This study was conducted to compare the cold tolerance of seven ground cover species, Orostachys japonica, Sedum oryzifolium, S. kamtschaticum 'SG1', S. reflexum, S. rupestre 'Blue Spruce', S. spurium 'Green Mental', and S. takesimense, which have been used for green roof and wall systems in Korea. Plants were grown in 10-cm pots and 1 g of tissues at stem-end and crown of each species were kept under either light or dark condition, respectively. For cold tolerance tests, plants were initially left at $4^{\circ}C$ and linearly cooled to 0, -4, -8, -12, -16, and $-20^{\circ}C$ at $-2^{\circ}C{\cdot}h^{-1}$ rate. Low temperature injury and regrowth rates were visually evaluated and assessed by image analysis, respectively. The lethal temperature ($LT_{50}$) of plant species was determined using electrolyte leakage measurements. S. reflexum was the most cold tolerant, showing the most survival at $-16^{\circ}C$, whereas S. oryzifolium and S. takesimense showed low temperature injury at $-8^{\circ}C$. Similar results were found with electrolyte leakage measurements at the stem end. For each species, the crown (Mean $LT_{50}:\;-12.15^{\circ}C$) was more cold tolerant than the stem end (Mean $LT_{50}:\;-10.47^{\circ}C$). In conclusion, S. reflexum and S. rupestre 'Blue Spruce' are recommended for planting in the central region of Korea during late fall and early winter, as they were more cold tolerant and showed more vigorous regrowth than the other tested plant species.
The peroxo-polytungstic acid was formed by the direct reaction of tungsten powder with the hydrogen peroxide solution. Peroxo-polytungstic powder were prepared by rotary evaporator using the fabricated on to ITO coated glass as substrate by dip-coating method using $2g/10mL(W-IPA/H_2O)$ sol solution. A substrate was dipped into the sol solution and after a meniscus had settled, the substrate was withdrawn at a constant rate of the 3mm/sec. Thicker layer could be built up by repeated dipping/post-treatment 15 times cycles. The layers dried at the temperature of $65{\sim}70^{\circ}C$ during the withdrawn process, and then tungsten oxides thin film was formed by final heating treatment at the temperature of $230{\sim}240^{\circ}C$ for 30min. A linear rotation between the thickness of thin film and the number of dipping/post-treatment cycles for tungsten oxides thin films made by dip-coating was found. The thickness of thin film had $60{\AA}$ after one dipping. From the patterns of XRD, the structure of tungsten oxides thin film identified as amorphous one and from the photographs of SEM, the defects and the moderate cracks were observed on the tungsten oxides thin film, but the homogeneous surface of thin films were mostly appeared. The electrochemical characteristic of the $ITO/WO_3$ thin film electrode were confirmed by the cyclic voltammetry and the cathodic Tafel polaization method. The coloring bleaching processes were clearly repeated up to several hundreds cycles by multiple cyclic voltammetry, but the dissolved phenomenon of thin film revealed in $H_2SO_4$ solution was observed due to the decrease of the current densities. The diffusion coefficient was calculated from irreversible Randles-Sevick equation from the data obtained by the cyclic voltammetry with various scan rates.
This study is to describe practices of and attitude toward traditional wedding food and the attitude of housewives toward the traditional wedding food in Busan metropolitan and Kyungnam province area. Data were analyzed from the convenient sample of 525 housewives collected from September 20 to September 28, 2001. As for the necessity of traditional wedding food, the most popular food was ebagee food, pebaek food, yedan food in order. Of the various kinds of traditional wedding food, table setting for parent-in-law was chosen as the most popular one. Sociodemographic characteristics such as education level and age were statistically associated with perception of traditional wedding food being necessary as a ritual thing. The respondents preferred rice cakes as wedding food to fishes, fruits, traditional sweets and skewered slices of seasoned meats. More than half of the respondents think current practices of wedding food is prodigal and has to be done in thrifty manner. As a ritual practices of wedding food were to be readjusted to the change of social custom depending on the degree of modernization. More than half (52.1%) of the housewives expected traditional wedding food should fade away. A conclusion was that it is necessary to develop modernized wedding food reflecting traditional wedding customs with economic costs.
In this study, sorbic acids and benzoic acids frequently used in foods retailed in Korea were monitored and their estimated daily intakes were assessed for a purpose to ensure food additives safety management. The estimated daily intakes were calculated by categorizing the assessment items into the national average, by gender, by age and the high intake ($95^{th}$) groups based on concentrations of preservatives in foods as well as national health and nutrition survey data. The calculations were then compared with the ADI of the JECFA and the possibility of risk to be imposed on the people was examined. The results indicated that the estimated daily average intakes of preservatives were $221.60{\mu}g/kg{\cdot}bw/day$ of sorbic acids and $27.30{\mu}g/kg{\cdot}bw/day$ of benzoic acids. Compared to the ADI, the intake levels were 0.89 and 0.55% respectively, which were in a safe range. The estimated daily intakes of sorbic acids and benzoic acids in the high intake group ($95^{th}$) were $1140.27{\mu}g/kg{\cdot}bw/day$ and $194.95{\mu}g/kg{\cdot}bw/day$, which were 4.56% and 3.90% of the ADI (%) respectively, indicating that the intake levels of sorbic acids and benzoic acids in the high intake group were within a safe range. As for gender difference, the amount of benzoic acids intake was slightly larger in men than in women. However, gender differences were not observed in terms of the intake of sorbic acids. In terms of the levels of intake by age, the rates were found to be in the range of 0.52-2.10% for sorbic acids and 0.15-1.23% for benzoic acids. Therefore, the levels of sorbic acids and benzoic acids intakes were found not to exceed the ADI in all groups, and thus were within the safe ranges.

