The Development of a Natural Seasoning Using the Enzymatic Hydrolysate of Fish Skin (어피의 효소적 가수분해물을 이용한 천연조미료의 개발)

  • A study on the optimum hydrolysis conditions of fish skin through the aid of enzymes and the development of a natural seasoning using the hydrolysate has been carried out for the effective utilization of fish skin. Using the "pH-drop" techniques the collagenase and pronase were identified as most suitable for this purpose. The $K_m$ and $V_{max}$ values of pronase were 1.82 mgN/ml and 0.06 mgN/mL/min, respectively. The hydrolysis conditions of the cod skin for the pronase were as follows: reaction temperature, $50^{\circ}C$; reaction time, 3hrs; pH 6; enzyme concentration, 0.03%. The degree of hydrolysis at these conditions was 76.8%. But after hydrolyzing cod skin with collagenase for 1hr, when the pronase was treated, the degree of hydrolysis was 83.13%. The molecular weight of the hydrolysate was 8,000 daltons. Among the amino acids in the hydrolysate, glycine(27.95%), glutamic acid(10.94%), proline(7.39%), aspartic acid(9.47%) and serine(7.39%) were responsible for 64.23% of the total amino acids. But valine, methionine, isoleucine, leucine, phenylalanine and histidine having a bitter taste were only 13.05%. From the results of the sensory evaluation, the imitation sauce which was made of 20% fermented soy sauce prepared from the hydrolysate was at least similar to the traditional soybean sauce in product quality. The complex seasoning containing 31.7% of the hydrolysate was nearly equal to complex seasonings on the market, too.

항만개발에 의한 조석조류 및 수질변화 예측을 위한 시뮬레이션 모델 연구

  • 항만개발 사업은 매립이나 준설과 같은 해안선과 해저지형을 변화시키는 공사가 이루어지며 이는 조석조류 현상의 변화를 유발하게 된다. 특히 해안지형이 복잡한 항만이나 하구에서는 변화정도가 크게 나타나며 방파제나 선박접안 시설과 같은 항내 구조물을 축조 할 경우에도 조석조류 변화가 야기된다. 조석조류 현상의 변화는 해양 수질과 생물상에 영 향을 줄뿐만 아니라 인접한 육지에 이르기까지 크다란 피해를 유발할 수가 있다. 창조시 해 수를 육지로 범람하게 하거나 퇴적이나 침식조건을 변화시킬 수도 있으며 오염물질이 외해 로 확산되는 과정을 방해하고 해양생물의 서식조건을 악화시켜 부근 해역의 어업에 피해를 유발할 수도 있다. 또한 해안 공사 과정에 해수로 유입되는 토사나 항만 이용시에 배출되는 폐수 등이 항내 수질과 생태계를 변화시킬 수 있다. 따라서 조석조류와 수질변화를 사전에 예측하고 이를 최소화하는 방안이 강구되어야 한다. 조석조류와 수질 변화를 사전에 예측하 는 방법으로 축소모형 실험과 컴퓨터 시뮬레이션이 사용된다. 축소모형 실험은 현장을 재현 하는데 많은 경비와 시간이 소모되며 예측에 한계가 있다. 반면에 컴퓨터 시뮬레이션은 대 상해역의 지형과 조류 그리고 수질특성에 적합하게 모델을 개발할 경우 예측력이 매우 높기 때문에 현재 가장 널리 이용되고 있다. 본 연구는 유한 요소법에 기초하여 미국 공병단 (United States Army Corps of Engineers)에서 개발한 TABS-2 모델을 이용하여 온산항에 서 시행되는 부두건설에 따른 조석조류 및 수질변화를 시뮬레이션하였다. 측정된 자료로 모 델 계수를 보정하고 검증하였으며 항내 매립과 준설이 이루어질 때 나타나는 조위와 조속변 화를 예측하였다. 매립과 준설공사시 유출되는 토사가 조석조류현상에 따라 이동 확산되는 범위와 농도분포를 예측하였다.ophobic components)은 75~80%, 친수성 물질(hydrophilic components)은 30~33%정도의 분포를 보였고, 전염소 및 전오존 공정을 거친 처리수에서는 각각 62.2-62.8%, 43.9~49.0% 및 50~ 55%, 40~57% 정도의 분포를 보였다. 그리고 웅집-침전을 거친 처리수에서는 그 분포가 77~82%, 24-48%였다. 전주리 공정을 통하여 소수성 물질(byoghobic components)의 분포가 감 소하는 것을 볼 때 전염소 및 전오존 처리가 용존유기물의 응집에는 오히려 역 효과를 나타내는 것으로 판단된다. 것으로 판단된다.여 황토 2g에 대하여 Hieltijes and Lijklema 방법에 의해 Adsorbed-p, Nonapatite inorganic-P(NAI-P), Apatite-p, Organic-P로 구분하여 분석하고, 총인(Total Phosphorus)을 Standard Methods에 따라 Persulfate digestion후 0.45 m membrane 여지 여과하여 여액에 대해 PO3-4-P의 농도를 Ascorbic Acid 법으로 측정한 결과, NAI-P가 가장 큰 비율을 차지하였고, 부원료로 첨가된 금속 양이온 중 Fe3-이온이 흡착에 기여하는 정도가 가장 큰 것으로 평가되었다.다당류 T-AS의 보체 활성화 기작은 classical과 alternative complement pathway의 양 경로를 통해 활성화 되었다. T-AS 분획은 mouse내의 특정 혈청단백을 증가시켰으며, 항체 생성능의 증가가 관찰되어 effect T 세포의 활성화가 나타나고 있음을 알 수 있었다. T-AS는 생체내 투여시에 대식세포의 탐식능이 증진되었으며, 대식세포 기능 저해제에 의한 대식세포의 기능 저해 현상이 회복되었다. 이와 같은 결과들로부터, T-AS의 항암 활성은 활성

