Components Analysis of Korean Pollens and Pollen Extracts (국내산 화분 및 화분 추출물의 성분 분석)

  • The chemical components of Korean pollens and pollen extracts were analysed to provide fundamental data for pollen processing and products development. The contents of crude protein, crude lipid, crude ash, crude fiber and carbohydrate of pollens were $14.0{\sim}22.3%,\;3.0{\sim}8.8%,\;2.2{\sim}3.3%,\;0{\sim}37.5%,\;and\;31.9{\sim}64.4%$ respectively, showing the specially high crude fiber content (37.5%) in Pine pollen. Almost all the carbohydrate, lipid, protein and ash components except fiber were extracted by water and n-hexane. Free sugars identified in water extracts $(10\;^{\circ}Bx)$ of pollens were fructose and glucose as major component and maltose as minor component. The proportions of three free sugars to total soluble solid content of Mixed, Acorn, and Pine water extracts were 73.6%, 85.4% and 47.7% respectively. Potassium and phosphorus content in pollens and pollen water extracts were high, but Ca, Na, Mg, Fe and Zn were not major mineral components. The essential amino acids such as leucine, phenylalanine, methionine, lysine, valine, isoleucine and threonine were contained richly in pollens and those were almost completely extracted by water. Vitamin $B_1$ and C were not detected, but only small amount of vitamin $B_2$ was detected in the pollens and pollen extracts tested. The essential fatty acids such as linoleic acid and linolenic acid were contained richly in pollens. The proportion of unsaturated fatty acids to total fatty acid content in Mixed, Acorn and Darae pollen except Pine was higher than 50%.

  • This pot experiment was undertaken to find out the optimum fertilization ratios of total anions to total cations, ${\Sigma}A/{\Sigma}C$, and the optimum application rates of total macro-nutrients in various soil conditions. Soil samples were collected from uncultivated mountains and hills where grassland development was under consideration. 1. The optimum application ratios of ${\Sigma}A/{\Sigma}C$ and the optimum application rates of total macro-nutrients for the high yields of mixed grass-clover sward in various grassland soils were computed by the Hom$\acute{e}$s systematic variation techniqu.e. 2. With respect to the optimum application ratios of ${\Sigma}A/{\Sigma}C$ in fertilization in a mixed grass-clover sward, the grass yield and botanical composition were distinctly proportional to ${\Sigma}A$ wheras the regume yield and botanical composition were proportional to ${\Sigma}C$. 3. The optimum fertilization rates of total macro-nutrients for the high legume yields were depended upon ${\Sigma}A/{\Sigma}C$ ratios. These optimum rates were in proportional to ${\Sigma}C$ ratios and were inversely proportional to ${\Sigma}A$ ratios. 4. The efficiencies of ${\Sigma}A$ and ${\Sigma}C$ in relation to the grass and grass plus legume yields were highest with the low ratios of each other and the low fertilization rates of total macronutrients. The ${\Sigma}A$ effieiency in the legume yield tended to be similar to that of ${\Sigma}A$ related to the grass yield noted above except Daegu soil. The ${\Sigma}C$ efficiency, however, was proportional to the ${\Sigma}C$ ratio, although that was varied with the fertilization rates of total macro-nutrients and with the kinds of soils. 5. The yield of mixed forages, yield component, and botanical composition in a mixed sward were greatly influenced by the ${\Sigma}A/{\Sigma}C$ ratios, the fertilization rates of total macronutrients, and the interactions of ratio and rate noted above. In addition, these effects were generally different and opposite according to grass and legume.

Effects of Red Ginseng Component Administration on Glutathione and Lipid Peroxidation Levels in Mice Liver (홍삼 활성 성분이 생쥐 간 조직에서 Glutathione 및 지질과산화에 미치는 항산화 효과)

  • The effects of red ginseng component (water extracts, alcohol extracts, lipophilic extracts, total saponins, panaxadiol and panaxatriol) administration on glutathione (GSH) and lipid peroxidation levels in mice were investigated. 20~25 g ICR mice which were pretreated with water extracts (50 mg/kg), alcohol extracts (50 mg/kg), lipophilic extracts (50 mg/kg), total saponins (50 mg/kg), panaxadiol (50 mg/kg) and panaxatriol (50 mg/kg) for 15 days. The ability of red ginseng component to protect against oxidative damage to the mouse liver was examined by determining the level of lipid peroxidation (MDA), glutathione, and the activities of glutathione peroxidase (GPX). The GSH level was raised by all the ginseng component, but the GSSG level was lowered ]argely by all the ginseng component. The ratio of GSSG/total GSH was decreased because the level of GSSG was decreased more than that of GSH. Finally, the lipid peroxidation (MDA) level was the lowest in lipophilic extracts and panaxadiol nest. In conclusion, the order of effectiveness of anti-oxidants was to be lipophilic extracts>panaxadiol>total saponins.

