Effect of Water Addition Ratio, Stirring Time and Ca Salts on Textural Properties of Soygel (콩묵 제조시 가수량, 교반시간 및 Ca염의 양이 텍스쳐 특성에 미치는 영향)

  • Rheological properties of whole soybean gel(soygel) were investigated as affected by the water addition ratio, stirring time and Ca salts. The soygel was prepared by suspension of whole soy flour(WSF, 300 mesh) in boiling water, addition of sodium alginate and Ca salts followed by thorough mixing and gel formation at $4^{\circ}C$. The texture properties of hardness, adhesiveness and cohesiveness of the gel were increased as the stirring time prolonged from 5 to 30 minutes. From the results of the rheological and sensory properties, 20 minutes of stirring time was selected for whole soybean gel preparation. Eventhough increase in water addition ratio from 8 to 12 times(water/WSF, v/w) resulted a decrease in hardness and adhesiveness, 10 times ratio was chosen as proper the water addition based on textural uniformity. Among the Ca salts, $CaSO_4$ produced the highest hardness followed by Ca $gluconate-CaSO_4$ mixture(413g) and Ca gluconate at the water addition level of 10 times. In order to determine the amounts of Ca salts, and 0.125g of Ca gluconate or $CaSO_4$ per g WSF were found to be optimum in terms of textural and sensory properties. The proper mixing ratio of Ca gluconate and $CaSO_4$ was found to be 50 : 50, 25 : 75 and 0 : 100.

Effect of Whole Soy Flour on the Properties of Wet Noodle (대두분말의 첨가가 제면특성에 미치는 영향)

  • Addition of whole soy flour(WSF) to wheat flour(WF) was studies for its effects on dough and noodle characteristics. The WF used was medium grade of strength and WSF was a fine flour of 350 mesh. The addition ratio of WSF to. n was up to 20%. The dough properties and textural properties of wet and cooked noodles were measured with using Farinograph, Amylograph and Rheometer. Farinogram data showed the minimum dough development time and stability at 6% addition of WSF. Amylograph data of initial pasting temperature and time were increased while the maximum and final viscosity and setback were decreased as the WSF added more to W The initial pasting temperature of 2.0∼6.0% WSF added flour were comparable to 100% WF eventhough viscosity was almost half of WF. The water absorption capacity was increased from 81.6% to 92.3% at 6.0% WSF and then decreased as the addition ratio of WSF increased. The extensibility of dough showed a maximal value at 8.0% WSF addition. Strengthness and hardness of wet and cooked noodle were increased to the heighest measurement as the WSF added up to 6.0% followed by a steady decrease thereafter. It was also found that WSF addition resulted an increase in adhesiveness of wet noodle and decrease in hardness and strengthness of cooked noodle.

  • 본 논문에서는 Porous poly-silicon cold cathode에 의해 전자를 방출하는 Ballistic electron surface-emitting display(BSD)의 전계방출 특성을 실험했다. BSD는 nanocrystalline을 둘러싼 산화막을 multi-tunneling한 전자에 의해 발광이 되는 mechanism이기 때문에 산화막의 두께를 변수로 두어 특성을 실험했다. 900℃에서 1시간에서 3시간까지 30분 간격으로산화 반응을 진행하였으며, leakage current와 emission current의 비로 효율을 나타내었을 때 1시간 30분 동안 산화 반응을 한 시료가 가장 좋은 특성을 나타내었다.

Automatic Phonetic Segmentation of Korean Speech Signal Using Phonetic-acoustic Transition Information (음소 음향학적 변화 정보를 이용한 한국어 음성신호의 자동 음소 분할)

  • This article is concerned with automatic segmentation for Korean speech signals. All kinds of transition cases of phonetic units are classified into 3 types and different strategies for each type are applied. The type 1 is the discrimination of silence, voiced-speech and unvoiced-speech. The histogram analysis of each indicators which consists of wavelet coefficients and SVF (Spectral Variation Function) in wavelet coefficients are used for type 1 segmentation. The type 2 is the discrimination of adjacent vowels. The vowel transition cases can be characterized by spectrogram. Given phonetic transcription and transition pattern spectrogram, the speech signal, having consecutive vowels, are automatically segmented by the template matching. The type 3 is the discrimination of vowel and voiced-consonants. The smoothed short-time RMS energy of Wavelet low pass component and SVF in cepstral coefficients are adopted for type 3 segmentation. The experiment is performed for 342 words utterance set. The speech data are gathered from 6 speakers. The result shows the validity of the method.

Strength and Absorption Properties of Cement Mortar Produced with Various Content of Sludge Powder at Mines (석산에서 발생하는 슬러지 미립분의 혼입률 변화에 따른 시멘트 모르타르의 강도 및 흡수 특성)

  • It is reported that a lot of sludge powder is produced during the process of manufacturing crushed fine aggregate in mines. However, there is a limitation on the its use that most of them are disposed and wasted, which cause environmental pollution. Therefore, in this paper, tests are carried out in order to recycle sludge powder as filler for cement mortar products. Kinds of aggregates and mix proportion of mortar are varied under various contents of sludge powder. According to test results, it is found that cement mortar products using sludge powder as substitution of fine aggregate about 10% have better qualities than those without sludge powder.

Characteristics of Noodle Added with Chestnuts Flour (밤가루 복합분 국수의 제면 특성)

  • To investigate the possibility of making noodle with Chestnuts flour(C.F), it was mixed with wheat flour by the ratio of 70%. Making characteristics of noodle was studied in terms of the viscosity property, cooking quality test, color measurement and sensory evaluation. The viscosity property of noodles with 10~20% C.F was almost same value as control. In the cooking quality test, noodles with 10~30% C.F was almost same value as control in weight, volume and absorbance of cooked noodle. Color difference($\Delta$E) between noodles with C.F was not significantly different from control in color, only noodle with 10% C.F was same as control in texture by sensory evaluation test. Based on the cooking and sensory evaluation test, addition of 30% C.F to wheat flour may be suitable for making noodle.

