The Textural Properties of Imitation Cheese by Response Surface Analysis (반응 표면분석에 의한 Imitation Cheese의 조직감 형성)

  • The effect of major ingradients (Water, Soybean oil, Na-caseinate, Soybean protein isolate, Corn starch. Lactic acid and disodium phosphate) on the textural properties of imitation cheese were studied by response surface methodology and evaluated by contour diagram. The hardness of imitation cheese was directly influenced by the contents of water, oil and Na-caseinate and also affected by the interactions between water and oil and corn starch and lactic acid/phosphate. The adhesiveness was strongly affected by the interactions between caseinate and lactic acid/phosphate, SPI and corn starch and corn starch and lactic acid/phosphate. The springiness was directly influenced by the contents of oil, caseinate and lactic acid/phosphate, and also affected by the interactions between SPI and lactic acid/phosphate and corn starch and lactic acid/phosphate. The melting property was strongly influenced by the contents and interactions of lactic acid/phosphate.

Effects of Emotional Labor, Nursing Organizational Culture on Self-efficacy in Clinical Nurses (임상간호사의 감정노동과 간호조직문화가 자아효능감에 미치는 영향)

  • The objective of this study was to the effects of emotional labor and nursing organizational culture on the self-efficacy among clinical nurses. The subjects of this study were the clinical nurses working at 6 general hospitals in C & D city. The self-reported questionnaires were administered to 475 clinical nurses. The levels of self-efficacy, nursing organizational culture and emotional labor of the subjects were revealed moderate to high. Self-efficacy and emotional labor, emotional labor and nursing organizational culture showed a negative correlation, Self-efficacy and nursing organizational culture showed a positive correlation. Nursing organizational culture affects the self-efficacy that is significant explanatory variables, of which variables are in general education, job satisfaction, and employee turnover experience. The findings suggested that Nurses' self-efficacy for managing environmental management programs with interventions seem to be necessary.

  • The purpose of this study was designed to help the operation of the hospital organization through analysis of factors influencing organizational commitment of general hospital nurses. 129 nurses in general hospitals were targeted in G City. This study was conducted to analyze the effects of group efficacy, self-efficacy, and nursing professionals on organizational commitment. T-test, ANOVA, Pearson's correlation coefficient, Descriptive statistics and multiple regression were used. Stepwise regression analysis found that organizational commitment was affected by group efficacy(β=0.240, p =.003), nursing professionalism(β=0.229, p =.004) and daytime work(β=0.249, p =.003), The F statistic was 10.478 (p <.001). Therefore, in order to improve organizational commitment, it will be necessary to prepare communication programs and cooperation programs per unit to improve collective efficacy. In addition, it is necessary to improve the system, such as a system dedicated to night workers, so that the working hours of nurses in general hospitals can be maintained constant. In addition, it is necessary to develop a support program so that nursing professionals do not decrease due to disappointment in reality in the nursing field.

  • This study was proceeded to find out the effect of learning orientation on the organizational cynicism by introducing organization-based self esteem as a moderating variable. For the experimental study 400 questionnaires were distributed to employees working in deluxe hotel in Seoul and 236 responses were used for the analysis. With SPSS statistical program reliability test, confirmatory factor analysis, and regression analysis were performed. The study found that the learning orientation had a significant effect on organizational cynicism and organizational-based self-esteem had a moderating effect between learning orientation and organizational cynicism.

군 장병 창업 프로그램이 개인의 자기효능감, 문제해결능력, 조직성과에 미치는 영향

  • 국가 경제의 활력을 위해 창업은 더없이 중요하다. 창업은 일자리를 새로이 창출하고, 기업 활동에 혁신을 도입하며, 경제성장을 유발하여 국가경제의 발전과 성장에도 기여한다고 할 수 있겠다. 위와 같은 창업의 중요성으로 인해, 창업을 촉진하는 것은 전 세계적으로 최우선 과제로 진행하고 있으며, 우리나라도 창업을 활성화하기 위해 정부 차원의 많은 지원과 노력을 아끼지 않고 있다. 최근 청년 실업률의 증가와 함께 특히 청년층의 진로 대안 마련이라는 사회적 문제가 큰 논점으로 부상하면서 우리 군에서도 청년층의 실업 문제의 해결과 새로운 고용의 창출을 위한 방안으로써 창업 프로그램을 도입하여 운영하고 있다. 본 연구는 군 장병 대상 창업 프로그램을 창업교육, 창업 멘토링, 창업 경진대회로 구분하여 각각의 프로그램 중 어떤 창업 프로그램이 군 장병의 자기효능감과 문제해결능력에 영향을 미치는지를 고찰한다. 또한, 군 창업 프로그램이 조직성과에도 영향을 미치는지에 대해 실증분석을 실시하며, 자기효능감과 문제해결능력을 매개로 조직성과에 영향을 미치는지를 확인하고자 한다. 본 연구의 검증 결과를 토대로 군 창업 프로그램의 중요성과 효과성을 알리고 현재 시행되고 있는 군 장병 창업 프로그램의 개선과 더불어 향후 군 장병에 대한 창업 지원정책 수립과 발전에 그 근거를 제공하고자 한다. 본 연구는 군 장병의 자기효능감과 문제 해결능력을 함양하기 위해 도입한 군 창업 프로그램의 실효성과 군 창업 프로그램이 자기효능감과 문제해결능력을 매개로 하여 조직성과에 유의미한 영향을 미치는지를 분석하고자 한다.

