Analysis of Components in the Parts of Opuntia ficus indica from Shinan Korea (신안산 손바닥선인장 부위별 성분 분석)

  • The proximate compositions of Opuntia ficus indica fruits from Shinan were moisture 71.18%, crude protein 1.69%, crude ash 0.93%, crude fat 0.55%, crude fiber 1.54% and 24.11% nitrogen free extracts. And the proxmate compositions of Opuntia ficus indica stem were moisture 74.85%, crude protein 3.48%, crude ash 0.54%, crude fat 0.48%, crude fiber 2.58% and 18.07% nitrogen free extracts. The crude protein and crude fiber content of Opuntia ficus indica stem from Shinan were higher than those of fruit. The contents of fructose, sucrose and glucose were higher than maltose. As the result of organic acid, the content of citric acid was higher than malic acid and tartaric acid. As a result of mineral analysis, the contents of potassium was the highest among the minerals in Opuntia ficus indica from Shinan. Analysis of total amino acids in Opuntia ficus indica from Shinan. The contents of total amino acid of fruit and stem were 1,604.64 mg% and 3,245.98 mg% and the free amino acid contents of fruit and stem were 556.02 mg% and 1,101.35 mg%, respectively. The major components of total amino acids were glutamic acid, proline and threonine. The levels of total amino acids and free amino acids in Opuntia ficus indica stem were higher than those in its fruit.

Effect of Organic Fertilizer Application on the Agronomic Traits and Amino Acid Content of Wheat (유기질 비료 시비가 밀의 농업형질 및 종자 아미노산 함량에 미치는 영향)

  • 국내산 밀을 유기농 재배하여 친환경 농산물 인증을 받으려면 파종에 필요한 종자도 유기농으로 생산된 것(유기종자)을 사용해야한다. 국립식량과학원에서는 유기종자 생산용 밀 품종 선발을 위한 연구를 수행하고 있으며, 관련 시험으로서 유기질 비료 시비가 밀의 농업형질 및 종자의 아미노산 함량에 미치는 영향을 검토하였다. 무비, 화학비료 및 유기질 비료를 시비한 시험구에 금강밀 등 24개 밀 품종을 파종하여 시험 구별로 출수기 등 농업형질과 수확된 종자의 아미노산 함량을 분석하였다. 밀의 출수기는 시비 조건에 따른 영향을 받지 않았으나 성숙기는 유기질 비료 시비조건에서 화학비료 및 무비보다 1일과 2일 지연되었다. 밀의 간장, 수장, 수수, 수당립수 및 L중은 시비의 종류에 따른 차이를 나타내지 않았다. 한편, 유기질 비료 시비에 따른 밀 종실수량(368.4kg/10a)은 무비 및 화학비료보다 각각 25%와 8% 유의하게 증가하였다. 밀 종자의 전체 아미노산 함량은 무비<화학비료<유기질비료 순으로 유의하게 증가하였다. 각각의 아미노산별로 시비조건에 따른 함량차이를 조사한 결과, Glutamate 등 13종의 아미노산은 시비조건에서 5~16% 증가하였다. Alanine 함량의 경우 무비조건에 비하여 유기질 비료 시비조건에서 38% 증가하였으나 화학비료 시비조건에서는 12% 감소하였다. 한편, tyrosine, phenylalanine 및 proline은 유기질 비료 시비조건에서 11~29% 감소하였으나, 화학비료 시비조건에서 9~36% 증가하였다.

The Quality Attributes of Chicken Meats Imported from Korea and Other Countries in Japanese Market (일본시장에 유통중인 한국산과 각국산 닭고기의 물리화학적 및 미생물학적 품질 비교)

  • This study was carried out to examine the physicochemical and microbiological characteristics of Korean and other countries chicken circulated in Tokyo, Japan. The breast meats of Korean, Japanese, and Chinese chickens and thigh meats of Korean, Japanese, Chinese, American, and Thai chicken were used. In the proximate analysis of breast meat, Korean chicken had the lowest crude protein and crude ash(P<0.01), but showed the highest content of moisture(P<0.001). TBA values of Japanese breast meat were higher than Korean and Chinese one. In thigh meat, crude fat of American one was significantly higher than the others(P<0.001), and had very high bacterial counts. Korean chicken thigh meats showed the lowest VBN values.