The aims of this study were to investigate the perception of confectionery bakers working in Gyeongnam province for food allergy and to find ways to improve and manage food allergy in confectionery and bakery. The questionnaire was composed of general questions and other questions related to food allergy in confectionery and bakery, and the questionnaires were distributed to the bakers working in Gyeongnam. Sixty nine of 102 confectioneries and bakeries responded to this study, and 60 (87.0%) out of 69 people were aware or had heard about food allergy. However, 54 (78.3%) out of 69 lacked prior education about the management of food allergy. Fifty one (73.9) of 69 people responded that they strongly considered food allergy in the manufacture of the products, but they were not educated about the management of food allergens and symptoms of food allergy. Confectionery bakers were aware about food allergies, but did not label food allergen on the products and have a specific management for food allergens at the work site. Therefore, it is necessary to educate the confectionery bakers about food allergy and to develop and distribute a manage program of food allergens in the field. The result from the present study could be used as basic data for the investigation of awareness for food allergy of confectionery bakers working in Korea.

This paper describes on the suppression of sea clutter on marine radar display using a cell-averaging CFAR(constant false alarm rate) technique, and on the analysis of radar echo signal data in relation to the estimation of ARPA functions and the detection of the shadow effect in clutter returns. The echo signal was measured using a X -band radar, that is located on the Pukyong National University, with a horizontal beamwidth of $$3.9^{\circ}$$, a vertical beamwidth of $20^{\circ}$, pulsewidth of $0.8 {\mu}s$ and a transmitted peak power of 4 ㎾ The suppression performance of sea clutter was investigated for the probability of false alarm between $l0-^0.25;and; 10^-1.0$. Also the performance of cell averaging CFAR was compared with that of ideal fixed threshold. The motion vectors and trajectory of ships was extracted and the shadow effect in clutter returns was analyzed. The results obtained are summarized as follows;1. The ARPA plotting results and motion vectors for acquired targets extracted by analyzing the echo signal data were displayed on the PC based radar system and the continuous trajectory of ships was tracked in real time. 2. To suppress the sea clutter under noisy environment, a cell averaging CFAR processor having total CFAR window of 47 samples(20+20 reference cells, 3+3 guard cells and the cell under test) was designed. On a particular data set acquired at Suyong Man, Busan, Korea, when the probability of false alarm applied to the designed cell averaging CFAR processor was 10$^{-0}$.75/ the suppression performance of radar clutter was significantly improved. The results obtained suggest that the designed cell averaging CFAR processor was very effective in uniform clutter environments. 3. It is concluded that the cell averaging CF AR may be able to give a considerable improvement in suppression performance of uniform sea clutter compared to the ideal fixed threshold. 4. The effective height of target, that was estimated by analyzing the shadow effect in clutter returns for a number of range bins behind the target as seen from the radar antenna, was approximately 1.2 m and the information for this height can be used to extract the shape parameter of tracked target..

The potential pathogenicity of Vibrio splendidus biovar II, which was isolated from triploid larvae of pacific oyster with bacillary necrosis and fish pathogenic V. anguillarum were investigated. The 5-day-old larvae infected with V. splendidus biovar II at the dose of $1.81{\times}10^{4}$ CFU/$m\ell$ started to die within 8 hours after exposure and the mortality were reached to 100% in 16 hours. However, $1.13{\times}10^{4-5}$ CFU/$m\ell$ of V. anguillarum caused 5.5-20% mortality of the larvae after 24 hours. The 10-day-old larvae infected with V. splendidus biovar II at the dose of $5.0{\times}10^{5}$ CFU/$m\ell$ showed mortality from 8 hours after challenge and led to a marked mortality of 90.47% after 24 hours. But V. anguillarum at doses of $5.08{\times}10^{3-6}$ CFU/$m\ell$ did not show mortality in the 10-day-old larvae. Therefore V. splendidus biovar II exhibited stronger virulence in 5-day-old larvae than 10-day-old and young oyster. Changes in the concentration of Vibrio in sea water showed that V. anguillarum decreased from $1.13{\times}10^{5}$ CFU/$m\ell$ to 1.7${\times}$105 CFU/$m\ell$ and V. splendidus biovar II increased from $1.81{\times}10^{4}$ CFU/$m\ell$ to $1.7{\times}10^{7}$ CFU/$m\ell$. This strong survival ability of V. splendidus biovar II in seawater was thought as one of the virulence factors against oyster larvae. The mortalities of 5-day-old and 10-day-old oyster larvae were decreased by addition of 30 $\mu{g}/m\ell$ of antibacterial agent(oxytetracycline or streptomycin). These results suggest that bacillary necrosis by V. splendidus biovar II can be occurred in oyster larvae in Korea. And virulence of V. splendidus biovar II is stronger than that of V. anguillarum in oyster larvae causing significant mortality at the density of $10^{4}$ CFU/$m\ell$.

