  • 닭고기의 품질을 높여야 한다는 데는 모두 의견을 같이 한다. 정부당국에서도 도계품의 포장유통을 의무화한데 이어 5월 16일부터는 특급도계장에 한해서 타시도 반출을 허용한다고 한다. 이러한 일련의 조치들이 닭고기의 품질을 높이는데 얼마나 공헌할 것인지는 두고 보아야 하겠지만 전문가들이 지적한 품질 향상을 위한 시급한 문제들은 무엇인지 알아 본다. 이 글은 지난해 본회와 미국사료곡물협회에서 초청한 미농무성 도계검사관 어형선 박사의 보고 내용을 편집자가 요약한 것이다.

Pulmonary Zygomycosis in Chicks due to Absidia corymbifera (닭에 있어서 Absidia corymbifera에 의한 폐렴)

  • Pulmonary zygomycosis was diagnosed in 2 of the 45 broiler chicks both by culture as well as direct microscopy. Absidia corymbifera was isolated from the diseased lungs on Sabouraud medium at 37$^{\circ}C$. The squash preparations of the lungs in direct microscopy revealed the presence of broad non-septate, branched zygomycetes type hyphae, Similar fungal elements were detected in the PAS stained tissue imprints of the infected lungs. The recovery of A. corymbifera in high concentration from the litter and soil of chick pen suggested that environment probably acted as the source of Infection to these broilers. It is advised that zygomycosis may be considered in the differential diagnosis of avian respiratory diseases.

Synthesis of Vitamin $D_3$ and It′s Analogues in Dorsal Skin of 8 Week-Old Broiler Chicks Irradiated by UV Light (자외선 조사에 의한 8주령 브로일러 병아리 등 피부에서의 비타민 $D_3$ 및 그의 유사물질 합성)

  • This study was conducted to investigate the synthesis of previtamin D$_3$(PreD$_3$), lumisterol$_3$($L_3$) and vitamin $D_3$ ($D_3$) in dorsal skin of 8 week-old broiler chicks irradiated by UV light. The Hubbard line day-old broiler chicks were fed with vitamin D-depleted ration (or 3 weeks and with medium broiler diet for 5 weeks. The 3$\times$3cm area of dorsal skin was defeathered one day before the experiment. The 310nm UV light was utilized to irradiate the dorsal skin, which was separated into epidermis and dermis after irradiation. The irradiated epidermis was extracted with 60% ethyl acetate in n-hexane and PreD$_3$, $L_3$, D$_3$ and 7-dehydrocholesterol (7-DHC) were analyzed by HPLC. When UV light was treated for 0, 90 or 150min. the L$_3$ content in the separated epidermis was 219, 298 or 248ng/$\textrm{cm}^2$, respectively. The irradiation for 90min produced 79ng/$\textrm{cm}^2$ of L$_3$, and the synthesizing rate was 0.9ng/$\textrm{cm}^2$/min. The PreD$_3$ content was 23, 33 or 12ng/$\textrm{cm}^2$ when exposed for 0, 60 or 150min The 10ng/$\textrm{cm}^2$ of PreD$_3$ was produced for 60min. The D$_3$ was generated by 27ng/$\textrm{cm}^2$ when exposed for 90min. The 7-DHC contents were decreased gradually from initial 123 to 35ng/$\textrm{cm}^2$ when exposed for 150 min, showing the rate of disappearance as 0.6ng/$\textrm{cm}^2$/min.

Effect of Feeding Cordyceps with Fly Pupa on Growth Performance in Broiler Chickens (브로일러의 성장에 관한 파리번데기 동충하초 급여효과)

