실크 펩타이드가 첨가된 햄버거 패티의 이화학적, 관능적 품질 평가

  • 햄버거 패티에 기능적 특성을 부여하고자 실크 펩타이드를 첨가하여 햄버거 패티를 제조한 후 품질특성 및 최적 실크 펩타이드 첨가량을 평가하였다. 실크 펩타이드가 햄버거 패티의 가열 감량에 미치는 영향을 분석한 결과 실크 펩타이드 첨가량이 증가함에 따라 가열감량이 유의적으로 감소하는 것으로 나타났다. 실크 펩타이드가 첨가된 햄버거 패티의 경도, 탄성 및 점착성을 분석한 결과 경도는 실크 펩타이드 첨가량이 증가함에 따라 감소하는 경향이었으나, 탄성과 점착성의 경우 실크 펩타이드 첨가에 의해 영향을 받지 않는 것으로 나타났다. 또한, 색도 측정결과 실크 펩타이드 첨가량이 증가함에 따라 명도(L) 및 적색도(a)는 유의적으로 증가하였으며, 황색도(b)는 감소하는 것으로 나타났다. 실크 펩타이드를 첨가한 햄버거 패티의 관능적 특성을 분석한 결과 실크 펩타이드가 첨가된 햄버거 패티는 외관, 후각, 미각, 조직감 및 종합적 기호도 등 모든 평가항목에서 무첨가구에 비해 높게 나타났다.

  • 감마선 조사된 실크 펩타이드의 전자공여능은 감마선 조사선량이 증가할수록 증가되었으며 IC50은 비조사구에 비해 50${\sim}$70%로 감소되었다. 또한, 실크 펩타이드가 첨가된 햄버거 패티를 감마선 조사하여 측정한 결과 감마선 조사선량이 증가함에 따라 지방 산패도가 증가하였지만 실크 펩타이드 첨가구가 무첨가구에 비해 지방산화가 적은 것으로 나타났다. 이상의 결과는 실크 펩타이드의 첨가가 가열 및 감마선 조사에 의해 발생될 수 있는 햄버거 패티의 지질 산패를 억제시켜 TBA값이 낮아짐을 보여준다.

The Effect of Silkpeptide Powder on the Quality of Rice Dasik (실크펩타이드 분말 첨가가 쌀다식의 품질변화에 미치는 영향)

  • This study was conducted to investigate the effect of added silkpeptide powder on the quality (nutrient content and sensory evaluation score) of the rice Dasik. Rice Dasik was prepared with 0, 1, 2, 3, and 4% concentration of silkpeptide powder. The sensory evaluation scores for the group of the rice Dasik with 2% silkpeptide powder were found to be significantly higher than those of other groups. Increasing silkpeptide powder led to the significant increase in the contents of crude protein and crude ash. But there were no significant differences in contents of crude fat and moisture. And the contents of Ca, K and Mg of silkpeptide powder groups were higher than those of the silkpeptide powder free group.

  • This study was carried out in order to investigate the study on the characteristics of nutrient content and sensory evaluation of functional rice Dasik Rice Dasik was prepared with 0, 1, 2, 3 and 4% concentration of mulbeyry-leaf powder and silkpeptide powder. Increasing mulberry-leaf powder and silkpeptide powder led to the significant increase in the contents of crude protein and crude ash. The contents of Ca, K and Mg of mulberry-leaf powder and silkpeptide powder groups were higher than those of the mulberry-leaf powder and the silkpeptide powder free group. And the sensory evaluation of the rice Dasik with 2% mulberry-leaf powder and silkpeptide powder were found to be significantly higher than those of other groups.

  • Enzymatic hydrolysis of silk fibers were investigated for the preparation of soluble silk peptides by ten food-grade proteases from Bacillus, Aspergilius, and plant sources. Silk fibers were dissolved for 1 hr in a 2:1 cosolvent (50% $CaCl_2$: ethanol) by heating at $90^{\circ}C$. The silk solution was filtered to remove Impurity particles and desalted for 50 hours by a dialysis process to remove the used cosolvent. When the silk hydrolysis was performed at $45^{\circ}C$ for 2 hours, most proteases from Bacillus and Aspergillus generated large amounts of insoluble aggregates. On the contrary, proteases from plant sources produced much less aggregates during prolonged incubations and also exhibited high hydrolysis activities. In regards of the solubility and broad molecular sizes of produced silk peptides, Bromelain was finally selected and applied for the enzymatic hydrolysis of silk fibers.

Combined Effect of Gamma Irradiation and Silk Peptide on the Radio-sensitivity of Bacteria and Storage Stability of Ready-to-eat Hamburger Patty (감마선 조사와 실크 펩타이드 병용처리가 세균의 방사선 감수성 및 햄버거 패티의 저장 안정성에 미치는 영향)

  • This study was conducted to evaluate the combined effect of gamma irradiation and silk peptide on the radiosensitivity of bacteria and the storage stability of ready-to-eat hamburger patty. The $D_{10}$ values obtained for Escherichia coli, Listeria ivanovii, Salmonella typhimurium and Clostridium sporogenes by gamma irradiation were 0.25, 0.50, 0.55 and 1.35 kGy, respectively. The inactivation rate of S. typhimurium ($D_{10}=0.53kGy$) inoculated into hamburger patty with 5%(w/w) silk peptide was reduced 6% compared with the control $D_{10}=0.558kGy$). In acceleration storage at $30^{\circ}C$, microorganisms were not observed in samples irradiated with 7 kGy or 10 kGy during storage. However the irradiation at 5 kGy was insufficient to sterilize the contaminated microorganisms in hamburger patty regardless of the addition of silk peptide (5%). These results indicate that the combined treatment of gamma-irradiation and silk peptide admixture could be helpful to ensure storage stability of ready-to-eat hamburger patty, by controlling the preliminary microbial load.
