  • 식량의 증산을 위해서 신품종 개발과 재배기술 못지 않게 중요한 것은 수확 후 곡물의 손실을 줄이고, 고품질의 쌀을 생산하기 위한 건조, 저장, 도정, 포장 및 유통 등 수확후 처리 기술의 확립이라 할 수 있다. 고 등(1993)은 도정 공정중에 발생하는 손실은 대부분이 정백과정에서 발생하므로 정백수율, 완전미수율 및 정백 효율을 극대화시키기 위해서는 정미기의 특성을 고려하여 여러 가지 형태로 정백 시스템을 구성해야 한다고 하였다. 따라서 도정수율과 품위를 높일 수 있도록 정백시스템을 구성하는 것은 매우 중요하다 하겠다. Study on the Improvement of Milling Recovery and Performance(III) -Various Designs of the Perforated Screen Affecting the Performance of a Rice Whitening Machine- (도정수율(搗精收率)과 성능향상(性能向上)을 위(爲)한 연구(硏究)(III) -정백기(精白機)의 성능(性能)에 영향을 미치는 스크린 설계(設計)에 관한 연구(硏究)-)

  • 마찰식 정미기의 성능에 영향을 미치는 기계설계 및 작동상의 인자로는 스크린의 형태, 롤러의 형태, 롤러회전속도, 출구 저항 등 여러가지가 있다. 이러한 요인들에 대한 연구가 본 논문의 저자에 의해서 시리즈로 연구되어 왔으며, 본 연구는 그의 일환으로 스크린의 단면형상(6각, 8각, 12각 그리고 원통형), 스크린에 뚫려있는 슬랏의 기울기($15^{\circ}$, $30^{\circ}$, $45^{\circ}$ 그리고 $-45^{\circ}$), 그리고 출구 저항이 정백미의 질과 양, 정백효율 그리고 정백실내의 정백압력 등에 미치는 영향을 규명하기 위해 수행되었다. 이 실험에 사용된 공시 정미기는 임도정 공장에서 널리 사용되고 있는 흡입마찰식이었며, 사용된 시료는 밀양 23호인 통일계품종이었다. 각 처리마다 동력 소모량과 정백실내의 정백압력을 측정하기 위해서 "KYOWA" 스트레인 게이지 시스템(strain gauge system), 토오크 변환기, 압력변환기 등이 사용되었다. 본 실험 결과를 요약하면 다음과 같다. 1) 정백과정중에 정백실내의 정백압력은 입구에서 가장 높았고 출구쪽으로 갈수록 점차 감소하였다. 평균 정백압력도 순환 횟수에 따라서 변화 하였는데 첫번째 순환에서 가장 높았고 순환횟수가 증가함에 따라 감소하였다. 2) 본 실험에서 사용한 출구저항 수준은 출구저항 수준 1에서 요구되는 정백도의 백미를 얻기 위한 순환 횟수는 2회 이었고 출구저항 수준 2에서는 4회 이었는데, 이를 출구저항 수준이 정백압력, 정백율, 완전미수율 및 도정 효율에 가장 큰 영향을 주었다. 3) 스크린에 뚫려있는 슬랏 각도가 $15^{\circ}$에서 $45^{\circ}$로 증가함에 따라서 정백실내의 평균 정백압력은 감소하였고, 완전미수율과 도정 효율은 증가하였으나, 일반적으로 도정수율은 감소하는 경향을 보였다. $-45^{\circ}$의 슬랏 각도를 가진 스크린에서는 슬랏 각도 $15^{\circ}$인 스크린에서와 거의 비슷한 정백압력 수준을 나타냈으나 완전미와 정백미의 생산은 매우 낮았다. 4) 스크린 표면에 기다란 강편 (보통 "띠"라고 부름)을 붙인 원통과 12각형의 스크린에서는 강편을 붙이지 않은 6각형과 8각형 스크린에서 보다는 비교적 높은 정백압력을 나타냈다. 전자는 후자에 비해서 정백효율은 높았으나 완전미수율은 떨어졌다. 5) 정백실내에서 가장 낮은 정백압력을 나타낸 8각형 스크린은 높은 도정수율과 완전미수율을 가져왔으나 상대적으로 정백효율은 낮게 나타났다. 6) 정백실내의 반경 방향의 평균 정백압력($P_R$)과 완전미수율($Y_h$)은 다음과 같은 1차적인 역비례 관계가 있었으며(평균 정백압력 범위는 0.5-0.9kg/$cm^2$), $Y_h=-28.661P_R+84.860$ ($r^2=0.858$) 정백효율($Y_e$)과 정백압력($P_R$) 사이에는 다음과 같은 2차적인 관계가 존재함을 알 수 있었다. $Y_e=-597.5P_{R^2}+929.96P_R-210.15$ ($r^2=0.759$) 정백효율은 정백압력이 0.7-0.8kg/$cm^2$일 때 가장 높았으며, 이때 변이도 가장 심한 것으로 나타났다.

