Awareness and Knowledge on Korean Traditional Food among the Residents in Gyeongju & Pohang Area (경주.포항지역 거주민의 한국 전통음식에 대한 인식 및 지식에 관한 연구)

  • The purpose of this study was to investigate awareness and knowledge on Korean traditional food among the residents in Gyeongju and Pohang area and develop and maintain it. 452 copies of a questionnaire were surveyed and analyzed statistically. The research findings were as follows. Firstly, males prefer a la Carte menu while females prefer kimchi, bab(boiled rice) juk(rice-gruel), guksu(noodles) and mandu(dumplings). Secondly, the residents favor kimchi, bulgogi and bibimbab with assorted mixtures. Thirdly, comparing the positive perception of Korean traditional food between males and females, females were more aware of traditional food and informed than males. Lastly, correspondence analysis showed that thirties prefer bab, tang(soup) and guksu while forties gu-i(roast) & jeon(panfried food) with seasonings and fifties kimchi & jang(sauce and paste). Also, high school graduates prefer eumcheong & han-gwa while college graduates bab, tang, and guksu. The residents whose monthly incomes are under W1,000,000 favor bab, tang and guksu, and those who earn over W5,000,000 per month favor kimchi & jang. The higher educational levels and incomes were, the higher qualitative factors were evaluated. Based on those findings, Korean traditional food should be generalized and more kinds of its menu should be developed.

A Study on the Development of HMR Products of Korean Foods Using Conjoint Analysis (컨조인트 분석법을 이용한 한국 음식의 HMR 상품 개발에 관한 연구)

  • The purpose of this study is to examine the structural elements of HMR in Korea foods and explore the way HMR products using Korean foods can be developed at this time of increased interest. Through an investigation of its importance by attributes and their partial values, hypothetical HMR products using Korean foods were estimated. In order to develop the optimal HMR goods of Korean food, a preference survey was conducted after selecting 9 profiles using conjoint analysis with orthogonal design, and 4 holdout sets were generated and used for cross-validity authorization and reliability of the model. The results of this study showed that customers put cooking levels, menu price, and the location of purchase into importance when selecting HMR products of Korean foods. They preferred to eat the products after sufficiently heating them and buy the products sold online and through home shopping programs, with the price range of 10,000 won and over. It was concluded that more customers can be attracted if a variety of HMR products using Korean foods which can be prepared readily anywhere and at any time are developed.

  • This study is to identify different characteristics of chinese tourists in relation to food tourism. These features includes motivation, travel behavior, attributions, information source, preference about local food and food tourism. Based on the results from empirical investigation, it develop suggestions for attracting chinese tourism to rural area. The results shows that the strongest motivation is to find new food which is different from daily life. Also, they believed that eating local food is meaningful travel behavior. In addition, this study reveals that the attribution of food selection is highly related to freshness, tastes, and sanitation. Accordingly, this study suggests following guide to attract chinese tourist to rural area. 1) developing unique and authentic local food, 2) preparing extensive menu with meat and local agricultural products & a light menu for breakfast 3) deliberating about freshness and sanitation, 4) creating good appearance and smell.

A Segmentation Study of Temple Food for the Global Convergence - Focusing on Recognition and Preference - (글로벌 융복합을 위한 사찰음식 세분화 연구 - 인식과 선호도를 중심으로 -)

  • The purpose of this study is to investigate the recognition and preference for temple food between Korea and foreign national temple-stay participants. In order to achieve the research purpose, 220 research questionnaires were distributed to Korean and foreigners who have participated in a temple-stay. T-test and ANOVA analyses were performed for this study. The findings are summarized as follows. The highest recognition item for Korean temple food that the subjects perceived was 'I think Korean temple food is a medicinal food.'(4.31 points). In the value recognition score for Korean temple food, Asians(4.58 points) are relatively higher than Korean (4.23 points), North American (4.13 points) and European (3.94 points) participants. Participants in Asia appeared relatively higher than the others in the preference score on Korean temple food. The higher globalization strategy items of Korean temple food that the subjects perceived were 'Korean temple food needs a storytelling marketing'(3.94 points) and 'Korean temple food needs a modernization of cookware'(3.90 points).

