This study investigated the quality characteristics and antioxidant activities of preserved jams prepared by mixing various ratios of aronia and sugar. To analyze the quality characteristics, the total sugar, pH, moisture, maximum stress, hardness, total phenolics, 1,1-diphenyl-2-picrylhydrazyl (DPPH), trolox-equivalent antioxidant capacity (TEAC), ferric reducing antioxidant power (FRAP), oxygen radical absorbance capacity (ORAC), and sensory characteristics of the preserved jams were measured. Lower aronia contents resulted in higher total sugar content, hardness, and strength, as well as lower moisture, total phenolic content, and DPPH, TEAC, FRAP, and ORAC values. In terms of the sensory characteristics, an aronia content of 30%, which was determined to have strong sweetness and texture, resulted in the lowest overall acceptability. In contrast, the highest preference was shown to an aronia content of 40%. In this study, quality characteristics and antioxidant activity experiments were conducted based on various ratios of aronia and sugar. The results are expected to be used as preliminary data for developing products that use domestic aronia.
Carbonated drinks are a kind of drink that is popular in our daily lives and are sold mainly among young people. There are many brands of carbonated drinks currently on sale, and most of them emphasize the distinction of texture, and brand images and packages have further commercialized package design as a whole. It is necessary to increase the emotional experience of soda package design, which can increase the added value of the brand. Sensibility is the most common psychological experience in humans and is the subjective experience and feeling of things. By combining the emotional experience with the package design of carbonated drinks, it provides more emotional user experience while purchasing carbonated drinks, realizing diversification of product package designs and satisfying consumers' emotional needs. This paper first examines the package design of carbonated drinks, I hope it will be an implication if you increase the emotional experience of soda package design.

Recently, various machine learning algorithms have been actively applied to the field of livestock research, including genetic analysis, and have drawn noteworthy results. In this study, the statistical characteristics of meat color, hydrogen ion concentration, water holding capacity (WHC), shear force, and grilling loss that affect the quality of Hanwoo beef are examined using the Hanwoo beef data collected in various environments. Moreover, the prediction of meat quality is also investigated using the two machine learning algorithms, which are linear regression and regression tree. Analysis results show that meat color has the most significant effect on WHC, which determines the tenderness of beef, and hydrogen ion concentration significantly influences shear force and grilling loss. Through this study, we can confirm the applicability of machine learning algorithms in the research on the quality of Hanwoo beef. In addition, this study can also be applied to the prediction and improvement of the quality of Hanwoo beef.

포스트 코로나 이후 먹거리에 대한 소비자의 인식전환으로 건강먹거리인 야콘에 대한 관심이 증가하고 있다. 야콘은 남미 안데스에서 도입된지 40여년 되었으며 달콤한 맛과 아삭아삭한 식감을 가져 생식용과 야콘즙으로 인기있으나 현재 국내 육종된 품종이 없다. 따라서, 다양한 유전자원을 확보하고 자원에 대한 평가를 통해 신품종 육성을 위한 기초 자료로 활용하고자 실시하였다. 연구에 사용된 재료는 국립식량과학원에서 보유하고 있는 5개 자원을 대상으로 초장, 엽수, 줄기수, 생체중, 관아수량, 괴근수량 등을 조사하였으며, 조사방법은 농촌진흥청 농업과학기술 연구조사 분석기준(RDA, 2012) 준하였다. 야콘 유전자원의 지상부 특성 결과, 초장이 92-127cm 범위를 보였으며, 줄기수는 8-12개, 경엽중은 1,433-2,855kg, 엽수는 152-195개의 범위를 보였다. 또한, 유전자원별 지하부 특성을 살펴보면, 유전자 원별 HY1이 관아수가 가장 많고, 관아수량도 352/10a으로 가장 무거웠다. 괴근수량을 살펴보면, HYL2가 총수량이 5,197 kg/10a, 상품수량이 4,213 kg/10a으로로 가장 많았으며, HYL3, HYL4, HYL5, HYL1 순이었다. 유전자원의 생리장해 결과를 조사한 결과, 열근 및 부패발생은 HYL1이 가장 심하였으며, HLY5가 상대적으로 약했다. 유전자원의 품질특성을 조사한 결과, 당도는 HYL5가 12.5로 가장 높았으며, HYL1이 8.7로 가장 낮았다. 이상의 결과를 바탕으로, 향후 야콘의 인공교배 단계에서부터 육종프로그램에 활용할 계획이다.