Effects of Nitrogen Level and Planting Density on Chemical Properties in Korean Native Tabacco Varieties (재래종연초의 화학특성에 미치는 질소시비량 및 재식밀도의 영향)

  • This study was conducted to establish the most appropriate nitrogen levels and planting densities which can attribute to increase of aromatic substances in tobacco variety, Hyangcho, maintaining its original aroma. An increase of nitrogen fertilization from 3 to 12 kg per 10a increased total alkaloid content 2.0% to 3.3%, while an increased nitrogen fertilization decreased the contents of total sugar, starch, fatty acid etc., Which seem to be the positive components relating to tobacco aroma the contents of alkaloids were decreased and total fatty acids were increased as the planting densities increased. The higher contents of 2. 3-methylbutanoic and 3-methylpentanoic acid was obtained at the density of 3 plant per pit (12,498 plant/10a). The components determined in the neutural fraction such as solanone, furfural, furfurylalcohol and benzyl alcohol were presented in higher amount at the higher densities. The volatile acids such as 2. 3-methylbutanoic acid 3-methylpentanoic acid decreased and also the contents of butanol, furfutal, furfuryl alcohol, hexanol, cinnamil, acetophenone, benzyl acetate and solanone etc., were decreased as the nitrogen level increased from 3 to 12 kg per l0a.

Comparison of Organic Acid Contents and Xanthine Oxidase Inhibitory Activities of Commercial Fruit Juices and Vinegars (시판 과일 주스와 식초의 유기산 함량과 Xanthin Oxidase 저해 활성 비교)

  • Xanthine oxidase (XO) inhibitors play an important role in the treatment of gout and many other diseases related to superoxide anion metabolism. In this study, four commercial fruit juices and three vinegars were evaluated for their inhibitory activity of XO (XOI), as well as contents of organic acids by HPLC with UV detection. Five different organic acids were detected in commercial samples: acetic acid and malic acid were the most prominent in vinegars and fruit juices, respectively. The vinegars showed high XOI activity (33.8~64.9%) related to the great concentration of acetic acid ($R^2=0.7192$). The presence of acetic acid in vinegar could be responsible for its XOI effect.

Nutritional Composition and Biological Activities of the Methanol Extracts of Sea Mustard (Undaria pinnatifida) in Market. (시판 미역의 영양성분 및 생리활성 분석)

  • This research was performed to determine the proximate compositions, mineral contents, alginic acid, antioxidative activities and amino acids of sea mustards (Miyeok: Undaria pinnatifida) collected from Gijang and Wando area. Ash content was higher in Gijang samples, whereas carbohydrate and moisture were higher in Wando Sil Miyeok. General compositions of dried sea mustard showed different contents as manufacture's company and places. The major free amino acids were hydroxyproline, alanine, glutamic acid and asparagine in Gijang samples. Both Gijang and Wando Sil Miyeok showed lower contents comparing with Gijang Gadak Miyeok. Major mineral content was Na, K, Ca, Mg and P, and especially, Na and K were the most abundant in both Gijang and Wando sea mustards. Alginic acid content was almost similar in both sea mustards. Antioxidative activity of methanol extract of sea mustards was measured by using DPPH radical scavenging and SOD-like activity. DPPH radical scavenging activity was 45.5% $(40\;{\mu}g/ml)$ in Gijang Gadak Miyeok and 37.0% and 26.0% $(40\;{\mu}g/ml)$ in Gijang and Wando Sil Miyok, respectively. SOD-like activity of Gijang and Wando Sil Miyok was 63% and 71% $(10\;{\mu}g/ml)$, respectively. These results show that biological activities depend on Miyeok manufacture's process. When stimulated macrophages RAW264.7 cells with lipopolysaccharide (LPS), inhibition of NO production in Gijang Sil Miyeok (44.2%) was 9% high comparing with that of Wando Sil Miyeok (35.7%).

Comparison on the Phthalides content of Cinidil Rhizoma and Angelicae Radix cultivated in Korea and China (한국산 및 중국산 천궁과 당귀의 Phthalide류 함량 비교)

  • The medicinal constituents contained in Cinidil Rhizoma and Angelicae Radix cultivated in Korea and China, were compared by confirming their qualities. From Cinidil Rhizoma and Angelicae Radix cultivated in Korea and China, butyl phthalide, senkyunolide, and ligustilide etc. phthalides were identified by GC/CMS analysis. Through GC/FID analysis, the senkyunolide content of Cinidil Rhizoma cultivated in Korea was similar to that cultivated in China. The ligustilide content of Ciniail Rhizoma cultivated in Korea was more than that cultivated in China, except for one cultivated at Ankuk province. In the case of Angelicae Radix, the ligustilide content of that cultivated in Korea was more than one cultivated at Yeungil province in China. As for quality, Cinidil Rhizoma and Angelicae Radix cultivated in Korea were better than those cultivated in China since Chinese products possessed more butilidene phthalide photo-decomposed from ligustilide, caused by long storage during the circulation processes, than that of the domestic products.

