An Exploration of the Possibilities for Archival Art as Local Community Archive: Gyeonggi Archive Exhibition and Seongbuk Documenta Exhibition (지역공동체 아카이브로서 아카이브 예술의 가능성 탐색 연구 - 경기아카이브 전시와 성북도큐멘타 전시 사례를 중심으로 -)

  • Profound changes have occurred in the archival landscape since the advent of community archives and the global spread of archival art. This trend can be seen in Korea where a noticeable growth in archival arts and local community archives can be observed. This study explores how archival arts in Korea function when they are specifically intended to play a role in local community archiving. For this purpose, we analyzed the 'Gyeonggi archive_Now (2018)' and 'Seongbuk Documenta (2016-2018)' exhibitions, which were both exemplary cases of archival arts exhibited in connection with local community archives. Based on the analysis of the Gyeonggi Archive, which was aimed at strengthening the local identity of Gyeonggi Province, as well as the analysis of Seongbuk Documenta, which focused on the loss of place that resulted from redevelopment projects in the area of Seongbuk-gu, this study identifies the multiple roles of artists in archiving work. This study also reveals the variety of archiving works that exist and illuminates the value that such initiatives have in constructing local identity and reviving a sense of place. In particular, this research shows that archival art has the potential to empower local community archives while also providing opportunities to boost artistic creation. Our research concludes by highlighting the necessity of promoting the right environment and conditions that are required for archival arts if they are to play a role not only in keeping records and memories but also in producing further knowledge and discourse in a local community.

Environment Model of Relational Archives (관계형 아카이브의 환경모형)

  • If archives cooperate with other archives in similar fields, various outcomes that are not possible when operated individually can be efficiently achieved. If the archive maintains a cooperative relationship between archives at all times and allocates limited resources to priority and essential activities, efficiency improvement can be expected in the operation of individual archives. If an archive tries to coexist, exchange, or cooperate with other archives, the scope and method will be different from the existing business performance. It will be different from the individually operated archive function in many ways, and new business functions that did not exist before are also required. In this study, by applying the environment model of OAIS, try to reconstruct the environment model of the relational archives that includes the partner of cooperation as a member of the archives that affects the operation of the archives.

국내 육제품 및 채소류의 아질산 잔류량

  • 본 연구는 우리나라에서 유통되고 있는 육제품의 잔류 아질산 함량 현황과 채소류의 아질산 함량을 조사하여 육제품 소비에 대한 안전성 평가 자료로 제시하고자 하였다. 분석한 21개 육제품의 아질산 함량 중 가장 높은 것은 40.3 ppm이었으며, 그 다음으로 39.61, 27.67, 22.36과 17.34 ppm 등이었다. 아질산 함량의 분포는 40 ppm 이상이 1 개 제품, 30-40 ppm이 1 개, 20-30 ppm이 2 개, 10-20 ppm이 6 개, 그리고 10 ppm 이하가 11 개 제품으로 절반 이상이 10 ppm 이하의 값을 보였으며, 그중 9 개 제품은 2 ppm 이하의 매우 낮은 아질산 함량을 보였다. 채소류의 아질산 함량은 전반적으로 매우 낮았으며, 그 중에서 아질산 함량이 가장 높은 것은 비트로 1.34 ppm 이었고 가장 낮은 것은 청경채로 0.04 ppm 이었다. 조리와 저장에 따른 시금치의 아질산 함량 변화를 살펴본 결과 데침 과정을 통하여 아질산 농도가 다소 감소하였으며, 생시금치의 경우 상온 저장은 냉장 저장과 달리 아질산 함량을 크게 증가시켰다.

Preference Evaluation of High Functional Spelt Flour Bread added with Aronia Powder (아로니아를 첨가한 고기능성 스펠트 밀가루 식빵의 기호도 분석)

  • Aronia is a superberry that contains antioxidants. Due to its nutritional value, it has received much attention and has been widely researched. In this study, the proportion of aronia powder applied to spelt wheat flour was measured with the pH ratio of the additive and respondents' preference was examined for the preferred addition to the additive population. As a result of the acidity measurement, the pH value tended to decrease as the amount of aronia powder was increased. As for the fermentation expansion rate, the volume of the dough added with aronia powder was measured to be slightly smaller than that without addition of aronia powder. Preference of breads with aronia powder added showed higher preference when 6% was added compared to when 3% of aronia powder was added. As a result of preference survey of breads containing aronia powder, the most preference was given to taste when 3% of aronia powder was added. Color, fragrance, and overall acceptance were the most preferred when 6% of aronia powder was added. Based on these results, the optimal mixing ratio of aronia powder to spelt flour bread was selected to be 6% of aronia powder.

  • ASEAN marking its 50th anniversary in 2017 draws hopes and concerns. There is hope for the full realization of the vision of ASEAN Community since 2015 while there are increasing concerns about the changing internal and external environments. This article reviews the process of ASEAN's community building and its external relations. First, after reviewing institutionalization and functional cooperation in 2016, it argues that there is increasing pressure for the modification of the 'ASEAN Way' mainly due to the recent political changes in some ASEAN member states. Second, this article considers the nature of ASEAN's external relation focusing on continuity rather than change. The tendency of external relations of ASEAN appears to be 'avoiding conflict' and 'status quo' while it concentrates on development cooperation. We argue that such attitude contributes to the unity of ASEAN as it is useful in searching for regional resilience which is a common goal of ASEAN power elites.

