Physicochemical Properties of Rice Kernels Affected on Palatability (식미에 영향을 미치는 쌀 곡립의 이화학적 특성)

  • This study was investigated the relationship between palatability and physicochemical properties of rice kernels from two rice cultivars, including Gopumbyeo and Palgongbyeo. Major fatty acids of rice were oleic(35% in Gopum, 33.2% in Palgong, respectively) and linoleic acids (42.9% in Gopumbyeo, 40.7% in Palgongbyeo, respectively). There were significant differences in composition of amino acids and content of sugar from non-starch polysaccharide between two rice cultivars. However, no difference was found in mineral contents between Gopumbyeo and Palgongbyeo. In Rapid Visco Analyzer examination, pasting temperature and breakdown of Gopumbyeo were lower than those of Plagongbyeo. In X-ray diffraction patterns of starches separated from two rice cultivars, traditional A type and there was no difference in crystalline of rice starch. We could also obtain the results that Goupumbyeo, known to have good eating quality, had higher palatability value than Palgongbyeo.

난방운전의 최적제어방안 중심 공동주택의 열성능 향상 방안

  • 현재 범국가적 차원에서 지속적인 국가 경제 발전과 국제수지 개선을 위하여 추진되고 있는 정부의 에너지 절약사업에서 건물부문이 차지하는 에너지절약 효과는 막중하다. 특히 전체주택에서 공동주택이 차지하는 비율은 1990년에 32.1$\%$, 서울시의 경우 51.3$\%$로 전체 주택의 과반수를 넘어섰으며, 수도권의 대단위 아파트단지의 개발과 함께 공동주택의 증가추세는 당분간 지속될 전망이다. 본 연구는 공동주택의 최적난방 운전기법 개발을 위한 1차년도의 연구로서 현행 공동주택의 난방운전 실태를 조사, 분석하고 각 난방법에 따른 문제점 및 최적제어 알고리즘의 개발을 위한 자료 도출을 주 목적으로 진행되었다. 1차년도에 수행된 연구의 주요 내용을 살펴보면 다음과 같다. 공동주택의 난방에너지 소비현상은 단지에 따라 최대 3배이상의 열사용량에 차이가 있는 것으로 나타났다. 열사용량의 차이는 건축의 기본 열성능, 설비시설의 수준 및 노후화정도에 영향을 받으나 동일 연대의 단지들에서도 최대 80$\%$이상의 열사용량이 차이를 보이고 있었으며 이는 기계실 및 각 세대의 난방운전방법 및 제어수준에 따른 것으로 평가되었다. 세대의 층별, 위치별 열사용량 분석에 의하면 층별 열사용량차이가 큰 것으로 분석되었으며, 특히 최상층부와 최하층부의 열사용량이 뚜렷이 많이 나타나 단열성능의 강화가 요구되는 것으로 나타났다. 한편 샘플단지에 대한 측정 데이터를 통해 적정 열량공급시간대의 설정과 외기온의 변화에 따른 적정 온수공급온도의 설정조건 및 유량제어 효과등에 대한 분석 및 검토를 하였으며, 이를 통해 2차년도의 개발목표인 최적운전제어 방안의 제시를 위한 자료를 구축하였다. 또한 각 세대의 기밀성능이 공동주택의 열성능에 미치는 영향을 도출하기 위하여 샘플단지에 대해 트레스가스 측정법과 Blower Door법에 의하여 환기 및 기밀상태를 평가 하였으며 측정주호에 대한 환기를 예측할 수 있는 환기예측평가식을 제시하였다.

Characteristics of Growth and Germination of Salicornia herbacea L. for the Soil salinity and Manure Condition (토양염분.시비 조건에 따른 퉁퉁마디 생장 및 발아 특성)

  • This experiment was carried out to investigate the cultivation condition of soil salinity, manure and to find out the cultivation capability of Salicornia herbacea. The optimal growth condition of soil salinity was between 1% and 4%. The growth of groups for fertilization was significantly better than control group. Salicornia herbacea grew very up from 7 kg/l0a to 9 kg/l0a for N, 12 kg/l0a for P and the K-fertilizer group was better than control group but there was not significantly different among the conditions of K-concentration. The germination was good from $0{\textperthousand}\;to\;5{\textperthousand}$ for salinity, from $20^{\circ}C\;to\;30^{\circ}C$ for temperature. On the experiment cultivation, the production by hill seeding was $5.40{\sim}5.90 kg/m^2$ and was significantly higher than the yield by broadcast sowing which was $4.01{\sim}4.20 kg/m^2$. The production by hill seeding was 2.7 times than natural production and the production by broadcast sowing 1.9 times.

