Effects of Medium Dose of Gamma Irradiation on Color and Lipid Oxidation of Starches (중선량 감마선 조사가 전분류의 색도 및 지방질 산화에 미치는 영향)

  • The effects of gamma irradiation at medium dose levels on commercial starches (corn starch/CS, sweet potato starch/SS, and potato starch/PS) were investigated in terms of its color and lipid oxidation. The CS, SS, and PS samples were irradiated at 0, 1.5, 3, 4.5 and 6 kGy by a Co-60 gamma irradiator and used for measuring Hunter's colors and TBA value. Irradiation doses applied did not cause apparent changes in Hunter color parameters between the control and irradiated groups. But, the decrease in lightness (L value) for CS and the increase in both redness (a value) for SS and yellowness (b value) for PS were observed, respectively, thereby resulting in slight increase in overall color difference (${\Delta}E$) upon irradiation. Browning intensity observed with the naked eye for gelatinized starches by irradiation doses was also gradually increased along with irradiation dose, which was more remarkable in SS. The thiobarbituric acid (TBA) values of samples showed a dose-dependant increase with ${\geq}0.9964$ of $R^2$ (p<0.05).

Effects of Processing Methods of Corn and their Thickness on in situ Dry Matter Degradability and in vitro Methane Production (옥수수 가공방법 및 두께가 in situ 건물 분해율과 in vitro 메탄 발생에 미치는 영향)

  • This study was conducted with two ruminally cannulated Holstein steers to examine the effect of micronized and steam flaked corn on ruminal fermentation characteristics. The in situ dry matter degradability after 48 h incubation was the highest (P<0.05) at micronized corn (2.5 mm thickness) compared with steam flaked corn treatments. The steam flacked corn (3.3 mm thickness) was degraded lower (P<0.05) than the 2.9 and 3.1 mm thickness of steam flacked corn. Effective dry matter degradability and the rate of constant were the highest (P<0.05) at micronized corn (2.5 mm thickness) compared with steam flaked corns as well. The in vitro dry matter degradability after 48 h incubation was tended to higher (P=0.088) at micronized corn (2.5 mm thickness) than steam flaked corns, whereas there is no significantly difference between steam flaked corn treatments. Total volatile fatty acid concentration was higher at steam flaked corn (2.9 mm thickness) than micronized corn (2.5 mm thickness) and steam flaked corn (3.1 and 3.3 mm thickness). The acetate : propionate ratio was the highest (P=0.008) at steam flaked corn (2.9 mm thickness) and the lowest (P=0.008) at micronized corn (2.5 mm thickness). Total gas and methane production after 48h ruminal incubation was the highest (P=0.001) at micronized corn (2.5 mm thickness) compared with steam flaked corns. According to these results, the thickness of steam flaked corn as resulted corn processing is believed to do not affect methane production. However, further study is needed to better understand the present results to verify the correlation between corn processing method and their thickness on methane production using the same thickness corns by difference processing methods.

  • Optimal winterizing condition of com oil was cooling temperature of bleached oil from $105^{\circ}C$ to $40^{\circ}C$. Then, filtering it after keeping $1{\sim}2^{\circ}C$ by lowering the temperature gradually with treating perlite of 0.3%(w/w) amount about bleached oil and stirring. We could measure that triglyceride(TG) that extracted from lipid components from spent perlite(SP) obtained through filtration after winterizing by SACC method is major causing materials of clouding in com oil. The result of separating TG fraction by agentation TLC was that it classified into 4 kinds -U3, SU2, S2U, S3 type and the most were U3 type. From this, it's easy to identify cause of clouding in com oil is TG fraction and most of them form wax materials that can observed. The results were they kept clear appearance at $0^{\circ}C$ generally during 39.6 to 96.5 hours, especially the result of A sample that had the lowest temperature condition while they have some difference by condition of treating temperature.