The two most common mushroom species grown in Korea are pearl oyster mushroom (Pleurotus ostreatus) and king oyster mushroom (P. eryngii). In recent years, the production of king oyster mushroom greatly increased due to the automation of the cultivation facilities, and it became a major export mushroom owing to its excellent shelf life. However, the increase in the production of king oyster mushroom led to a decline in its market price; thus, necessitating the development of new mushroom species that could replace king oyster mushroom, to diversify the mushroom market for the benefit of both, the producers and the consumers. The Mushroom division at the National Institute of Horticultural & Herbal Science (NIHHS) reported the development of a new interspecific hybrid between P. ferulae and P. tuoliensis, referred to as 'Creamy.' Two parental strains KMCC00430 (Bisan2ho, P. ferulae) and KMCC00461 (P. tuoliensis) were selected based on the results of genetic resource analysis, and their monokaryons were collected. About 1,000 Mon-Mon crosses were performed and 73 of them were selected. Following repeated cultivation tests and strain analyses, we selected strain 7773, which had a bright creamy pileus and a thick straight stipe, and named it 'Creamy.' Optimum temperature for mycelial growth of Creamy was 25-30℃, and that for fruiting body growth was 16℃. The pileus, which had a brighter creamy color, was small in size with a diameter of 61.2 mm. Although it was cultivated in suboptimal conditions, such as low temperature and high CO2 concentration, Creamy was characterized by its straight and smooth stipe. Field production tests and further analyses indicated that the yield of Creamy was 5% higher than that of Baekhwang. It is expected that Creamy, the new interspecific hybrid with a bright creamy pileus and a pleasant flavor, will help create new opportunities for mushroom farmers and diversify the mushroom market.
This study performed to find proper temperature and improve texture and taste of pickle by considering physic-chemical characteristic and sensory evaluation. The basis temperature of the pickle was manufactured by 5 temperatures($95^{\circ}C$, $85^{\circ}C$, $75^{\circ}C$, $65^{\circ}C$, $5^{\circ}C$) at intervals of $10^{\circ}C$, and the dangerous Temp range was exempted during 12 days. Results showed that 3rd day at $95^{\circ}C$ was the best temperature for the quality specification of the pickle. In addition, between 6th to 12nd days at $85^{\circ}C$ and $95^{\circ}C$ appeared the most excellent preferences of the pickles. Thus, quality specifications showed different results by the date, and it appeared $95^{\circ}C>85^{\circ}C>75^{\circ}C>65^{\circ}C>5^{\circ}C$ in order. Furthermore, the liquid pickles at the temp of $95^{\circ}C{\sim}85^{\circ}C$ showed better texture and flavor of pickles as well as good preference. Based on these results, managers or administrators of foodservice business will be recognized the importance of temperature and storage period for salted pickles to improve its texture and taste along with improving quality and preference.
We investigated physicochemical properties of puffed snacks with intermediate and high amylose rice varieties. The intermediate amylose rice varieties 'Sindongjin' and high amylose rice varieties newly developed for food processing, 'Dodamssal' and 'Goami4' were tested for this study. The crude fat and crude protein contents of the rice cultivars ranged 1.47-3.08% and 6.30-7.63%, respectively. The resistant starch and amylose contents of Dodamssal and Goami4 were higher than those of Sindongjin. The hardness of rice was the highest in Sindongjin and Dodamssal. Also, Hardness of puffed snacks decreased by 72.07% for Sindongjin, 88.21% for Dodamssal and 66.67% for Goami4 compared to raw rice samples. The sensory evaluation showed that the highest scores in taste, texture and overall acceptability of puffed snacks were obtained in Dodamssal. The results of this study indicate that Dodamssal was suitable varieties for puffed snacks. Also, the physicochemical properties of Dodamssal were improved by the extrusion process. Therefore Dodamssal can be used for the industrial production of puffed snacks.
