Effects of Adding Crushed Fresh Sweet Potatoes on the Quality of Rice Straw, Clover and Sweet Potato Stalk Silages (볏짚, 클로버 및 고구마덩굴 Silage 조제(調製)를 위한 생고구마 첨가(添加)의 효과(效果))

  • In order to improve the quality of silages made of rice straw, clover and sweet potato stalk, crushed fresh sweet potatoes(CFSP) were added at various levels to each silage. When the fermentation was completed, the chemical composition, pH and main organic acid contents of each silage were analized. The results obtained were summarized. 1. The moisture content of sweet potato stalk silage was highest among all silages tested. The clover silage showed the highest value in crude protein content. On the other hand, the rice straw silages were high in NFE and crude fiber contents. When the level of CFSP increased, the NFE contents tended to increase and crude fiber decrease. 2. The content of total organic was highest in clover silage. However, the percentage of lactic acid in total acid content was highest in sweet potato silage. The percentage of lactic ac id in total acid content was increased in paralled with the levels of CFSP. 3. The sweet potato stalk silages showed the lowest pH value (4.10-4.20). The highest pH values were 4.75-5.22 in rice straw silage. The addition of CFSP tended to lower the pH. 4. It appears the quality of clover and rice straw silages can be imp roved by adding CFSP at 5 and 10% levels, respectively, on fresh weight basis. The addition of CFSP to the sweet potato stalk silage, however, was not effective in this experiment.

  • The reduction of nitrogen-containing compounds (NC) containing the model crude methylnaphthalene oil (CMNO) of 5 compounds system was experimentally studied by solvent extraction. The model CMNO consisting of 3 kinds of NC including quinolone (QU), iso-quinoline (IQU), indole(IN) and 2 kinds of bicyclic aromatic compounds such as 1-methylnaphthalene (1MNA), 2-methylnaphthalene (2MNA) as raw materials, as well as the aqueous solution of formamide as a solvent, were used. The increase in the volume fraction of water to the solvent at the initial state (yw,0) sharply decreased, but the distribution coefficient and the yield of NC conversely increased the selectivity of NC based on 2MNA, and an increase in the volume fraction of solvent to feed (S/F) simultaneously increased the distribution coefficient, yield and selectivity of NC. The yields of QU, IQU and IN under constant conditions (yw,0 = 0.1, S/F = 1, equilibrium temperature 303 K) were 30%, 31% and 10%, respectively, and selectivity was 15, 15 and 20, respectively. From the excellent yield and selectivity of NC, the formamide extraction method of this study was expected as a method for reducing the NC contained in the model CMNO.

Longitudinal Changes in Calcium and Phosphorus Concentrations of Korean Human Milk (수유기간의 경과에 따른 한국인 인유의 칼슘 및 인 함량의 변화)

  • The influence of stage of lactation on the moisture. total soilds, ash, calcium, phosphorus and Ca/P ratio of human milk was studied. A total number of 32 lactating mothers provided 101 samples collected at 4 consecutive stages of lactation : days o to 5 postpartum(colostrum); days 6 to 10 postpartum(transitional): days 25-35 postpartum(mature). and days 55-70 postpartum(mature). Moisture and total solids concentrations showed a little but significant difference at the 25-35 day stage as compared with those of colostrum and then remained stable, but ash levels decreased significantly with the elapse of lactation period. Calcium levels increased significantly from colostrum to transitional milk stage with a further less significant increase at mature stages. Between colostrum and transitional stages, phosphorus concentration showed a significant increase $(9.9\pm2.4$ vs $15.5\pm4.9$ mg/100 ml, p<0.001)but between the 25-35 day and the 55-70 day stage phosphorus values did not change significantly. Ca/P ratios for colostrum. transitional, the 25-35 day and the 55-70 day stages were 2.28, 1.76, 1.68 and 1.95, respectively. No significant relationship was found between ash. calcium, phosphorus or Ca/P ratio of milk and maternal parity. When modified milk formulas were reconstituted using the total solids of human mature milk as amount of the modified milk formula in 100 ml of infant feeding solution. ash, and Ca/P ratio were similar to those of human milk. However considerably higher concentrations of calcium and phosphorus exist in the reconstitution fluid than those observed in human milk.

