Quality Characteristics of Kimchi Prepared with Major Spring Chinese Cabbage Cultivars (주요 품종별 봄배추 김치의 품질특성)

  • Characteristics of major suing Chinese cabbage cultivars in Korea, Norangbom(Nor), Gonaenggiyeurum(Gon), Maereuk (Mae) and Housekumgarak (Hou), and their qualities of Kimchies were investigated. Mean weight of the cabbages was in the range of 1.39∼2.40 kg, and was higher Gon, Mae, Nor, Hou in order. Leaves number was Gon 45, Nor 56, Mae 59 and Hou 56 pieces. Sensory taste of raw Chinese cabbage was best in Nor. Decreasing rate of gumminess and chewiness by salting was the highest in Gon and the lowest in Nor. fermentation of Gon and Nor-Kimchi were faster than Mae and Hou-Kimchi. Amount of gas formation during fermentation was the highest in Mae-Kimchi and lowest in Nor-Kimchi. Decreasing rate of AIS was the fastest in Mae-Kimchi and the latest in Hou-Kimchi. Hardness and gumminess of Kimchi fermented for 21 days were to be ordered Mae-Kimchi, Hou-kimchi, Gon-Kimchi and Nor-Kimchi. Overall acceptability by the sensory test was good in Nor- and Hou-Kimchi.

Effect of Granite Porphyry Supplementation on Growth Performance and Meat Sensory Quality in Broiler Chickens (맥반석의 첨가 급여가 육계에서 성장성적 및 관능적 특성에 미치는 영향)

  • This experiment was conducted to investigate the influence of dietary supplementation of granite porphyry (GP) on growth performances and meat sensory quality in commercial broiler chicks. A total of four hundred-fifty 5-day-old male broiler chicks were divided into 15 pens and fed one of five experimental diets for 5 weeks; 0% GP with antibiotics (Control), 1% GP with or without antibiotics, and 2% GP with or without antibiotics. Final body weight and daily weight gain of all GP supplemented groups were slightly higher than those of control. Feed conversion rate was improved in GP 1 % supplemented groups, although there was no significant difference. Feeding antibiotics in addition to GP did not influence the growth parameters. Relative weights of liver and abdominal fat tended to be reduced in broiler chickens fed GP supplemented diets. Feeding of 2% GP diet resulted in a significant improvement in meat sensory quality in terms of taste and tenderness(P < 0.05), but the effect of the 1% GP on meat sensory quality was not significant. The results of this study indicate that GP could be used as a favorable feed additive for production of sensory-enhanced broiler meats.

  • The reduced pressure storage of apple, American Summer Pairman, was investigated comparing with the other storage methods and the following results were obtained. 1. The reduced pressure storage was better to extend the storage life and freshness of apples than the controlled atomoshere storage. 2. Decreasing the pressure of chamber atmosphere to about 20 cmHg showed the best result among several pressure conditions. 3. As for the surface treatment of the apples, poly-ethylene film wrapping showed to be the most favorable method in a short-term experiment. In a long-term experiment, however, poly-ethylene film wrapping seemed to cause apples rot. Poly-vinyl acetate coating seemed to keep the apples from color changing, but it caused an unpleasant odor and a peculiar taste. No significant effect was observed in Gibberellin. 4. Total sugar and reduced sugar of apples were decreased after a certain period of increasing. Acid and Vitamin C, however, gradually decreased from the beginning of storage.

Growth and Critical Light Intensity at Cotyledon Stage of Cornus controversa Hemsl. Seedling (층층나무 자엽단계(子葉段階) 유묘(幼苗)의 생장(生長)과 한계광도(限界光度)에 관(關)한 연구(硏究))

