Quantification of Trans Fatty Acids in Processed Foods by Soxhlet Extraction Method (Soxhlet 추출법에 의한 가공 식품의 Trans 지방산 정량)

  • This study was designed to determine total trans fatty acids (tFAs) content of processed foods commonly consumed in the Korean diet and to prepare the database for the estimation of tFAs intake in Koreans. Total fat and tFAs content was determined by Soxhlet extraction method and attenuated total reflection infrared spectroscopy (ATR-IR), respectively. The tFAs positional isomers were analyzed using GC/MS spectrometer. In margarines, the content of tFAs ranged from 8.27% to 28.53%. Shortenings contained higher levels of tFAs (1.98~11.33%) than lards (1.83~1.96%). The content of tFAs in grilled confectioneries was wide (7.37~26.54%). Instant popcorns contained the highest amount of tFAs. Fried chickens had 0.44 to 14.85% of tFAs and french fries had 5.18 to 27.01% of tFAs. In fried snacks (crispy) and chocolates, tFAs were not detected. The amount of tFAs per serving size was the highest in instant popcorn, followed by french fries, fried snack (tortilla), doughnuts, and grilled confectioneries. TFAs isomer of margarines was mostly C18:1${\Delta}$9t. In shortenings and lards, the most abundant positional isomer of tFAs was C18:1${\Delta}$9t and C18:2${\Delta}$9t ${\Delta}$12t. Correlation coefficient of tFAs content between IR and GC/MS method was $r^2$=0.91.

  • In the paper, lipophilic derivatives of $\beta$-sitosterol, which are known to have a potential to reduce blood cholesterol level, were synthesized by the esterification of $\beta$-sitosterol and fatty acids. When the esterification reactions using stearic acid, oleic acid or linoleic acid as fatty acids were carried out in the presence of an acidic catalyst, the reaction for unsaturated fatty acids such as oleic acid and linoleic acid afforded a significant amount of side products which may be produced by oxidation of unsaturated groups. On the other hand, esterification reactions in the presence of dehydrating agents and a basic catalyst gave pure products regardless of the nature of fatty acids. The solubilities of lipophilic derivatives of $\beta$-sitostero to organic solvents and edible oil were observed to increase as the degree of unsaturation of fatty acids increases.

  • 시판(市販) ${\ulcorner}$${\lrcorner}$의 유리(遊離) 지방산(脂肪酸)을 20% DEGS (diethyleneglycol succinate) 칼람을 장치(裝置)한 가스 크로마토그라피를 사용하여 separation factor 및 oxymereuration-demercuration법(法)을 이용(利用)함으로써 23종(種)의 지방산(脂肪酸)을 확인(確認)하였으며, 가스 크로마로그람의 면적(面積)으로부터 그들을 각각 정량(定量)하였다. 진기(珍奇)한 산(酸)은 존재(存在)하지 않았으며, $C_{22}F{\times}1,\;C_{26}$, oleic acid, palmitic acid가 거의 60%를 차지했다. Oxymercuration-demercuration법(法)에 의(依)하여 분리(分離)된 불포화 지방산(脂肪酸)중에서 $C_{13}F{\times}1,\;C_{18}F{\times}1,\;C_{20}F{\times}1$는 명명(名名) 두 개(個)의 기하이성체(幾何理性體)가 존재하는 것으로 추정(推定)된다. 쇄상 포화 지방산(脂肪酸) 및 $F{\times}1$$F{\times}2 $의 쇄상 불포화 지방산(脂肪酸)은 $R_{USEVA}-A_{TANSONA}$$M_{URRAY}$등이 언급(言及)한 바와 같이 지방산(脂肪酸)의 탄소수(炭素數)에 대해서 $t_R\;(retention time)$을 semi-log plot를 하였을때 직선(直線)을 주었다.

Comparison of Amino Acid Profiles and Lipids of Two Strains of Common Carp, Cyprinus carpio (두 계통 잉어의 체성분 비교)

  • The differences of nutritive components in muscle and viscera of local and Israeli strains of common carp were examined. The crude lipid content in muscle was higher in the local carp than in the Israeli carp, but that in viscera was lower in the local carp than in the Israeli carp. There was no appreciable differences of crude protein and ash in viscera between local and Israeli carp. The distribution patterns of the total amino acid profiles for both local and Israeli carp were very similar. The principal amino acids were aspartic acid, glutamic acid, leucine and Iysine. They were 42 percent of total amino acids. Taurine and histidine were important part of free amino acids. Eicosapentaenoic acid and docosahexaenoic acid content in the polar lipids were high in both strains.