  • 나노섬유를 제조하는 방법 중에는 상분리 현상을 이용한 방법, 자가 조립성을 이용한 방법, 템플레이트를 이용한 방법, 전기방사법이 있으며 특히 전기방사법은 연속적으로 균일한 나노섬유를 제조할 수 있다. 또한 전기방사법은 장비가 간단하며 고분자 blend ratio와 무기재료의 함량에 따라 뛰어난 특성을 나타내는 나노복합섬유를 만들 수 있다. 최근 식물에서 추출한 단백질을 전기방사법을 이용하여 나노입자 및 나노섬유를 제조하고 이를 의료 분야 등에 적용하기 위한 연구가 활발히 진행되고 있으며 이런 식물성 단백질은 동물성 단백질에 비하여 인체 적용이 용이하고 매장량이 풍부한 장점이 있다. 본 연구에서는 전기방사법을 이용하여 옥수수에서 추출한 단백질인 zein의 나노입자 및 나노섬유를 제조하였다. 또한 천연 추출물이 혼입된 복합 나노입자 및 나노섬유를 제조하여 zein이 가진 고유 특성 이외에 천연 추출물의 특성을 추가로 부여해서 더욱 발전된 나노입자 및 나노섬유를 제조하였다. 고분자 농도, 전압, 방사거리 등 다양한 공정변수를 조절하여 최적의 조건을 확립하였으며 제조된 나노입자 및 나노섬유는 field-emission type scanning electron microscope (FE-SEM), transmission electron microscopy (TEM), ultraviolet-visible spectroscopy (UV/vis), fourier transform infrared spectroscopy (FT-IR), differential scanning calorimetry (DSC)를 이용하여 특성분석을 실시하였다.

  • In an attempt to develop composite flours based on raw materials available in Korea, six domestic resources were investigated with respect to their physical and chemical properties, nutritive value and economy. The results are summarized as follows: 1) Flours from naked barley, sweet potato, potato, corn, defatted rice bran and defatted soybean were compared in respect of their proximate composition, thiamine content and protein score. 2) In color comparison, naked barley and defatted soy flours were comparable to wheat flour whereas corn and sweet potato flours were a little inferior. In raising power, naked barley and defatted soy flours were similar to wheat flour and others were inferior. 3) In maximum viscosity of flours by amylograph, naked barley, corn and potato flours were higher than wheat flour and others were lower. In viscosity in cooling, corn flour was similar to wheat flour and naked barley and potato flours were lower. Addition of $10{\sim}20%$ defatted soy flour into other flours generally caused the lowering of viscosity. Addition of emulsifiers such as glyceryl monostearate, calcium stearyl lactylate, Methocel and Emulthin into the flours manifested different effects on the amylogram. 4) In nutritional test by rat, diets consisting of naked barley, sweet potato, potato or corn flours, each containing defatted soy flour (at 10% level with exception of 20% for sweet potato flour) and naked barley flour fortified with lysine were similar to wheat flour in digestibility, but were superior in NPU and biological value. 5) In price estimation, sweet potato and corn flours were competitive with wheat flour, but naked barley flour was a little expensive. On the other hand, barley and sweet potato are promising in terms of domestic production.

  • A by-product from glutamic acid fermentation prepared by treating the fermentation residue with sulfuric acid and ammonium hydroxide was studied in the light of its chemical properties by chemical analysis and X-ray diffraction technique. Its effectiveness as fertilizer was also investigated with corn as test plant. The results are summarized as following. 1. The chemical analyses and study with X-ray diffraction technique revealed that the by-product contains an appreciable quantity of water soluble ammonium as ammonium sulfate and ammonium chloride, water soluble amino acid and in-soluble organic carbon. Particularly, the X-diffraction pattern of the material indicated the presence of unidentified water soluble double salt of ammonium sulfate and ammonium chloride. 2. The water soluble ammonium in this material was found to be as effective as urea on the growth of corn plant. 3. The organic portion of the material was found to be equally effective on the growth of corn plant as the other sources of organic matter such as compost and rice bran. It was, however found that the organic matter in the fermentation residue is more persisting in the soil than the compost and rice bran. 4. It was noticed that the application of the fermentation by-product, lowers the soil pH significantly. Inspite of the pH lowering effect, the absorption of iron by corn plant was surpressed by the application of this material.

