  • To characterize new physiologically active components in Korean apple vinegar, a crude polysaccharide (KAV-0) was prepared by precipitation with 80% (v/v) ethanol. KAV-0 mainly comprises 38.2% mannose, 19.1% galactose and 14.3% glucose. In an in vitro cytotoxicity analysis, KAV-0 promoted the proliferation of peritoneal macrophages and RAW 264.7 cells in a dose-dependent manner, and showed no cytotoxicity in B16-BL6 melanoma cells. Murine peritoneal macrophages and RAW 264.7 cells stimulated by KAV-0 produced various cytokines such as interleukin (IL)-6, IL-12, and tumor necrosis factor $(TNF)-{\alpha}$, and nitric oxide (NO). Intravenous (i.v.) administration of KAV-0 significantly augmented NK cell cytotoxicity against Yac-1 tumor cells. In experimental lung metastasis caused by B16-BL6 melanomas, prophylactic i.v. administration of KAV-0 at a dosage of $1,000{\mu}g/mouse$ inhibited lung metastasis by 53.0%. These results suggest that the crude polysaccharide (KAV-0) isolated from Korean apple vinegar has a considerably high anti-metastatic activity and immunomodulatory activities beneficial to human health.

  • In this study, the migration route and the absorption rate of calcium and magnesium in apple leaves were compared and analyzed using plant nutrients prepared by wet nano-grinding technology. The plant nutrients were sprayed onto the leaves to confirm the component content and the movement route of the nanoized calcium and magnesium. At 2, 4, and 8 weeks after the plant nutrient treatment, the apple leaves were divided into petiole, lamina, and side, and SEM and EDS were used to measure the calcium and magnesium contents. The calcium and magnesium contents of the petiole increased from the 4th week after plant nutrient application to 1,115% at the 8th week. The calcium and magnesium contents of the lamina decreased after spraying but increased after 4 weeks. The calcium and magnesium contents increased in the side of the leaves compared to the control, reaching 673% after 4 weeks. The calcium and magnesium contents increased with increasing duration in all plots when compared with the control unsprayed leaves, suggesting that the usually poorly soluble calcium and magnesium were transferred from the petioles to the lamina. The results of this study indicate that improved calcium and magnesium absorption could be obtained in crops other than apples using plant nutrients produced through wet nano-processing technology. This technology is also expected to be applicable to natural products and bioindustries.

  • Substantial numbers of malo-lactic bacteria were detected in Korean winery environment such as in grape juices, fermenting musts, lees, aging wines, and bottled apple wines. Among 1363 malo-lactic strains isolated from the above habitats, four superior strains were selected and identified as Leuconostoc oenos strain A-25, B-30, C-13 and Lactobacillus plantarum strain D-11. The strain A-25 showed malate utilizing activity almost equivalent to Leu. oenos ML34, a well-known malo-lactic bacterium. Upon experimental vinifications the malo-lactic fermentation efficiency of A-25 was confirmed.

  • Two-spotted spider mite (TSSM), Tetranychus urticae Koch (Acari: Tetranychidae) is one of the major pests in apple orchards. TSSM was known to show different population dynamics depending on apple cultivars. We tested the host plant preference and fitness of TSSM on the leaves of 3 apple cultivars, Fuji, Tsugaru, and Hongro. TSSM showed higher behavioral preference to Fuji than Tsugaru and Hongro, and showed a higher fecundity in Fuji. The immature development of this mite was the shortest in Fuji and longest in Hongro. Total fecundities were not significantly different among cultivars, but daily fecundity was higher and longevity was lower in Fuji. Hongro was the less preferred cultivar for TSSM, and showed the lowest fitness by life table parameters. These results could explain the possible mechanisms of differential population dynamics among apple cultivars. Further study including diverse apple cultivars currently available in Korea could help to deploy time- and cultivar- specific IPM tactics.

  • The purpose of this study is to assist farmers in determining the optimal time for the shipment of stored apples by investigating the market trends, storage status and release dates of low-temperature stored apples. We surveyed 300 apple cultivation farms in Daegu, Gyeongbuk Province, which is the main producer of apples, and examined the cultivars, cultivation areas, storage conditions, and shipment status of apples. The main results are as follows: the proportion of apples cultivatedat different ripening times was surveyed. According to the results, the proportions of early, middle and late varieties were 78.3%, 63.7% and 96.0%, respectively. Also, 48.7% of the farm households surveyed had cold storage facilities. The average storage cost per apple box(15kg) was 978.3 won for self-storage and 1,771.8 won for consignment storage. For the six(6) months between November and April, the proportion of shipped apples was 91.6% of the total stored apples. The (average total?)annual apple shipment, including apples stored in general storage warehouses, was 744.4 boxes. The (average total?) annual shipment of cold storage apples was 616 boxes. The stored apples were mainly shipped to 'wholesale markets', which have the highest sales share, followed by 'production site collectors' and then 'supermarkets'. The most common shipping method of the apples was by general trucks, followed by low-temperature trucks, and finally by delivery services. The analysis of the factors influencing the decision to release apples by period showed that it was affected by the storage cost, loss rate, and customary shipping in the off-season(from May to August). On the other hand, in the general release season(from November to April), the statistically significant decision factors for the release of apples were the future expected price, storage cost and decision of the leading farmer groups. For farmers with a high share of general shipment, the deciding factors for the release of apples were the future expected price, storage cost, high income expectation, and decision by leading farmers.
