The Optimization of Muffin with Yam Powder Using Response Surface Methodology (마분말 첨가 머핀 제조조건 최적화)

  • This purpose of this study was to develop a functional muffin by adding yam powder in the shape of a muffin as a partial surrogate for wheat flour. The yam has been found to be effective for liver and kidney function, as well as the digestion of protein, since it produces glucuronic acid in the body. Therefore, the purpose of this study was to determine the optimal mixing conditions of yam muffins by adjusting the amounts yam powder, butter, and sugar. The mixing conditions for the yam muffins included 3 categories: yam powder $(X_1)$, sugar $(X_2)$, and butter $(X_3)$ by Central Composite Design (CCD) which was optimized by Response Surface Methodology (RSM). The effects of the three variable additions on muffin quality were examined via physical and chemical experiments, such as the analysis of texture (hardness, cohesiveness, springiness, gumminess), coloration (lightness, redness, yellowness), and height. Lastly, we performed a sensory test, which revealed significant findings for gumminess, color, appearance, flavor, softness (p<0.05), redness, and overall quality (p<0.01). Consequently, the optimal mixing rate which best satisfied the sensory items were 34.35g of yam powder, 80.15 g of sugar, and 80.55 g of butter.

Development of Program to Facilitate High School Students' Search for Potential College Majors and Future Career as Career Education: Focusing on Connection between High School Home Economics and College of Human Ecology Majors (진로교육 차원에서 고등학생의 전공적합성 탐색을 위한 프로그램 개발: 고등학교 가정교과-생활과학대학 전공 연계를 중심으로)

  • In the modern society, the adolescence needs the career development competency which makes them probe changing social phenomenon critically and use the given environment and resources progressively. Thus, adolescence should be offered with the career development competency education, but the education in the school fields remains as school entrance coaching focusing on the academic clique and career coaching as a mere job education. As a result, the study connection between high school and university was destroyed and it caused students' study-unfitness and dropouts after the university entrance. Hence, career education to culture major suitability of high school students in the new paradigm should be developed through high school-university connection. So, this study developed a career education program through the collaboration among the professor of college of human ecology, a home economics specialist, undergraduates majoring in human ecology, and a high school student, using the ADDIE model. The result of this study is as followed. First, this study searched for the direction of the program for the career development competency reinforcement of high school students. Second, the program arranged the newest issues of each department of human ecology to make high school students come in contact with and study them easily, aiming at cultivation of major suitability of high school students. Third, the study established the teaching-learning materials that is managed by the high school-college of human ecology committee. Fourth, this program will be the good opportunity for students who are interested in departments of human ecology to check their major suitability.

A Mediated Effect of Grit on Relationship between Life Stress and Adaptations to College Life among Male Nursing Students (남자간호대학생의 생활스트레스와 대학생활 적응간의 관계-그릿의 매개효과)

  • This study was conducted to promote male nursing students' adaptation to college life by identifying life stress, grit, and degree of adaptation to college life, and the effect of grit mediating effect on the relationship between life stress and college life adjustment. became The subjects of this study were 209 male nursing college students enrolled in nursing departments in 5 major cities. The collected data were analyzed with SPSS/WIN 25.0. Life stress showed a significant negative correlation with college life adaptation and grit, but grit showed a positive correlation with college life adaptation. As a result of mediating effect verification, the final model explained 43.5% of college life adaptation. Therefore, in order to improve male nursing students' adaptation to college life, it is required to develop a program that can lower life stress and increase grit and college life adaptation level.

Optimization of Formulation Condition for Muffins with Added Broccoli Powder (브로콜리 가루 첨가 머핀 제조 조건의 최적화)

  • The principal objective of this study was to develop the optimal recipe for muffins containing dried broccoli powder. In this study, broccoli powder was substituted for wheat flour in order to reduce its content. The study was conducted by determining the optimal sensory composite recipe, by preparing muffins with different levels of broccoli powder (A), sugar (B), and butter (C), by C.C.D (Central composite design) and performing sensory evaluation and analysis via RSM (Response surface methodology). The sensory measurements yielded significant values for appearance, flavor (p<0.01), texture (p<0.05), overall quality (p<0.05) and color (p<0.05), whereas instrumental measurements yielded significant values in lightness (p<0.01), redness (p<0.05), yellowness, baking loss rate (p<0.05), hardness (p<0.05), cohesiveness (p<0.01) and gumminess (p<0.05). The optimum formulations processed by numerical and graphical optimization were determined as 13.58g of broccoli powder, 92.02g of sugar, and 71.97g of butter.

The Consumption Pattern for Long Named Beverages - Research Among University Students in Seoul- (음료의 긴 네이밍이 소비패턴에 미치는 영향 - 서울 지역대학생을 중심으로-)

  • This study was conducted to investigate the relationship between long naming of beverages and its effect on people's perception by gender. The survey was conducted in the Seoul area from March 10 to May 10, 2010. Approximately 59% of male and 41.8% of the female respondents were randomly selected from university students aged 20 to 29-years. Most (79.8%) of the students responding to the survey showed a preference for beverages. "Long-named beverages with ingredients listed" were considered the most reliable and ranked highest at 3.74, A significant difference was observed between males and females. "Long-named beverage that were made from domestic agricultural products" were regarded as the most healthful and ranked highest at 4.01. A significant difference between males and females was also observed. Long-naming influences a customer's purchasing tendency. In particular, women were more influenced by a sense of wellbeing when they purchase, because they are more interested in losing weight and being healthy.