  • This study made an analysis of the relationship between the emotional labor and the organizational commitment and the mediating effect of job satisfaction of employees in senior employment agencies. A survey of 253 employees in Daejeon and Chungcheong areas was conducted. The important analysis methods are confirmatory factor analysis and bootstrap verification. The analysis results are employees' emotional labor had a negative effect on organizational commitment and the mediating effect of self-efficacy was proved significantly. For reducing emloyees' emotional labor, it is important to offer guidelines for improvement of emotional labor, regular inspection and education, and the proper measures of the administrators. To advance their self-efficacy, we need to offer education for the improvement of practice-based professionalism, education and administrative support to improve ethical consciousness, and appropriate emotional support service.

  • The purpose of this study was to investigate the influence of leadership types and self-efficacy, job satisfaction on organizational performance. The hypotheses were suggested and data analyses were performed to verify these hypotheses. Data gathering were performed by self-administered questionnaires on the samples of 423 mechanical fields employees in Busan & kyongnam. The results of structural model exhibit that transformational leadership, transactional leadership was positively related to elf-efficacy. And it was also found that self-efficacy, job satisfaction was positively related to organizational performance. Expecially, it showed self-efficacy, job satisfaction as a mediator on the relationships between the leadership types and organizational performance.

  • Purpose : This study was done to identify the relationship among Self-esteem, Nursing professional values, Organizational commitment in a diploma nursing students. Method : A descriptive research design was used in this study. The participants were 287 nursing students in J city who were surveyed between May 23 and May 27, 2015. The data were analyzed using SPSS WIN 17.0 Program, which determined frequency, percentage, mean, standard deviation, t-test, One-way ANOVA, Scheffe's test, Pearson correlation coefficient and Stepwise multiple regression analysis. Result : The nursing students investigated a mean of 4.07 and 3.93 on self-esteem and Nursing professional values respectively. They attained a mean of 3.75 on organizational commitment. There were positive correlation between self-esteem, nursing professional values and organizational commitment for nursing students. Two factors explained 47.2% of organizational commitment of nursing students. Conclusion : It is necessary to enhance positive organizational commitment to improve Self-esteem and Nursing professional values in clinical practice of nursing students. Also,

  • This study is to establish the effect of the call center counselors' personal characteristics and perceive organizational support(POS) on their organizational commitment and organizational citizenship behavior(OCB). through survey targeting 290 call center counselors in Seoul. Accordance with these conclusions, Self-esteem, Self-efficacy except Emotional Intelligence were positive(+) influence on Organizational Commitment. and Emotional Intelligence, Self-esteem, Self-efficacy were positive(+) influence on OCB. Also Self-esteem and Organizational Commitment, OCB were full mediation on POS And Self-efficacy and Organizational Commitment, OCB were part mediation on POS. This result implies call center needs the approach method and different perspectives to increase the degree of call center counselors' organizational commitment.

Variations in the texture properties of cooked rice as a function of instrumental parameter conditions (기기적 측정조건을 달리하여 측정한 쌀밥의 조직감 특성 변화)

  • This study aimed to examine variations in the texture profile analysis (TPA) of cooked rice in relation to the instrumental parameter conditions. The TPA of four types of ready-to-eat, white rice products was conducted in two levels of compression ratio (30 and 70%) and cross-head speed (0.5 and 1.0 mm/s). The properties of the four rice products significantly or non-significantly differed, depending on the instrumental parameter condition. Agglomerative hierarchical clustering, based on the five TPA properties such as hardness, adhesiveness, cohesiveness, chewiness, and springiness, revealed that clustering of the four rice products varied with the instrumental parameter condition. Additionally, the ratio of adhesiveness to hardness, an index of rice texture quality, showed a variation depending on the two instrumental parameter conditions. In conclusion, our findings demonstrate that the texture profile, texture-based sample clustering, and the ratio of adhesiveness to hardness vary with the compression ratio and cross-head speed in the TPA.