  • To investigate the effects of light intensity on the growth, and the critical minimum light intensity for growing of Cornus controversa seedlings at the stage of cotyledon, hypocotyl elongation, cotyledon expansion, the times of leaves appearance, dry weights of each organ, and specific leaf area(SLA) were measured on a growth chamber with several light intensity gradients(385, 32, 17, 8, and $5{\mu}mol\;m^{-2}s^{-1}$). There was a positive correlationship between the size of cotyledon and the biomass of cotyledon and total seedling. Hypocotyl was more elongated under relatively low light intensities, such as 32, 17, 8, and $5{\mu}mol\;m^{-2}s^{-1}$ than under $385{\mu}mol\;m^{-2}s^{-1}$ light intensity, however, dry weight of the hypocotyl was adverse. As the light intensities decreased, the leaf appearance was delayed and the number of leaves decresed. In addition, leaves did not appear under $8{\mu}mol\;m^{-2}s^{-1}$ and $5{\mu}mol\;m^{-2}s^{-1}$ light intensity. Although cotyledons were more fully expanded under 32 and $17{\mu}mol\;m^{-2}s^{-1}$ light intensities than $385{\mu}mol\;m^{-2}s^{-1}$ light intensity, the dry weights of cotyledons were greater under the high light intensity. The dry weight of cotyledon, hypocotyl, root and leaves showed a decreased pattern with decreasing light intensities, but root to shoot(hypocotyl+leaves) ratio rapidly increased. Roots did not develop below $8{\mu}mol\;m^{-2}s^{-1}$ light intensity. In conclusion, the results showed that the critical minimum light intensity for growing of Cornus controversa seedlings was above $17{\mu}mol\;m^{-2}s^{-1}$ light intensity.

  • This study was carried out to investigate the influence of light intensity on the growth of Korean white pine (Pinus koraiensis) seedlings. The seedlings were grown under four different relative light intensities: 100%, 63%, 37%, and 19% of full sunlight by covering with saran screen on seed bed. The results obtained were summarized as follows; 1. The highest shoot elongation was found at 37% in relative light intensity (RLI) plot, and the best growth in root, seedling length and diameter increment appeared at 100% on RLI plot. Contribution rates of shading to growth in shoot elongation, root growth, seedling length, and diameter increment were 9.3%, 26.2%, 21.0%, and 48.7%, respectively. 2. The greatest number of one-year-old needle fascicle was found at 100% in RLI plot, whereas that of two-year-old needle fascicle appeared at 37% in RLI plot. The contribution rate of the light intensity to number of needle fascicle was 3.9% and factor of leaf age contributed to number of needle fascicle in 27.8%. The length of needles grown under different light intensities varied with needle ages. The longest length of new needles appeared at 37% in RLI plot, but old needles were not clear in influence of light intensity. The contribution rate to needle length by the light intensity was 2.5%. 3. The heaviest value of the fresh and dry weight of seedlings appeared at 100% of RLI plot then decreased with light intensity. The contribution rates to fresh and dry weight by the shading were 38% and 7.6% respectively. 4. The largest value of the dry weight of needles appeared at 100% of RLI plot and then decreased with light intensity. The contribution rates to dry weight of needles by the light intensity was 13.18%. 5. The values of T/R ratio increased with decreased light intensity and the contribution rate was 7.0%. 6. Positive correlation and linear regressions were recognized between dry weight of leaf and other factors (dry weight of shoot, root, seedling and diameter increment).

Effects of the β-Glucan- and Xanthan gum-based Biopolymer on the Performance of Plants Inhabiting in the Riverbank (바이오폴리머 신소재가 하천 자생 식물 발아 및 생장에 주는 영향)

  • Biopolymer based on microbial ${\beta}$-glucan and xanthan gum is a rising geotechnical material that can enhance the cohesion between soil particles and consequently reduce soil erosion. Recently, biopolymer is proposed to utilize for the riverbank strengthening. As an effort of the ecological assessment of biopolymer application in civil engineering, this study examined the effects of biopolymer on seed germination and growth of nine plant species inhabiting in the Korean riverside. Responses of above-ground growth to the biopolymer differed among plant species. One species grew less but others maintained their growth when plants were grown in the soil with biopolymer. In contrast, root grew more vigorously and root/shoot ratio decreased in the biopolymer across testing plant species. These results indicate that biopolymer application on the river bank likely stimulate root growth of native plant species, which, in turn, possibly reinforces riverbank. Species specific responses of above-ground growth implies that ecological effects of biopolymer application would depend on the species composition of the ecosystem.

