Comparison of Amino Acid Profiles and Lipids of Two Strains of Common Carp, Cyprinus carpio (두 계통 잉어의 체성분 비교)

  • The differences of nutritive components in muscle and viscera of local and Israeli strains of common carp were examined. The crude lipid content in muscle was higher in the local carp than in the Israeli carp, but that in viscera was lower in the local carp than in the Israeli carp. There was no appreciable differences of crude protein and ash in viscera between local and Israeli carp. The distribution patterns of the total amino acid profiles for both local and Israeli carp were very similar. The principal amino acids were aspartic acid, glutamic acid, leucine and Iysine. They were 42 percent of total amino acids. Taurine and histidine were important part of free amino acids. Eicosapentaenoic acid and docosahexaenoic acid content in the polar lipids were high in both strains.

Fatty Acid Composition of Lipids obtained from Korean Soybean Varieties (한국산 콩의 품종별 지방질의 지방산 조성)

  • The fatty acid compositions of lipids from five local varieties and three imported varieties of soybean were determined. Total and free lipids of the samples were extracted with chloroform-methanol mixture (2:1, v/v) and ethyl ether, respectively. The ether-extracted samples were extracted again with water saturated n-butanol to obtain bound lipids. The average percent contents of the lipid fractions were 21% (total), 18% (free), and 3.3% (bound). The results indicated that seven fatty acids (10:0, 12:0, 14:0, 16:0, 17:0, 20:0 and 22:0) were identified as minor fatty acids for all the varieties examined in this study. The relative contents of 18:2 were the highest (50.1-59.7%) in all the lipid fractions, and the contents in total and free lipids were in-fluenced by the local varieties. Little difference in fatty acid composition was noted between the total and free lipids of the samples. Total and free lipids contained more 18:1 (about 10%) and less 16:0 (about 40%) and 14:0 (about 34%) than did the bound lipids. The relative percent contents of 18:3 in the total, free and bound lipids were on average 8.9, 9.0, and 7.3 percents. The content in the total lipids of Gwanggyo varieties showed the highest level (11.1%), and in the bound lipids of Eundaedoo varieties the lowest (6.0%). In case of the total and free lipids, those varieties which showed higher relative contents of 18:1 generally had lower relative contents of 18:2 and 18:3.

  • Chemical components relevant to the characteristic antimicrobial activities of the Korean chestnut (Castanea crenata S. et Z.) leaves and flowers were analyzed. The composition of free sugar were sucrose, maltose in the chestnut flowers and sucrose, glucose, fructose in the chestnut leaves. The contains of tannin were 0.16% in the chestnut flower and 1.98% in the chestnut leaves. In fatty acids case, the linoleic contents were significantly high in the chestnut leaves and flowers. The organic acids showed high composition to succnic and citric acid in the chestnut leaves. The ammo acid compositions showed high contents to aspatic acid, proline, glutamic acid, glycine and methionine in the chestnut leaves and flowers. The total amino acid showed significantly higher in the chestnut leaves than flowers. The major minerals contained in the chestnut leaves and flowers were K, Ca, Ng, Fe, Mn and Al. Ascorbic acids were detected highly in the chestnut leaves and flowers.

  • The fatty acid composition of the oil in the rapeseed grown by spring and autumn planting were determined by gas liquid phase chromatography. Erucic acid content of the rapeseed oil grown by autumn planting was higher than that produced by spring planting, but the contents of oleic acid and linoleic acid were lower in autumn planting than those in spring planting. There was significant difference at 1% level between seasonal plantings. The reasons for the different fatty acid compositions were the low integrated temperature, the high amount of precipitation and the short hours of sunshine during the maturing period in autumn planting.

  • This study was designed to observe the effects of the fish oil and some seed oils on the improvement of the fatty acid compositions of liver and brain tissue in rats. In order to induce the hypertriglyceridemia in the rats of the Sprague-Dawley, 12% coconut oil and 3% each of olive oil, lard, fish oil, perilla oil, corn oil, red pepper seed oil and evening primrose oil were administered to the rats for 4 weeks. In the fatty acid composition of liver lipid, n-3 PUFA contents were most in the fish oil and perilla oil groups of phospholipid fraction, and n-6 PUFA contents were most in the corn oil, red pepper seed oil and evening primrose oil groups of triglyceride fractions. Fatty acid composition of liver lipid fractions were influenced from the fatty acid composition of the test lipids. In the fatty acid composition of brain phospholipid, n-3 PUFA contents (8.8~17.2%) were most in the fish oil group, and n-6 PUFA (34.6~38.2%), though it contains high percentage, showed little difference between groups.

