Survey on Packaging Status and Effects of Precooling on the Quality of $Agaricus$ $bisporus$ (양송이버섯의 포장실태조사 및 예냉처리가 품질에 미치는 효과)

  • This study was carried out to investigate the packaging status of the $Agaricus$ $bisporus$ mushrooms and the benefits of storing them after precooling to improve their distribution system using small packages. The packaging status of the $Agaricus$ $bisporus$ mushrooms was surveyed at a farm, a department store, a wholesale market, and a supermarket from May to September 2011. The packaging materials that were used were PS, carton, PP, LDPE, PLA, and PVC. The harvested $Agaricus$ $bisporus$ mushrooms were precooled at $4^{\circ}C$ for three hours and were then stored at $20^{\circ}C$ for three days. The weight loss rate of the precooled sample was slightly lower than that of the unprecooled sample; conversely, the L value of the precooled sample was higher than that of the unprecooled sample. The ${\Delta}E$ value was lowest in the precooled sample after packaging. The precooling process effectively prolonged the shelf life and enhanced the quality of the$Agaricus$ $bisporus$ mushrooms.

Antioxidative and Antimutagenic Effects of Agaricus bisporus Ethanol Extracts (양송이버섯 추출물의 산화적 스트레스 억제효과 및 항돌연변이 효과)

  • This study was performed to investigate the antioxidative effects such as the inhibition of malondialdehyde (MDA) and bovine serum albumin (BSA) conjugation reaction, inhibition of $Fe^{2+}$-induced lipid peroxidation and the scavenging effect on 1,1-diphenyl-2-picryl-hydrazyl (DPPH) radical, as well as antimutagenic capacities as Ames test in ethanol extracts of Agaricus bisporus. Agaricus bisporus ethanol extracts inhibited $Fe^{2+}$-induced lipid peroxidation and scavenged DPPH radical. The $IC_{50}$ of Agaricus bisporus ethanol extracts were 78.63 mg/assay for inhibition of MDA with BSA conjugation reaction, 4.06 mg/ assay for inhibition of $Fe^{2+}$-induced lipid peroxidation and 1.08 mg/assay for scavenging effect on DPPH radical. So, among the methods used in this study, the most effective antioxidative capacity in ethanol extracts of Agaricus bisporus was the scavenging effect on DPPH radical. The indirect and direct antimutagenic effects of ethanol extracts of Agaricus bisporus were examined by Ames test using Salmonella Typhimurium TA98 and TA100. The inhibitory effects on direct mutagenicity mediated by sodium azide in Salmonella Typhimurium TA100 and 2-nitrofluorene in Salmonella Typhimurium TA98 were 100%. The inhibition rates on indirect mutagenicity mediated by 2-anthramine were 86.09% in the Salmonella Typhimurium TA98 and 81.93% in the Salmonella Typhimurium TA100. The ethanol extracts of Agaricus bisporus showed considerable antioxidative activity and strong antimutagenic capacity.

Analysis of trends in brown button mushroom consumption for raising awareness (갈색양송이 인지도 제고를 위한 소비 성향 분석)

  • Cultivation of brown mushrooms, rather than that of white variants is preferred by Korean mushroom farmers, as the former are resistant to diseases. However, brown mushrooms were cultivated only in selective eco-friendly agricultural farms due to lack of consumer awareness. After providing information about brown mushrooms to respondents through a 1-minute video clip, a survey was conducted on social network service (SNS) to assess recognition and preference for brown mushrooms. A food evaluation was then conducted among 200 people randomly selected from the survey respondents. Most respondents (83%) had not encountered brown button mushrooms previously, and 98% of the respondents were willing to buy these mushrooms because they were "curious about its taste" (44%). In the food evaluation, 32% of the respondents found the brown button mushrooms to be delicious, 28% reported a good flavor, and 31% described a good texture. In addition, we confirmed that 95% of respondents were interested in purchasing brown mushrooms after sampling. Therefore, in the present study, we evaluated public perception, preference, and taste of brown button mushrooms, and confirmed that availability of information on nutrition and benefits s of mushroom consumption could induce consumers to buy brown button mushrooms.

Characteristic evaluation of collected strains of Agaricus spp. based on ITS rDNA sequence (ITS 계통분석을 이용한 주름버섯류 수집균주의 특성평가)

  • Phylogenic relationships and morphological characteristics were classified and investigated among the 233 collected strains of Agaricus spp. The 38 strains were differently identified as different characteristic group using analysis of ITS regions in rDNA. A. bitorquis was showed close relationship in groupA whereas A. campestris was in groupC as different characteristic group among with A. bisporus. There was no phylogentic difference with strains collected by country and different pileus colored Agaricus bisporus. Also the strains were cultivated twice to investigate morphological characteristics of fruiting bodies. The characteristics and yield of collected strains were compared with molecular varieties and seasons by the cultivation. In this result, A. campestirs showed good yield and quality in terms of hardness off-white mushroom was more harder than other number of A. bisporus. Also earliness and color of pileus was influenced by external environment all conditions.