  • This study was carried out to evaluate the effects of the addition of different levels of CFP (Cordyceps with fly pupa) on growth performance in broiler chickens. 400 broiler chicks (Ross 308, 1 day old) were sorted randomly into 4 treatment groups and fed experimental diets for 35 days. The treatment groups were divided into a control group not fed with CFP (T1), and treatment groups fed with CFP 2.0% (T2), CFP 3.5% (T3), and CFP 5.0% (T4). Although the broilers' weight gain and feed efficiency were significantly higher (p<0.05) in the T3 group throughout the entirety of the test period, no statistically significant differences were noted among the T1 and T2, T4 groups. Triglyceride in the blood, total cholesterol, and LDL-C were significantly lower in the CFP treatment groups than in the control group (p<0.05). The blood lipid reduction rate ranged from 5.32 to 10.63% for triglycerides, from 9.23 to 12.62% for total cholesterol, and from 44.67 to 53.81% for LDL-C in the CFP treatment groups relative to the control group. The abdominal fat weight ratio was reduced significantly in the CFP treatment groups (p<0.05) compared with the control group, with a reduction rate range of 17.67-21.68%. Broiler carcass weight, carcass rate, and ratios of breast muscle, skin and thigh muscle weights to carcass weight were significantly higher in the T3 group, and statistically significant differences were noted among the T1 and T2, T4 groups (p<0.05). Enteropathogenic E.coli and Salmonella were lower in the CFP treatment groups than in the control group, whereas the beneficial bacteria Bifidobacteria were significantly higher in the CFP treatment groups than in the control group (p<0.05). These findings suggest that the Cordyceps with fly pupa can improve the carcass characteristics and body weight gain in broiler chickens.

Effect of a Probiotic Feed Mixture on Chicken Meat Quality and Growth Performance in Broilers (사료용 복합생균제가 브로일러의 생산성과 닭고기 품질에 미치는 영향)

  • An experiment was conducted with 240 broiler chickens (ROSS 308) to evaluate the influence of supplementation of a probiotic feed mixture (PFM) including Bacillus subtillus, Streptomyces galilaeus, and Sphingobacteriaceae on growth performance and quality of chicken meats. Broiler chickens were randomly allocated to one of four treatment groups: 1) CON (no PFM as control), 2) CP3 (0.3% commercial probiotics), 3) PFM3 (0.3% PFM), and 4) PFM5 (0.5% PFM 0.5). They were then reared for 35 days. Body weight was significantly increased in CP3, PFM3, and PFM5 compared to that in CON (p<0.05). In addition, PFM3 and PFM5 had higher body weights then CP3 (p<0.05). Weights of F-sac, thymus, and spleen and IgG levels were significantly higher in CP3, PFM3, and PFM5 than those in CON (p<0.05). In addition, they were higher in PFM3 and PFM5 than those in CP3 (p<0.05). Broiler chickens fed diet with PFM3, PFM5, and CP3 also had higher numbers of Lactobacillus in cecum than broiler chickens fed CON diet (p<0.05). However, their numbers of E. coli, Salmonella, coliforms, and total aerobic bacteria were significantly reduced (p<0.05). Water holding capacity of breast meat was significantly improved in PFM3 and PFM5 compared to that in CON and CP3 (p<0.05). These results suggest that dietary 0.3% probiotic feed mixture including Bacillus subtillus, Streptomyces galilaeus, and Sphingobacteriaceae may improve growth performance and meat quality of broiler chickens.

The Effects of Dietary Supplementation of Vitamin C and E on the Growth Performance and the Stress Response in Broiler Chickens (육계에서 비타민 C 및 E의 첨가 급여가 성장 능력과 스트레스 반응에 미치는 영향)

  • This study was performed to investigate the investigated effects of dietary supplementation of vitamin C and E on the growth performance and stress response in broiler chickens. Stress response was analyzed by the quantity of telomeric DNA, the rate of DNA damage and the expression levels of heat shock proteins (HSPs) and hydroxyl-3-methyl-glutaryl coenzyme A reductase (HMGCR) genes on tissues and blood. The telomere length and telomere shortening rates were analyzed by quantitative fluorescence in situ hybridization on the nuclei of lymphocytes and tissues. The DNA damage rate of lymphocytes was quantified by the comet assay. The expression levels of HSP70, HSP90s and HMGCR genes were measured by quantitative real-time polymerase chain reaction in lymphocytes. In results, there was no significant difference among treatments in body weight, weight gain, feed intake and mortality. The telomere shortening rate of the lymphocytes was significantly lower in the vitamin E supplemented group than the control group. The DNA damage was also decreased supplemented with vitamin C and E, as compared to the control group. The vitamin E supplemented group had a significant positive effect on the expressions of HMGCR, HSP90-${\alpha}$ and HSP90-${\beta}$ in lymphocytes, but had no significance on HSP70, as compared to the control group. We concluded that the dietary supplementation of vitamin E (100 mg/kg feed) had reduced the individual physiological stress response without stunt growth in broiler chickens.
