Quality Evaluation and Shelf-life of Dried Squid (마른 오징어의 품질평가 및 보존기간)

  • In order to obtain the objective indices which can assess the quality and the shelf-life of dried squid, nonenzymatic browning, carbonyl value, trimethyl amine (TMA) and trimethyl amine oxide (TMAO) decrease and panel test were determined in dried squid at various water activity levels. When the data of nonenzymatic browning fit a zero order equation, $r^2$ value were more than 0.92 except aw 0.52 for 0.8241. Through variance analysis for the data of browning extent and TMAO decrease, the confidence limits of regression equation were $99\%$ and their limit values of shelf-life were shown 0.45390 O. D./g. solid and 190.322 g/g respectively. In case of TMAO, $r^2$ value was calculated more than 0.95. Linear regression equation for the correlation between browning data and average panel score was Y=0.6138-0.053X and its $r^2$ value was 0.9285. Also in TMAO decrease, the equation was InY=2.0314+0.08269x and $r^2$ value was 0.7854. The shelf-life, evaluated by nonenzymatic browning, TMAO decrease and panel test, was 110-170 days at aw 0.45-0.76 except aw 0.15.

Sexual Maturity and Reproductive Cycle of the Common Squid Todarodes pacificus in the East Sea of Korea (한국 동해 해역에서 채집된 살오징어 (Todarodes pacificus)의 성성숙과 생식주기)

  • The sexual maturity and reproductive cycle of the common squid, Todarodes pacificus captured from the East Sea, Korea, between January 2004 and January 2006, were investigated by documenting changes in the gonadosomatic index (GSI), gonad development, and oocyte size frequency distribution. The GSI of females began to increase in July, reached a maximum in August, and then gradually decreased. The GSI of males increased from July to March. Using gonad histological observations, we identified four oocyte developmental stages. The changes in GSI and gonad tissue resulted in the classification of the annual reproductive cycle into the following four successive stages: immature (April to June), growing (June to July), mature (July to August), and ripe and spawning (August to March). According to the oocyte diameter size frequency distribution in the ovary, this species appeared to have asynchronous oocyte development and one spawning time.

  • The feasibility of passive detection of fishes which had been caught in the fishing grounds near the Korean peninsula was theoretically investigated. Considering the commercial importance and the acoustical informations readily identified, although many species of fish make noise, Croaker is clarified to be a representative fish for passive fish detection. Assuming a source level of the sound produced by croakers is given as 150-18OdB (re 1l'pa, 500 Hz bandwidth), The range detected by a passive line array sonar is estimated to be about 3-20km. In addition, the tonal noise (700~800Hz) made by croaker that is easily separated from underwater noise is expected to increase the ability to discriminate from the other species of fish.

Formulation of Surimi and Surimi-based Products with Acceptable Gelling Ability from Squid Muscle (가열 젤 형성능을 가진 오징어 Surimi와 Surimi-based 제품을 위한 첨가물의 최적화)

  • We investigated the optimum formulation to improve the gelling ability of squid, Dosidicus gigas, surimi. The solubility of minced squid muscle was highest at pH 10.7, and lowest at pH 5.0. The yields of conventional surimi and protein recovery after alkaline pH-shift processing were $68.1{\pm}2.4%$ and $65.3{\pm}2.6%$, respectively, whereas the protein recovery with acidic pH-shift processing was only $21.2{\pm}1.6%$. The addition of 5% starch decreased the breaking force regardless of the kind of starch, while the mixture of corn, potato, and wheat starch (total 15%) increased the breaking force by up to 1.9 fold. The addition of 5% egg white, 5% porcine plasma protein, 0.3% $CaCl_2$, and 0.3% Polymix GA significantly increased the breakingforce (P<0.05). None of the ingredients examined in this study significantly affected the deformation value (P<0.05). The optimum concentrations of egg white and $CaCl_2$ to obtain a breaking force of 55 g and a whiteness of 70 were 2.69% and 0.22%, respectively.

Fluctuations of Common Squid Todarodes pacificus Catches in the Northwestern Pacific under Changing Climate and Habitat Temperature (기후변화와 서식지 수온 변화에 따른 북서태평양 살오징어(Todarodes pacificus)의 어획량 변동)

  • Recently, commercial catches of the common squid Todarodes pacificus have dramatically decreased in Korean and Japanese waters. The relationship between common squid catches and environmental factors was investigated using squid catches, climate indices and observed seawater temperatures in Korean waters. Common squid consist of three spawning stocks: autumn, winter, and summer. The autumn stock is the largest in Korea, and its main fishing season appears to have shifted from September in the 1980s to October in the 1990s. We observed negative correlations between the spring Southern Oscillation Index and Korean catches and between the winter Pacific Decadal Oscillation and Japanese catches. Despite global warming, no conspicuous increases in October seawater temperatures have been observed at 10 and 50 m in Korean waters since the mid-1900s. Instead, the 50 m water layer of the East Sea appears to be gradually cooling. Moreover, temperatures at 50 m in the East Sea and the South Sea were significantly negatively correlated with squid catches in Korea and Japan, respectively. Our preliminary analysis indicates a link between climate change, seawater temperature, and squid catches in Korean waters, which helps to inform the direction of subsequent research to identify the cause of rapid decreases in this squid resource.