  • This study was performed to determine whether the length of the feeding of the controlled experimental diet to the dam resulted in changes to the dam milk or pup brain fatty acid composition. As a first method, females have been obtained at 3 weeks of age and fed the experimental diet throughout their growth to adulthood including mating, pregnancy, and lactational periods. As a second method, in order to shorten this long and expensive process, time-pregnant dams were obtained as early as possible from a commercial supplier, on day 3 of gestation, and immediately switched to the experimental diet. At birth, the milk of dams prepared by these two different methods was compared by collecting the stomach contents of the pups. This showed a slight increase in docosahexaenoic acid (DHA) and arachidonic acid (AA) in the pup stomach contents from the time-pregnant dams. There were no significant changes in the brain fatty acid composition of pups between the two different lengths of the experimental diet intake. By the 10 days of age, there were only minor differences in the milk fatty acid composition of pup stomach contents from the two sets of dams. However, the pup brains of the time-pregnant groups at 10 days showed increased AA and DHA due to intake of the chow diet including AA, DHA and eicosapentaenoic acid (EPA). Thus, the history of the maternal feeding could affect the results under these particular circumstances, but the differences were minimal.

저장기간에 따른 지방산 조성이 다른 콩가루의 품질 변이

  • 식생활이 풍요로워진 우리나라는 국민의 포화지방산 섭취량이 빠르게 증가하고 있는데 섭취량을 줄일 필요성이 있다. 최근 우리나라의 콩가루, 두유 시장규모는 건강과 국산 열풍으로 2016년부터 연평균 13%씩 성장 중이며 국산콩 사용량이 두부 다음으로 많다. 콩은 풍부한 단백질과 더불어 건강에 좋은 불포화 지방산함량이 높다. 하지만 높은 불포화지방산 함량은 저장성을 떨어뜨리는 역할을 한다. 본 연구에서는 불포화지방산함량이 상이한 3가지 콩을 3종류의 포장재에 밀봉 포장하여 상온과 저온에서 3개월간 저장실험을 하였다. 저장안정성 평가는 유지를 추출하여 산가측정을 하고 가스크로마토그래피(GC)를 이용하여 지방산함량 변화를 확인하였다. 산가는 저장기 간에 따라서 매달 산가가 유의적으로 증가하는 경향을 보였으며, 저장 온도에 따라 초기, 상온, 저온모두 각각 유의적인 차이를 보였다. 콩 종류에 따라서도 유의적인 차이를 보였는데 포장재에 따라서는 차이를 보이지 않았다. 저장기간에 따라 콩가루의 지방산 변화는 대찬콩은 저온에서 올레산이 감소하는 경향을 보였고, 호심콩은 상온, 저온 처리구 모두에서 올레산과 리놀레닉산이 감소하는 경향을 보였으며, 49-3-1-8 콩은 상온, 저온 처리구 모두에서 올레산, 리놀레산, 리놀레닉산이 감소하는 경향을 보였지만 호심 상온처리구에서 리놀레닉산이 감소한 것을 제외하고는 유의미한 결과값을 얻지 못하였다. 저장 3개월차에 산가는 상온, 저온 처리구 모두에서 호심콩가루가 가장 낮게 나왔는데 이것은 이중결합이 하나라 비교적 안정성이 높은 올레산함량(~80%) 때문으로 보인다. 반면에 49-3-1-8 콩은 이중결합 3개로 가장 산화되기 쉬운 리놀렌산 함량이 비교적 많아 가장 산가가 높게 나왔다. 결과적으로 올레인산 함량이 높은 호심 콩 가루가 가장 저장안정성이 좋을 것으로 보인다.

