The fatty acid compositions of lipids from five local varieties and three imported varieties of soybean were determined. Total and free lipids of the samples were extracted with chloroform-methanol mixture (2:1, v/v) and ethyl ether, respectively. The ether-extracted samples were extracted again with water saturated n-butanol to obtain bound lipids. The average percent contents of the lipid fractions were 21% (total), 18% (free), and 3.3% (bound). The results indicated that seven fatty acids (10:0, 12:0, 14:0, 16:0, 17:0, 20:0 and 22:0) were identified as minor fatty acids for all the varieties examined in this study. The relative contents of 18:2 were the highest (50.1-59.7%) in all the lipid fractions, and the contents in total and free lipids were in-fluenced by the local varieties. Little difference in fatty acid composition was noted between the total and free lipids of the samples. Total and free lipids contained more 18:1 (about 10%) and less 16:0 (about 40%) and 14:0 (about 34%) than did the bound lipids. The relative percent contents of 18:3 in the total, free and bound lipids were on average 8.9, 9.0, and 7.3 percents. The content in the total lipids of Gwanggyo varieties showed the highest level (11.1%), and in the bound lipids of Eundaedoo varieties the lowest (6.0%). In case of the total and free lipids, those varieties which showed higher relative contents of 18:1 generally had lower relative contents of 18:2 and 18:3.
The effects of chlorine treatment on the lipid composition of wheat flour were studied by treating flour with different amounts (1, 2 and 4 ounces per 100 pounds of flour) of liquidized chlorine gas. The contents of free lipid increased slightly while those of the bound lipid decreased at all levels of chlorine used. The contents of neutral lipid in the free lipid decreased while those in the bound lipid increased as the level of chlorine increased. The contents of triglycerides in the free and bound lipids decreased as the level of chlorine increased. As the level of chlorine increased, digalactosyl diglycerides in the bound lipid decreased, whereas those in the free lipid increased within the range of 1 to 2 oz of chlorine. The phosphatidylcholine content in the free and bound lipids decreased while the lysophosphatidylcholine increased in both free and bound lipids as the level of chlorine increased. The content of saturated fatty acids increased while that of unsaturated ones decreased as the level of chlorine increased.
Grains of naked barley (Baekdong cultivar) were polished, powdered and subjected to the successive extraction into free and bound liquid fractions. These were further fractionated into lipid classes and quantified by means of thin layer chromatography, column chromatography and gas-liquid chromatography. Contents of free and bound lipids in barley flour were 2.27% and 1.01%, which were decreased to 2.12% and 0.76%, respectively, after purification. Free and bound lipids were consisted of monoglycerides, diglycerides, triglycerides, free sterols, sterol esters, free fatty acids and polar lipids. Major constituents of free lipids were 56.2% triglycerides, 14.9% free fatty acids and 13.4% sterols while those of bound lipids were 73.8% polar lipids, 8.4% free fatty acids and 5.2% triglycerides. The content of non-polar lipids in free lipids was 93.6% as compared with 26.2% in bound lipids. However, phospholipids content in bound lipids was 55.5% as compared with 2.5% in free lipids, and glycolipids content in bound lipids was 19.4% as compared with 3.9% in free lipids. Major fatty acids in the free and bound lipid fractions were linoleic acid 52.1%, 54.8%, palmitic acid 24.8%, 30.0% and oleic acid 15.6%, 8.8%, respectively, showing similar patterns in both fractions. The amount of unsaturated fatty acids in free lipids was 72.8% as compared with 68.0% in bound lipids. In comparing the fatty acid composition of non-polar lipids, glycolipids and phospholipids, no difference was observed between free and bound lipid fractions while a slight difference was found among the lipid constituents.
