IPA results of 20 quality attributes of coffee shops, the selection attributes with high importance but low satisfaction were quality, price, and kindness for Koreans, but none of the attributes was found for Mongolians.

Daegu citizens' perceptions and factors affecting behavioral intentions to reduce sugars in the coffee shop beverages (커피전문점 음료의 당류 줄이기에 대한 대구시민의 인식 및 행동의도에 영향을 미치는 요인)

  • Purpose: This study aimed to provide baseline data for establishing a sugar reduction policy at coffee shops by analyzing the factors that affect a coffee shop user's perception and behavioral intention of reducing sugar intake. Methods: An online survey was conducted involving 1,274 Daegu citizens aged 19-49 years, who had visited coffee shops within the last month. Results: When visiting a coffee shop, the purchase of sweet drinks was higher in the younger age group, and the addition of syrup or sugar was higher in the older age group. Of the total respondents, 42.1% were aware that some coffee shops accommodate reduced sugar requests, 57.9% perceived the need to reduce sugar in coffee shop beverages and 22.3% had purchased beverages intending to reduce their sugar intake. In addition, 59.7% knew about sugar nutrition labeling, and 68.8% perceived the need for nutrition labeling for sugar. When purchasing beverages, 35.6% checked the nutrition labeling, and 77.2% purchased alternative drinks when the sugar content was high. Guiding the choice of sweetness levels in coffee shop orders was seen to have the highest effectiveness and intention to reduce sugar intake. Moreover, the perceived need to reduce sugar intake had the most positive effect on the behavioral intention to reduce sugars in coffee shop beverages (β = 0.558, p < 0.001). Conclusion: Although the overall awareness and practice of reducing the sugar intake in coffee shop users were low, the behavioral intention to reduce sugars was positive, and this was most affected by the perception of the need to reduce sugars. Therefore, there is a need for differentiated education and promotion for each age group for recognizing the necessity and outlining methods for reducing sugar intake. Furthermore, coffee shops should reflect customer's sugar reduction needs.

A Study on the Attributes of Selecting Coffee Shop and Type of Coffee in Relation to the Reason for the Visit: Focused on University Students in Seoul and Gyeonggi Province (커피전문점 방문동기에 따른 커피전문점 및 커피 선택속성 연구(서울·경기지역 대학생을 중심으로))

  • The purpose of this study is to examine the differences of selecting coffee shop and type of coffee according to the reason for the visit. The proposed model was empirically tested by using survey data collected from 209 university students in Seoul and Gyeonggi Province. SPSS has been used to preform this analysis. The study found six reasons for visiting Coffee shops which are convenience, social contact, psychological factor, economic factor, mental factor, and habitual visit. As we gorup these six reasons into three groups, students who visit coffee shops according to economic or habitual factor consider more on 'diversity of coffee'. And students who visit coffee shops according to convenience or habitual factor consider more on 'kindness of worker'. And last group who visit coffee shops according to social factor consider more on 'moderate price of coffee'. The reason why the reason for the visit and the attributes of selecting Coffee Shop are not meaningful to the type of coffee which students chose is that most of students tend to choose certain type such as Americano. And this also result from the traditional managements which don't have enough effort or the differentiation about the variety of menu.

  • This study aims to analyze the impact of servicescape on the perceived values and brand attitude of coffee customers. In order to archive our research objects, current study employed SPSS 22.0 statistal program. The summary is as follows. First, it was revealed that the servicescape of coffee shops has a positive influence on perceived value. Second, the servicescape of coffee shop has a positive influence on brand attitude. And perceived value of the customer has a positive impact on customer brand attitude. Based on the results, this research has concluded some theoretical suggestions as follows. First, in case of brand coffee shop, it was analyzed that the attractions of interior design color, floor and wall interior, and structure has influenced on the differentiated values of customers. Also, the accessability shows that the brand coffee shops with parking facilities along with the convenience provided by the off-site facilities make customers highly recognize the brand values. In addition, the results found that the factor of service condition becomes a determining factor. Thus, current study will contribute to consider the various elements of service scape when new business develop as well as redesign the previous stores.

Comparison of Service Quality between Local and Global Coffee Brand Shops (국내와 국외브랜드 커피전문점의 서비스품질 비교)

  • The purpose of this study was to compare service quality between local and global coffee brand shops and to investigate improvement. Of 350 questionnaires distributed to customers of six brand coffee shops (three local brands, three global brands) located in Daejeon, 330 complete questionnaires (94.3%) were analyzed. The questionnaire included a seven-point multiple-item scale for measuring service quality. The 21 items measuring service quality were grouped into four factors, and the mean scores for the levels of "representativeness", "coffee sensory and beverage features", "employee attitude" and "physical environment" were 5.42, 4.77, 4.74, and 4.13, respectively. The levels of "coffee sensory and beverage features" and "employee attitude" of the high income customers were significantly lower than those of the low income customers. The results showed that the levels of "employee attitude" of local coffee brand shops was significantly higher (p=0.050) than that of global coffee brand shops. Whereas, the levels of "representativeness" of global coffee brand shops was significantly higher (p=0.003) than that of local coffee brand shops. Based on the results, the global coffee brand shops should pay attention to internal marketing and the local coffee brand shops must strive to improve service quality through strategies such as improving brand awareness and developing representative beverages and foods.