Quality Characteristics of Jelly Containing Aronia (Aronia melanocarpa) Juice (아로니아 과즙 첨가량에 따른 젤리의 품질특성)

  • This study was conducted to investigate the quality characteristics and antioxidant activities of jelly prepared with different amounts of aronia juice. Aronia juice was incorporated into jelly at concentrations of 3, 6, and 9%, based on the total weight of water. While the total water content of the jelly in different groups was not significantly different, the sugar content significantly increased with increasing levels of aronia juice. In the chromaticity measurements, $L^*$ and $b^*$ values decreased, whereas the $a^*$ values increased with increasing levels of aronia juice in the jelly. Further, the hardness and chewiness of jelly increased with increasing amounts of aronia juice. On the other hand, resilience, cohesiveness, and gumminess of the jelly were nearly similar for the control and samples treated with aronia juice. The total polyphenols, flavonoids, and anthocyanin contents increased proportionally with increasing levels of aronia juice. In addition, the antioxidant activity measured in terms of the 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS) radical scavenging activities of the jelly extracts were significantly higher for the samples containing aronia juice compared to the control and increased proportionally with increasing concentrations of aronia juice. In the sensory evaluation, the sample containing 6% aronia juice was perceived to have the best color, taste, texture, chewiness, flavor, and overall acceptance. These results suggest that aronia juice may be a useful ingredient in jelly for improving its quality as well as sensory and antioxidant potential.

Some Possibities of Community Archivs (공동체아카이브, 몇 가지 단상)

  • This paper considers some possibilities of community archives by exploring the concepts ans meanings of archival description. The author deals with two interesting cases -Herstory Writers Workshop Collection of Stony Brook University in New York and Poolmoo Collection of Poomoo Agricultural School in Korea. The author argues that archivists should know the specifications of Community Archives related to National Archives when they organizing and preserving records and archives of community archives.

The Realities and Practices in the UK's Community Archives Movement (영국 공동체 아카이브 운동의 전개와 실천적 함의)

  • The purpose of this study is to analyze the present stage of community archives movement in the UK. By doing so, it draws some implications of the UK case for the community archives movement in Korea. The UK's 'Independent' community archives as a part of grassroots movement are characterized by participation, autonomy, and self-help of community members. Along with the appearance of the concept of 'community', the UK has experienced the revitalization period of community archives in the social context of community-based urban regeneration project. Recently, the UK's community archives have transformed themselves into building a 'governance model' relying on the partnership with mainstream archives. In particular, the UK model of community archives is based 'on their own ways' with their autonomy as a product of intrinsic development initiated by communities themselves. The character of the model of this type is very analogous to the nature of maul' community archives movement in Korea. Since the early 2000s, however, the UK model of community archives has been evolving into a way of building governance through their appropriation of the skills and methodologies from mainstream archives without endangering the autonomous essences of community archives themselves. We need to note the point of local researchers' view in archival science who have tried to seek out the methodology for building maul community archives with regard to openness and collaboration. In this respect, a shift in archival principle in the UK would give significant implications in regenerating the locally based community model.

The Quality and Antioxidant Properties of Cookies containing Aronia Powder (아로니아 분말을 첨가한 쿠키의 품질특성 및 항산화 활성)

  • This study investigated the quality characteristics of cookies containing Aronia powder, which is well known for its various functions and biological activity. In this study, we assessed the quality characteristics and antioxidant activity of cookies containing various concentrations (0, 2, 4, 6 and 8%) of Aronia powder(AP). To analyze quality characteristics, pH of dough, moisture content, color(L, a, b), hardness, and sensory properties were measured. Qualities, such as moisture content, redness and yellowness and hardness increased significantly (p<0.001). whereas pH and lightness of the cookies significantly decreased (p<0.001). The antioxidant activity measured by DPPH and ABTS radical scavenging activities were significantly higher than the control, and it proportionally increased as the amount of AP increased (p<0.001). The results of sensory properties showed that cookies made with 2% and 4% AP did not differ significantly from the control in color, taste, and overall quality. Texture scores for the 2% and 4% AP groups ranked significantly higher than those of the other groups. Taken together, the results of this study suggest that AP is a beneficial ingredient for increasing the consumer acceptability and functionality of cookies. The quality characteristics of the 4% added samples exhibited significantly similar or higher values as compared to those of the controls, raising the possibility of developments in health-functional cookies. The results of the sensory evaluation produced very significant values for color, appearance, texture, and overall quality of instrumental analysis.

Aboriginal Community Archives in Australia and Current Meaning of "Parallel Provenance" (호주 원주민 공동체 아카이브와 '평행출처주의'의 현재적 의미)

  • The purpose of this study is to trace the formation process of "parallel provenance" concept in the context of Australia's aboriginal community archives development and draw its implications for contemporary rebuilding of domestic "past affairs-related committee archives". Focused on historical development of aboriginal community archives in Australia, this writing divides its development into three periods: colonial archives, post-colonial archives, and contemporary archives and investigates each period's distinct features in managing and building of aboriginal community archives. First of all, for colonial archives, it pays attention to Australia's archival tradition, which focused on current record-keeping and then development of multiple provenance resulted from this tradition. Second, for post-colonial archives, it examines the appearance of aboriginal people as the subject of documentation category and name indexing on them. Finally, for contemporary archives, it analyzes current activities of Australia's academic world of archival science for overcoming "the otherness" of aboriginal people through conceptualization of "parallel provenance". Conclusively, through current meaning of parallel provenance, this study draws implications for democratic contemporary rebuilding of domestic past affairs-related committee archives, in which historical victims become the subject of archives.