The purpose of this study was to determine the optimum sterilization conditions for the production of retorted steamed egg using response surface methodology. Sterilization processes for eighteen conditions using varying sterilization temperature ($X_1$), time ($X_2$), and method ($X_3$) as the independent variables were carried out through a $3^2{\times}2$ experimental factorial design. Quality evaluations after sterilization included measurements of $F_0$ value ($Y_1$), peak stress ($Y_2$), pH ($Y_3$), color value ($Y_{4-6}$), and organoleptic test [preference for appearance ($Y_7$), overall acceptability ($Y_8$), and preference for texture ($Y_9$) and egg taste ($Y_{10}$)]. Dependent variables ($Y_{1-10}$) of eighteen conditions were more affected by temperature and time than by the sterilization method. Eight factors were selected among the dependent variables as significant factors related to the quality of the steamed egg. Finally, by establishing an optimum range of each dependent variable and contour analysis, the optimum sterilization conditions for the production of steamed egg were determined to be $120^{\circ}C$ for 25 min using a 2-step sterilization process.

Sweet potato varieties with high fiber content in the storage root have poor texture when steamed or roasted. This study investigates the difference in fiber content among sweet potato varieties by soil and climate. The average fiber content of 'Hogammi', 'Sodammi', 'Pungwonmi', 'Danjami', and 'Jinyulmi' cultivars from the samples collected at farms in Haenam, Muan, and Unbong, Korea were 95.71, 66.73, 44.55, 40.55, and 38.53 mg/100g FW, respectively. There was no significant difference between site-specific conditions and varieties. Based on the degree of visual fibrousness, 'Hogammi' has an average of 3.6-4.0 with many thick stringy fibers. The fiber content of the 'Hogammi' cultivar was measured across 19 sites representing the main sweet potato growing regions of Korea. The fiber content was between 115.82 and 114.6 mg/100g in Haenam 2 and Boryeong 1, and 87.46 mg/100g in Hamyang. However, the fiber content at the remaining 16 sites was within the range of 94.63-108.52 mg/100g, although there were some site-level differences. The fiber content of the sweet potato storage roots were positively correlated with soil phosphorus (R2 = 0.58**), organic matter (R2 = 0.52*), and pH (R2 = 0.51*), which had a significance of 1% and 5%. The fiber content of sweet potato storage roots was found to have increased with increasing phosphorus content, organic matter and pH in the soil. However, there was no correlation with the amount of precipitation, days of precipitation and hours of sunshine with the fiber content of sweet potato at the selected sites.
This study investigated the optimal quality characteristics of sauerkraut made by adding 0.5, 1.0, 1.5, 2.0, and 2.5% (w/w) sea salt to cabbage according to the storage period. The results showed that the pH and salinity of 0.5-2.5% sauerkraut decreased, while its total acidity increased during storage. After 20 d of storage, 1.5% or less sauerkraut showed low yellowness, but high brightness and hardness. Moreover, the lactic acid bacteria in 0.5-2.5% sauerkraut maintained at least 7.06 log CFU/mL until 28 d of storage, suggesting that the lower the salt concentration, the higher were the amount of lactic acid bacteria. The coliform group was not detected after 4 d of storage. In conclusion, the quality characteristics of sauerkraut with a salt concentration of 1.5% or less were excellent until 20 d of storage at 4℃. This study provides valuable data for the safe and high-quality assessment of low-salt sauerkraut in the future.
