Determination of Optimal Added-Levels of Inuloprebiotics for Promotion of Growing Performance in Broiler Chickens (육계의 성장능력 향상을 위한 이눌로프리바이오틱스의 적정 첨가수준 결정)

  • The present study furthered this research by determining the optimal level of inuloprebiotics derived from Korean Jerusalem artichoke to promote growth in broiler chickens. On hatch day, 320 male Ross 308 broilers were randomly allotted to four groups for a 35-day feeding regimen. The groups were a control (no supplementation), diet supplementation with antibiotics (8 ppm avilamycin), supplementation with 200 ppm inuloprebiotics, and supplementation with 250 ppm inuloprebiotics. Body weight and feed intake were comparably high in the two inuloprebiotics groups, and exceeded the values for the control and antibiotics groups. Body weight and feed intake was higher in chickens fed the antibiotics supplemented diet, compared to controls. There were significant differences among treatment groups. Feed conversion ratio during total experimental periods was significantly high in the control group compared to the inuloprebiotics-fed groups, but no significant difference was evident using antibiotics or inuloprebiotics dietary supplementation. Carcass weight, dressing percentage, and weight of breast and thigh muscle were significantly higher for inuloprebiotics-fed chickens, compared with control and antibiotic-fed chickens. Inuloprebiotics concentration was not significant, while antibiotics-fed chickens displayed significantly higher values than control chickens. Abdominal fat was significantly reduced (19.08%-23.30%) and blood immunoglobulin and the weight of the thymus and Bursa of Fabricius were significantly increased in chickens receiving inuloprebiotics-supplemented feed, compared to control and antibiotics fed groups. In the lower intestine, the viable counts of beneficial bacteria (Bifidobacteria and Lactobacillus) were significantly increased and counts of harmful bacteria (Escherichia coli and Salmonella sp.) were significantly decreased in the presence of the inuloprebiotics, compared to control and antibiotic. The present results support 200 ppm as an optimal level of Korean Jerusalem artichoke-derived inuloprebiotics as a dietary supplement to improve growth in broiler chickens.

Effect of Dietary Cinnamon Powder on Savor and Quality of Chicken Meat in Broiler Chickens (닭고기의 품질 및 맛에 관한 계피 급여효과)

  • A 35-day trial was carried out to determine the influence of dietary cinnamon powder (CNP) on the sensory evaluation and quality of chicken meat, carcass characteristics, plasma lipid level and growth performance of broiler chickens. There were 5 treatment groups: control; CNP 2.0%; CNP 3.0%; CNP 4.0%; and CNP 5.0%. The body weight of the broilers fed the diets containing 3.0% CNP was higher than the broilers fed the control feeds (p<0.05). The concentration of triacylglyceride, HDL-C was higher in the plasma from broiler chickens fed diets with CNP (p<0.05) but the concentrations of total cholesterol and LDL-C were significantly lower (p<0.05) compared to the control group. The carcass percentage, chicken breast and thigh weight were not different between the CNP and control groups. The WHC was significantly higher in the chickens fed 4% CNP diet, while the TBARS was significantly lower (p<0.05) in the chickens fed 3% CNP diet compared to the control group. The color of the breast muscle from the chickens fed 3% CNP diet was lighter than those from the control groups (p<0.05). The sensory evaluation of the taste and savor related to CNP in fried or boiled chicken meat were significantly better from the broiler chicken fed diets containing CNP than the control group (p<0.05). These results suggest that dietary cinnamon powder may improve savor and quality of chicken meat in broiler chickens.