Production and Consumption of Goat Milk Products in Korea (한국의 산양유제품 생산 및 소비 현황)

  • There has been a successful re-entry in the form of infant foods and as a product concept of "well-being" milk by feeding goat natural medicinal plants in high mountain lands and goats eating natural feeds. Typical composition of cow's milk and goat's milk are not significantly differ in major nutritional constituents. However, the noticeable differences between milks of the bovine and caprine species concern in the dimensions of the micelles, in casein composition, in size of the micelles and in the mineral charge of the micelle, but the ratio Ca/Pi in the micelle is very close for the two species The potential market in Korea could be expected to expand by keeping its freshness and nutritional benefits. The supply of goat milk products all year around is also an important to the consumers. In order to increase its market scale of goat milk, product manufacturers need extensive advertising promotion. Domestically, goat milk is currently manufactured at small scale dairy goat milk companies and consumed mainly in the form of fresh or fermented goat milk, while imported goat milk powder is used to produce infant goat milk formula by major dairy companies. Decreasing the unpleasant goaty flavour for the Korean consumers would be essential for the researchers who work for dairy science and technology.

Studies on the Nutritional Effects of Locally Produced Dried Formula Milk and Fermented Milk -2.   • The present studies were carried out to observe the nutritional effects of three kinds of locally produced dried infantile formula milk (DFM) and one fermented milk (FM). A feeding trial with 60 male growing albino rats weighing $60{\sim}70$ grams was conducted during 6 weeks to compare the nutritive values and protein qualities of three DFM and a FM. The diet treatments consisted of 100% control diet, 70% control diet plus 30% DFM-A, 70% control diet plus 30% DFM-B, 70% control diet plus 30% DFM-C, 100% control diet with FM and 70% control diet plus 30% DFM-B with FM. The items investigated were body weight gain, feed intake, feed efficiency ratio (FER), various organ weights, protein efficiency ratio (PER), digestibility of nutrients, biological value, utilizability of protein and intestinal microbial changes of albino rats. The results obtained are summarized as follows; 1. Although there was no statistical significance, rats fed diets containing DFMs and FM gained faster than the rats fed control diet. The best growth rate was obtained with the DFM-A and DFM-C groups. In spite of the lower protein contents of the three DFM diets than the control diet, the growth rate of albino rats fed the DFM diets was somewhat improved than rats fed control diet. 2. No statistical significance was found in feed consumption but the trend was that the feed intake of control group was higher than those of the DFM diet group. 3. Feed efficiency was inproved significantly (p<0.01) by feeding DFMs as compared with control diet. DFM-A group showed the best FER, although no statistical significance was found. 4. Rats fed the DFM diets showed significantly (p<0.01) higher PER as compared with those of the control group. But no difference was found anions DFM groups. The significant improvement (p<0.01) of PER due also to the feeding of FM was seemed to be brought about by the beneficial effect of FM. 5. The present data revealed that feeding DFM and FM didn't affect the weights of various organs of rats. 6. The protein digestibility of experimental diets was similar to each other. Although no statistical significance was found among treatments, the DFMs and FM surely tended to improve the biological value and utilizability of protein. 7. Microbial study indicated that among intestinal flora FM fed group, there were more Lactic acid bacteria than E. coli. From the experimental results described above, it may be concluded that the nutritive effects of three kinds of locally produced DFMs are much alike and the growth rate of growing albino rats can be improved by feeding either DFM or FM due to their beneficial effects on the feed efficiency and protein utilization.

