Meat Quality of Mallard by Feeding of MS-Fermented Food Waste (MS 발효 잔반사료가 청둥오리의 육질에 미치는 영향)

  • This experiment was conducted to investigate the effects of feeding with MS (miraculous soil-bacteria)-fermented food waste on feeding efficiency and meat quality of mallard. Twenty one heads of 12 weeks-old mallards were fed with three different mixing rates of MS-fermented food waste (0, 20 and 50 %) with 7 replicates. After 6 weeks of feeding, weight gain and feed intake were measured to estimate feeding efficiency, moreover physico-chemical characteristics, amino acids and fatty acids of the fresh slaughtered mallards were analyzed to determine meat quality. The feeding efficiency of 0 % fermented food waste (control) was significantly (p<0.05) higher than other treatments. Water holding capacity and pH were not significantly differed. The color value in lightness of control meat was higher, while in redness was lower than that of the plots mixed with fermented food waste. Total content of amino acids in thigh meat was relatively lower in control, but that in breast meat showed a reverse trend. The amount of unsaturated fatty acids in both thigh and breast meat was the highest in the 50 % mixed plot. Considering economic and environmental aspects for mallard feeding, this results indicated that MS fermented food waste could be a useful resources for mallard feed.

Effects of Ginseng Powder Additives on Quality Characteristics of Press Ham (인삼분말 첨가가 프레스햄 품질 특성에 미치는 영향)

  • Press ham were manufactured to investigate the effects of ginseng powder on quality characteristics of press ham. Each treatments added pork loin basis with ginseng powder(0, 0.5, 1.0, 1.5 and $2.0\%$) were stored until 28 days at $4^{\circ}C$. The changes in physico-chemical properties, texture and chemical composition of each treatments were measured during 1, 7, 14, 21 and 28 days at $4^{\circ}C$. There was a not significantly difference in chemical composition between control and ginseng treatment groups. pH value of ginseng treatment groups were decreased significantly than those of control(p<0.05). pH of control and ginseng treatments were increased significantly as the storage period passed(p<0.05). Meat color(CIE $L^{\ast},\;b^{\ast}$) of ginseng treatment groups were increased significantly than that of control(p<0.05). Meat color(CIE $a^{\ast}$) of ginseng treatment groups were decreased significantly than those of control(p<0.05). It was not clearly changed by the passage of storage time. There was a not significantly difference in texture between control and ginseng treatment groups. It was not clearly changed by the passage of storage time. Summing up the a forementioned result, press ham manufacturing with ginseng powder was not affected in physico-chemical properties and texture characteristics. Also, it may be assumed that the high quality press ham can be manufactured with saponin accumulation.

수세법과 pH 조절법에 의한 닭가슴살 surimi의 품질 특성

  • 닭가슴살을 이용해서 수리미 제조 시 4회 수세한 대조구, pH 3.0으로 산 처리한 T1, pH 11.0으로 알카리 처리한 T2로 하여 그 품질 특성을 비교한 결과 일반성분에서 수분, 조단백질과 염용성단백질 및 수율은 대조구에 비하여 pH 조절법으로 한 두 구가 높았으며, 조지방은 T2가 다른 두 구에 비하여 높았다. pH, 보수력, 파괴강도, 변형값은 처리 간에 유의적인 차이를 보이지 않았다. 전단가는 T2가 가장 높고, T1, 대조구 순이었다. $L{\ast}$값은 T2가 다른 두 구보다 낮았으며, $a{\ast}$값은 T1이 다른 두 구에 비하여 낮았다. $b{\ast}$값은 대조구가 가장 높고, T2가 가장 낮았다. 조직감에서 파쇄성 및 경도는 처리 간에 유의적인 차이를 보이지 않았으며, 응집성은 T1이 다른 두 구보다 낮았으며, 탄력성과 부착성은 대조구에 비하여 T1과 T2가 높았다. 검성은 대조구와 T1에 비하여 T2가 높았다. 조직감의 전 항목에서 T2 가 가장 높았다. 관능검사 결과 외관과 맛은 T1이 가장 높고, 대조구가 가장 낮았다. 색, 향, 다즙성, 연도 및 전체적인 기호도는 처리 간에 유의적인 차이가 없었다.