Studies on the Mycelial Cultivation and the Rhizomorph Production of Armillaria mellea (Armillaria mellea의 균사배양 및 균사속 생산에 관한 연구)

  • Five strains of Armillaria mellea were collected from the forest of Chonbuk province and isolated from the tissue of fruit bodies. Nutritional and environmental characteristics of mycelial cultivation and rhizomorph production of Armillaria mellea isolated were determined in sawdust media, woody inocula and soils. The sawdust media of Styphnolobium japonicum, Culhamia simplex, Populus monilifera and Populua davidiana were proper for mycelial growth. The ranges of optimum pH, temperature and moisture content for mycelial growth were in the range of $4.5{\sim}5.0$, ${\sim}25^{\circ}C$ and $65{\sim}70%$, respectively. Among the various additives and inorganic salts added, 10% rice bran and 3% $CaCO_3$ were effective to mycelial growth. The woody inocula of Styphnolobium japonicum, Culhamia simplex, Quercus acutissima and Quercus veriabilis were proper for rhizomorph production. The ranges of optimum pH, moisture content and temperature for rhizomorph production were in the range of $4.5{\sim}4.9,$ $45{\sim}55%\;(w/w)$ and $20{\sim}24^{\circ}C$, respectively. Distribution of rhizomorphs in soil was varied with depth, but the main concentration occurred in the range of $7.5{\sim}12.5\;cm$. They were rarely found below 25.0 cm.

  • Urinalyses have been conducted for 28 crew's in H University's training ship and creatine and uric acid turned out to be higher in all ages, which can be inferred that board job has caused negative impact on kidney and/or malfunction In addition, TC and HDL-C, LDL-C ha; decreased, however, TG has increased after the navigation. All different positions including officer, crew, decker, engineer and radio part showed the similar pattern TC and HDL-C has decreased in 30s, 40s and TG has increased in 30s. A few of the 30's show extremely high TG rates so hyperlipidemia is suspected. 7 members turned out positive for UBG test and 5 positive for PRO test. Especially there was only one UBG positive before the navigation but, 7 members has become positive, which means the one-month long-tenn navigation has definite impact on the liver cell function.

  • Non-curable rubberized polymer asphalt waterproof coating materials in Korea and China are manufactured without advanced quality control techniques and common standard, And they are exposed consistent water leakage problems. Import and application of Korean waterproofing products and installation methods is difficult in the present situation as the Chinese standard(JC/T 2428) is different in nature with the Korean counterpart products, And quality assurance is inevitable based on mutual standards. In order to resolve this issue, alternatives such as using standards provided by the ISO (International Organization for Standardization) are generally employed, but there is no such ISO standard as a waterproof material for non-curable rubberized polymer asphalt material. Furthermore, it is unreasonable to develop the ISO standard for rubber asphalt seals for exchange in terms of time and cost. This study proposes that the establishment of a quality standard that can be applied for both countries will be required via an joint international standard that outlines the properties of materials if applied in mutual trade exchange.

