Acoustic Scattering Characteristis of the Individual Fish (어체의 초음파 산란특성에 관한 연구)

  • The estimation of the fish biomass density or the size of fish by means of the acoustic equipment is an important part in the quantitative assessment of fisheries resources. The precision of such estimates depend upon the target strength of fish and the accuracy to which the acoustic equipment has been calibrated. This paper examine the accuracy of the digital measurement system which is manufactured by way of trial in order to masure the target strength of fish, and calibrations of that system carry out with an ogive and a ellipsoid made of the aluminum and the epoxy, respectively. Furthermore, measurements of target strength for eight species of fish are made at 25, 50, 100 kHz. The accuracy of the digital measurement system is compared the theory with measurements on ogive and ellipsoid, and the agreement is reasonable. Result of establishments on the target strength to fish length and to fish weight regression obtained from the measurements are available to provide the methods of design for use in interpreting acoustic measurements of fish abundance on the experimented eight species.

CONDITIONS FOR ALASKA POLLACK AND FILE FISH SKIN GLUE PROCESSING AND THE QUALITY OF PRODUCT (명태피 및 말쥐치피를 이용한 피교의 최적가공조건과 품질에 대하여)

  • The purpose of this study is to complish a method of fish glue malting with residual products such as fish head and skin discarded from sea food processing. Using the skins of Alaska pollack and file fish from fillet packers, the optimum conditions of skin glue processing were investigated and physical and chemical properties of the product were also determined. The yields of Alaska pollack, Thelagra calcogramma, skin and file fish, Novodon modestus, skin to the total body weight were $4.6\%\;and\;5.0\%$ respectively. The optimum conditions for a $49.3\%$n yield Alaska pollack skin glue processing were considered the extraction of previously tinted in $0.1\%$ calcium hydroxide solution for 3 hours with the additional water as much as 3 times of sample weight at $70^{\circ}C$ for 3 hours under the controlled pH 5.0. The conditions for file fish skin glue were similar to those of Alaska pollack except the addition of five times of water to the weight of sample skin needed for extraction. The content of crude protein of Alaska pollack and file fish skin glue were $98.0\%\;and\;96.0\%$ respectively. The contents of crude ash and crude lipid were not different from that of chemical grade gelatin. Relative viscosity, melting point, gelation temperature and jelly strength of Alaska pollack skin glue marked 5.84, $21.8^{\circ}C,\;7.1^{\circ}C\;and\;10.0g$ respectively and those of file fish skin glue showed $5.79,\;25.0^{\circ}C,\;7.4^{\circ}C\;and\;11.6g$ respectively.The color and turbidity of Alaska pollack skin glue are slightly superior to those of file fish skin glue. It is supposed that the extract residue of skin glue is valuable for use the animal feeds by the results of amino acid composition. And the ratio of each amino acid content to the total amino acid of Alaska pollack and file fish skin glue is similar to that of chemical grade gelatin.

  • File fish Navodon modestus was dehydrated in cabinet type hot-sir drier at $48-50^{\circ}C$ for 11 hours and also yellowfin puffer Fugu xanthopterum was dried in open air at $26-28^{\circ}C$ for 30 hours. Nucleotides and their related compounds were collected by extraction with cold perchloric acid and their amounts were determined by anion exchange column chromatography. The contents of ADP, IMP, ATP and hypoxanthine in fresh file fish muscle were 22.9, 12.1, 4.9, and 3.2 ${\mu}mole/g,$ dry wt. respectively. AMP and inosine were 0.9 ${\mu}mole/g,$ dry wt. equally. In fresh yellowfin puffer muscle, the contents of ADP, ATP, AMP, inosine and hypoxanthine were 25.6, 2.4, 1.6, 0.3, 0.6, and 0.4 ${\mu}mole/g,$ dry wt. respectively. In the case of file fish, ADP and ATP tended to degrade rapidly during hot-air dehydration. The contents of IMP were decreased slightly while AMP and inosine were increased. And another case of yellowfin puffer, ADP also tended to degrade rapidly during sun drying while AMP, IMP, inosine and hypoxanthine were increased. Especially, in both case of file fish and yellowfin puffer, inosine was increased twenty five and thirty five times during drying respectively.