한약재의 안전성 평가연구II

  • 중금속의 경우 몇가지 약재에 있어서 중국산과 경북산의 뚜렷한 차이는 없었으나 산약과 작약의 경우는 중국산이 중금속 함량이 높았으며 시호와 천궁의 경우는 경북산이 중금속 함량이 높았다. 그러나 이들 약재로 인한 결과를 전체 중국산과 국내산의 비교 값으로 대표 할 수는 없다. 한약재에 함유된 무기질과 중금속 함량간의 유의성을 검정하여 상관관계를 확인하려 했으나 약재간의 특이성과 무기질 및 중금속간 흡수능의 차이로 인한 뚜렷한 상관관계를 검정하기가 어려웠다. 한약재에서 생체내에서 중요한 필수 무기질에 대한 분석은 안전성과 규격화를 위한 필요한 기초연구이며, 이에 관한 데이터뱅크가 마련된다면 한약재에 함유된 무기질의 영양학적 가치를 통해 질병의 예방과 치료에 중요한 정보원으로 유용성을 확보할 수 있으므로 좀더 많은 연구가 광범위하고 지속적으로 수행되어져야 할 과제라고 사료된다.

Effect of Dietary $\omega$3 Fatty Acid on Kidney Phospholipid and Na-K-ATPase (식이 $\omega$ 3 지방산이 쥐의 신장 인지질과 Na-K-ATPase 활성에 미치는 영향)

  • 식이 $\omega$3 지방산이 신장의 지질구성 및 기능에 미치는 영향을 조사하기 위해 젖뗀 55-60 g의 흰쥐에게 고등어유, 들깨유, 콩기름을식이의 10% (W/W)포함하는 먹이를 조제하여 24일간 섭취시켰다. 고등어유군의 신장 인지질 지방산에 C20~C22 $\omega$ 3 지방산의 함량이 월등히 많은 반면 들깨유군은 콩기름군에 비해 약간 높을 뿐이어서 C18 : 3 ($\omega$3) 지방산으로 단기간에 쉽게 전환되지 않음을 보였다. C18 : 2($\omega$6) 지방산은 고등어군만 낮았고 C20 : 4($\omega$6)는 들깨유군에서는 낮았지만 고등어유군은 콩기름군과 같은 수준이었다. 또한 고등어유군에서 C18 : 1($\omega$9)을 포함한 단일 불포화 지방산이 높고 포화지방산 함량이 낮은 것도 특징이었다 . 인지질 종류별 분석결과에서 고등어유군이 sphingomyelin 이 높고 phosphatidylethanol-amine이 낮았다. 반면 신장 Cholest대기 함량은 고등어유군이 높았으며, 이러한 지질구성 변화는 신장 Na-K-ATPase 활성감소시킨 것이다.

  • In order to elucidate the taste compounds of wild eel, Anguilla japonica, free amino acids, nucleotides and their related compounds, organic bases, sugars, organic acids and minerals were analyzed, and then followed by organoleptic test of synthetic extract prepared on the basis of the analytical data. Taste panel assessments of synthetic extracts prepared with each extractive component omitted were carried out by a triangle difference test, and changes in profile were assessed. In free amino acid composition, lysine was dominant occupying $25\%$ of total free amino acid. The other abundant amino acids were glycine, arginine, alanine and histidine. From the results of analysis of nucleotides, IMP was dominant showing about $70\%$ of total nucleotides while ATP, ADP, AMP, inosine and hypoxanthine were low in content. Among organic bases total creatinine was abundant. The amount of betaine was 24 mg/100 g. The main organic acid were butyric acid, valeric acid and succinic acid. As for the sugars, glucose and inositol were 1-2 mg/ 100g in content. $K^+,\;Na^+,\;PO_{4}^{3-}\;and\;Cl^-$ were found to be the major ions. From the results of omission test the major components which contribute to produce the taste were glycine, serine, glutamic acid, IMP, $Na^+,\;K^+,\;Cl^-,\;PO_{4}^{3-}$, lysine, alanine, isoleucine, aspartic acid and creatinine.