Tests for Asymmetry and Structure Changes in Retail Price Volatility of Fresh Common Squid in the Republic of Korea (신선 물오징어 소매가격 변동성의 구조변화와 비대칭성 검증)

  • This study analyzed structural changes and asymmetry of price volatility during the period before and after a point of structural change in price volatility, using the Korean fresh common squid daily retail price data from January 1, 2004 to September 30, 2015. This study utilized the following analytical methods: the unit-root test was applied to ensure the stability of the data, the Quandt-Andrews breakpoint test was applied to find the point of structural change, and the Glosten-Jagannathan-Runkle GARCH and EGARCH models were applied to investigate the asymmetry of price volatility. The empirical results of this study are as follows. First, ADF, PP, KPSS and Zivot-Andrews tests showed that the daily retail price change rate of the Korean fresh common squid differentiated by logarithm was stable. Secondly, the ARIMA (2,1,2) model was selected by information criteria such as AIC, SC, and HQ. Thirdly, the Quandt-Andrews breakpoint test found that a single structural change in price volatility occurred on June 11, 2009. Fourthly, the Glosten-Jagannathan-Runkle GARCH and EGARCH models showed that estimates of coefficients within the models were statistically significant before and after structural change and also that asymmetry as a leverage effect existed before and after structural change.

Physical and Chemical Properties of Cornmeal Extrudates by Addition of Defatted Soy Flour and Squid (옥수수가루, 탈지 콩가루 및 오징어를 이용한 스낵제품의 물리화학적 특성연구)

  • This study was conducted to investigate physicochemical properties of extrudates combining 4 levels of squid (0, 3, 5 and 7%) with 3 levels of defatted soy flour (0, 5, and 10%). Blends were adjusted to moisture content of 27% and then extruded in a single-screw laboratory extruder at 170rpm screw speed and 16$0^{\circ}C$ barrel temperature. The extruded materials were dried at 6$0^{\circ}C$ for 8hr to a moisture content of 3~4% and refrigerated at 4$^{\circ}C$ for 12 hour before examination for textural properties, expansion ratio, bulk density, shear force and Hunter color. Expansion ratio of extrudates decreased as squid content increased whereas bulk density and shear force increased. Expansion ratio of extrudates was not significantly different by defatted soyflour level. Bulk density of products decreased as defatted soyflour content increased but shear force of products increased as defatted soyflour content increased. In scores of sensory hedonic evaluation of snacks, appearance, flavor, texture and overall acceptability values had lowered as squid level increased. Therefore, according to materials contents on extrudates increased, nutritional contents of this products increased and also shear force and bulk density in physical properties increased whereas expansion ratio decreased.

Comparison of Broadband Acoustic Scattering Characteristics Between Japanese Flying Squid Todarodes pacificus and Golden Cuttlefish Sepia esculenta (살오징어(Todarodes pacificus)와 갑오징어(Sepia esculenta)에 대한 광대역 음향산란특성의 비교)

  • Cephalopods, such as the Japanese flying squid Todarodes pacificus and golden cuttlefish Sepia esculenta, are an important food source for all toothed whales, particularly bottlenose dolphins in costal and offshore waters around the Korean Peninsula. A controlled laboratory experiment was conducted to investigate the broadband acoustic backscattering from live individuals of these two cephalopod species using linear chirp signals (100-200 kHz). The backscattered echo signal was measured at about 1° intervals from -45° (head down) to +45° (head up) in the dorsal plane. The species-specific, frequency-dependent scattering characteristics were investigated by comparing the relationship between the wavelength-normalized backscattering cross-section (σ/λ2) and the wavelength-normalized fish length L/λ for each species. The estimated σ/λ2 value for Japanese flying squid was 9.51 at an L/λ range of 12.79-30.27 (mean, 21.26). This was approximately 7% of the σ/λ2 value (136.1) for golden cuttlefish at an L/λ range of 9.07-25.49 (mean, 15.77).

  • Aquatic raw materials easily undergo deteriorative changes, and thus it is very important to keep fish meats fresh during transport and processing. The $K_i$ value, biogenic amines, trimethylamine (TMA) and volatile basic nitrogen (VBN), which are reported fish freshness indices, were measured for 20 samples. The $K_i$ values were normally in the range of $7.8{\sim}43.6%$, except those for some fish including squid. The contents of biogenic amines were negligible, and a correlation (r=0.894) was found between the contents of TMA and VBN.

Estimating the economic effectiveness of LED fishing light systems for the squid jigging fishery (오징어 채낚기어업의 LED 집어시스템 도입에 따른 경제성 분석)

  • The fuel cost of fishing lights for squid jigging fishing vessels takes about 30% of total fishing costs and over 65% of total fuel costs, which indicates the necessity of development of cost-reducing and high efficient fishing light system. This study aimed to analyze the economic effectiveness of LED fishing light systems in combination with metal halide lamp for the squid jigging fishery. Analytical results showed that the level of fishing profits of vessels using LED lights could be different with those of vessels using metal halide lights. That is, when a fuel cost could be reduced by 30%, fishing profits of vessels using LED lights might be the same as those of vessels using metal halide lights, and fishing profits of vessels using LED lights could be higher than those of vessels using metal halide lights when a fuel cost could be reduced by 50%.