Flavor Components in the Filefish Processing (말쥐치 가공중 향기성분에 관하여)

  • Volatile compounds were collected by simultaneous distillation extraction and carbon dioxide method, and analyzed by GC and GC-MS. The neutral fraction obtained from the whole steam volatile concentrate 55 kinds of components, phenolic fraction had 4 kinds of components, basic fraction had 13 kinds of components and 10 kinds of components were in acidic fraction. Alcohols, propanols, butanols, octanols, dodecanols etc. and aldehydes, pentanals, hexanal, 2-methyl-1-propanal, heptenal etc. were highly increased after boiled and roasted. And these compounds were contributed to formation of filefish flavor. The molecular ion peak of phenolic fraction was generally appeared in the range 100 to about 160. From the basic fraction, 2-methylpyrazine, 2,5-dimethylpyrazine, 2-ethyl-3,5-di-methylpyrazine and 2-methylpyridine were identified. The contents of basic compounds and furans obtained from the neutral fraction were increased at the higher heating temperature. The flavor of acidic fraction was influenced by the low molecular as isovaleric and valeric acid.

PHOTOTAXIS OF FILEFISH, CONGER EEL AND CRUCIAN CARP (어류의 주광성에 관한 연구 -쥐치, 붕장어, 붕어-)

  • The purpose of the present study is to find the light intensity which induces maximum gathering rate and to observe the variation of the gathering rate both in daytime and at night by using three species of commercial fishes: filefish, Stephanolepis cirrhifer (Temminck et Schlegel), conger eel, Astroconger myriaster (Brevoort) and crucian carp, Carassius oarassius (Linnaeus). An experimental tank $(360L\times50W\times55Hcm)$ was set up in a dark room. An illumination system was attached to one end of the tank to control horizontal, light intensity. Six artificial light sources were prepared by combination of two light bulbs (5W, 150W) and seven filters. During the experiment water depth was maintained 50 cm level in the tank. The tank was marked into six longitudinal sections each being 60 cm long to observe the distribution of fish. The fish were acclimatized in dark condition for 40 minutes prior to the main experiment. Upon turning on the light, the number of fish .in each section was counted 40 times every 30 seconds, and the gathering rates were obtain from the average number of fish in each section. In filefish the light intensity inducing maximum gathering rate was 0.7 lx(0.5-1.1 lx), and there nab little difference between day and night. Gathering rate varied propotionally to the length of illumination time. In conger eel the light intensities inducing maximum gathering rate were 1.9 lx(1.2-2.9 lx) in daytime and 5.2 lx (3.2-7.7 lx) at night. Thus, there was a considerable difference between day and night, but the gathering rate remained almost unchanged regardless to the length of illumination time. In crucian carp gathering rate did not show a definite pattern hut fluctuated irregularly. The gathering rate, however, was slightly higher at 16.21 lx, and there was little difference between day and night.

Preparation and Keeping Quality of Vacuum-Packed and Seasoned-Dried Filefish Products (말쥐치 조미건제품의 품질개선에 관한 연구)

  • Vacuum-packed and seasoned-dried products of filefish, Navodon modestus, caught in large quantities in the coasts of Japan and Korea, were prepared tentatively and stored at $35^{\circ}C$ for $3\sim4$ months to test their keeping quality. Headed, eviscerated, ana skinned filefish were purchased from Tokyo central wholesale market and filleted. The fillets were seasoned with the seasoning powder prepared from sugar, sorbitol, salt, glutamate, 5'-ribonucleotide, and either beef flavor (Flava-Beef, Kyowa Hakko Kogyo Co. Ltd.), red pepper, or smoke flavor (Smok-EZ, Alpha Foods Co. Ltd.). After seasoning, the fillets were dried at $39\sim41^{\circ}C$ for several hours, vacuum-packed in the bag of plastic film, and cooked in water of $80^{\circ}C$ for 40 min. Two kinds of products different in moisture level were prepared : one containing moisture of $26\sim29\%$ and the other $40\sim46\%$. The moisture level, water activity, color value (L,a, and b values), texture, and viable counts of bacteria of these products were determined during storage at $35^{\circ}C$. From the results obtained, it became clear that the products could be preserved in good condition for $3\sim4$ months at $35^{\circ}C$, though they slightly decreased in the softness with decrease of moisture content and developed a pale brown during storage. Judging from organoleptic evaluation on the flavor, the products containing beef flavor as a seasoning was most desirable.