Effect of the Pan Oil Type on the Releasing Power, Changes of Peroxide and Acid alue of the Oil (이형유 종류에 따른 Cake 제품의 이탈성, 이형유의 과산화물가 및 산가의 변화)

  • This study aims to examine appropriate kinds of pan oil to release a cake from the pan coated with polyether sulphone and to prove the change of acid value and peroxide value during the process of baking. The major factor effecting the rate of release of the cakes from the pan was properties of the oils rather than the additives. The releasing rate appeared higher as the iodine value was lower. The highest releasing rate was found in the sample, which was made of coconut oil plus 2% of wax, 2% of lecithin. The changes of acid value of the pan oil between the beginning and after baking was little different. In contrast, Peroxide value showed a great change after baking.

Primary Food Commodity Classification of Processed Foods of Plant Origin in the Codex Food Classification (코덱스 식품 분류에서 식물성 가공식품의 원료식품 분류)

  • The purpose of this study was to obtain the codex classification information on the primary food commodity (fresh state) of processed foods of plant origin that are included in the Codex Classification of Foods and Animal Feeds. Furthermore, whether or not the primary food commodity is included in the primary food classification from the Food Code of Korea was investigated. The results are summarized as follows: First, the Codex Classification information (number of classification codes/number of the primary food commodity group that fresh commodities of processed foods are classified/number of primary food commodity that is not included in the Codex Classification) by a processed food group appeared to be 46/8/0 for dried fruits, 76/11/1 for dried vegetables, 54/4/12 for dried herbs, 36/1/0 for cereal grain milling fractions, 17/4/3 for oils and fats (crude), 34/8/9 for oils and fats (refined), 20/8/0 for fruit juices, 3/2/0 for vegetable juices, and 19 codes for teas (in the Codex Classification, the primary food commodity group for tea does not exist). Second, the number of the primary food commodities not included in the Food Code of Korea was 9 for dried fruits, 14 for dried vegetables, 35 for dried herbs, 0 for cereal grain milling fractions, 6 for teas, 3 for oils and fats (crude), 9 for oils and fats (refined), 2 for fruit juices, and 0 for vegetable juices. Third, it was demonstrated that caution should be exercised when using Codex Classification due to differences in food classification between Codex and Korea, such as coconut (Codex, as tree nut as well as assorted tropical and sub-tropical fruit) and olive (Codex, as assorted tropical and sub-tropical fruit as well as olives for oil production), as well as special cases in the Codex Classification, such as dried chili pepper (Codex, as spice), tomato juice (Codex, as vegetable for primary food commodity and as fruit juice for juice) and ginger (Codex, as spice for rhizome and not including as primary commodity for leaves).

Comparing Factors Associated with Breastfeeding in Late Preterm Infants of Different Gestational Ages (후기 미숙아의 재태 연령별 모유수유 실천 예측 요인 비교)

  • Purpose: The purpose of this study was to compare the rate of breastfeeding and factors which affect late preterm infants' (LPIs) breastfeeding according to gestational age. Methods: Participants were LPIs of 34 weeks (n=70), 35 weeks (n=75), and 36 weeks (n=88). Data were collected from July to December, 2011 from four university hospitals in D city. Descriptive statistics and odds ratio were used to compare three groups. Results: The rate of breastfeeding at 1 week after LPIs' discharge was 32.9%, 37.3%, 23.9% at 34, 35 and 36 weeks, respectively. The tendency to breastfeed in LPIs of 34 weeks was lower for LPIs born by Cesarean-section, while it was higher for LPIs with a longer period of breastfeeding during hospitalization and higher body weight at the first day of feeding. The prevalence of breastfeeding in LPIs of 35 weeks and 36 weeks was higher for infants with a history of more frequent breastfeeding during hospitalization. Conclusion: The rate of breastfeeding in LPIs of 36 weeks was the lowest. This study suggests that nurses should give more customized education to mothers with LPIs of 36 weeks during their stay in hospitals.

