급수제한에 의한 성성숙 지연방법

  • 무제한 급수하면 저에너지 사료를 섭취하는 닭은 모자란 에너지의 보충을 위해 사료를 더 많이 섭취하여 에너지의 제한 효과가거의 없었고 제한급수하면 사료를 충분히 섭취할 수 없기 때문에 대조구의 약 70$\%$밖에 섭취못했다. 따라서 이것이 성성숙을 4$\~$4 1/2주 지연시킨 요인이었으며 체지방 축적도 감소시켰다. 성성숙 지연결과 성숙이 지연된 닭은 총 산란수가 훨씬 많고 비정상란의 수가 훨씬 적으며 대란율도 훨씬 높다. 육성중 폐사율은 더운 여름철에도 급수의 제한과 상관없었으며 산란중 폐사율은 오히려 성성숙시의 체중 혹은 체지방 축적과 정비례 했다. 이상으로 저에너지 사료를 급여하면서 급수제한(격일제 급수)하는 방법이 대추의 에너지 섭취를 제한시키는 간단하고 효과적인 방법임이 입증되었다.

Dietary total sugar intake of Koreans: Based on the Korea National Health and Nutrition Examination Survey (KNHANES), 2008-2011 (한국인의 총 당류 섭취실태 평가: 2008~2011년 국민건강영양조사 자료를 이용하여)

  • Purpose: The aim of this study is to estimate total sugar intake and identify major food sources of total sugar intake in the diet of the Korean population. Methods: Dietary intake data of 33,745 subjects aged one year and over from the KNHANES 2008-2011 were used in the analysis. Information on dietary intake was obtained by one day 24-hour recall method in KNHANES. A database for total sugar content of foods reported in the KNHANES was established using Release 25 of the U.S. Department of Agriculture National Nutrient Database for Standard Reference, a total sugar database from the Ministry of Food and Drug Safety, and information from nutrition labeling of processed foods. With this database, total sugar intake of each subject was estimated from dietary intake data using SAS. Results: Mean total sugar intake of Koreans was 61.4 g/person/day, corresponding to 12.8% of total daily energy intake. More than half of this amount (35.0 g/day, 7.1% of daily energy intake) was from processed foods. The top five processed food sources of total sugar intake for Koreans were granulated sugar, carbonated beverages, coffee, breads, and fruit and vegetable drinks. Compared to other age groups, total sugar intake of adolescents and young adults was much higher (12 to 18 yrs, 69.6 g/day and 19 to 29 yrs, 68.4 g/day) with higher beverage intake that beverage-driven sugar amounted up to 25% of total sugar intake. Conclusion: This study revealed that more elaborated and customized measures are needed for control of sugar intake of different subpopulation groups, even though current total sugar intake of Koreans was within the range (10-20% of daily energy intake) recommended by Dietary Reference Intakes for Koreans. In addition, development of a more reliable database on total sugar and added sugar content of foods commonly consumed by Koreans is warranted.

A Study on Energy Expenditure in Korean Adolescent Women (한국 청소년 여성의 에너지 소비량에 관한 연구)

  • A 4-week energy balance study was conducted to estimate the energy expenditure (EE) of 7 high school age girl, 15 to 16 year age, by measurement of energy intakes and changes in body energy (BE) content (intake/balance technique), keeping their normal living pattern and eating behavior. Gross energy intake (GE) and fecal energy (FE) loss was measured by bomb calorimetry. Urinary energy (UE) loss was calculated from nitrogen excreted. Fat mass (FM) was determined from body density estimated from skinfold thickness. Mean constitutional ratio of carbohydrate, protein and fat for the total energy intake was 70.1$\pm$1.8%, 12.2$\pm$0.7% and 17.7$\pm$2.0%, respectively, Fecal energy loss was 2.8% proportion of the gross energy intake. Mean daily metabolizable energy estimated by subtract fecal and urinary energy loss was 2022 $\pm$ 50㎉. Total body energy change estimated from body composition change over 28days was increased 2400 $\pm$ 950㎉ . Mean daily energy expenditure was 1958$\pm$87㎉ (39$\pm$2㎉ /kg of body weight).