Change in Protein Composition of Filefish Muscle during Post-Mortem Lapse (말쥐치육의 사후경과에 따른 단백질조성의 변화)

  • Protein compositions of filefish (Navoden modestus) skeletal muscle and their changes in postmortem with reference to freshness kept at $0^{\circ}C$ were investigated. The muscle protein was approximately composed of $31\%\;sarcoplasmic,\;55\%$ myofibrillar, $10\%$residual intracellular, and $4\%$stroma protein. The sarcoplasmic and myofibrillar protein decreased while the residual intracellular protein increased with the decline of freshness during post-mortem lapse. In the analysis of electrophoretograms and its densitograms, the myofibrillar protein resembled to other fishes in protein composition: $70\%$ actin and myosin, $20\%$ regulatory proteins, and $10\%$ unknown proteins. And most of the residual intracellular protein was estimated as myofibrillar protein. Troponin T, troponin C and myosin light chain 2 of the myofibrillar protein constituents were decreased during storage. Amino acid composition of the protein from the at-death muscla was similar to those of other fishes except that tryptophan and sulfur-containing amino acids were scant. Proline and cysteine were remarkably decreased whereas leucine, isoleucine and phenylalanine were slightly increased in the protein from the muscle lapsed of 18 days. In free amino acid composition, alanine, glycine, lysine, and especially taurine were rich in the at-death muscle. The muscle lapsed of 18 days showed an increase of taurine, histidine, valine and methionine, and a decrease of lysine, arginine, aspartic acid, threonine, leucine, and isoleucine.

  • Effects of raw material composition, feed moisture and process temperature on chemical, physical and sensory properties of extrudates produced by a single-screw extruder from the mixtures of rice flour, isolated soy protein and file fish were evaluated through response surface methodology (RSM). Nitrogen solubility index (NSI), integrity index (II), rehydration ratio (RR), density, and the external appearance were measured as indices of physicochemical and sensory properties of extrudates. RR was negatively correlated with density (R=-0.742, p<0.0l). Increased amounts of rice flour in feed mixtures resulted in increased RR. The extrudate prepared from the mixtures of ISP, rice flour and file fish showed the highest sensory score at which extrusion temperature was 13$0^{\circ}C$ or above.

  • Seasonal variation in species composition of fish in the coastal water off Heunghae were determined using the samples collected by trammel net from Hay, 1989 to October, 1990. Of 28 species identified, three resident species such as Sebastes inermis, Mexagrammos otakii and Hexagrammos agrammus predominated in abundance except fall. In fall, temporal species such as Stephanolepis cirrhifer and Thamnaconus modestes were dominated. The number of species and abundance did not show seasonal variation. Mean catch per unit effort was 1,938 g (11 individuals) with a 100 m net during one night, Analysis of size composition of dominant species revealed that most fish collected were composed mainly of large individuals (>20cm) whose ages were older than 3 years.

Studies on the Properties of Enzymatic Hydrolysates from File-fish (말쥐치 단백의 효소 가수분해물의 특성에 관한 연구)

  • The purpose of this study was to elucidate characteristics of hydrolysates from file-fish flesh with various proteases. File-fish flesh was chopped, homogenized with water, and hydrolysed by 8 different kinds of commercially available protease. High production of peptide was observed in bromelain and neutrase treatment. On the other hand, large amount of free amino acid was observed in esp/sav and pronase treatment. Neutrase and pancreatin hydrolysate contained large amount of 5'-GMP. Organoleptic studies showed that the bromelain, esp/sav and protease hydrolysate had strong bitter taste, while pronase and esp/sav hydrolysate had strong umami taste. From these results, pronase was found to be suitable enzyme for producing file-fish hydrolysate.