Health Promotion Behavior and Adaptation to College of Nursing Students in the COVID era (코로나 시대 간호대학생의 건강증진행위와 대학생활적응)

  • The purpose of this study was to identify the relationship between health promotion behavior and adaptation to college of nursing students and investigate the factors influencing adaptation to college in the COVID era. The subjects were consisted of 191 nursing students from J University in province C. Data were analyzed based on frequency, percentile, mean, Pearson's correlations, and multiple regressions. Health promotion behavior and college adjustment in nursing students showed significant positive correlations with each other. Health promotion behavior had the strongest influence on nursing students' adaptation to college, followed by health level; these factors accounted for 19.9% of the total variance in adaptation to college among nursing students(Adj. R2=.199, p<.001). Overall adaptation to college can be improved by health promotion behavior enhancement program.

Effects of Grit and Social Support on Adaptation to College Life among Nursing Students (간호대학생의 그릿과 사회적 지지가 대학생활적응에 미치는 영향)

  • The purpose of this study was to investigate the effects of grit and social on college life adjustment of nursing students. The subjects of this study were 196 nursing students and data collection was from July 1 to August 13, 2020. Data was analyzed using the SPSS 22.0 program by descriptive statistics, pearson's correlation, multiple regression analysis. There was a positive correlation between college life adaptation and grit(r=.328, p<.001), social support(r=.334, p<.001). Grade, grit and social support were found to be factors influencing college life adaptation of nursing students. The results of this study suggest that it is necessary to develop some programs that include positive factors such as grit and social support for nursing students' adaptation to college life.

  • 일상생활에서도 불편함을 겪는 시각 장애인들을 위해 기초적인 생활을 보완할 수 있는 음성인식 다용도 계량기를 개발하고자 하였다. 본 제품은 API를 통해 저울의 측정값을 한국어 음성으로 변환하여 출력하는 음성 저울과 음성인식을 통해 슬라이드 포트로 정수기를 제어하는 작동 기기로 구성되어 있다. 현재 음성인식 다용도 계량기 개발을 완료했으며, Web, APP 등의 개선 방안을 연구 및 적용하는 중에 있다. 본 계량기를 통하여 시각장애인·시력저하자의 일상생활 및 삶의 질 향상뿐만 아니라 병원 등의 공공시설 개선에도 도움을 줄 수 있을 것으로 기대된다.

Validity of a Simulated Practical Performance Test to Evaluate the Mobility and Physiological Burden of COVID-19 Healthcare Workers Wearing Personal Protective Equipment (COVID-19 감염병 대응 의료진용 개인보호복의 동작성 및 생리적 부담 평가를 위해 개발된 모의 작업 프로토콜의 타당도)

  • This study evaluated the validity of a newly developed mobility protocol examining the comfort functions and requirements of personal protective equipment (PPE) for COVID-19 healthcare workers. Eight males (age: 24.7 ± 3.0 y, height: 173.4 ± 2.3 cm, and body weight 69.9 ± 3.7 kg) participated in the following three PPE conditions: (1) Plastic gown ensemble, (2) Level D ensemble, and (3) Powered air purifying respirator (PAPR) ensemble. The mobility protocol consisted of 10 different tasks in addition to donning and doffing. The 10 tasks were repeated twice at an air temperature of 25oC with 74% RH. The results showed significant differences among the three PPE conditions in mean skin temperature, local skin temperatures (the forehead, thigh, calf, and foot), clothing microclimate (the chest and back), thermal sensation, thermal comfort, and humidity sensation, while there were no significant differences in heart rate or total sweat rate. At rest, the subjects felt less warm and more comfortable in the PAPR than in the Level D condition (P<0.05). However, subjective perceptions in the PAPR and Level D conditions became similar as the tasks progressed and mean skin and leg temperature became greater for the PAPR than the Level D condition (P<0.05). An interview was conducted just after completing the mobility test protocol, and suggestions for improving each PPE item were obtained. To sum up, the mobility test protocol was valid for evaluating the comfort functions of PPE for healthcare workers and obtaining requirements for improving the mobility of each PPE item.

Study of Dietary Behaviors and Snack Intake Patterns by Weight of Middle School Students in Incheon (인천 지역 중학생의 체중군별 식행동 및 간식섭취실태에 관한 연구)

  • We surveyed 553 middle school students living in Incheon using questionnaires to compare their food behaviors and snack intake patterns according to weight groups based on BMI. Mean BMI was 20.3 for males and 19.6 for females. The rate of underweight, normalweight and overweight students was 33.3, 51.7, and 15.0%, respectively. Compared to the other two groups, the overweight students perceived their body shape more accurately (p<0.01). Regarding the reasons for skipping dinner, the most frequent answer by the underweight students was 'because of snacks', while that of the overweight students was 'to lose weight' (p<0.01). The normalweight students were found to eat a Korean traditional type breakfast more frequently than the other weight groups (p<0.05). The overweight female group was more likely to overeathabitually, whereas the normalweight and underweight groups tended to overeat when they were under stress (p<0.05). As for the amount of the snack intake, the overweight male students replied that they eat quite a lot of snacks. As a conclusion, the problems found in the underweight group were unbalanced diet and the disturbance of regular meal patterns due to inappropriate snack intake. The problems shown in the overweight group were overeating due to habit or stress, fast eating speed and large amount of snack intake.
