Preparation of Calcium-fortified Soymilk and in Vitro Digestion Properties of Its Protein and Calcium (칼슘강화 두유의 제조 및 단백질과 칼슘의 체외 소화특성)

  • The present study was attempted to preprare calcium-fortified soymilk using proteases to improve calcium intolerance of soymilk protein and to evaluate its nutritional properties. The protease from Bacillus polymyxa was chosen as an enzyme source because it produced the least bitter taste and calcium-aggregation of soymilk among various enzymes. The optimum treatment time was 10 minutes at $50^{\circ}C$ for the best result. In vitro protein digestibility of calcium-fortified soymilks was comparable with that of control soymilk. Calcium in the digested soymilks was mostly in the ionic form and the amount of ionic calcium increased in accordance with the amount of fortified calcium in soymilk. This suggests that fortified calcium in the soymilk is bioavailable.

  • 수박 '스피드'에서 칼슘제를 착과 14일 후에 1회 엽면 살포한 후 식물체의 칼슘농도, 과실품질 및 탄저병 발생을 조사하였다. 식물체 부위별 칼슘농도는 엽병에서 ECa 500배 처리구는 다른 처리구보다 현저하게 높았으며 과피에서는 MCa 500배 및 염화칼슘 0.4%에서 현저하게 높았다. 과육에서는 무처리에 비하여 ECa, MCa 및 염화칼슘 모두 높았다. ECa 칼슘제 희석배수에 의한 엽병의 칼슘 농도는 500배, 250배, 125배에서 높았다. 수확 시 과중은 무처리 및 염화칼슘 0.4%에 비하여 ECa 및 MCa 처리에서 유의하게 증가하였다. 당도 및 과피두께 차이는 없었다. 탄저병 발생은 무처리에 비하여 처리 칼슘제 모두 낮았다. 생리장해과 발생은 육안으로 전처리 모두 관찰할 수 없었다.

Effects of Paper Bag Coated Calcium on the Calcium Concentration, Lenticel Development, and Quality in 'Chuhwangbae' Pear Fruits (칼슘이 코팅된 봉지 괘대가 '추황배' 과실의 칼슘함량, 과점 발달 및 과실품질에 미치는 영향)

  • In a pear fruit 'Chuhwangbae' was investigated the effect of the calcium-coated double paper bag on the physical properties of the paper bag, micro meteorological phenomena, and calcium contents in quality of fruit. The calcium-coated paper bag, compared with official paper bags, did not give any effect on light transmission ratio and tensile strength. The change of the inside relative humidity of the paper bag was a little compared with conventional paper bags, but there was no difference in temperature. The contents of the accumulated calcium of the pericarp was remarkably greater than conventional paper bags during the period of 65 days to 160 days after the full bloom, but the flesh remarkably increased at 160 days. The calcium content per concentration of calcium coating greatly increased in 12% of yellow double paper bags and 9, 12% of newspaper double paper bags in case of the pericarp, and in 3% of yellow double paper bags and 6, 9, 12% of newspaper double paper bags in case of the pericarp. As a result of treatment of a radioactive isotope, the amount of accumulated calcium in the pericarp continued until 60 hours after treatment, but there was no difference in the calcium amount between the flesh and no-treatment pericarp. As to the hardness of fruits at the time of harvest, there was no difference in the concentration in case of a yellow double bags. But newspaper double paper bags 6, 12% was significantly difference. Soluble solid remarkably increased in yellow double paper bags 6, 9% and yellow double paper bags 3, 6, 9%. Also, it did not effect on changes of the pericarp, fruit weight and the color of the pericarp.

Study on Pretreatment Methods for Calcium Extraction from Cuttle Bone (갑오징어갑으로부터 칼슘의 추출을 위한 전처리 방법의 검토)

  • As a part of basic investigation for utilizing of cuttle bone as a calcium source, we examined on the extraction methods (calcining at $800^{\circ}C$ for 2 hrs, autoclaving at $121^{\circ}C$ for 10 hrs and ultrasonic treatments at $60^{\circ}C$ for 10 hrs) as a pretreatment methods for preparation of calcium-based powder from cuttle bone, The color of calcined calcium-based powder from cuttle bone was white, while that treated by other methods was light yellow. The calcium content in calcined calcium-based powder was $70.5\%$, and revealed high about 2 times compared to those pretreated by other methods. And, calcium solubility in calcined calcium-based powder was improved 22 times compared to raw cuttle bone powder, Among calcining, autoclaving and ultrasonic treatments as a pretreaoent methods for preparation of calcium-based powder from cuttle bone, calcining treatment was superior to other methods on the aspect of color, calcium solubility and purity of calcium-based powder, Judging from X-ray diffraction pattern of calcined calcium-based powder, most of calcium was present as a form of calcium oxide, But, pH of calcined calcium-based powder revealed strong alkali of pH 12.9. This pH value might invoke health risk in using food resource. Therefore, for utilization effectively calcined calcium-based powder from cuttle bone, it requires a suitable treatment such as adjustment of pH to neutral condition.