Quality properties of texturized vegetable protein made from defatted soybean flour with different soybean seed coat contents (대두껍질 함량에 따른 탈지대두분말 식물조직단백의 품질 특성)

  • The texturization characteristics of textured vegetable protein (TVP) were investigated based on the extent of soybean decoating during the pretreatment of defatted soybean flour used for TVP. The raw materials for TVP consisted of 50% defatted soybean flour, 30% gluten, and 20% corn starch. The weight ratios of soybean seed coat to soybean flour were 9%, 6%, 3%, and zero. Extrusion was performed using an extruder equipped with a cooling die, maintaining a barrel temperature of 190℃ and screw speed of 250 rpm, Water was injected at a rate of 9 rpm using a metering pump. Regarding the textures of the extruded TVPs produced from defatted soybean flour, an increase in the soybean seed coat content led to a decrease in the apparent fibrous structural layer and an increase in hardness. However, there were no significant changes in elasticity and cohesion. Moreover, as the soybean seed coat content increased, the pH of TVPs decreased. A higher soybean seed coat content also tended to lower the moisture content, increasing water absorption, solids elution, and turbidity. These results suggest that an increased seed coat content reduces the proportion of protein, and the fibers present in the seed coats prevent texturization.

Effect of solid grain media on the mycelial growth of Pleurotus ostreatus and its biofunctional activity (곡물배지가 느타리버섯의 균사배양과 생리활성에 미치는 영향)

  • Effect of solid grain media on the mycelial growth of Pleurotus ostreatus and its biofunctional activities were investigated using seven kinds of grains. Foxtail millet and barley were good for growth of hypha of P. ostreatus. However, growth of the mycelium was very slow in the solid grain media containing wheat, corn and brown rice. Mycelial growth of P. ostreatus according to water content of solid grain media was good at 25% to 30%. Mycelial growth of P. ostreatus according to heating-time and temperature of solid grain media was good for 30 min at $121^{\circ}C$. Anticancer activities against lung cancer cell line of the myceial extracts from P. ostreatus grown on several grain media were strong in the corn, defatted soybean, brown rice, barly and black bean in order. Fibrinolytic activities of the myelial extracts were strong in order defatted soybean, wheat, foxtail millet, barley, brown rice and black bean. The mycelial extracts were showed good antibacterial activities against Pseudomonas aeroginosa and Staphylococcus aureus.

  • The effect of additional amounts of subsidiary materials on texture of fish meat paste were examined using Instron Universal Testing Machine to obtain fundamental data for steamed Alaska pollack meat paste showing good qualify. The hardness revealed the good correlation with jelly strength among the six kinds of parameters of Instron texturometer. Products with higher hardness showed a better quality, but those with hardness higher than 16 kg showed decreasing quality with increasing hardness. Predicting the quality of steamed Alaska pollack meat paste with various additional amounts of subsidiary materials as a function of hardness, H, the equation could be deduced as follows: H=11.56+0.54 Xcs, H=12.22-0.23 Xsp and H=11.65-7.13 Xpp. The reasonable equations for predicting the duality of steamed Alaska pollack meat paste with various additional amounts of mixed subsidiary materials could be summarized as follows : H=11.57+0.53Xcs+0.44Xsp, H=11.97-1.83Xpp-0.17Xcs, and H=11.58十0.08Xpp-0.23 Xsp. A Survey of the Presence of Aflatoxins in Food (식품 중 아플라톡신 오염도 조사)

  • A survey of total aflatoxin levels was conducted on 158 samples (nuts, fermented foods and their processed products) collected in local markets in Gyeonggi-do and Domestic Internet Site. The total aflatoxins were quantified by the immunoaffinity column clean-up method followed by high performance liquid chromatography (HPLC)-fluorescence detector (FLD). Aflatoxins were found in 45(28.5%) samples including 34 nuts and nut products, 7 soybean pastes, 1 meju, 1 bean product and 2 corn snacks with a range of $0.02{\sim}3.96\;{\mu}g/kg$. These results show that the contamination level of aflatoxin in foods consumed in Korea is low compared with the standard in Korea Food Code($10\;{\mu}g/kg$ as aflatoxin $B_1$). Aflatoxin $B_1$ content was increased in peanuts and com snacks during storage but it was decreased in doenjang (soybean paste).