Study on the Vitamin Contents of Commercial Powdered Infant Formula (국내 시판 유아용 고형 조제분유의 비타민 함량에 관한 조사)

  • This study was conducted to investigate both fat-soluble and water-soluble vitamin contents of commercial powdered infant formula for obtaining basic data on infant nutrition. Ten commercial infant formula based on cow's milk were collected and the contents of fat-soluble vitamins (vitamin A, D, E, K) and water-soluble vitamins (vitamin C, thiamin, riboflavin, niacin, $B_6$, folate, $B_{12}$, pantothenic acid, biotin) were compared with Dietary Reference Intakes for Koreans (KDRIs). The overall vitamin contents in 100 g and in 100 kcal of infant formula satisfied the recommended formula regulation (KDRIs) and Codex. In infant formula during 0-5 monthly age, fat-soluble vitamin A, D, E, K could supply 178.6%, 205.3%, 208.4%, 976.3% of adequate daily vitamin intakes, respectively. Water soluble vitamins, vitamin C, thiamin, riboflavin, niacin, $B_6$, folate, $B_{12}$, pantothenic acid, biotin could supply 173.2%, 237.2%, 269.8%, 295.9%, 431.6%, 165.8%, 1186.3%, 203.8%, 408.3% of adequate daily vitamin intakes, respectively. In infant formula during 6-11 monthly age, all vitamins satisfied their adequate daily intakes as well. Vitamin A, D, E, K supplied 199.2%, 262.3%, 220.5%, 626.46% of adequate daily vitamin intakes. Vitamin C, thiamin, riboflavin, niacin, $B_6$, folate, $B_{12}$, pantothenic acid, biotin could supply 179.5%, 210.2%, 264.7%, 241.5%, 206.0%, 166.9%, 699.5%, 247.0%, 475.0% of adequate intake of KDRIs. From this study, evaluation of vitamin contents of commercial infant formula was established, which could strengthen the basic information on infant nutrition.

  • 최근 건강에 대한 관심이 높아지면서 천연 기능물질을 이용한 고기능 및 고부가가치 상품개발이 여러 산업분야에서 일반화되는 추세이다. 대표적으로 마이크로캡슐은 원하는 기능을 발휘할 수 있는 기능성 물질을 다양한 방법으로 다양한 제품에 부여함으로써, 기능성 물질을 오랜 기간 동안 외부로 방출하거나 외부의 환경으로부터 보호하는 수단으로 각광받고 있다. 이러한 마이크로캡슐은 의약분야 제초제, 멸충제, 곰팡이 방지제, 살균제로 적용되는 농약분야, 식품 분야, 화장품 분야 등의 전반에 걸쳐 응용 및 연구가 활발히 이루어지고 있다. 이에 본 연구에서는 다양한 나노 합성기술과 유/무기 하이브리드를 이용해 서방화 관련 기술을 개발하여 보습성, 항균, 노화방지, 외부 유해물질로부터의 피부보호 특성을 가진 인체 친화형 복합기능성 섬유 가공조제를 개발하여 다양한 섬유소재에 적용하고자 하며, 궁극적으로 기존 선진국 제품의 기능을 뛰어넘는 원천기술, 즉 새로운 가공제 합성과 응용성, 그 성능평가와 동시에 최적의 처리기술을 개발함으로써 섬유제품의 부가가치를 높이는 계기를 마련하고자 한다. 본 연구에서는 나노미터 직경을 갖는 침상형의 주형(hydroxyapatite)을 이용하여 중공 나노구조체를 제조 한 후 이에 천연고분자를 혼합하여 초음파처리 후 유/무기 하이브리드 기술을 이용한 서방성 가공제를 합성하였다. 중공의 나노구조체 확인은 투과전자현미경(TEM)을 이용하였으며, 주형의 나노구조체는 주사전자현미경(FE-SEM)으로 확인하였다. 이상의 결과를 통해 본 연구에서 제안한 방법이 나노구조체의 새로운 합성방법으로써 가능성을 확인할 수 있었다.