Varietal Difference of Chemical Composition in Pigmented Rice Varieties (유색미 화학성분의 품종간 차이)

  • The composition of fatty acids, minerals, total dietary fiber and vitamin $B_1,\;B_2$, in pigmented rice varieties were determined. Proximate composition and color were also compared among pigmented rice varieties. Crude protein contents of black rice were higher than those of red and white rice, especially, C3GHi line had the highest protein content. There were no significant differences in lipid and crude ash contents between pigmented and white rice. Black rice showed lower Hunter value L and b value compared with red, green and white rice. But, Green rice showed lower Hunter value a compared with black rice. Green rice showed the higher contents in total dietary fiber, vitamin $B_1\;and\;B_2$ compared with white and black rice. The major fatty acids of pigmented rice were palmitic acid, oleic acid and linoleic acid. The contents of oleic acid was similar to that of linoleic acid in white rice. Oleic acid contents was lower than linoleic acid in black rice, but higher in red rice. Most mineral contents of pigmented rice except Fe, Zn and Mn were higher than those of white rice. Especially, Green rice had the highest mineral content.

Effects of Cutting Frequency and Level of Fertilizer Application on Forage Productivity at Alpine Grassland of 600 m Altitude (고랭지 표고 600m에서 예취횟수와 시비수준이 목초의 생산성에 미치는 영향)

  • This study was conducted to evaluate the effects of cutting frequency and level of fertilizer application on the botanical composition and forage yield of alpine pasture. Field experiment was established at 600 m (a.s.1) altitude with two cutting frequency schedules (two and three times annually) and two levels of fertilizer application (lower level of fertilizer, 200-200-200 kg / ha and standard level of fertilizer, 280-200-240 kg / ha; N, $P_2O_5$ and $K_2O$, respectively). Higher grass to clover ratio was observed in two cutting frequencies. The clover ratio was highest as $16\%$ in thee cutting frequencies with lower level of fertilizer application End the ratio of weed was low in all treatments ($3.7 {\~} 6.7\%$). No significant difference was observed in forage dry matter (DM) yield among treatments, however forage DM yield in three cutting frequencies tended to be greater in standard level of fertilizer application compared to lower level of fertilizer application. The forage quality was greater in three cutting frequencies, but not changed with different levels of fertilizer application. This result indicates that three cutting frequency and standard level of fertilizer application system are considered to be proper management methods at alpine grassland of 600 m altitude considering the botanical composition, forage DM yield md forage quality.

Quality Characteristics of Sulgidduk Prepared with Different Levels of Defatted Mealworm Powder (탈지 밀웜 분말 첨가량을 달리하여 제조한 설기떡의 품질특성)

  • This study was performed to develop Sulgidduk prepared with different levels (0, 3, 6, 9 and 12%) of defatted mealworm powder and to evaluate the characteristics of this Sulgidduk. We performed an assessment of color values, mechanical properties, general compositions and branched amino acids of Sulgidduk prepared with different levels of defatted mealworm powder. For the color values, the lightness(L) was decreased with increased amount of defatted mealworm powder, while the redness(a) and yellowness(b) were relatively increased. For the mechanical properties, the hardness and gumminess were significantly increased according to the increased amounts of defatted mealworm powder, but the chewiness, springiness and cohesiveness showed significant differences. For the sensory evaluation, the overall quality of Sulgidduk prepared with 6% defatted mealworm powder (MS-6) was higher as compared with that of the other Sulgidduk samples. For the general composition, the moisture and crude ash contents of MS-6 did not shown differences, while the crude protein was higher than those of the control, and the carbohydrate content of the control was higher than that of the MS-6. The contents of branched amino acids (valine, leucine and isoleucine) of MS-6 were higher than those of the control. Therefore, it was concluded that MS-6 could be a protein rich food as a good source of branched amino acids such valine, leucine and isoleucine.

Comparative Analysis of the Flavor Compounds in Cultivated Chrysanthemum indicum L. (국내 육성 감국의 품종별 향기성분 비교 분석)

  • This study investigated the chemical composition of four Korean cultivated Chrysanthemum indicum L. (Gamguk 1 ho, Gamguk 2 ho, Gamguk 3 ho, and Wonhyang) which are used in the food and fragrance industries to identify their volatile flavor compounds. These compounds were analyzed using headspace GC-MS from plant samples cultivated in the same region of Korea (Sancheong-gun, Gyeongsangnam-do). A total of 23 compounds were identified, eight of which were common across the four cultivars. The major flavor components in the three Gamguk plants were identified as 3-carene, camphene, ${\beta}$-phellandrene, eucalyptol and (+)-camphor. Eleven compounds, including (+)-camphor at 31.40%, were identified in Gamguk 1 ho. Gamguk 2 ho was found to contain 12 flavor compounds, predominant of which was camphene at 25.60%. Thirteen compounds including (+)-camphor (26.88%) were identified in Gamguk 3 ho, while 17 were detected in the Wonhyang cultivar, including trans-piperitol (47.33%), sabinene, and ${\gamma}$-terpinyl acetate. These results indicate differences in the type and ratio of functional volatile flavor ingredients in Chrysanthemum indicum L. cultivars which is highly valuable as material for fragrance product development.