Determination of Rice Milling Ratio by Visible / Near-Infrared Spectroscopy (가시광선 / 근적외선 분광 분석법을 이용한 쌀의 정백수율 측정)

  • The objective of this research was to develop model equations for measuring rice milling ratio by using visible / HIR spectroscopy. Twelve kinds of brown rice(n = 149) were milled to obtain various milling ratio ranged from 86% to 94%. Visible/NIR spectra were collected with a spectrophotometer with sample transport module. The reflectance and transmission spectra were measured in the range of 400~2, 500nm and 600~1, 400nm, respectively, with 2 nm intervals. Multiple linear regression(MLR), Partial least square (PLS), and Artificial neural network(ANN) were used to develop models. Model developed with reflectance spectra showed better prediction results then those with transmission spectra. The MLR model with six-wavelength obtained from first derivative spectra gave to the best results for measuring the rice milling ratio(SEP = 0.535, , $r^2$ = 0.980). The PLS model(SEP = 0.604, $r^2$= 0.976) and ANN model(SEP = 0.566, $r^2$= 0.978) also can be used to determine the rice milling ratio effectively.

  • 이 연구(硏究)는 정백과세중(精白過稅中)에 발생(發生)하는 도정산물(搗精産物) 즉, 정백미(精白米), 미당(米糖), 쇠미등(碎米等)의 발생(發生)을 조사(調査)함으로써 현미(玄米)의 정백(精白)이 진행(進行)되는 과정(過程)을 밝히고자 함이다. 본(本) 실험(實驗)에서는 분풍마찰식(噴風摩擦式) 정미기(精米機)를 사용(使用)하였으며, 정미기(精米機)의 롤러 회전속도(回轉速度)를 850rpm으로 고정(固定)하고 출구저항(出口抵抗)은 3가지 수준(水準)으로 변화(變化)시켰다. 한편 이 실험(實驗)에 사용(使用)된 벼는 밀양 23호(號)로써 전형적인 통일계품종(品種)의 일종(一種)이다. 매순환(每循環)마다 생산(生産)되는 정백미(精白米) 및 부산물(副産物)로부터 sample를 채취(採取)하여 미당(米糖), 대소쇄미(大小碎米), 완전미(完全米) 및 도정수율(搗精收率)을 분석(分析)하였다. 실험결과(實驗結果)를 요약(要約)하면 다음과 같다. 1) 전체당층(全體糖層)의 75%가 2번째 순환이내(循環以內)에서 제거(除去)되었다. 당층제거율(糖層除去率)은 출구저항(出口抵抗)에 크게 영향(影響)을 받으며, 높은 출구저항(出口抵抗)에서 높은 당층제거율(糖層除去率)을 보였다. 2) 대쇄미(大碎米)의 발생(發生)은 대부분 정백과정(精白過程) 초기단계(初期段階)에서 이루어 졌으며, 완전미(完全米)로 부터의 새로운 쇄미발생(碎米發生)은 순환(循環)이 반복(反復)됨에 따라서 급격(急激)히 감소(減少)하였다. 출구저항(出口抵抗)과의 관계(關係)는 출구저항(出口抵抗)이 증가(增加)할수록 대쇄미(大碎米)의 발생(發生)도 증가(增加)하였다. 3) 미당집적기(米糖集積器)로부터 채취(採取)한 sample에서 측정(測定)한 소쇄미(小碎米)는 양적(量的)으로 다른 도정산물(搗精産物)에 비(比)해 적은 편이었다. 8%의 미당(米糖)이 제거(除去)된 후(後) 소쇄미(小碎米)는 현미중량(玄米重量)의 0.6% 이하(以下)로 나타났다. 4) 도정수율(搗精收率)과 완전미수율(完全未收率)은 어느 정도 출구저항(出口抵抗)의 영향(影響)을 받는 것으로 나타났다. 출구저항(出口抵抗)이 증가(增加)함에 따라서 특히 완전미수율(完全未收率)은 감소(減少)하는 경향(傾向)을 나타냈기 때문에 백미(白米)의 질적저하(質的低下)를 막기 위해 높은 출구저항(出口抵抗)(본(本) 실험결과(實驗結果)에 의(依)하면 85g/$cm^2$)을 사용(使用)하는 것은 부적당(不適當)한 것으로 사려(思慮)된다. 5) 백도계(百度計)의 측정치(測定値)와 미당제거정도(米糖除去程度)(정백도(精白度)) 사이에는 고도(高度)의 상관관계(相關關係)가 있었다. 그러므로 "KETT"제(製) 백도계(百度計)는 정백미(精白米)의 정백도(精白度)를 판명(判明)하는데 사리(使利)하게 사용(使用)될 수 있다.