  • 동양의학에서 강정 강장제로서의 귀히 여겨지는녹용의 유효성분과 또한 녹각과 그 유효성의 차이를 찾기 위해 무기질, 아미노산과 지방산 조성 등을 비교 검토하였다. 무기질 조성은 녹용과 녹각에서 Ca의 함량이 제일 높았고, Na과 K 함량도 상당히 높았으며 Hg 등 중금속은 전혀 검출되지 않았으며, 녹각에서는 Mn과 Fe이 미량 검출되었다. 녹용의 지방산은 포화지방산보다 불포화지방산 함량이 월등히 높았으며 그 중에서도 동맥경화증을 경감시킨다고 하는 docosahexaenoic acid가 43.73%로 제일 높았고, 녹각에서는 녹용에 비해 전반적으로 함량이 낮았다. 아미노산은 녹용에서 총 17종이 검출되었는데, glycine 함량이 제일 높았고, alanine과 proline 순이었다. 이는 collagen이 녹용의 상당부분을 차지한다는 것을 시사하며, 녹각에서는 비록 함량은 적었지만 10종이 검출되었으며, glutamic acid, proline, glycine과 alanine 등도 상당히 함유되어 있었다.

Changes of Fatty Acids and Amino Acids Contents of Korean Native Commercial Ducks Meats with Different Raising Periods (사육 기간에 따른 토종 실용오리의 도체 내 지방산과 아미노산 함량 변화)

  • This work was carried to evaluate effect of different raising periods on fatty acids and amino acids properties of Korean native commercial ducks. Korean native ducks (n = 90) from National Institute of Animal Science (RDA, Korea) were divided into 6 groups (15 birds/group) and were fed with meat-type duck diets for 8 wk old. When ducks grew at specific wk (6, 7 and 8 weeks), 2 ducks per group were slaughtered at 6, 7 and 8 wk old. Myristic acid (C14:0) and palmitic acid (C16:0) of saturated fatty acid (SFA) were the highest and arachidonic acid of unsaturated fatty acid (USFA) was the lowest at the age of 6 weeks old (P<0.05) at the age of 6 weeks old among treatments. Stearic acid of SFA was the highest at the age of 7 weeks old among treatments. There was no significant difference on other fatty acids among treatments. SFA and USFA have significant difference at the age of 8 weeks (P<0.05). Histidine, leucine, lysine, methionine, phenylalanine and threonine of essential amino acid increased with passing weeks (P<0.05). There was no significant difference on isoleucine and valine (P>0.05). Every non-essential amino acids were the highest at the age of 8 weeks among treatments (P<0.05). In conclusion, fatty acid contents and amino acid contents increased until the age of 8 weeks old, but further research was needed because of deficiency of data to suggest the correct shipping time.

Seasonal variation in the body composition, amino acid, fatty acid and glycogen contents of triploid Pacific oyster, Crassostrea gigas in western coastal waters of Korea (서해안 3배체 굴 (Crassostrea gigas) 의 계절별 체성분, 아미노산, 지방산 및 글리코겐 함량 변화)

  • We examined the seasonal variation of the proximate, amino acid, fatty acid composition and glycogen contents of triploid Pacific oyster cultured in western coastal waters of Korea in 2015. The specimens were collected in February, May, August and November from off-bottom farming site. The lipid content was the highest in winter season (February, $2.10{\pm}0.06%$), the protein content was the highest in autumn season (November, $9.09{\pm}0.04%$) while the moisture and ash content was the highest in summer season (August, $86.00{\pm}0.12%$ and $2.67{\pm}0.03%$, respectively). The total amino acid contents was the highest in winter season (1,011.5 mg / 100 g), decreased gradually and was the lowest in summer season (486.7 mg / 100 g). The total amino acid composition was dominated by taurine, aspartic acid, glutamic acid, glycine and alanine. In the fatty acid composition, the two fatty acids, eicosapentaenoic acid and docosahexaenoic acid, which comprised that as much as 50% of the total fatty acid contents, were dominated during all season. The glycogen content was the highest in summer season ($1.26{\pm}0.03g$ / 100 g) although it was stable during the other season with the range of $0.69{\pm}0.04-0.86{\pm}0.01g$ / 100 g. Taken together, these results suggest that triploid pacific oysters have high commercial value not only in winter season but in summer season because they do not spawn and have high contents of glycogen comparing with those of diploid oyster in this period.