New cultivation method of button mushroom(Agaricus bisporus) utilizing mixture of sawdust and chicken manure (톱밥과 계분을 이용한 새로운 양송이 재배방법)

  • Button mushroom(Agaricus bisporus) are cultivated on wheat straw or rice straw based compost. In this study different compost formular, sawdust as carbon source and chicken manure as nitrogen source were used for button mushroom cultivation. Two steps of sufficient composting process was required to be successful in the cultivation. 1) the substrates are needed to be mixed periodically under the aerobic condition in the phase I process. 2) the temperature is need to be maintained between 55 and 65? for more than three days in the phase II process. Results showed that button mushroom was possible to grow normally with sawdust based compost. However the mushroom yield was less than that of the conventional compost formular(rice straw or wheat straw). The new compost formular developed from this study may be useful but further research may need to improve button mushroom cultivation more efficiently.

Biochemical Characterization of Agaricus bisporus Dikaryon Strains (양송이 이핵균주의 생화학적 특성 검정)

  • Button mushroom (Agaricus bisporus) strains from diverse origins were compared in this study to obtain basic information on their growth and biochemical properties that are helpful for breeding. Among 31 dikaryotic strains tested, most strains showed better mycelial growth on oatmeal agar than on MEA and PDA. Mycelia of the mushroom strains revealed ${\beta}$-glucosidase activity the most clearly among the seven extracellular enzymes tested. All the strains showed protease activity, but ${\beta}$-glucosidase activity was found in 27 strains and xylanase activity was found in 30 strains. The activity of avicelase, CM-cellulase, amylase, and pectinase was detected in less than 20 strains. These results implied that enzymatic characteristics could be used as a criterion of strain selection for breeding study.

Effect of Prolongation by Precooling Treatment and Improved Packing of Mushrooms (Agaricus bisporus) (예냉처리 및 포장 방법 개선에 따른 양송이의 선도 연장 효과)

  • Precooling and improved packing of mushrooms were investigated with a view to prolonging their freshness. Harvested mushrooms were precooled by forced air cooling and then packed in an EPS container. Mushrooms were transported to customers by insulated truck and stored at either $10^{\circ}C\;or\;25^{\circ}C$. Conventionally packed mushrooms in cartons were also examined as controls. Mushroom respiration rate slowly fell 2- to 3-fold upon precooling. Weight loss was decreased by precooling and the use of the insulated pack. Also, the L-value of the mushroom surface remained high with precooling, and mushroom elongation was less than in the control. Summer market life was extended to 3-4 days (from 1-2 days) by the improved distribution method.

Contents of Free-Sugars & Free-Sugaralcohols in Pleurotus ostreatus, Lentinus edods & Agaricus bisporus (느타리버섯, 표고버섯 및 양송이의 유리당(遊離糖)과 당(糖)알코올 조성)

  • Compositions of free-sugars and sugar-alcohols in three cultivated mushrooms, Pleurotus ostreatus, Lentinus edodes and Agaricus bisporus were analyzed by gas-liquid chromatography and compositional differences of these components depending on species, sizes of fruiting body and portions(pileus and stipe) were investigated. Glucose, fructose, trehalose, glycerol, arabitol and mannitol were identified in each of the three mushrooms. The major components were mannitol and arabitol in Lentinus edodes, mannitol in Agaricus bisporus, trehalose and mannitol in Pleurotus ostreatus. The total free-sugars and sugar-alcohols content were in the range of 12.7-18.9% in Lentinus edodes, 9.2-16.1% in Agaricus bisporus and 8.2-10.6% in Pleurotus ostreatus. Total contents of these components in Pleurotus ostreatus and Agaricus bisporus were higher in pileus than those in stipe and it was decreased as pileus size development in all of three edible mushrooms.

Physical Characteristics of Mushroom(Agaricus bisporus) as Influenced by Different Drying Methods (건조방법에 따른 양송이버섯의 물리적 특성에 관한 연구)

  • This research was conducted to study the changes in physical characteristics of mushrooms (Agaricus bisporus) as influenced by drying methods. Samples were dried using either hot air drying, vacuum drying, or freeze drying and changes in the color, browning index, hardness and rehydration rate were evaluated by response surface methodology. Hot air drying resulted in the fastest drying of sample as compared to other methods. The rate of drying was most affected by the environmental temperature rather than air velocity or vacuum pressure. The overall color difference increased as the temperature and air velocity increased. The overall color changes of the freeze dried samples were minimal as compared to those of fresh mushrooms. The hot air dried samples showed the greatest changes in the overall color, browning index as well as hardness. The freeze dried samples showed the best rehydration characteristic and maintained the best overall quality after drying.

Antioxidative and Nitrite-scavenging Activities of Edible Mushrooms (버섯류의 항산화성 및 아질산염 소거작용)

  • This study was conducted to investigate the functional characteristics of diethylether and butanol extracts from Ganoderma lucidum, Agaricus bisporus and Lentinus edodes. Electron donating abilities of diethylether and butanol extracts from Ganoderma luculum were 95.07% and 97.75%, respectively. Electron donating abilities of butanol extracts from Agaricus bisporus was 94.33%, and that of Lentinus edodes was 96.09%. Antioxidative activities of diethylether and butanol extracts from Canoderma lucidum were higher than those of BHA. All extracts of Agaricus bisporus and Lentinus edodes showed lower antioxidative activity than that of BHA. Nitrite-scavenging abilities of diethylether and butanol extracts from Ganoderma lucidum were 68.34% and 44.44%, respectively. Nitrite-scavenging abilities of butanol extracts from Agaricus bisporus were 43.39%, and those of Lentinus edodes were 68.23%.