Accuracy of the 24-hour diet recall method to determine energy intake in elderly women compared with the doubly labeled water method (에너지 섭취 조사를 위한 24시간 회상법의 정확도 평가: 여자노인을 대상으로 이중표식수법을 이용하여)

  • Purpose: This study evaluated the accuracy of the 24-hour diet recall method for estimating energy intakes in elderly women using the doubly labeled water (DLW) method. Methods: The subjects were 23 elderly women with a mean age of 70.3 ± 3.3 years and body mass index (BMI) of 23.9 ± 2.8 kg/㎡. The total energy expenditure (TEEDLW) was determined by using the DLW and used to validate the 24-hour diet recall method. The total energy intake (TEI) was calculated from the 24-hour diet recall method for three days. Results: TEI (1,489.6 ± 211.1 kcal/day) was significantly lower than TEEDLW (2,023.5 ± 234.9 kcal/day) and was largely under-reported by -533.9 ± 228.0 kcal/day (-25.9%). The accurate prediction rate of elderly women in this study was 8.7%. The Bland-Altman plot, which was used to evaluate the TEI and the TEEDLW, showed that the agreement between them was negatively skewed, ranging from -980.8 kcal/day to -86.9 kcal/day. Conclusion: This study showed that the energy intake of elderly women was underreported. Strategies to increase the accuracy of the 24-hour diet recall methods in the elderly women should be studied through analysis of factors that affect underreporting rate. Further studies will be needed to assess the validity of the 24-hour diet recall method in other population groups.

  • 감미료는 감각을 만족시키는 기능을 가지며, 에너지를 공급하는 영양적 감미료와 에너지를 공급하지 않는 비 영양적 감미료로 분류 될 수 있다. 영양적 감미료들은(설탕, 과당 등) 미국 식약청에서는 일반적으로 안전하다고 인식(generally recognized as safe, GRAS) 되고 있다. 그러나 감미료 섭취는 적절한 영양섭취와 건강과 관련하여 아직 많은 우려를 가지고 있다. 첨가당으로부터의 에너지 섭취가 총 에너지 섭취의 25% 이상이면 식사의 질(quality)이 낮아진다. 지난 수 십 년 간, 당 섭취가 행동적인 면에 부정적으로 작용한다는 많은 이론들이 대두되었다. 그러나 포도당은 뇌의 주요 에너지원이다. 포도당의 기억력 향상기능은 모든 연령에서 보고되었으며, 특히 젊은 층보다는 노인에서 더 효과적이었다. 특히 적당량으로 섭취하였을 때 포도당의 섭취는 단어기억, 이야기 기억, 24시간 전에 학습한 정보에 대한 기억, 경계(vigilance)의 향상, 반응시간의 단축, 정신적 계산 능력의 향상, 시뮬레이터 조절에서의 실수감소, 스투르프효과(Stroop effect)의 감소, 지능검사의 향상, 실제사건에 대한 기억력 검사와 웩슬러 척도(Wechsler Scale)에서의 향상과 같은 여러 인지능력 검사에서 좋은 영향을 미친다고 한다. 포도당 용액과 간식의 섭취는 기억력을 개선한다. 아침식사를 거르는 것은 아동들에서 낮은 학습능력을 보인다. 인지능력 변화와 관련 있는 식이는 뇌에 포도당을 공급하는 것과 관련 있다. 과당도 동물실험에서 기억력을 향상시키는 기능이 있다는 것을 보여주고 있다. 본 논문은 당 섭취가 인지능력에 미치는 영향에 대한 과학적인 연구들을 종합하여 정리한 것이다.

Assessment of Dietary Fiber Intake in Korean College Students (한국대학생의 식이섬유 섭취실태조사)