  • 태양전지 제작 시 에미터층을 형성하는 도핑 공정의 최적화는 캐리어 수집 확률 증가와 함께 결정질 실리콘 태양전지 고효율화를 위해 매우 중요하다. 본 연구에서는 결정질 실리콘 태양전지 다이오드의 다양한 도핑 공정으로 제작된 p-n 접합에 대한 전기적 특성 분석을 진행하였다. 도핑 공정의 경우 선 증착-후 확산 공정 시간과 가스량을 변화시켜 다양한 에미터층을 제작하였다. 선 증착 시간 변화를 주는 경우 선 증착 공정을 $825^{\circ}C$로 고정한 뒤 시간을 7분에서 17분까지 변화하고 후 확산 공정을 $845^{\circ}C$, 14분으로 고정하였다. 후 확산 시간 변화를 주는 경우는 선 증착 공정을 $825^{\circ}C$, 12분으로 고정한 뒤 후 확산 공정을 $845^{\circ}C$로 고정 하고 시간을 9분에서 19분까지 변화시켰다. 선 증착 공정을 $845^{\circ}C$ 12분, 후 확산 공정을 $845^{\circ}C$, 14분으로 고정 한 뒤 선 증착 시 POCl3양을 400 ~ 1400 SCCM까지 변화시켰고, 후 확산 시 산소량을 0 ~ 1000 SCCM까지 가변한 조건에서 에미터층에 대한 특성을 분석하였다. 결과적으로 선 증착 공정 $825^{\circ}C$ 12분, 후 확산 공정 $845^{\circ}C$ 14분에서 SCR(Space Charge Region)에서 3.81의 가장 낮은 이상 계수 값을 나타내었다. 이는 p-n접합의 내부결함이 줄어들어 태양전지의 캐리어 수명이 증가됨을 보였다. 선 증착 공정 중 $POCl_3$ 주입량 800 SCCM, 후 확산 공정 중 산소량 400 SCCM에서 $15.9{\mu}s$로 가장 높은 캐리어 수명을 나타내었다. Suns-VOC 측정 결과 $POCl_3$ 주입량 800 SCCM, 산소량 400 SCCM에서 619mV로 가장 높은 개방전압을 얻을 수 있었다.

  • The clamping characteristics of segmented nuts in pyrotechnic separation nut are investigated using finite element analysis. When the segmented nuts are used to clamp objects, a constraint cylinder is necessary to prevent the segmented nuts from spreading out to the radial direction. During the manufacturing process, a clearance is usually introduced between the outer diameter of the segmented nuts and the inner diameter of the constraint cylinder. Therefore to find out the effect of the clearance, proper finite element modeling method is suggested to describe the clamping procedure appropriately. In addition, finite element analysis with the clearance of 0.00, 0.03, 0.06, and 0.10 mm are performed. From the analysis results, the clamping characteristics of segmented nuts are investigated according to the clearance, and several factors which should be considered to design a reliable pyrotechnic separation nut are figured out.

Compound Noun Analysis Strengthened Unknown Noun Processing (미등록어 처리가 강화된 복합명사 분해)

  • 본 논문에서는 분해 패턴을 이용한 재사용 분해 알고리즘과 외래어 인식, 이름 명사 인식, 지명 인식에 의한 미등록어 추정을 이용한 복합명사 분해 방법을 제안한다. 재사용 분해 알고리즘은 현재 분해되는 음절보다 짧은 길이의 음절에서 사용된 분해 방법을 재사용하여 분해가 이루어짐을 의미한다. 외래어 인식에서는 한국어 음절에서 비교적 사용 빈도가 낮은 음절들로 외래어가 구성이 됨을 이용한다. 이름 명사는 한국인의 이름 특성에서 한자 독음을 차용하여 작명이 이루어지기 때문에 일정한 수의 음절이 반복적으로 사용되는 점을 이용하여 인식한다. 지명 인식 방법은 지명이 출현하는 패턴을 분석하여 지명 사전의 검색으로 인식한다. 이와 같이 지명 사전에 의한 지명 인식과 알고리즘에 의한 외래어 및 이름 명사 인식 방법을 사용함으로써 미등록어 추정에 정확성을 높이고 분해 정확율 향상에 기여한다. 실험 결과 미등록어가 포함된 약 1,500어절에 대해 약 98%의 정확율이 나타났고, 미등록어가 사전에 모두 등재된 후의 실험에서는 약 99%의 정확율을 보였다.

Simultaneous Adsorption Characteristics of Binary-Component Volatile Organic Compounds (2성분계 휘발성유기화합물의 동시 흡착특성)

  • The adsorption characteristics of binary-component Volatile Organic Compounds(VOCs) with benzene and toluene were studied in a fixed bed backed with activated carbon. The adsorption intensites of benzene and toluene resulted from equilibrium adsorption capacity led to roll up phenomenon in a fixed bed and behaved benzene as non-key component which meant the smaller affinity to the activated carbon of the two. From comparion with breakthrough curves between binary-component and single component systems at the same concentration conditions, the stoichiomertic breakthrough time of toluene in both systems had no difference, but that of benzene as non-key component had a tendency to shorten 130min than 200min of single component. In the breakthrough characteristics of binary-component adsorbates, the magnitude of roll-up of the non-key component increased with the increasing of non-key component ratio and aspect ratio(L/D) of fixed bed, while decreased with the increasing of interstitial velocity. Especially, the roll-up phenomenon was more conspicuous with the increasing of mole fraction of key component.