This study was designed to elucidate the lipid and its fatty acid composition in various tissues of cat fish, Parasilurus asotus. The free lipid contents in meat, skin and viscera were 5.62%, 26.34% and 19.27%, whereas the bound lipid contents in those tissues were 2.34%, 2.30% and 19.27%, respectively. The neutral lipid contents in free lipid were 5 times higher than those in bound lipid, while the phospholipid contents in bound lipid were 4 times higher than those in free lipid. The neutral lipid was mainly composed of triglyceride (79.84%-99.86%) in free lipid, and esterified sterol & hydrocarbon (55.12-64.33%) in bound lipid. The phospholipid was mainly composed of phosphatidyl choline (52.38-69.98%) and phosphatidyl ethanolamine (24.09-40.48%) in free lipid, and phosphatidyl choline (53.03-58.54%) and phosphatidyl ethamolamine (13.80-19.23%) in bound lipid. The major fatty acids of polar lipid in free and bound lipids were C16:0 (28.37%, 21.99%), C18:1 (12.01%, 11.52%), C18:2 (17.93%, 14.12%) and C22:6 (17.22%, 20.63%), and those of nonpolar lipid in free and bound lipids were C16:0 (14.81%, 18.94%), C18: 1 (25.93%, 10.89%) and C22:6 (9.95%,23.44%), respectively. The total essential fatty acid (TEFA) content in skin was slightly higher than that in meat. In both polar and nonpolar lipids in meat ${\omega}3-HUFA$ contents of polar lipid were 1.5-2.0 times higher than nonpolar lipid and also ${\omega}3-HUFA$ content of bound lipid was slightly higher than that of free lipid. There were significant differences in the lipid classification and its fatty acid composition between free and bound lipids and/or in various tissues.
Five types of determination methods including the Soxhlet method as well as 3 kinds of extraction solvents, were used for the determination of accurate crude fat contents in wheat flour and 5 kinds of dry noodles. According to the results, crude fat contents were 0.09~1.37% in the wheat flour and 0.07~1.36% in the dry noodle samples. This variation resulted from the types of lipids in the wheat flour and various kinds of dry noodles. Nutrition facts labels showing crude fat contents in the 5 kinds of domestic dry noodle samples indicated levels of 0~1.5%. Lipid composition and content were determined in order to investigate these differences. The results indicated free lipid at 1.02% and bound lipids at 0.21% in the wheat flour, and free lipids at 0.95~1.01% and bound lipid at 0.21~0.25% in the wheat flour. Polar and nonpolar lipid contents were also measured in all samples. Neutral lipid, glycolipid and phospholipid contents in the free lipid were 58.5%, 33.6%, and 8.6% in the wheat flour, and 49.2~58.2%, 33.3~41.6%, and 8.5~9.3% in the dry noodle samples, respectively. For bound lipids, amounts were 16.7%, 33.5%, and 49.5% in the wheat flour, and 13.2~15.3%, 35.6~45.7%, and 41.6~49.4% in the dry noodle samples, respectively. Based on these results, an acid hydrolysis methods should be used to determine accurate crude fat contents in wheat flour and dry noodles.
Lipids of kidney bean were extracted by the mixture of chloroform-methanol-water (1:2:0.8 v/v), fractionated into neutral lipids, glycolipids and phospholipids by silicic acid column chromatography, and the composition of these lipid classes were determined by TLC and GLC. The lipid content of kidney bean was 1.9%, and the lipid was consisted of 48.3% neutral lipids. 7.5% glycolipids and 44.2% phospholipids. Triglyceride was the major component of neutral lipids (64.6%). The major glycolipid and phosphlolipid were esterified steryl glycoside (38.3%) and phosphatidyl choline (32.9%). The major fatty acids of kidney bean lipid were linolenic, linoleic, palmitic and oleic acid. Linolenic acid contents were very high to be 37.1% in total lipid and 50.5% in neutral lipid.

The oxidation behaviour of Pinenut(Pinus Koraiensis S & Z) oil during storage were studied. And the oxidative stability of different oil samples by refining stage were also measured. The oil in whole pinenut or mashed pinenut was very stable during the storage at $35^{\circ}C$ for 10 weeks however, the oxidation rate was enhanced when pinenut oil was extracted and isolated from nut cake. On the other hand, crude oil was most stable and the highly purified pinenut oil was least stable, with other samples being intermediate in stability. The changes of fatty acid composition of various pinenut oil samples during storage were also discussed.