  • 본 연구에서는 남자대학생 80명을 대상으로 총 식이섬유 및 조섬유와 영양소 섭취상태를 비교 분석하였다. 남자대학생들의 평균 총 식이섬유 섭취량은 $20.54\pm5.82g으로$ 외국의 잠정적 권장량의 범위(20~30g)에는 들었으나 권장량의 하한치를 약간 상회하는데 그쳤다. 조섬유의 1일 평균 섭취량은 $8.43\pm5.56g으로$ 1일 식이섬유 섭취량의 약 41%에 해당하였으며 그 외 열량 및 다른 영양소의 평균 섭취량은 한국인 영양권장량과 비슷하거나 다소 더 높은 것으로 나타났다. 총 식이섬유 섭취량과 에너지 및 단백질, 당질, 그리고 조섬유의 섭취량 간에는 유의적인 상관관계를 보였으며, 당질이 가장 높은 상관계수(r=0.7232, p<0.001)를 보였다. 또한 조사 대학생들의 총 식이섬유 섭취량과 식품군별 섭취량과의 상관관계수를 보인 것은 채소류 (r=0.6548, p<0.001)였으며 그 다음은 곡류(0.5913, p<0.001)였으며 그 다음은 곡류(0.5913, p<0.001), 해조류(0.3300, p<0.01)였다. 조사 대학생들의 식이섬유 섭취량 중 총식이섬유 급원으로 가장 많이 섭취한 식품은 쌀과 김치였으며, 각각 총 식이섬유 섭취량의 11.98%와 7.64%에 기여하였다. 그 외 학생들이 많이 섭취한 라면, 고춧가루, 냉면, 빵, 콩나물, 밀가루, 깍두기, 무 등이 주요한 식이섬유 급원으로 나타났다. 본 연구의 남자대학생들의 식이섬유 섭취량은 외국의 잠정적 권장량의 범위(20~30g)에 속하였으나 충분한 양을 섭취하고 있는 것은 아니었으며, 오히려 경제수준의 향상으로 인한 식습관의 변화에 민감하게 반응하는 젊은 세대들인 조사대학생들의 장래 식이섬유 소비량은 더욱 감소할 것으로 추정된다. 그러므로 식이섬유 급원식품의 섭취를 증가시키는 방안이 모색될 필요가 있다. 따라서 성인기에 식이섬유 부족으로 나타나는 각종 질병의 위험을 예방하기 위해 정백비 위주의 식사를 지양하고 총 식이섬유 함량이 높은 해조류의 섭취를 널리 교육시키는 것이 바람직할 것으로 사료된다. 또한 보다 광범위하고 체계적인 대상자 선정을 통하여 식이섭취조사가 이루어져 식이섬유 섭취패턴을 연구할 필요가 있다.

The food and nutrient intakes from daily processed food in Korean adults: based on the 6th Korea National Health and Nutrition Examination Survey data (2013~2015) (한국 성인의 가공식품으로부터의 식품 및 영양소 섭취량 평가 : 제 6기 (2013~2015) 국민건강영양조사를 바탕으로)

  • Purpose: The consumption of processed foods has recently been increasing due to changes in the living environment. The purpose of this study was to identify the contribution of processed food to the nutrient intake of adult Koreans. Methods: A total of 15,760 adult people in the $6^{th}$ National Health and Nutrition Examination Survey (2013 ~ 2015) were included in this study. According to the Korea Food and Drug Administration's classification criteria for processed foods, the 24 hour dietary recall data of the subjects were classified as processed food or natural food. The processed food intake, nutrient intake and major processed food sources by food groups were analyzed. Results: Men consumed more processed foods than did the women. Consumption of processed foods decreased with age, but it increased with the education level and the income level. The total daily processed food intake accounted for 68.1% of the total food intake. The food groups with high processed food intake were beverage, vegetables, cereals and grain products, fruits, and milk and dairy products in this order. The top food source of each food groups were beer, kimchi, bread, processed apple products, and milk. After adjusting for age, gender, and energy intake, all the nutrient intakes and percentage of dietary reference intakes for Koreans, except carbohydrates, were significantly higher in processed foods than in natural foods. The sodium intake from the processed food was 96.3% of total daily sodium intake. The intakes of nutrients from processed foods, excluding vitamins C, dietary fiber, iron, and vitamin A, were higher in men than in women. The intake of sodium from processed foods was highest for people of 30 ~ 49 years of age, and the intake of sodium from processed foods decreased for people over 50. Conclusion: Korean adults consumed more processed food than the natural food, consuming more calories and most of the nutrients from the processed food overall total daily intakes. The intake of processed foods is expected to further increase in the future, and nutritional education and research on the ingestion and selection of healthy processed foods are necessary.