  • 기후변화의 영향으로 전세계적으로 이상 기후 및 자연재해가 증가하면서 재난을 효과적으로 관리하기 위한 법체계 및 제도에 대한 관심이 높아지고 있다. 그럼에도 불구하고 재난관리의 법과 제도적 측면에 대한 연구는 공학 및 기술적 연구에 비해 충분히 이루어지지 않고 있다. 특히 재난관리에 대해 많은 경험을 축적해온 선진국가의 재난관리체제에 대한 연구는 아직 미비한 수준이라 할 수 있다. 따라서 본 연구는 영국의 재난관리체제를 법과 제도를 중심으로 분석하고 한국에 필요한 시사점을 도출한다. 영국의 재난관리 체제는 지방정부가 재난대응에 있어서 주도적인 역할을 수행하고 중앙정부는 대응 가이드라인을 제시하고 지원 및 조정업무를 수행하는 분산적 재난대응체제라 할 수 있다. 중앙정부에는 재해를 전담하는 조직이 별도로 구성되어 있지 않고 지방행정조직이 지역특정에 맞게 위기관리계획을 수립하고 집행한다. 지역별로는 지방정부, 기업, 시민단체로 구성된 민관협력체인 위기관리포럼을 형성하여 재난에 대처한다. 반면 한국의 재난대응체제는 중앙집권적이며 국민안전처가 재해전담조직으로서 역할을 하고 있으나 영국과 같은 민관협력체는 발달하지 않았다는 차이점을 발견할 수 있다. 영국과 한국의 재난관리체제를 비교해 볼 때 다음과 같은 법 제도적 개선방안을 제시할 수 있다. 첫째, 분산되어 있는 재난관리 기본법을 하나로 통폐합할 필요가 있다. 둘째, 지방정부의 재난대응권한을 강화해야 하며 특히 인력과 예산이 재난에 적절히 대응할 수 있는 수준으로 조정되어야 한다. 세째, 지방수준에서 재난대응 관련 기관들간 조정 및 협력을 할 수 있는 체제가 강화되어야 한다. 네째, 민간단체를 재난대응체제에 조직적으로 참여시킬 수 있도록 해야 한다. 이를 위해서는 주민단위의 방재조직이 공공부분과 효과적으로 협조할 수 있도록 할 수 있는 제도적 틀이 필요하다. 다섯째, 재난대응단계 설정에 있어 예방에 앞서 지역의 특성에 따라 예방업무를 효과적으로 수행할 수 있도록 진단하는 평가단계를 추가하는 것을 고려해야 한다.

A Study on the Creation of Campus Innovation Park in Local University (지방대학의 캠퍼스혁신파크 조성에 관한 연구)

  • In line with the era of local universities, a total of 402 people, including companies, private businesses, individuals (founders), and companies listed in the 2021 campus innovation park, were surveyed for six days from 02/15/2021 to 02/21. According to the regression analysis, future-oriented (47%) factors influencing the establishment of campus innovation park consumer-centered methods (p<.05), the standardization factor 𝛽 is future-oriented (𝛽=.479), Environmental Analysis and Policy (𝛽=.047), and it was confirmed that there was a greater future-oriented influence on innovative park consumers than environmental analysis and policy. This study is meaningful in identifying the needs of consumers and businesses related to the campus innovation park construction project of S University in the province and suggesting ways to establish an efficient innovation park.

Anti-hyperlipidemic and anti-obesity effects of Sparassis latifolia fruiting bodies in high-fat and cholesterol-diet-induced hyperlipidemic rats (고지방과 고콜레스테롤 식이 급여에 의해 고지혈증이 유도된 흰쥐에서 꽃송이버섯 자실체의 항고지혈증과 항비만 효과)

  • This study investigated the anti-hyperlipidemic and anti-obesity effects of Sparassis latifolia (S. latifolia) fruiting body powder in rats fed with a high fat and cholesterol diet (HFD). Rats were fed a normal control diet (ND), an HFD, an HFD supplemented with 5% fruiting body powder of S. latifolia (HFD+SL), or an HFD supplemented with 0.03% simvastatin (HFD+SS), for 6 weeks. The HFD group demonstrated considerable increase in body weight gain, the food efficiency ratio (FER), and plasma cholesterol and triglyceride levels, compared to the ND group. In contrast, the HFD+SL and HFD+SS groups showed significantly reduced body weight gain, food intake, and plasma cholesterol and triglyceride levels compared to the HFD group. In particular, the HFD+SL and HFD+SS diets significantly suppressed the occurrence of non-alcoholic fat deposits in the liver. Taken together, these results suggest that dietary supplementation of the fruiting body powder of S. latifolia in an HFD could lower the risks of hyperlipidemia, atherogenesis, and obesity and may be used as a functional food to manage cardiovascular disease and fecal lipid and cholesterol levels.