Effects of Calcium Salts on the Inhibition of Berry Abscission Induced by Ethephon in 'Campbell Early' Grape (Vitis labruscana B.) (포도(葡萄) 'Campbell Early'(Vitis labruscana B.)에 있어서 칼슘염(鹽)이 Ethephon에 의(依)한 탈립(脫粒)의 방지(防止)에 미치는 영향(影響))

  • This experiment was conducted to find the effect of calcium salts on the inhibition of 'Campbell Early' grape(Vitis labruscana B.) berry absicission induced by ethephon. Ethylene evolution, berry abscission rate, and fruit quality were examined. Several mineral contents were determinded in the berries and morphological changes of cells in abscission zone were also studied. 1. Calcium acetate($4.4-8.8g/{\ell}$) and calcium hydroxide($2.2-8.8g/{\ell}$) completely inhibited berry abscission when applied with ethephon 1,000 ppm while calcium chloride was less effective. 2. Ethylene evolution in the berries treated with ethephon alone reached to maximum peak one day after application. However, that peak in the treatment of ethephon with calcium acetate occurred 3 hours after application. 3. No decrease of ethylene production capacity was observed in the ethephon solution even when held up to 36 hours after preparation but the effect on berry abscission was significantly reduced. In contrast, ethylene production of the solution prepared with calcium acetate was greatly decreased along with the increase of holding time. The effect of calcium acetate in aged solution on the inhibition of berry abscission was not altered. 4. There were no differences in mineral contents such as Ca, Mg, and K between the berries sprayed with ethephon 500 ppm or not. Additional calcium accumulation was not found in the skin, flesh, and petiole of clusters sprayed with 3 kinds of calcium salts (1.5 g net Ca per liter) respectively when analyzed 2 weeks before maturity. 5. Ethephon (1,000 ppm) alone induced the development of abscission layer in petiole but those applied with calcium acetate (0.05 M) did not develop any distinct abscission layer 3days after treatment.

Effects of Caffeine and calcium on the activities of the mouse osteoblastic cells (카페인과 칼슘이 골모 세포의 활성에 미치는 영향)

  • The purpose of this study was to evaluate the effects of caffeine and calcium on the activities of the osteoblastic cell from mouse calvaria. The author cultured osteoblastic cells obtained from the mouse calvaria and were divided into three groups : the caffeine-treated, the calcium-treated and the combine-treated group. In caffeine-treated group, the cell toxicity was measured by MTT assay at 1, 2 and 4 days after treatment of caffeine. In all groups, the densities of the mineralized bone nodules were measured by imaging analyzer after Von Kossa staining. The alkaline phosphotase (ALP) activities were measured at 2, 7, 14, 21 and 28 days and the interleukin-1 ${\beta}$ activities at 48 hours after treatment of caffeine and calcium. The measurements were statistically executed with ANOVA test and the results were as follows. 1. The cellular toxicity of the caffeine increased with the concentration of caffeine during the incubation period. 2. The maximum densities of mineralization were observed at 0.2 mM caffeine-treated group, 1.2 mM calcium-treated group, 0.1 mM caffeine and 1.8 mM calcium-treated group. 3. The activities of ALP were peaked at 14 days at calcium-treated group as no-treated. But, the activities of ALP increased with concentrations of caffeine at caffeine-treated group. At combine-treated group, the act of ALP were peaked at 24 days at 1.2 mM, 1.8 mM calcium-treated group, But decreased at 2.5 mM calcium-treated group. 4. The activites of the IL-1 ${\beta}$ were increased significantly at 0.2 mM caffeine-treated group, 1.8 mM calcium-treated group and 0.1 mM caffeine and 1.8 mM calcium-treated group. But, they were decreased at all groups of high concentration.

