Effects of Item Packaging Methods on the Quality Characteristics of Yukwa during Storage (단위포장 방법에 따른 유과의 저장 중 품질 특성)

  • This study aimed at investigating the quality changes of Yukwa during storage using the various item packaging methods present in the domestic market. The samples consisted of a self-adhesive-oriented polypropylene (OPP) film pouch (P1), a heat-sealed OPP film pouch (P2), and a polystyrene (PS) tray with a polyethylene terephthalate (PET) lid (P3). These were stored at $25^{\circ}C$ up to eight weeks. Throughout the storage period, the acid values of all the study samples remained under the Korean hygiene regulation limit of 2.0 mg KOH/g. The P2 samples showed both the slowest decrease in water content and the slowest increase in hardness value during storage. Sensory evaluation also showed that the P2 samples were the only ones that maintained their market value of 5.0 throughout the eight-week assessment period.

Effective Thermal Conductivity of Rice Starch (쌀전분의 열전도도)

  • Effective thermal conductivity of rice starch was measured by the probe method. The thermal conductivity increased from $0.065{\sim}0.09\;W/mK$ to $0.13{\sim}0.23\;W/mK$ as the moisture content increased from 0 to 28.2%. At constant bulk density, the temperature effect on the thermal conductivity was positive and getting larger as the moisture content increased. In the moisture range $7.2{\sim}33.6%$, a very weak peak was found at $65^{\circ}C$ in DSC thermogram. Positive effect of interaction between temperature and moisture content on the thermal conductivity was thought to be due to the increase of thermal conductivity of water with temperature, not to starch gelatinization phenomenon. A regression equation $(r^{2}=0.963)$, Ke=-0.111+0.000203 T+0.00173 M.C.+0.000247 $P_{b}+0.000035$ M.C. T, was obtained in the range of moisture content (M.C.) of $0{\sim}28.2%$ (w.b.), temperature (T) of $25{\sim}70^{\circ}C$ and the bulk density $(P_{b})$ of $650{\sim}800\;kg/m^{3}$

Characteristics of Growth and Germination of Salicornia herbacea L. for the Soil salinity and Manure Condition (토양염분.시비 조건에 따른 퉁퉁마디 생장 및 발아 특성)

  • This experiment was carried out to investigate the cultivation condition of soil salinity, manure and to find out the cultivation capability of Salicornia herbacea. The optimal growth condition of soil salinity was between 1% and 4%. The growth of groups for fertilization was significantly better than control group. Salicornia herbacea grew very up from 7 kg/l0a to 9 kg/l0a for N, 12 kg/l0a for P and the K-fertilizer group was better than control group but there was not significantly different among the conditions of K-concentration. The germination was good from $0{\textperthousand}\;to\;5{\textperthousand}$ for salinity, from $20^{\circ}C\;to\;30^{\circ}C$ for temperature. On the experiment cultivation, the production by hill seeding was $5.40{\sim}5.90 kg/m^2$ and was significantly higher than the yield by broadcast sowing which was $4.01{\sim}4.20 kg/m^2$. The production by hill seeding was 2.7 times than natural production and the production by broadcast sowing 1.9 times.

  • The stability of W/O emulsions (milk fat : water=4 : 1, w/w) containing various emulsifiers was compared to determine the effect of different chemical types of emulsifiers in relation to the change of HLB value caused by emulsifier type and the influence of single vs. binary emulsifier systems. These variables were compared at emulsifier HLB values of 0.5~16.7 and at emulsifier concentrations of 1.0~3.0%(w/w). Eleven emulsifiers used as 11 different single mixtures and 16 different binary mixtures were evaluated in W/O type emulsion systems containing 20.0%(w/w) of water in milk fat. This W/O emulsion was stable (more than 90.0 of ESI value) in the range of low value of emulsifier HLB (less than 4.7 of HLB value). All the ESI values of binary emulsifier systems were higher than those of single emulsifier systems. But, the influence pattern of emulsifier HLB on this emulsion stability in single emulsifier systems was very similar to the trend in binary emulsifier systems.

  • This study selected 390 students attending the three-year curriculum departments of G college in G metropolitan city including emergency medical technology, physical therapy and health administration randomly as the subjects of the research. The research was conducted from June 4 to 6, 2012 with structured self-administered questionnaire, 366 responses were used for final analysis. Data collected were analyzed with SPSS WIN(Statistical Package for Social Science Windows) 12.0 program and all tests were verified at the significance level of 0.05. As a result of the research, it was found that interaction effects between depression from suicidal ideation and social support showed negative correlation and it was statistically significant. Consequently, it was confirmed that social support had control effects in the relationship between depression and suicidal ideation. Therefore, the development and application of individual and group counseling and regular education program to prevent suicide and increase self-esteem are required, practical education program should be conducted and studies showing its results and effects are also needed.

  • The purpose of this study is to analyze earth pressure acting on a circular shaft-tunnel considering arching effect by centrifuge modeling test on sands. The centrifuge testing method provides a way to model an in-situ stress state condition with a stress gradient within a laboratory specimen. A small-scale model of circular shaft-tunnel, which has a real diameter of 6.0 m and height of 15.0 m, was designed and tested twice under 75g-level. Additionally, an effect of excavation was presented by separating two segments of circular shaft wall to find behavioral properties and strength of earth pressure along with excavating ground. The test results were compared with those of the proposed earth pressure equation. The test results showed that earth pressure decreased by about 70% in comparison with existing two-dimensional earth pressure. This fact might be attributed to three-dimensional arching effects.