Determination of Energy Requirements for Maintenance in Hanwoo Steers (거세한우의 유지에너지 요구량 결정)

  • This experiment was carried out to determine energy requirements for maintenance of Hanwoo steers. Nine Hanwoo steers weighing 376.6$\pm$12.5kg were used in this experiment and fed rice straw(44%) and concentrate (56%) at three different energy levels; 0.8 times maintenance(0.8M), 1.2 times(1.2M) and 1.6 times(1.6M), respectively. Dry matter intake was 48.5, 65.9 and 86.5g/$BW^{0.75}$ for 0.8M, 1.2M and 1.6M, respectively. Increase in energy intake with the increased DM intake did not affect digestibilities of dry matter, organic matter, crude protein, crude fiber, crude fat and nitrogen-free extract. Gross energy intake averaged 190.8, 255.8 and 340.9kcal/BW0.75 for 0.8M, 1.2M and 1.6M, respectively. Energy loss was 41% feces and 0.6${\sim}$1.5% urine of gross energy intake. Further, energy loss from methane produced during rumen fermentation was 5${\sim}$9%, while body heat loss averaged 40${\sim}$60%. Intercept of the regression equation between ME intake and retained energy indicated that energy requirement for maintenance was 124.3kcal $ME/BW^{0.75}$.

  • Purpose: To provide the primary data on dietary guidelines for the management of obesity, we analyzed the intake rate of food groups and dish groups according to obesity and age. Data were obtained from the Korea National Health and Nutrition Examination Survey (KNHANSE, 2013-2018). Methods: This study analyzed the data of 21,184 adults aged 19-64 years, obtained from the KNHANSE 2013-2018. The 24-hour recall was performed and the food groups were classified into six representative food groups (grains, meat·fish·eggs·legumes, vegetables, fruits, milk and dairy, and oil and sugar), and 'alcohol' and 'others'. The dish groups were classified into a total of twenty-four types. Results: The normal group included 9,004 subjects (42.5%), while the obese group had 12,180 subjects (57.5%). The food groups showing significant differences according to obesity were grains (p < 0.001), meat/fish/egg/legumes (p < 0.001), and vegetables (p < 0.001); similar results were obtained in both male and female. Comparing the intake rate of food groups and dish groups targeting only the obese group according to age, the food groups showing significance between the obese group and the normal group were grains (p < 0.001) and vegetables (p < 0.001), with significantly increased intake in both genders. Considering the dish groups, significant increases were determined for stews (p < 0.001), seasoned vegetables (p < 0.001), and kimchi (p < 0.001) in male, and for rice (p < 0.001), seasoned vegetables (p < 0.001), kimchi (p < 0.001), and rice cakes (p < 0.001) in female. Conclusion: The results of this study determined that the intake ratio of food and dish groups differs by age in obese adults. We believe that our results can be used as primary data for forming dietary guidelines for obese adults in the future.

The effect of High Fat Diet and Dietary Fiber on Lipid Metabolism in Rats (고지방식이와 식이섬유가 흰쥐의 체내 지질대사에 미치는 영향)

  • 이유기를 지난 웅성흰쥐를 대조식이 (C), 고지방식이 (HF) 및 고지방 고에너지식이 (HFHE) 로 4 주간 사양하고 일부를 희생시킨 후 , HF 군과 HFHE 군 일부에식이섬유 pectin 과 cellulose를 각각 첨가한 HF-P , HF-C, HFHE-P , HFHE-C 식이를 C, HF ,HFHE 식이와 함께 4 주간 더 사양한 후 희생시켜 체중증가량, 총 에너지섭취량, 총식이섭 취량, 식이효율, 간장과 비장의 무게, 혈중 지질의 성상 및 간세포에 미치는 영향을 비교 관 찰한 결과 체중증가는 C 군, HF 군, HFHE 군간의 유의적 차이는 없었으며, 식이섬유 첨가 시 모두 체중이 감소되었다. 총에너지 섭취량은 C 군이 가장 많았고, 식이효율은 HF-HE군 이 가장 높았으며, 식이섬유 첨가에 의해서는 영향을 받지 않았다. 간장의 무게는 C군 , HF 군, HFHE 군 모두 식이의 영향이 없었고, pectin 과 celulose 첨가에 의한 변화도 나타내지 않았다. 비장의 무게는 C군 보다 HF 군과 HFHE 군이 감소하였으나, pectin 과 cellulose 첨가에 의해서는 변화가 없었다. 혈중 총 지질, 총콜레스테롤, 중성지방 및 인지질의 함량은 각 실험군모두 실험기간이 경과함에 따라 증가되었으며, 특히 HFHE 군의 유의성있게 증가 하였고 pectin 과 cellulose를 첨가하였을때는 감소하였으며 pectin이 cellulose 보다 감소효 과가있다.
