  • The characteristics of dough and the quality of white pan bread with 0∼1.5% $\pi$-water were investigated. The fermentation volume and weight of the white pan bread with $\pi$-water (0.1%, 0.5%, 1.0%, 1.5%) was higher than that of the control. The volume of white pan bread with $\pi$-water (0.1%, 1.0%, 1.5%) was higher than that of the control. Color L value of crust with $\pi$-water increased from 34.98 to 36.38∼41.36 and increased from 34.32 to 34.90∼43.33 after 3 days. Color a value increased from 14.78 to 14.99∼16.75. The hardness of the white pan bread increased from 29011.0 g/㎤ to 18681.7∼43551.2 g/㎤ as the added amount of $\pi$-water increased. The overall acceptability score of white pan bread was the highest with 0.1% $\pi$-water.

  • This study has three objectives. First, it examines the relationship between organizational fairness and organizational commitment perceived by social workers in Korea. Second, it simultaneously examines mediating effects of organizational trust and organizational cynicism in the relationship between organizational fairness and organizational commitment. Third, it also examines the effect of social workers' perceived work value on the combined model by considering the unique characteristics of social work profession. This study employs the stratified cluster sampling method on social workers with more than two year work experiences in their current social service agencies that are located in Seoul and Kyungki province; finally it analyzes the responses from 564 social workers by using the method of structural equation modeling. This study has the following results: (1) there is a positive causal relationship between organizational fairness and organizational commitment perceived by social workers; (2) there is also a positive causal relationship between social workers' perceived work value and organizational commitment; and (3) in the mediating effects of organizational trust and organizational cynicism, there are no mediating effects in the relationship between organizational fairness and organizational commitment. This study discusses the importance of social workers' perceived work value and theoretical and practical implications of the results.

  • With the advent of the Fourth Industrial Revolution modern society demands global convergence talent with expertise. The purpose of this study is to suggest the Person-organizational Fit can be enhanced only when university institutions enhance the learning flow and learning interest of Chinese students. Only when the suitability of Chinese students and Univ. is good will it be of great help to the educational performance and administrative management of international students, and the learning atmosphere and university image can be promoted. However, international students with excessive self-efficacy may have a negative effect on Person-organizational Fit to making it difficult to educate and manage students. On the other hand, for international students with low self-efficacy, the higher the immersion in learning, the higher the individual-organization (Univ) suitability.

  • The purpose of this study is to study the impact of knowledge sharing behavior, self-efficacy, team collaboration, and job autonomy on organizational innovation among the smart work characteristic factors for members of small and medium-sized venture companies, and to study the differences according to generation/digital literacy level. It is to provide implications so that it can be reflected in the organizational innovation of venture companies. As a result of the analysis, it was found that knowledge sharing behavior and team collaboration had an effect on organizational innovation, while self-efficacy and job autonomy did not affect organizational innovation. In addition, as a moderating effect, it was confirmed that there were differences in self-efficacy and team collaboration according to the level of digital literacy, and differences in knowledge sharing behavior, self-efficacy, and team collaboration by generation. Therefore, in this study, we identified important influencing factors for organizational innovation according to changes in the smart work environment of small and medium-sized venture companies, and suggested ways to secure corporate competitiveness. It suggests that organizational innovation can be strengthened only by confirming the relationship between organizational innovation and finding ways to develop and utilize differentiated capabilities.

  • In this study, we investigated the quality properties and sensory evaluation of pudding added with peach (Prunus persica L. Batsch) juice and gelatin. The water content and pH of pudding decreased with increased peach juice content, whereas the sugar content increased. Further, the water content of pudding decreased with increased gelatin content, whereas the pH was constantly maintained and the sugar content slightly increased. Regarding the color of pudding, the L and b values decreased with increased peach juice content, whereas the L value increased with increased gelatin content. Regarding the texture of pudding, hardness and springiness decreased with increased peach juice content, whereas adhesiveness, chewiness, and cohesiveness all increased. All texture properties increased with higher gelatin content. In the sensory evaluation of color, flavor, taste, texture, and overall preference, pudding with 60% (w/w) peach juice and 1.5% (w/w) gelatin showed the highest values. These results demonstrate the possibility of using high value-added products for peach processing in the food industry, as the addition of peach juice and gelatin enhanced the quality and sensory properties of pudding.

  • The aims of this study were to determine the optimal mixing condition for two different amounts of Gynura procumbens powder and olive oil for the preparation of beef sausage. The experiments were designed according to the central composite design of response surface methodology, which showed 10 experimental points including two replicates of Gynura procumbens powder and olive oil. The physicochemical and mechanical characteristics as well as the sensory properties were measured, and these values were applied to the mathematical optimization models. The results of the physiochemical and mechanical analysis of each sample, including chewiness, cohesiveness, color a, color b, moisture content, salinity and heating loss showed significant differences. The sensory measurements were significantly different in color, flavor, tenderness, texture and overall quality. The optimum formulation, which was calculated using the numerical and graphical method, was determined to be 2.1 g Gynura procumbens powder and 7.06 g of olive oil.

This study also demonstrated the mediating effects of psychological well-being and self efficacy on the relationship between compassion and job performance experienced in the orchestra organization. In this study, we surveyed the orchestra members of Seoul and Gyeonggi provinces. The total number of research subjects was 300, and the survey group was composed of 8 groups, 5 groups in Seoul and 3 groups in Gyeonggi Province. The survey was conducted from September 1, 2017 to September 30, 2017 by researchers who visited each group, explored the research method and research contents to the commanders of each group, and surveyed them again. The hypothesis was verified by analyzing 292 copies of the 300 copies of the collected questionnaire, excluding 8 copies of the fraudulently responded questionnaire. The results of this study are as follows: First, it is demonstrated that the napping experience in the orchestra organization positively affects the psychological well-being and self efficacy. Second, psychological well-being and self efficacy have positive effects on job performance. Third, mediating effects of psychological well-being and self efficacy have a significant influence on the relationship between compassion and job performance.