Effect of Calcium Solution Spray on Fruit or Leaf on Calcium Accumulation into Apple Fruit (사과나무 과실과 잎에 살포된 칼슘의 과실로의 축적)

  • This research was conducted to investigate the effects of calcium solution spray on the accumulation of calcium into apple fruit. $^{45}_{CaCl_2}$ applied to fruit with different growth stages showed that more $^{45}Ca$ was penetrated into fruits when applied in the late stage than early stage. Slight radioactivity was detected only in pedicel except leaf when $^{45}Ca$ was treated on the leaves proximate to the fruit. When the Ca was treated on fruit surface only, calcium contents of fruit was increased.

Characteristics of Gaeryangmerou Wine deacidified by Calcium Carbonate (탄산칼슘 처리에 의한 개량머루주의 감산 특성)

  • We investigated the effect of calcium carbonate on the quality of wine obtained from Gaeryangmerou (Vitis. spp.), grapes, which are commonly used in wine making in Korea. Alcoholic fermentation was carried out at $25^{\circ}C$, for 7 days in the presence of 0.1%, 0.2%, and 0.3% calcium carbonate. As calcium carbonate concentration increased, the pH of wine increased, while its total acid content and redness decreased. Calcium carbonate treatment during precipitation and aging is more effective than during fermentation. Concentrations of alcohol, total anthocyanin, polyphenol, and tannin showed no significant differences between controls and deacidified groups. Tartaric and malic acids were found to be the major acids in Gaeryangmerou wine. Calcium carbonate reduced total acidity by precipitating tartaric acid. In the sensory evaluation of the acidity, and overall acceptability, wine treated with 0.1% calcium carbonate was the best. Higher calcium carbonate concentration, was associated with greater reduction in total wine acidity. However, it is necessary to maintain the calcium carbonate concentration within 0.1% since excessive amounts of calcium carbonate can have a negative effect on wine quality.

Growth and Physiological Responses of Pinus strobus to CaCl2 (염화칼슘에 의한 스트로브잣나무의 생장 및 생리반응)

  • The present study aimed to investigate the effect of calcium chloride($CaCl_2$) on the growth and physiological responses of Pinus strobus and the variables that are sensitive to $CaCl_2$. Thus, changes in the visible damage, growth of root collar diameter, plant water content, chlorophyll content and composition, maximum PS II photochemical efficiency, and electron transport rate of P. strobus was analyzed in relation to treatment witih $CaCl_2$. A $CaCl_2$ solution(0.5, 1.0 and 3.0%) was applied in the root zone before leaf unfolding. Leaf browning, defoliation, and drying were observed with $CaCl_2$ application and this pattern was aggravated as the $CaCl_2$ concentration increased and the treatment period became longer. The decrease of growth in root collar diameter and height and leaf water content were observed at $CaCl_2$ 1.0% and 3.0%. The total chlorophyll content indicated that photopigment, PS II photochemical efficiency and electron transport rate significantly decreased at $CaCl_2$ 3.0%. In conclusion, $CaCl_2$ affected leaf water content and led to a decrease of capability in light harvesting and photochemical responses. Also, as a result of the correlation between calcium chloride concentration and growth and physiological response parameters, it was found that the leaf moisture content and the ratio of chlorophyll a and b reflect the damage level of calcium chloride sensitively because their coefficient of determinations were relatively high.

Effects of Additional Calcium Additive on Egg Production, Feed Efficiency and Egg Shell Quality in Laying Hens (산란계 사료에 대한 칼슘 공급제의 추가공급이 산란능력과 사료효율 및 난각질에 미치는 영향)

  • Forty-wk-old 480 ISA Brown layers were used in a 10-wk feeding trial to investigate the effects of additional various levels of limestone to a low calcium diet without any calcium additives on the performance of laying hens. There were significant differences in average egg weight (P<0.05) without any specific trend among treatments and hen-day egg production was not influenced by the dietary treatments. Daily intake and conversion per kg egg of feed excluded the calcium supplement were significantly reduced (p<0.05) as the level of additional calcium supplement increased in both types of layer diet, while those of feed included the calcium source were significantly increased (P<0.05) as the level of additional calcium supplement increased. Egg specific gravity, eggshell breaking strength and thickness were increased as the level of additional calcium supplement increased, however the significant differences were found only in egg specific gravity It would be possible to reduce the daily feed intake and feed conversion and to improve the eggshell quality by feed the low calcium diet devoid of calcium supplement from the conventional laying hen diet and by supply the additional calcium source at 3 to 4 p.m. instead of the continuous feeding of conventional high calcium diet.