Comparison of Chlorophyll Contents and Patterns of Korean and Japanese Powder Green Tea (한일 말차(抹茶)의 클로로필 함량 및 패턴 비교)

  • This research used High Performance Liquid Chromatography(HPLC) to analyze and compare the content and the pattern of chlorophyll to find the difference in quality, water temperature, and the stirring time between the three different types of Korean and Japanese powder green tea, which were currently on the market. Chlorophyll contents of Japanese-made medium quality tea (S5: 8.34mg/g), and low quality tea (S6: 8.23mg/g) were relatively high, and that of Korean-made medium quality tea (S2 ; 4.87mg/g) was lower. The water temperature of 85$^{\circ}C$ and 95$^{\circ}C$ were high except in Korean-made medium and low quality powder green tea (S2 and S3). Japanese-made powder tea required 60 seconds of stirring time and Korean-made tea required 15 seconds, but 30 seconds seem to be the ideal stirring time for both of them. Chlorophyll a, b, pheophytin a, b, and pheophorbide were confirmed from the chlorophyll pattern. There were 1.5∼2 times more of chlorophyll a in Japanese-made one compared to that of Korean-made one; also 1.5∼2 times more of pheophytin a in Korean-made one than Japanese-made one. It might be concluded that Japanese-made powder green tea was higher in quality.

Supercritical Carbon Dioxide Extraction of Beef and Pork for Low Lipid Sausage Manufacturing (저지방 소시지 제조를 위한 쇠고기와 돼지고기의 초임계 이산화탄소 추출)

  • Lipid and cholesterol were extracted from beef and pork by the supercritical carbon dioxide $(SC-CO_2)$ for the manufacturing of low-lipid and low-cholesterol sausage. The ranges of extraction temperature and pressure were from 35 to $55^{\circ}C$ and from 103 to 375 bar, respectively. $SC-CO_2$ extraction yield of beef lipid increased as extraction pressure increased and/or extraction temperature decreased, while extraction temperature was more influential on the cholesterol extraction than pressure condition. When lipid and cholesterol of freeze-dried beef with varied moisture contents were extracted, their solubilities increased as the moisture content reduced. The extraction of lipid and cholesterol from pork was shown the same tendency as the beef. The chunk type of beef shape was more suitable for the lipid and cholesterol extraction than the powder type of beef. The color of meat after $SC-CO_2$ extraction was lighter than the raw freeze dried meat because of the extraction of color pigments. After $SC-CO_2$ extraction, beef and pork were rehydrated and mixed with raw beef and pork containing lipid and cholesterol. Their mixing ratio up to 50 : 50 did not affect physical properties of the sausage compared with the control sausage.

Isoflavone Contents and ${\beta}-Glucosidase$ Activities of Soybeans, Meju, and Doenjang (콩, 메주, 된장의 Isoflavone 함량 및 ${\beta}-Glucosidase$ 활성 측정)

  • This study was conducted to investigate the isoflavone contents of soybeans, Meju, and Doenjang. $The\;{\beta}-glucosidase$ activities were also determined and characterized in soybeans, Meju, and Doenjang. The total concentration of daidzein was 406 mg/kg of soybeans, 433 mg/kg of Meju, and 538 mg/kg of Doenjang. Aglycones compose 26.03% of total isoflavones in soybeans, 61.96% in Meju, and 107.68% in Doenjang. The total concentration of genistein was 484, 200 and 538 mg/kg of soybeans, Meju and Doenjang, respectively. Aglycones compose 19.49% of total isoflavones in soybeans, 68.52% in Meju, and 85.26% in Doenjang. The ${\beta}-glucosidase$ activity was detected in soybeans (5.65 units/mg protein), Meju (2.04 units/mg protein), and Doenjang (0.69 units/mg protein). The optimal pH of ${\beta}-glucosidase$ activities were $6.5{\sim}7.0$ and the optimal temperature of ${\beta}-glucosidase$ activities was $50^{\circ}C$.