The Quality of Milled Rice with Reference to Whiteness and Packing Conditions during Storage (백도 및 포장조건별 쌀의 저장 중 품질 특성)

  • This study investigated the effectsof whiteness and packing conditions on the quality characteristics of milled rice during storage at $25^{\circ}C$. Three kinds of packing materials (kraft paper sealed polyethylene and perforated polyethylene) were used to pack milled rice of different whiteness grades (36, 38, 40 and 42). The moisture content and weight of milled rice packed in kraft paper dropped very rapidly compared to values from milled rice packed in polyethylene because of high gas exchange through the paper. On the other hand, the increase in fat acidity of milled rice packed in kraft paper was less than that of milled rice packed in polyethylene because the moisture content of paper-packed rice fell rapidly. The overall quality of cooked rice rose with whiteness, and dropped with extended storage. The overall eating quality of milled rice paced in perforated polyethylene was bestwhen rice was prepared for the table after 8 weeks of storage.

Quality Effects of Various Pretreatment Methods on the Properties of Peeled Chestnut during Storage (깐밤의 전처리 방법이 저장 중 품질에 미치는 영향)

  • In this study, the quality effect of soaking in alum water, soaking in electrolyzed oxidizing water, and freezing during storage, on peeled chestnuts, were analyzed. When soaked in 0.1% (w/v) alum water, peeled chestnuts showed good characteristics in terms of weight loss, decomposition, and color preservation. However, texture and taste qualities rapidly decreased with increases in storage time. When soaked in twice their own weight of electrolyzed oxidizing water(pH 2.61, ORP 1,142 mV) for 10 min, the samples were preserved in an optimally edible condition. When frozen at $-10^{\circ}C$ for 5 min, the samples were suitable for use as material for processed chestnut produce, as was also the case when pretreatment with electrolyzed oxidizing water was employed.

Effects on Storage with Various Films and Storage Temperature of Pholiota adiposa (검은비늘버섯의 포장재와 저장온도에 따른 저장 효과)

  • This study was earned out to develop storage method for the keeping freshness with various packing film(Wrap, PE, PP and AF) and storage temperature(l, 3 and 6$^{\circ}C$) of Pholiota adiposa(CBPM-no6) mushroom. The rate of weight loss packed with Wrap film was 3.17%, but AF film was 1.08% after 18days. As the storage periods, lightness and yellowness of mushroom packed with PE, PP and AF were slightly increased, while Wrap film was decreased. The color of original raw mushroom preserved 3days using Wrap film and 18 days using PE, PP and AF. As storage temperature high, the rigidity of mushroom decreased. Rigidity of mushroom packed with AF film was less change compared with the other film. Freshness degree of mushroom(refer to Minamide method) could preserve for 3 days using Wrap, 6 days using PE, 9 days using PP and 15days using AF film at 1$^{\circ}C$.

Effects of Refrigerated Storage Temperature and Duration on the Seedling Quality of Bare Root Plants and Container Seedlings of Quercus variabilis and Zelkova serrata (저장 온도 및 기간이 굴참나무와 느티나무 노지묘 및 용기묘의 묘목품질에 미치는 영향)

  • This study was conducted to evaluate optimal storage techniques for bare root plants and container seedlings of Quercus variabilis and Zelkova serrata in order to maintain high quality of seedlings until planting. Refrigerated storage treatments were given at two temperatures (-2℃ [freezing] and 2℃ [cooling]) for nine different durations (0, 15, 30, 60, 120, 180, 240, 300, and 360 days after storage). We analyzed total nonstructural carbohydrate (TNC) content and measured shoot moisture content (SMC) during the storage stage and survival rate (SR) and dry weight during the planting stage of seedlings. The TNC content and SMC of the seedlings of the two species decreased with an increase in storage duration. The TNC content of seedlings rapidly decreased after 180~240 days of storage. The TNC reduction rate in the freezing treatment was lower than that in the cooling treatment. Also, with an increase in the storage duration of the two species, the SMC reduction rate in the cooling treatment increased in comparison with that in the freezing treatment. In both the species, the SR after planting decreased rapidly after 60 days of cooling storage and 180 days of freezing storage, respectively. The SR after planting was less than 60% when the TNC content for both the species dropped below 20 mg g-1. In addition, the SR was lower than 80% when SMC measured before storage decreased by approximately 30% and 20% for Q. variabilis and Z. serrata, respectively. Our results suggest that cooling (1~2℃) storage is recommended for a short-term period (2 months or less), whereas freezing (-2~-4℃) storage is suitable for longer periods (2~6 months). These optimal storage techniques, allied with seedling harvesting and handling systems, will improve the quality of seedling production in nursery stages and increase seedling growth performances in plantations.