Food Cravings, Appetite, and Taste Palatability in Women with Premenstrual Dysphoric Disorder (월경전 불쾌기분장애에 따른 맛 선호도 및 식품섭취 변화)

  • Women with the premenstrual dysphoric disorder (PMDD) report increased cravings for certain foods and altered taste preferences ding the premenstrual period. The objective of the present study was to investigate the association of PMDD with luteal phase food cravings, appetite, and taste preferences in 1,078 nurses. Among the 626 nurses who gave valid responses, the prevalence of PMDD and premenstrual syndrome (PMS) was 4.6% (N = 29) and 78.3% (N = 490), respectively. A highly significant increase was observed in the preference for sweet tasting foods during the luteal phase, compared to the follicular phase. Desire for sweet foods during the premenstrual period was significantly different among the three groups, being highest in the PMDD group, lower in the PMS group, and lowest in women with no symptoms. Both the PMDD and PMS groups showed significant increases in preferences for pungent tasting foods during the luteal phase. A repeated measures of analysis of variance on the taste preference data revealed that the desire for sweet tasting foods was significantly greater than for others such as salty, sour, and pungent tastes. A greater proportion of the subjects in the PMDD and PMS groups reported an increase in their total food intake during the luteal phase, compared to those women without premenstrual symptoms. Compared to the PMS group or the women with no symptoms, the PMDD group reported increased intakes of high carbohydrate foods during the luteal phase. The most commonly reported food cravings were for sauteed spicy rice cakes (ddukbokki), or for cold buckwheat noodles mixed in chili pepper sauce. These results indicate that the luteal phase food cravings, appetite and taste preferences change in accordance with the severity of the premenstrual symptoms.

Satisfaction and Preference of School Foodservice on Elementary School 4th, 5th and 6th Grade Students in Gunpo City (군포시 초등학교 고학년의 학교급식 만족도 및 기호도)

  • 학교급식에 대한 기호를 충족시키고, 식습관 개선을 위한 방안을 모색하여 급식의 효과를 증대시키기 위한 목적으로 본 연구를 실시하였다. 학교급식으로 제공되는 메뉴를 중심으로 음식의 맛을 잘 표현할 수 있는 4, 5, 6학년(남학생 273명, 여학생 209명)을 대상으로 급식 만족도와 기호도를 조사했다. 전반적인 급식만족도는 5점 척도로 3.20점을 보여 대체로 만족하였으며, 그 이유는 좋아하는 메뉴가 나와서(57%)가 가장 높은 빈도를 보였다. 급식에 바라는 점도 역시 맛있는 음식제공(44%)을 우선 원하는 것으로 나타났다. 불만족의 이유는 싫어하는 메뉴가 나와서(50%), 기다리는 시간이 길어서(23.9%), 청결하지 않아서(13.3%), 배식담당자가 불친절(12.2%)해서의 순이었다. 전반적인 급식만족은 성별에 따른 유의적 차이는 없었으며, 식단에 대한 만족도로서 새로운 메뉴 및 양, 환경 만족도로서 위생환경과 서비스 모두 3.0을 넘는 평균값을 보였다. 음식조리별 기호도를 보면, 밥류는 흰쌀밥(3.59)과 보리밥(3.63)이 기호도가 높았고, 일품요리는 스파게티(3.91)와 김치볶음밥(3.70)이 가장 높은 기호도를 보였으며, 오징어덮밥(2.95)이 가장 낮았다. 국류의 기호도는 어묵국(3.37), 수제비국(3.26)을 비교적 선호했으며, 북어국(2.56)을 가장 낮게 평가하였다. 찌개류는 부대찌개(3.61), 김치찌개(3.56)를 좋아했으며, 탕류는 육개장(3.85), 갈비탕(3.77)을 선호하였다. 볶음류 중에서는 떡볶이(4.05)와 소시지볶음(4.04)을 선호하였고, 잡채는 여학생이 남학생보다 더 좋아하였다. 조림류로 돈육메추리알조림(3.48)은 선호하지만, 생선조림(2.78), 콩조림(2.37)은 기호도가 낮았다. 튀김류는 대부분 높은 점수를 보였고(핫도그 3.80, 돈까스, 3.66), 무침류는 쫄면(3.43), 골뱅이무침(3.05), 찜류는 닭찜(3.61), 고추장갈비찜(3.54), 계란찜(3.51) 순으로 좋아하였으며, 전류는 계란말이(3.93), 김치전(3.57), 쌈류는 무쌈(3.36), 상추쌈(3.25)을 좋아하였다. 샐러드류는 감자샐러드(3.25), 과일떡샐러드(3.39)를 좋아하였고, 후식류는 여학생이 꿀떡(4.06), 메론(4.03)을 선호하였고, 방울토마토(3.44)는 가장 낮은 기호도를 보였다. 대체로 성별 차이는 보이지 않았으나, 육류 및 육가공품에 대한 기호가 높은 반면, 채소류나 어패류의 기호도는 낮으므로 이들을 이용한 다양한 조리법과 새로운 메뉴 개발에 대해 연구할 필요가 있다. 또한 기호도가 낮아도 영양적으로 우수한 음식은 식단에 사용하되 영양교육을 통하여 섭취를 권장하는 방안도 필요하다. 학교급식에 대한 불만족요인을 해소하기 위해서는 메뉴 개선 외에 기다리는 시간을 줄이고, 청결한 위생관리와 친절한 태도 등을 위한 노력이 필요할 것이다.