Clinical Analysis of Marine Telemedicine Cases for Ocean-Going Vessel Crew (원양선박 선원들의 해양원격의료 실태를 통한 임상분석)

  • The purpose of this study is to contribute to the study of the prevention of diseases and promotion of health of ocean going vessel crew members, through the medical diagnosis and disease classification efforts of this study. From the second half of 2016 to 2017, the diagnosis and health characteristics of 195 crew members were collected through counseling, treatment, and emergency care for about 1 year and 2 months. As a result, it is noted that the incidence of diseases was in the order of urticaria (5.6%), lumbar sprain (4.1%), acute gastroenteritis (3.1%) and anxiety (3.1%). In categorical review, the incidence of musculo-skeletal disease was the most common (25.1%) which was followed by skin disease (17.9%) and digestive disease (11.3%). In addition, the disease that was noted as was the most common in the under 30 years old category, and the incidence of the disease was high in the crew group. Finally, there was a difference between the pathogenesis (trauma vs disease, etc.) (p <.001) and the type of vessel (merchant ship and fishing vessel) (p <.005) as noted in this case.

Screening of Yeast for Brewing of Korean Traditional Pear Yakju and Optimal Fermentation Condition (전통 배 약주 제조용 효모의 선발 및 배 약주의 최적 발효 조건)

  • The goal of this study was to screen a useful yeast for Korean traditional pear Yakju (KTPY) brewing and develop its brewing process. Cooked non-glutinous rice and nuruk were mixed, and added into pear juice with various Saccharomyces cerevisiae and then fermented at $25^{\circ}C$ for 7 days. Among several alcohol fermentation yeasts, ethanol contents was the highest in pear Yakju made by S. cerevisiae K-7 and also showed high ethanol content in pear Yakju which was made by commercial S. cerevisiae C-2. Therefore, we selected S. cerevisiae K-7 and S. cerevisiae C-2 as suitable yeasts for brewing of KTPY. Maximal ethanol production (10.4%) was obtained when cooked non-glutinous rice (100 g) and nuruk (30 sp/g) were mixed and added into pear juice (600 ml) with S. cerevisiae K-7 (5%) and fermented at $25^{\circ}C$ for 7 days and also its antihypertensive angiotensin I-converting enzyme (ACE) inhibitory activity was 57.2%. Addition of antihypertensive starchy materials into the mash was not affected in ACE inhibitory activity and total acceptability of KTPY.

