It has been 40 years since emulsion inversion was observed. Emulsion inversion is a phenomenon in which O/W emulsion inverts to W/O emulsion or vice versa. In other words, the dispersed and continuous phase of an emulsion is reversed after emulsion inversion takes place. For three-phase emulsions, not only emulsion inversion but also emulsion transition has been observed. In emulsion transition the continuous phase of an emulsion remains unchanged, but the dispersed emulsion drops, which is basically a two-phase emulsion, experience emulsion inversion at a certain temperature. Such temperature is called the emulsion transition temperature. Emulsion transition was a product of theoretical speculation and was experimentally observed for a couple of ternary amphiphile/oil/water systems. This phenomenon is a novel one, which has been unreported to date. In this article emulsion inversion and emulsion transition are compared and discussed.

The preparation and properties of emulsions stabilized by the adsorption of solid particles at the oil-water interface are reviewed. Comparison is made with the behaviour of surfactant-stabilized emulsions. Many of the properties of Pickering emulsions are attributed to the large free energy of adsorption for particles. The main differences is due to the irreversible adsorption of particles to the interface. Phase inversion from w/o (water-in-oil) to o/w (oil-in-water) can be brought by increasing the volume fraction of water. Hydrophilic particles tend to form o/w emulsion whereas hydrophobic particles form w/o emulsion. The contact angle at the oil-water interface is main parameter to decide the emulsion type. The aspects of stability of Pickering emulsions are in contrast to general emulsions in some points. The possibility using Pickering emulsions for cosmetics is also proposed.
Laboratory experiments were undertaken in mixing chamber to study the water-in-oil emulsion formation tendency, stability and formation rate of 16 crude oils. Arabian, Iran, Dubai, Isthmus and Daekyung crudes showed high emulsion formation tendency and had water contents of 80-90%. Emulsions of crude oils of middle East were very stable, while Isthmus and Daekyung sudes formed unstable emulsion. Emulsion formation tendency rate, and stability showed significant correlations with asphaltene content of crude oil. To evaluate the possibility of preventing mousse formation, inhibition ability of several dispersants and demulsifier was tested. They inhibited mousse formation at 0.1-0.2% concentrations (v/v). Emulsion inhibition by chemical treatment delayed the time of formation, but did not decrease water content. Demulsifying ability of dispersants and demulsifier was tested because biscous emulsion causes formidable problems in skimming, pumping and recovery operation. British demulsifier Alcohol 0 showed excellent emulsion breaking efficiency at 0.1% of emulsion Vol..

The influence of different dilution procedures on the properties of oil-in-water (O/W) nano-emulsions obtained by dilution of oil-in-ethanol (O/E) microemulsions with water has been studied. The system water/ethanol/nonionic surfactant/silicone oil with ethanol was chosen as model system. The dilution procedures consisted of adding water (or microemulsion) stepwise. By mixing O/E microemulsions into water, nano-emulsions with droplet diameters of 30 nm were obtained. In contrast, by mixing water into O/E microemulsion, emulsions with diameter of 400 nm were obtained The dilution methods were shown to be a key factor determining the properties of the emulsions. There were no change in diameters of nanoemulsion droplets against time, however sizes of droplets in the emulsion with larger droplets were increased with time and the mechanism of unstability was thought to be Ostwald ripening.

Self-emulsifiable polyethylene (PE) wax was prepared using acrylic acid grafted PE wax with potassium hydroxide and various emulsifiers for the economic production of PE wax emulsion. Modification reaction completion was confirmed that the peak from carbonyl group of acrylic acid disappeared and the new peak from carboxylic acid salts appeared in the FT-IR (Fourier transform infrared) spectrum data. Self-emulsifiable properties of the modified PE wax were investigated by the emulsion size and the stability of wax emulsion without any additional emulsifiers. According to self-emulsifiable properties, the emulsion size and stability were varied on the concentration and structure of the emulsifier. The greater emulsion concentration and hydrophilic poly(ethylene oxide) (PEO) characteristics of the emulsifier resulted in the smaller emulsion size and better emulsion stability. In addition, the use of emulsifiers mixture was more effective to obtain smaller size and uniform distribution of emulsion than that of single emulsifier in PE wax modification reaction. Especially, modified PE wax with OAE-5 and LAE-15 emulsifiers mixture shows excellent performance in terms of the smallest emulsion size ($4.34{\mu}m$) and emulsion stability.

The objective of this study was to find out the stable formulation of nano-emulsion containing high concentration of quercetin and to investigate the effect of an ethanol on the nano-emulsion prepared by POE (30) hydrogenated castor oil (HCO-30)/oil/quercetin/ethanol/water system. Nano-emulsion was prepared using emulsion inversion point (EIP) method as low-energy method plus homogenizer as high-energy method. To evaluate effect of ethanol and other components on the nano-emulsion, physical properties such as droplet size, morphology, and size distribution were determined. The optimal quercetin concentration was 0.2 % on the nano-emulsion. The droplet diameter was below 300 nm at the HCO-30 concentration below 2.00 %. Nano-emmulsion containing 4.75 % HCO-30 was the most stable and its mean droplet size was 172.40 nm. Finally, the size of nano-emulsion containing 4.00 % ethanol was 128.15 nm and size distribution was also narrow. The results showed that the breakdown process of this nano-emulsion could be attributed to Ostwald ripening. This study about effect of ethanol on the nano-emulsion showed that loading capacity of drug could be increased by using a small amount of ethanol. As prepared stable nano-emulsion, this study showed that these results could be applied to pharmaceutics, cosmetic including skin-care products, perfume and etc.
In this study, nano-emulsions containing 0.01, 0.03, 0.05, and 0.10% ethyl acetate fraction of Hippophae rhamnoides (H. rhamnoides) leaf extracts were prepared. The particle size, particle size distribution and skin permeability of the nano-emulsions were evaluated for five weeks. Nano-emulsion was prepared by the sequential use of homogenizer and microfluidizer. Nano-emulsion containing the ethyl acetate fraction exhibited a monodispersed form. Nano-emulsion containing 0.03% ethyl acetate fraction was the most stable for five weeks. The in vitro skin permeation study of nano-emulsion containing 0.03% ethyl acetate fraction was carried out using Franz diffusion cell. The nano-emulsion showed a better skin permeability than that of O/W emulsion. These results indicate that the nano-emulsion containing the ethyl acetate fraction of H. rhamnoides leaf extract showed a remarkable stability and skin permeability than that of O/W emulsion.

Multiple emulsions, called multiphase emulsions, include water-in-oil-in-water (W/O/W) type and oil-in-water-in-oil (O/W/O) type emulsions. In cosmetic industry, they are used to stabilize active ingredients but the applicability of the multiple emulsions is limited because of low stability and difficulty of manufacturing. In this study, we investigated a two-step emulsification process for a W/O/W type emulsion. We also investigated the change of stability using different emulsifiers and oil polarity. The results suggested that polyglyceryl-10 stearate, as a main emulsifier, played an important role in the stability and the formation of the multiple emulsions.