A Survey on the Actual Condition for Dining-out in Pusan 2. The Preference of Restaurant and Food According to Age Groups and Sex Distinction (부산지역의 외식실태조사 2. 연령과 성별에 따른 음식점과 음식의 선호도)

  • This study was conducted to find out the actual condition of dining-out and the preferences of restaurant and food according to age groups and sex distinction in Pusan area. The survey was conducted on 564 peoples who live or work, including students aged more than 4th grade in elementary school in Pusan area. The results of the questionnaires are as follows ; The reasons of prefferring restaurant were in order of "delicious taste", "comfortable atmosphere" and "economical price", and of no prefferring restaurant were in order on "untasty", "unsanitary" and "unkind employees". Female and student group were more in the items of unexperinced food than male and older group. The menu of preferring were in order of "sliced raw fish", "pizza", "bulgogi", and of no preferring were in order of "dog soup", "gopchang jengol", "ox tail soup" male and older group showed a relatively highest preference for "traditional food", however, female and younger(student group and young group) showed a relatively highest preference for "fast foods". The reasons of prefferring food were in order of "delicious taste", "something like" and "abundance of nutrition", and of no prefferring food were in order of "untasty", "hatred food" and "doesn't suit constitution". Male and older group showed a relatively highest preference for "abundance of nutrition", however, female and younger showed a relatively highest preference for "foreign food". Recognition and Preference of University Students on Korean Food in Australia (호주 대학생들의 한식에 대한 인식과 선호도 연구)

  • The purpose of this study is to research recognition and preference of university students in Brisbane on Korean food and provide basic data for globalization of Korean food. For analysis methods, frequency analysis and T-test were conducted. The period of the research was from May 3 to June 18, 2010. The study result are summarized as follows: First, they recognize Korean food as delicious, hot and spicy, healthy, using exotic ingredients, having various menu, and using grains and vegetables as main ingredients. For the difference in recognition of Korean food, there were significant differences in the items of: 'Korean food is good for health,' 'There are many fermented Korean foods' and 'Korean food is grains and vegetables oriented.' Second, for preferred taste, sweet taste was the most liked one and bland taste was disliked the most. The most preferred dishes are in the order of bulgogi, bibimbap, kimchi jjigae and gimbap. For expected effects, this study will be helpful for the government and educational institutions related to Korean food and restaurateurs who service Korean restaurants in Australia to establish strategies for globalization and business sales of Korean food.