Effects of Dietary Supplementation of Red Ginseng Mare and Korean Mistletoe Powder on Performance and Meat Quality of Broiler Chicken (사료 내 홍삼박과 겨우살이 분말 첨가 급여가 육계의 생산성 및 계육의 품질에 미치는 영향)

  • The objective of this study was to evaluate the effects of different levels of red ginseng mare or Korean mistletoe powder on growth performance and physicochemical properties of thigh meat in broiler. A total of 200 broiler chicks were divided into five groups were fed a basal diet (control), basal diet supplemented with 0.5% red ginseng mare (T1), red ginseng mare 1% added (T2), Korean mistletoe 0.5% added (T3), Korean mistletoe 0.5% added (T4) for five weeks. Growth performance and proximate composition of chicken thigh meat were not influenced by all treatments, except for mortality and crude fat, which was significantly lower in all treatments with red ginseng mare or Korean mistletoe powder compared to control. Dietary red ginseng mare and Korean mistletoe supplementation had no significantly effects on pH, WHC, shear force, CIE $L^*$, $b^*$ values, triglyceride and glucose but TBARS values total cholesterol, and LDL-cholesterol were decreased (P<0.05) by the addition red ginseng mare and Korean mistletoe powder. CIE $a^*$ values increased significantly with added red ginseng mare and Korean mistletoe powder relative to the control (P<0.05). It was concluded that the addition of red ginseng mare and Korean mistletoe powder revealed minor improvements in the lipid oxidative stability of chicken meat.

The Effect of Soybean Oil, Tallow and Coconut Oil Supplementation on Growth Performance, Serum Lipid Changes and Nutrient Digestibility in Weaned Pigs (이유자돈에 있어 대두유, 우지 및 코코넛 오일의 첨가가 생산성, 혈청 지질변화 및 영양소 소화율에 미치는 영향)

  • This experiment was conducted to determine the effect of soybean oil, tallow and coconut oil supplementation on growth performance, serum lipid changes and nutrient digestibility in weaned pigs. One hundred twenty cross-bred [(Yorkshire×Landrace)×Duroc, 6.92±0.01kg average initial BW] were used in a 35 d growth trial. Dietary treatments included CON (5% soybean oil), T0.5 (4.5% soybean oil+0.5% tallow), C0.5 (4.5% soybean oil+0.5% coconut oil) and C1.0 (4.0% soybean oil+1.0% coconut oil). For the whole period and from d 14 to 35, G/F was increased in C0.5 and C1.0 treatments compared with T0.5 treatment (P<0.05). ADG and ADFI were not affected by treatments. On d 14, C1.0 treatment was higher in serum HDL-cholesterol than C0.5 treatment and atherogenic index was increased in C0.5 treatment compared to T0.5 and C1.0 treatments. Digestibility of fat was improved for pigs fed C1.0 diet compared with those fed T0.5 diet on d 35. However, there were no significant differences in digestibilities of DM, N and DE. In conclusion, feeding diets containing soybean and coconut oils in weaned pigs increased feed efficiency and fat digestibility than feeding those containing soybean oil and tallow.

  • 한국어에서의 명사구 색인을 위한 기존의 방법들은 주로 간단한 규칙을 이용하여 왔고 그 결과 문장에 존재하는 모든 명사구를 추출하지 못했다. 이를 해결하기 위하여 본 논문에서는 개념 기반 명사구 색인 방법을 제안한다. 하나의 문장은 하나 이상의 개념으로 이루어져 있으므로, 명사구 추출은 개념을 고려하여 이루어져야 바람직하다 문장은 구문적으로 하나 이상의 내포문으로 이루어져 있다. 일반적으로 내포문 단위 내의 용어들이 나타내는 각각의 개념들은 서로 높은 연관성을 가진다. 그러므로 문장이 가지는 개념의 상이성을 내포문의 개념 상이성으로 축소할 수 있다. 문장을 내포문 단위로 분할하기 위하여 의존 문법을 기반한 구문분석과 공기정보를 이용한다. 특히 공기정보는 원거리 의존관계(long distance dependency)를 결정하여 한 내포문에 속함을 밝혀내는 데 도움을 준다. 이러한 내포문 내의 의존관계를 이용하여 명사구를 추출한다.

  • 본 논문은 Stanford의 다 단계 시브(Multi-pass Sieve) 상호참조해결을 기반으로, 한국어에 적용한 한국어 상호참조해결(선행 연구)을 이용하여 한정 명사구에 대한 처리와 확장된 대명사 상호참조해결 방법을 제안한다. 지시 관형사와 명사가 결합하여 형성되는 한정 명사구는 일반 멘션(mention)의 특징과 대명사 속성을 한 번에 갖게 된다. 이렇게 되면, 한정 명사구는 모든 시브(sieve)에서 상호참조를 진행할 수 있게 된다. 따라서 이런 특징으로 한정 명사구를 어떤 관점(멘션 또는 대명사)에서 상호참조해결하는 것이 좋은지 보인다. 또한 이런 한정 명사구의 대명사 속성을 이용하기 위해 문법적 의미적 규칙을 적용할 것을 제안한다. 그 결과, 본 논문의 선행 연구인 한국어 상호참조해결에 비하여 CoNLL 값이 약 0.8%만큼 향상되어 61.45%를 측정하였다.