Phenolic Compounds Content and DPPH, ADH, ALDH Activities of Mungbean Sprout Based on Growth Temperature (녹두나물 재배온도에 따른 페놀화합물 함량과 DPPH, ADH 및 ALDH 활성)

  • This study is to analyze the effects of the growth temperature of mungbean sprouts ($15{\sim}30{\pm}1^{\circ}C$) on the yield ratio, content of phenolic compounds and DPPH (1,1-diphenyl-2-picrylhydrazyl), ADH (alcohol dehydrogenase), ALDH (aldehyde dehydrogenase) activities of the sprouts. When the growth temperature of mungbean sprouts was higher, the yield ratio of the sprouts was higher while the hard seed rate was lower, but $25{\pm}1^{\circ}C$ and $30{\pm}1^{\circ}C$ showed no regular tendency. The content of the total phenol from the ethanol extract of the sprouts was higher in the growth temperature of $15{\pm}1$, $20{\pm}1$, and $25{\pm}1^{\circ}C$, while the content of total flavonoid was higher in the growth temperature of $15{\pm}1$, and $20{\pm}1^{\circ}C$. The DPPH radical scavenging activity of the ethanol extract of the sprouts was higher when the growth temperature was lower, while the activity of ADH and ALDH showed no regular tendency according to the growth temperature. Considering the yield ratio, content of phenolic compounds, biological activities of mungbean sprouts, the optimum cultivation temperature of mungbean sprouts may be $20{\sim}25^{\circ}C$.

Experimental Study on Reducing Effect for Surface Temperature of Recycled Synthetic-Resin Permeable Block (재생 합성수지 투수블록의 표면온도 저감효과에 관한 실험적 연구)

  • The field measurement and laboratory experiment were conducted to investigate the effect of reducing the surface temperature of the functional aspect of the heat island phenomenon of the permeable block which is made the recycled synthetic resin rather than the existing concrete permeable block. Field measurement was taken for 3 days in consideration of dry condition and wet condition and laboratory experiment was divided into dry condition, rainfall simulating condition, and wetting condition. The variations of temperature and the evaporation rate of water moisture content after experiment were confirmed. As a result of field measurement, it is confirmed that the surface temperature decreases due to the difference in albedo of the pore block surface rather than the cooling effect due to the latent heat of vaporization. The evaporation of moisture in a dry state where drought persisted or a certain level of moisture was not maintained in the surface layer. As a result of laboratory experiment, resin permeable block gives higher surface temperature when it is dry condition than concrete permeable block, but the evaporation of water in the pore is kept constant by capillary force in rainfall simulation condition, and higher temperature reduction rate. As a result of measuring the evaporation rate after laboratory experiment, it is confirmed that the effect of reducing temperature is increased as the evaporation rate of water is higher. Based on these results, correlation formula for evaporation rate and temperature reduction rate is derived.

  • D,L-tryptophans were separated by using $Chirobiotic^{(R)}$ T HPLC column. Mobile phases were the mixture of methanol and water(70:30, 80:20, 90:10, v/v). Experimental temperatures were adjusted as 25, 40 and $55^{\circ}C$ in order to compare retention times. Difference in D,L-tryptophan retention times was studied in terms of the interaction between stationary phase and tryptophans. Selectivity, resolution and efficiency of column were utilized to find an optimum separation condition. Retention times were shortened by increasing the amount of methanol in mobile phase and the temperature of column. The best selectivity and resolution was obtained with the temperature($25^{\circ}C$) and the ratio of mobilephase(70/30 v/v%).

  • Some biological characteristics with respect to tuber formation of Eleocharis kuroguwai Ohwi were investigated. Tuber formation was initiated at the descending time of daily maximum and minimum temperatures, accelerated under the minimum temperature lower than $20^{\circ}C$, and terminated at about $10^{\circ}C$. Tubers produced at the early season were located at deeper soil layers. Large tubers were found at deeper soil depths and required the longer period for sprouting as compared with small tubers. Percent emergence decreased as the emergence depth increased, while percent old-tuber produced during previous years was greater at the deeper depths.