Changes in lipid components of Gae-bul, Urechis unicinctus, during hot-air drying ($40^{\circ}C$, 7 hrs) were studied. Raw sample contained 1.3% total lipid (TL) which consisted of 35.1% neutral lipid (NL), 18.0% glycolipid (GL) and 46.9% phospholipid (PL), and dried sample contained 5.3% TL which consisted of 51.8% NL, 20.5%GL and 27.7% PL. There were about 40% decrease in PL content and a slight increase in NL content during drying. The NL of raw sample mainly consists of triglyceride (TG, 39.8%), free sterol (FS, 39.6%), free fatty acid (FFA, 12.2%). and also identified diglyceride (DG), monoglyceride and esterified sterol and hydrocarbon in less quantify. The percent of TG and FS decreased, while that of FFA and DG increased during drying. And main components in the PL were phosphatidyl choline (PC,45.6%), phosphatidyl ethanolamine (PE,34.8%), and followed by phosphatidyl serine (PS) and an unknown substance. In the components of PL, PE, PS and PC decreased slightly in order during drying. And major fatty acids of raw and dried samples were generally 16:0, 18: 1, 18:3, and 20:5. The content of the polyenoic acid such as 20:5 decreased. while the saturated acid increased slightly during drying.
The difference in content and composition of total lipid, lipid fractions and fatty acids of perilla leaves being used fresh vegetable was investigated in relation to the color of undersurface, i.e. green perilla leaves(GPL) and violet perilla leaves(VPL), by column- and thin layer- and gas chromatography. Total lipid(TL) content was of little difference between green leaves(GPL) (5.24%dw) and violet one (VPL) (5.02%dw), while neutral lipid(NL) content was higher In VPL(36.4% of TL) than GPL(34.7%). The major components were sterol ester and hydrocarbons(58.5%) and trigylcerides(14.9%) in NL, $mono-(42{\sim}45%)$ and $di-(13{\sim}15%)$ galactosyl digylceride in glycolipids(GL) and phosphatidyl ethanolamine$(40{\sim}45%)$ and phosphatidyl glycerol(13%) in phospholipids(PL) for both GPL and VPL. The number of component was 10 in all three fractions. The similarity of component between GPL and VPL was in decreasing order of NL(r=1.00), GL(r=0.997) and PL(r= 0.968). Major fatty acids were linolenic $(62{\sim}64%)$, palmitic$(10{\sim}12%)$ and linolic$(9{\sim}10%)$ for TL, linolenic, palmitic, myristic(43, 15, 14%) for NL, linolenic, oleic, palmitic(79, 11, 8%) for GL and linolenic, linoleic, palmitic(36, 25, 23%) for PL. Unsaturated fatty acid percentage was higher only in GL of VPL than GPL. The similarity of fatty acid composition between GPL and VPL was least in PL and so it was among other fraction with PL.
Lipids isolated from three barley samples were identified and quantitated by column, thin layer and gas liquid chromatographic techniques. These lipids were shown to consist of 69.3-73.1% neutral lipids, 9.6-16.5% glycolipids, and 14.2-17.9% phospholipids. Among the neutral lipids, triglycerides were predominant (54.2 to 55.7%) with smaller amounts of 1,2-diglycerides, 1,3-diglycerides, free sterols, free fatty acids, steryl esters, and three unknown being present. Among the glycolipids, digalactosyl diglycerides (31.3 to 33.2%) and monogalactosyl diglycerides (26.2 to 29.6%) were the most abundant. Esterified steryl glycosides, steryl glycosides, cerebrosides, sulfolipids, and an unknown component were present as minor components. Of the phosopholipids, phosphatidyl cholines and serines, lysophosphatidyl cholines, and phosphatidyl ethanolamines were the major components, comprising over 80% of this class. The major fatty acids in the total and the three lipid classes were palmitic, oleic, linoleic and linolenic acids. However, the neutral lipids fraction contained more oleic acid than other lipid fractions, and the phospholipids fraction contained more palmitic acid than the other lipid fractions.