  • Foreing bodies of the esophagus and tracheobronchus are likely to occur whenever a child places an inedible object in the mouth and are common in the older age group particularily in edentulous individuals or preexisting disease. Our department had already reported the statistical survey at first in 1954, successively in 1962, 1963 and 1968, respectively according to the age, sex, variety of foreign bodies, location and duration of the lodgement. Now, we have experienced the new 186 cases during the consecutive 5 year period from January 1973 to December 1977 and reported as a 5th report comparing with previous report. The results were as follows. 1. In the incidence of foreign bodies, coins were the most common and pointed metal, disc, bony fragment were followed in order in the esophagus while the peanut and corn were common in the air passage. 2) 79 cases (56.4%) were males and 61 cases (43.6%) were females in the esophagus, which was not a significant difference to note. But in the air passage, males accounted for 33 cases (71.7%) compared to 13 cases (28.3%) of females. 3) In the aspect of age incidence, child 10 years or under accounted for almost all cases in the esophagus as well as in the air passage. 4) In the location of foreign bodies in the esophagus, the first narrowing was the most common, while in the air passage right bronchus had a high incidence but the difference of incidence between right bronchus and left bronchus was not remarkable. 5) The duration of lodgement was 24 hours or less in more than half of the all cases. 6) In the aspect of kind of coin, 10 won coins accounted for majority of the cases (67.0%) but the incidence of 100 won coins were tend to increase gradually in these years.

Comparison of Energy Metabolisms between Laying and Non- laying Hen (산란계와 비산란계의 에너지대사 비교 시험)

  • The energy metabolism with the normal laying hen and progesterone injected non-laying hen are compared. 1. The FHP of 109.7Kcal for laying hen was 25.5 percent higher than the 87.4 Kcal found for non-laying hen. 2. The MEm's of laying hen and non-laying hen were 149, and 135Kcal/Kg$\^$0.75/day and NAME's of the diets were 77 and 83 percent, respectively. For the laying hen shown negative retention in body energy during the experiment, the 77 percent NAME was the value of supporting egg production. For the non-laying hen shown the positive retention in body energy and zero egg production, the 83 percent NAME was of growth. 3. A change in body weight of 1g was comparable to 3.54 Kcal for laying hen, and 5.0 Kcal for non-laying hen, when calculated on regression equations between body weight change and body energy retention(BE). The figures indicate that the tissue energy is used with an efficiency of 70 percent for egg production. 4. Plasma level of triiodothyronine(T3) for the laying hen is appeared to be higher than that of non-laying hen, although the levels of thyroxine (T4) are equal both in laying and non-laying hen. 5. Activities of four hepatic enzymes(ATP citrate lyase, fructose diphosphate aldolase, isocitrate dehydrogenase and glutamte pyruvic transaminase) were significantly greater in the laying hen than in the non-laying hen.

Effects of Pre-Oxidation for Recirculation of Aquaculture Wastewater (양어용수 재이용을 위한 전 산화처리의 효과)

  • Ozonation and advanced oxidation($H_2O_2/O_3$) process were investigated under various experimental conditions to improve the efficiency of biological filter used for the treatment of recycled wastewater from aquaculture. Ammonia removal followed the first-order reaction whose reaction rate constant(k) was $2.0{\times}10^{-2}min^{-1}$ in ozonation. The ammonia removal rate increased according as the bicarbonate alkalinity is increased. About 46% $NH_3$ was oxidized by ozone at 200 mg/L as $CaCO_3$. When alkalinity existed in wastewater, ammonia removal rate by advanced oxidation was very low due to the inhibition effect of bicarbonate. However, when initial pH was adjusted to about 8.2 by 0.1 N KOH, ammonia removal rate was improved higher than that by ozonation. Especially. ammonia removal rate was the highest at $H_2O_2/O_3$ of 0.25 and about 90% of ammonia was removed in 30 min at this ratio as pH was maintained over 9. In the case of wastewater containing ammonia and organic constituents, ammonia removal efficiency by both ozonation and advanced oxidation decreased seriously because organic constituents consumed the oxidant faster than ammonia. In addition the optimal $H_2O_2/O_3$ ratio was changed. Like ammonia removal, DOC(dissolved organic carbon) increased for first 10 min and then decreased slowly because the particulate organic constituents were oxidized rapidly and then produce DOC. Even when the ammonia concentration by twice, oxidation of DOC was not retarded.

Quality characteristics of distilled spirits by different nuruk-derived yeast (누룩 유래 효모의 종류에 따른 증류주의 품질 특성)

  • This study aimed to select a yeast strain for optimizing the quality of distilled spirits. The brewing and distilling properties of 4 KFRI (Korea Food Research Institute) yeasts (Y88-4, Y98-4, Y172-6, Y192-4) and 2 industry yeasts (C1, C2) were compared. For investigating the possibility of using these strains on an industrial scale, diverse analytical methods were applied to assess parameters associated with distilled spirit quality such as alcohol content, pH, total acidity, and soluble solid content. After 11 days of fermentation, the alcohol strength obtained using six yeast strains reached 13.9-16.4% (v/v), while pH was 3.9-4.0, and total acid was 0.40-0.52%. To compare GC-MSD Volatile flavor components, all the distilled spirit samples were diluted to 20% (v/v) alcohol strength. Seven fusel alcohols, 26 esters, 2 acids, and 3 miscellaneous compounds were detected in the distilled spirits. Y88-4 had the most abundant volatile flavor component and scored the highest overall preference in sensory evaluation. After analyzing the various properties of yeasts, strain Y88-4 was finally selected as the best strain for producing distilled spirits.