  • 국제표준화기구(國際標準化機構)(ISO)의 비파괴시험(非破壞檢査) 기술자(技術者)의 기량인정(技量認定)및 인증에 관(關)한 국제친격안(國際規格案) DIS 9712를 번역, 소개(紹介)한다. 이 문서(文書)는 현재(現在)로는 안(案)에 불과하지만 부원간(不遠間) 회원국(會員國) 각국(各國)이 투표(投票)에 의(依)해서 결정(決定)되게될 것이다. 구주(歐州)의 대부분(大部分) 국가(國家)는 적극적(積極的)으로 찬성(贊戚)을 하고 있고 개발도상국(開發途上國)에서는 동조(同調)를 하고 있으며 일본(日本)도 찬성(贊成)을 표명하고 있다. 반대(反對)하는 나라는 놀랍게도 미국(美國)과 서독(西獨)이지만 대립점(對立點)이 몇가지로 좁혀지고 있고 타협책(妥協策)이 모색되고 있어서 국제규격(國際規格)으로써 확정(確定)되는 것은 시간문제(時間問題)인 것으로 보이며 정식(正式) 문서화(文書化) 하기까지는 아마도 시간(時間)이 좀 걸릴 듯하다. 많은 나라가 이 문서(文書)를 전제(前提)로 해서 비파괴시험(非破壞檢査) 기술자격(技術資格)에 대(對)한 인정(認定)의 국제통합(國際統合)을 추진(推進)하고 있다. 일본(日本)도 1989년(年)에 종래사용(從來使用)해오던 규정(規程)을 개정(改訂)하였으며 국제통합(國際統合)을 더욱 진전(進展)시키기 위(爲)하여 자국(自國)의 인정규정(認定規程)과 국제규격안(國際規格案)과의 항목별(項目別)로 비교검토(比較檢討)하고 있다. 우리나라의 기술자격인정제도(技術資格認定制度)는 국가기술자격법(國家技術資格法)에 의거(依據)하여 한국산업인력관리공단(韓國産業人力管理公團)에서 주관(主管)하여 실시(實施)하고 있는 반면(反面) 미국(美國), 구주(歐州) 등(等) 대다수(大多數)의 나라가 정부(政府)의 위임하(委任下)에 협회(協會) 등(等)의 단체(團體)에서 주관(主管)하여 실시(實施)하고 있는 것이 특징(特徵)이며 기술자격(技術資格)의 등급면(等級面)에서도 대부분의 국가(國家)가 Level 1, 2 및 Level 3의 3등급(等級)으로 구분(區分)하여 실시(實施)되고 있는데 현행(現行) 우리나라는 기능사(技能師), 기능장(機能長) (기능대졸업자(機能大卒業者) 대상), 기사(技師) 1, 2급 및 기술사(技術士)로 세분(細分)되어 실시(實施)되고 있다. 국제표준화(國際漂準化) 기구(機構)(ISO)의 비파괴검사(非破壞檢査) 기술자(技術者)의 기량인정(技量認定)및 인증에 대(對)한 국제규격(國漂規格)이 마무리 단계에 있고 많은 나라에서 국제통합(國際統合)을 추진(推進)하고 있는 추세여서 우리나라도 이에 대응해 나아가야 할 것으로 사료(思料)된다.

Processing of Sausage Using Duck Mechanically Deboned Meat (오리 기계발골육을 이용한 Sausage 제조)

  • In this paper we dealt with processing of sausage using duck mechanically deboned meat(duck-MDM). The results may be summarized as follows : 1) after semi-thawing of freezing duck-MDM at $25^{\circ}C$ for 3 hours and cutting as thin, 2) alkali washing at low temperature for 4 hours by 0.2% NaHCO$_3$and 0.15% NaCl, 3) curing at low temperature for 4 hours, 4) after washing and dehydrating(moisture 80%), 5) grinding at low temperature for 55 minutes by silent cutter such as 1st grinding for 10 minutes added only dehydrated meat, 2rd grinding for 30 minutes added salt in 1st grinded meat and 3rd grinding for 15 minutes added other additives, 6) after quick casing in PVDC film and heating at 9$0^{\circ}C$ for 80 minutes, 7) cooling to below room temperature. The additives added at 3rd grinding process were Polymix-CA(0.3%), Polymix-CS(0.3%), polyphosphate(0.3%), sugar(4.2%), potato starch(8.0%), pyre-phosphates(0.3%), isolated soy protein(7.0%), MSG(0.2%), onion powder(0.5%), garlic powder(0.1%), nutmeg (1.5%), potassium sorbate(<0.1%), food red no.40(0.0075%), egg albumin(7.0%) and gluten(3.0%).

Regression Analysis on the Relationship Between Elderly Ship Officers and Marine Accidents in Korea (고령 해기사와 해양사고와의 회귀분석)

  • The Republic of Korea has a more rapidly aging society than any other country in the world. In order to prepare for the attendant challenges, this research provides basic data for policies related to aging ship officers, analyzing the relationship between elderly ship officers and marine accidents. The data used here spans 11 years, from 2006 to 2016, and the survey and regression analysis were conducted only on ship officers, excluding crew. As a result of this research, first, it was found that the number of employed ship officers older than 60 has increased 2.7 times over the past 11 years and the range of this increase was larger than for other age categories. Second, the number of elderly ship officers disciplined for marine accidents increased by around 2.6 times. Third, elderly ship officers had around 1.5 times the rate of marine accidents compared to non-elderly ship officers. Fourth, as a result of conducting regression analysis between the number of employed elderly ship officers and the number of officers disciplined, the degree of explanatory power of elderly ship officers for disciplined officials was 75.1%. Since our society will age quickly, policies such as license renewal education for elderly ship officers and regulation enforcing the quality of renewal will be needed.