Effect of parboiling on the physicochemical properties of immature barley kernels (Parboiling처리가 미숙보리곡립의 이화학적 특성에 미치는 영향)

  • Parboiling, a popular technology used to protect rice from nutrient loss during milling and to increase the shelf-life of rice, was applied to barley kernels, and its effect on nutrient retention and chemical composition was evaluated. Before 36 days after ear emergence, barley kernels showed water content higher than 40%, and parboiling without presoaking resulted in at least 43% of gelatinization degree. This implies that soaking, an important step of parboiling, is dispensable for barley at milky stage. Parboiling did make little change in the appearance of the kernel after 31 days from ear emergence. Nonreducing sugars such as sucrose and raffinose remained unchanged while reducing sugars of barley was decreased by parboiling, with exception that maltose increased. Pearling led to decrease in crude protein, fat, fiber and minerals of barley sampled and parboiled on 36th day from ear emergence. Free sugars in the parboiled barley also was reduced with increasing pearling rate. Vitamin $B_1$ content of the parboiled barley was $260\;{\mu}g\;per\;100\;g$ as dry basis at 50% pearling rate, compared to $36\;{\mu}g$ for raw barley at same pearling rate. Thus parboiling appeared to be very effective in the retention of vitamin $B_1$ during pearling.

  • Rice whitening is performed by basically two different whitening actions known as abrasive and frictional. The former adopted in the emery stone abrasive type whiteners and the latter in the jet-air friction type. Comparative milling yields and whitening efficiencies between the whitening system consisting of jet-air friction type whiteners only and the system consisting of both abrasive- and jet-air friction-types have not yet been rigorously defined. This study was to examine the effect of combined operations of abrasive- and jet-air friction-type rice whiteners on milling yields and whitening efficiencies. The small capacity commercial units of the abrasive- and friction-type whiteners were used for the experiments. The combinations of whitening treatments were: 1) Once in the abrasive type and then two to three times in the friction type, 2) twice in the abrasive and then two to three times in the friction type and 3) three to five times in friction type. In these tests, counter pressures for the friction type whiteners were established differently as required to get about the same degree of whitening at the end of predetermined numbers of the repeated operations. The speed of emery stone and the slot angle of the screen were also the factors varied in the abrasive type whitener. Sheukwang rice variety having 13.05% M.C. was used in the tests. The dependent variables were the milled- and head-rice recoveries and electricity consumption. The results of the study are summarized as follows: 1. It was found that in the whitening systems consisting of abrasive- and friction-type whiteners slot angle of the screen, the rotational speed of emery stone roller had significant effect on the milling yields and whitening efficiency. In general, the increase of the emery stone roller speed from 690 to 950 rpm presented a positive effect on milling yield, and one-pass abrasive milling combinations had higher milling yields than two-pass abrasive milling combinations. 2. It was apparent that if the slot angle of the screen and the speed of emery stone roller are modified and set at an optimum level, the combination whitening system consisting of abrasive- and friction-type whiteners is better than the pure frictional whitening system consisting of jet-air friction type in terms of milling yields and efficiencies. 3. In the rice whitening system consisting of abrasive- and jet-air friction-type whiteners, the best whitening performance was obtained when the slot angle of the screen and the rotational speed of emery stone roller were $45^{\circ}$ and 950rpm, respectively, for the one-pass abrasive milling combinations. However, for the two-pass abrasive mi11ing combinations, the best performance was obtained with $75^{\circ}$ of slot angle and 950 rpm of the emery stone roller speed. 4. As compared with pure frictional whitening systems, the combination systems produced more milled rice by 0.8-1.0% point and more head rice by 0.5-1.5% point, and consumed less electricity by 0.15-0.20 KwH per 100kg of milled rice when the abrasive whiteners were operated in the modified conditions as described in item 3 above. Further study is recommended to find out optimum operational and design conditions of abrasive type whiterners.