This study was carried out to evaluate the microbiological quality of poultry carcasses at different slaughtering process in large (>50,000 chicken/day) and small (<30,000 chicken/day) scale slaughtering houses. Whole bird rinse technique was used to analyze the incidence of microorganisms on poultry carcasses in each process of before visceration, after evisceration, after final wash, after main chilling and in cold room. In summer time, small scale slaughterhouse showed lower incidence of aerobic microorganisms (10$\^$4/ CFU/mL) than those of large scale slaughterhouse (10$\^$5/ CFU/mL) at the process of after main chilling and in cold room. But small scale slaughterhouse showed higher incidence of E. coli (10$^2$-10$^4$ CFU/mL) than those of large scale slaughterhouse (10$\^$-2/ CFU/mL) at each slaughtering process observed. During autumn and winter time, small scale slaughterhouse showed similar incidence of aerobic microorganisms as large scale slaughterhouse (10$\^$5/ CFU/mL after evisceration, 10$^4$ CFU/mL after main chilling and cold storage). Samples from carcasses during autumn and winter time in cold room showed no difference in E. coli counts (10$^2$ in autumn time and 10$^3$ CFU/mL in winter time) between large and small scale slaughterhouse. In spring time, small scale slaughterhouse showed lower incidence of aerobic microorganisms than those of large scale slaughterhouse at each slaughtering process observed except after main chilling. Small scale slaughterhouse showed higher incidence of aerobic microorganisms in final cooling water than large scale slaughterhouse during spring time.

The objective of the present study was to investigate the effect of processing conditions on the physical and sensory properties of pork cutlet produced from chilled pork loin (T1), the cured and massaged chilled pork loin (T2), the cured and massaged frozen pork loin (T3), frozen pork loin (T4), massaged frozen pork loin (T5). Water holding capacity (WHC) of pork cutlets were not significantly different among the treatments. In chilled pork loin, WHC of T2 were slightly higher than that of T1. T4 showed the lowest WHC among all treatment group. In meat color, CIE L$\^$*/, a$\^$*/. b$\^$*/ values in chilled pork loin were not significantly different between T1 and T2. L$\^$*/ values of T3 and T5 were higher than that of T4. a$\^$*/ values were not significantly different among the all treatments. T3 produced through the curing and massaging treatment showed the highest tenderness in shear force (p< 0.001), while force value (kg/㎤) of T4 were the highest among all treatments. Separation ratio of wheat dough from pork cutlet was highest (p.<0.001) in T4. In triangle test, T1 : T3 combination was higher than that of other pairs. No differences in acceptability of sensory evaluation were observed among T1, T2, T3, and T5 groups, while the frozen pork showed the lowest (p<0.001) acceptability. In conclusion, pork cutlets from T4 with the curing and/or massaging process showed similar acceptance than those from chilled pork loins, and this treatments may contribute to promote the consumption of frozen pork loins.
This study was peformed to evaluate physico-chemical and textural properties, and shelf-life effect of low-fat functional sausages(LFFS) manufactured with sodium lactate(SL), lac color and various molecular weights of chitosans(low=1.5 kDa, medium=30∼40 kDa and high=200 kDa) during storage at 4$^{\circ}C$ for 8 weeks. LFFS had a pH range of 6.39∼6.50, 76∼78% moisture, <2% fat, 14∼15% protein. The combination of SL and low molecular weight(MW) of chitosan improved water holding capacity(WHC), however those of SL and medium MW of chitosan reduced WHC. Vacuum purge(VP) reduced with increased MW of chitosans during refrigerated storage. The addition of chitosans reduced the lightness and yellowness, but increased the redness values, which was comparable to the sodium nitrite concentration between 75 and 150 ppm. LFFS containing SL and medium MW of chitosan increased most texture profile analysis(TPA) values, as compared to controls with 75 and 150 ppm. The addition of SL in LFFS retarded the microbial growth for Listeria monocytogenes, however no synergistic effect with the addition of chitosans were observed. E coli O157:H7 and Salmonella typhimurium reduced during refrigerated storage, regardless of SL and chitosan treatments. Increased storage time increased values for VP, yellowness and textural properties. These results indicated that the combination of SL and various MW of chitosans affected the functional and textural properties, and inhibited the microbial growth for LM effectively. In addition, 0.5% lac color as a replacer for sodium nitrite improved the color development, resulting in similar hunter color values, which was comparable to the sodium nitrite concentration between 75 and 150 ppm.