Effects of Mg content ratio on the structure and corrosion properties of Al-Mg films

  • Zn의 수요는 매년 증가하지만 매장량의 한계로 대체용 물질계가 개발이 필요한 시점이다. Zn보다 상대적으로 풍부하고 동일 두께의 Zn 코팅층과 비교하여 우수한 내식성을 보이는 Al과 Mg의 코팅층을 제작하여 Al-Mg 코팅 강판의 특성 분석 및 평가를 실시하였다. Al-Mg 코팅층은 99.99%의 Al, 99.9%의 Mg target을 사용하여 스퍼터링을 이용하여 냉연강판 위에 코팅하였다. 증발물질과 기판과의 거리는 7cm 이며, 기판은 세척을 실시한 후 클리닝 챔버에 장착하고 ~10-5 Torr 까지 진공배기를 실시하였다. 클리닝 챔버가 기본 압력까지 배기되면 아르곤 가스를 주입하고 기판 홀더에 -800 V의 직류 전압을 인가하여 약 30분간 글로우 방전 청정을 실시하였다. 기판의 청정이 끝나면 아르곤 가스를 차단하고 코팅 챔버로 시편을 이송 후 코팅층 성분의 구성형태에 따라 Al과 Mg을 코팅하였다. Al-Mg 코팅층은 $3{\mu}m$의 두께를 기준으로 Mg wt.%의 비율을 5% ~ 90%까지 변화시키며 코팅하였다. 그리고 후속 공정으로 질소 분위기 $400^{\circ}C$에서 10분간 열처리를 하였다. Al-Mg 코팅층을 주사전자현미경으로 관찰한 결과, 표면에서는 Al-Mg 코팅층에 존재하는 Mg 함량이 높아질수록 grain의 크기가 증가하였고 단면에서는 열처리 전의 치밀한 구조에서 열처리 후에는 주상구조 혹은 grain 구조가 선명해지는 것을 볼 수 있었으며 글로우방전분광기로 Al과 Mg의 성분 비율변화를 확인할 수 있었다. 또한 Al-Mg가 코팅된 강판을 염수분무시험을 통해서 내부식 특성을 확인하였다. Al-Mg 코팅 강판의 염수분무시험 결과, Mg 함량이 낮은 Al-Mg 코팅층은 열처리 후 뚜렷한 내식성 향상을 보였으며 Mg 조성 변화에 따라 일정한 경향성을 보였다. 하지만 Mg 함량이 높은 Al-Mg 코팅층은 열처리 후 급격한 내식성 저하와 함께 시편간의 편자가 커지는 것을 확인 할 수 있었다. 최적의 내식성을 보이는 Mg의 조성을 확인하기 위해서는 향후 보다 변별력이 높은 평가가 결과가 필요하다고 판단되어진다.

Optimum mixture ratio of functional Lindera glauca for culture of oyster mushroom (Pleurotus ostreatus) (느타리버섯 재배를 위한 기능성자원 감태나무(Lindera glauca) 톱밥의 적정 혼합비율)

  • This study was carried out to investigated optimum mixing ratio of Korean natural Lindera glauca for production of functional oyster mushroom. Total nitrogen and carbon source of Lindera glauca was 0.16% and 40.9%, respectively and C/N ratio was 215. Total nitrogen source and pH of substrate mixed with Lindera glauca was 2.8~3.0 and 4.8~5.0, respectively. The contents of $P_2O_5$, CaO, MgO and $Na_2O$ were increased by increasing Lindera glauca, but there was no significant difference in $K_2O$ content. Mycerial growth was faster at Lindera glauca treatments than that of control. Yields of fruiting body was the highest at Lindera glauca 20%, and dimeter and thick of pileus were increased according to increase of Lindera glauca addition ratio. The L value of pileus was the highest at the Lindera glauca 10% during mushroom harvest, but there was no significant difference in the a-value and the b-value.

Effect of the Red Pepper Seed Contents on the Chemical Composition of Kochujang (고추씨 함량이 고추장 성분에 미치는 영향)

  • Kochujangs (red pepper pastes) were mashed with the variation of seed content in the red pepper powder, i.e. none (plot A), 10%(B), 20%(C), 40 %(D) and 50%(E), and chemical compositions and qualities of the products were analysed and compared. Contents of amino nitrogen, reducing sugar and ethanol were high in the plot A and B, whereas lower levels were detected in the plot C, D and E. Differences in the contents of moisture, crude protein, crude fiber and sodium chloride were not significant among the plots, however, the plot D and E showed higher crude oil contents and pH as compared with the others. The plot B and A showed higher acidic protease and saccharogenic amylase activity as compared with the others. Taste, flavor and color were evaluated for the products which aged for 3 months, and better results were obtained in the plot A and B than in D and E. Especially the products of D and E were inferior in color.