Optimization of Culture Condition of Gluconacetobacter hansenii TF-2 for Cellulose Gel Production (Gluconacetobacter hansenii TF-2를 이용한 감귤과즙으로부터의 셀루로스 겔 생산의 최적화)

  • Gluconacetobacter hansenii TF-2, an isolate from black tea fungus, was statically cultivated to ferment cellulose gel from citrus juice. The juice prepared by press filtering of peeled citrus fruit contained 135.5 mg of total sugar/mL, 1.23% of total acid, and average pH of the juice was 3.98. The bacterium produced cellulose gel optimally on the surface of culture broth containing 17% of citrus juice and 10$^{\circ}$Brix of total sugar. The optimum temperature was 3$0^{\circ}C$ for producing acetic acid and gel formation. The bacterium could not produce acetic acid on gel formation at 4$0^{\circ}C$. The optimum pH was 3.0∼4.0 but was not significantly different between pH 3.0∼4.0. The cultivation for 18 days under optimal conditions produced gel as 14.2$\pm$0.6 mm of thickness and acids equivalent to 1.90$\pm$0.22% of acetic acid. The pH of culture broth was stabilized at 2.6∼2.8 during the cultivation. Remaining sugar content was 27.1$\pm$4.2 mg/mL of total sugar and 6.9 mg/mL of reducing sugar. The gel productivity was 137.8$\pm$9.7 g/L.

Effect of Carbon Source Supplement on the Gel Production from Citrus Juice by Gluconacetobacter hansenii TL-2C (Gluconacetobacter hansnii TL-2C에 의한 감귤과즙 발효시 겔 생성에 미치는 탄소원의 영향)

  • This study was conducted to determine the minimum concentration of citrus juice for basal medium and also to search for an additional carbon source for the best production of the gel. A concentrate of citrus fruit juice of 65$^{\circ}$Brix, it was diluted to be used as a basal medium. Static cultivation of Gluconacetobacter hansenii TL-2C for 14 days at 3$0^{\circ}C$ produced the best gel with 7.5$\pm$0.4 mm thickness in the 6-fold diluted citrus Juice concentrate without any additional nutrient. However, the same thickness could be obtained with 60 to 100-fold diluted juice concentrate when refined white sugar was added at appropriate concentrations. Glucose was the most effective sugar for the both of gel and acid production, and optimal concentration of the sugar was 10$^{\circ}$Brix. Ethyl alcohol at 1.0% had synergistic effects in combination with refined sugar and increased the gel thickness up to 15.1 mm which was 1.85 times thicker than that of refined sugar alone. However, acetic acid was not effective. Gel productivity with supplement of ethanol was 172.6$\pm$8.4 g wet/L, and it was approximately equal to 4.7 g of dry gel/L.

  • The milling process is considered as causing one of the greatest grain losses among all the processes in rice post-production. Major source of grain losses in the rice milling is considered as the whitening process. This study was attempted to develop an abrasive-type whitener, the whitening chamber of which being supplied by jet-air evenly and continuously. To investigate the milling performance by the new whitener, three kind of emery-stone grit(#36, #41, and #46), and three levels of rotational speed of emery stone roller (950, 1070, and 1200 rpm) were tested. The jet-air abrasive-type whitener was also compared with the conventional abrasive-type having no jet-air blower in terms of their milling performance. In addition, the effect of different combinations of sequential uses of the abrasive- and friction-type whiteners on the milling performance was also experimentally evaluated. The results of this study are summarized as follows; 1. In general, the whitening system combined with the abrasive type whitener with jet-air supply, which was newly designed, and the existing jet-air friction type whiteners produces more milled- and head-rice by about 0.3% points and 2.8% points, respectively than the system combined with the existing abrasive type without the jet-air supply under the same operational conditions. The former also consumed less electricity by 0.024 KwH per 100kg of milled rice production and gave more milling capacity by about 35 kg/hr. As compared with the conventional whitening system consisting of jet-air friction type whiteners only, the former yielded more milled- and head-rice by 1.5% points and 4.4% points, respectively. 2. The abrasive roller having 46 grit emery was better than the roller having 36 grit in aspects of milling performance and machine efficiency, in general. 3. With regard to the effect of combination method of abrasive type and friction type whiteners, one pass in abrasive type plus three passes in friction type gave better milling performance and energy efficiency than the two passes in abrasive type plus two passes in friction type regardless of the designs of the emery stone rollers. 4. The increase in rotational speed of the emery stone roller from 950 rpm to 1200 rpm presented negative effects on milled and head-rice yields and machine efficiency, but slightly positive effect on milling capacity.