Meat Qualities and Functional Properties of Broiler and Spent Layers Slaughtered at Different Ages (브로일러와 주령이 다른 산란 성계육의 육질 및 가공적성)

  • This study was conducted to identify the quality and functional properties of meat and meat batter among commercial broilers and two different ages of spent layers. Breast and whole leg meat samples were prepared from the broilers and spent layers to compare meat quality traits: Commercial broiler (Arbor Acre; 6-week-old) and two different ages of spent layers (Hy-Line; 70 and 95-week-old). Three types of meat batters containing breast meat as 50% of total ingredients were also prepared to analyze processing qualities. The broiler showed the highest water holding capacity (p<0.05) and the lowest cooking loss value (p<0.05) in both meat and meat batter samples. The breast and leg meat of the 95-week-old layers showed the highest shear force value (p<0.05), and also showed the highest shear force and hardness values in the meat batter. Although the oldest layer meat showed tougher textural traits than the 70-week-old layers, no significant differences were found for cooking loss and water loss values in both the meat and meat batter samples. Besides, panelists gave equivalent scores within different ages and parts of the cooked layer meats in the sensory evaluation. Similar ratios of polyunsaturated fatty acids to saturated fatty acids, and omega-6 to omega-3 fatty acids were obtained from both the 70-week-old layer and 95-week-old layer meats. In conclusion, the 95-week-old spent layers, especially for breast meat, had equivalent potential as raw materials for processed meat products compared to the 70-week-old layers.

Studies on the Carcass Rates, Natrient Contents and Optimum Prices of Broilers and Old Layers as Related to Body Weight (육계의 종류 및 체중별 도체율과 영양성분 및 적정가격에 관한 조사연구)

  • This study was conducted to determine the carcass rates, partcarcass production percentages, nutrient contents and optimum prices of broilers and old layers as related to the body weight. Total 240 birds were used and results obtained are summarized as follows. 1.The carcass rates were 61.41% in young chickens (0.6-0.8kg), 65.07% in semi-bros(1.2-1.4kg) and 66.39% in high- bros (1.7-2.1kg), showing a trend of increased carcass rate as the body weight increased. The carcass rates of old layers were lower than those of broilers, being 62.68% in white old lavers (1.8-2.0kg) and 63.07% in colored old layers (2.1- 2.4 kg) 2. Although there was little difference in part-carcass production percentages between breeds or body weights of broilers, most of the part-carcass was produced from legs, breast, back, wings and neck in order. 3. As the body weight increased, the moisture content of deboned carcass of broilers decreased (71.27% in young chickens, 62.66% in semi-bros and 60.39% in high-bros), while the fat content increased (11.47% in young chickens, 17.60% in semi-bros and 19.87% in high-bros). The protein content of semi-bros (17.21%) was higher than that of young chickens (14.75%) or high-bros (16.93%), but no difference was noted in old layers whether they were white or colored. 4. When compared on the basis of protein or Protein plus fat content in grams per kilogram body weight, the market price of semi-bros per kilogram body weight was more expensive and that of old layers was cheaper than that of high- bros.

Relationship of Initial Chick Weight to Body Weight in Broiler (브로일러의 발생시 체중이 출하체중에 미치는 영향)

  • The study was carried out to determine if a difference in initial chick weight was still evident in market body weight(6 or 8 week body weight) of broilers. The data of a total of 800 broiler commercial chick raised at Poultry Breeding Farm, Seoul National University from Aug. 6, 1981 to Oct. 1, 1981 were analysed. The results were summarized as follows: 1. Although the initial chick weight was about the same, male chick grew more rapidly than female and sex difference was the most striking factor in growth rate of broiler in this analysis. 2. The relationship between initial chick weight and body weight after hatching was decreased to the increase of weeks of age in both sexes. Though the correlation coefficients of the 6 week and 8 week body weight to the initial chick weight were 0.15 & 0.15 in female and 0.18 & 0.17 in male, the relationship was highly significant in both sexes. 3. Regressions of 6 and 8 week body weight on the initial chick weight in both sexes indicate that, for each increase of one gram in weight of chick at hatching, the average increase in body weight was 8.33 gram & 10.07 gram in female and 7.85 gram & 11.28 gram in male. Results show that the initial chick weight (1 day of age) influence average body weight of commercial broiler at 6 and 8 weeks of age.