Effect of fermented earthworm cast feed on the production of high-quality eggs and odor reduction (지렁이 분변토 발효사료가 고품질 계란생산 및 악취 저감에 미치는 영향)

  • The aim of this study was to investigate the effects of fermented earthworm cast feed prepared with three complexed probiotics containing Bacillus subtilis separated from the earthworm casts, on egg production, egg quality and odor removal from poultry house. A total of 240 laying hens were divided into 4 treatments and completely randomized. Experimental groups were divided into control, 0.3 to 0.5% (fermented earthworm cast feed FECF3, FECF5) and 0.2% commercial probiotics (CP). The egg production rate was significantly higher in the FECF groups compared to the control group fed the normal feed, but there was no difference in the CP group. Haugh units, egg shell thickness, breaking strength, egg yolk index and albumen height were increased in FECF groups compared to control but not in CP group. The n-3 content of eggs was higher in the FECF groups than in the control group, while the n-6/n-3 ratio was lower and there was no difference from the CP group. Ammonia production was lower in the CP and FECF groups compared to the control group after 5 days storage at room temperature to poultry feces.

Effect of Dietary Acid Hydrolysates of Cocoon on Performance, Egg Quality, Blood Immune Substance and Serum Cholesterol in Laying Hens (산란계 사료 내 누에고치 산가수분해물 첨가 시 산란율, 계란 품질, 혈중 면역 물질 및 혈청 콜레스테롤 함량에 미치는 영향)

  • The study was conducted to evaluate the effects of dietary acid hydrolysates of cocoon on laying performance, egg quality, blood level of immune substance and cholesterol in laying hens. The animals used in the experiment were a total of 240 Hy-Line Brown laying hens (41 weeks old). Dietary treatments included 1) CON (basal diet), 2) SP1 (basal diet + acid hydrolysates of cocoon 0.05%), 3) SP2 (basal diet + acid hydrolysates of cocoon 0.1%) and 4) SP3(basal diet + acid hydrolysates of cocoon 0.2%) twelve laying hens were allotted to a block (pen) with five replicated. Through the whole period of experiment, egg production, egg weight, egg shell breaking strength and egg shell thickness were no significant difference. However, acid hydrolysates of cocoon treatments (SP1, SP2, SP3) significantly increase their egg yolk height and Haugh unit compared to control (P<0.05). IgG and WBC (white blood cell) contents in blood were higher in SP1, SP2, SP3 treatment compared to control (P<0.05). However, albumin and total protein content in blood were no significant difference. Phospholipid, HDL-cholesterol, LDL-cholesterol and total cholesterol contents in serum were higher in SP1, SP2, SP3 treatment compared to control (P<0.05). In conclusion, supplement dietary acid hydrolysates of cocoon improved egg yolk height, Haugh unit, and blood level of phospholipid, HDL-cholesterol, LDL-cholesterol, total cholesterol in laying hen.

Application of Phytoremediation for Total Nitrogen and Total Phosphorus Removal from Treated Swine Wastewater and Bio-methane Potential of the Biomass (돈분뇨 처리수 유래 질소와 인 제거를 위한 식물정화법 활용과 바이오매스의 바이오메탄 잠재성 연구)

  • The aim of this study is to determine the removal efficiency of total nitrogen and phosphorus from treated swine wastewater by Phragmites australis and Miscanthus sacchariflorus var Geode Uksae-1, and to determine its biomass total energy value and biomethane potential. Plants were grown with a bedding mixture either soil and sand or soil, sand, and bioceramic. Treeated swine wastewater with Total nitrogen (TN) and Total phosphorus (TP) of 222.78 mg/L and 66.11 mg/L, respectively, was utilized. The TN and TP removal is higher in the bio-ceramic-soil-sand bedding media treatment. The highest TN removal of 96.14% was performed by Miscanthus sacchariflorus var Geode Uksae-1, but the elemental analysis shows that Phragmites australis contains more nitrogen than Miscanthus sacchariflorus var Geode Uksae-1, indicating higher nitrogen uptake. The highest TP removal of 98.12% was performed by Phragmites australis. The cellulose content of the plant grown with the bioceramic-soil-sand bedding was approximately 3-6% higher than that of the plant grown in the soil-sand bedding. Different growing substrates may have an effect on the fiber content of plants. The biomethane potential of the produced biomass of the plants was between 57.01 and $99.25L-CH_4/kg$ VS. The lignin content is believed to inhibit the breakdown of plant biomass, resulting in the lowest methane production in the Phragmites australis grown in the soil-sand bedding media.
