Microbiological Quality of Dried and Powdered Foods Stored at Various Relative Humidities (여러 상대습도에 저장된 건조분말 식품의 미생물적 품질 변화)

  • This study evaluated the microbial quality of dried and powdered foods during storage with increased humidity because of climate change. Five types of dried and powdered foods (dried shredded squid, wheat flour, Sunsik, red pepper powder, and roasted sesame seed) were stored at different relative humidities (RH 23%, 43%, 68%, 85%, and 100%) and changes in water activity and microbial populations were measured during storage at $35^{\circ}C$ for 15 days. The results revealed that water activity values of dried and powdered foods were significantly increased during storage when samples were stored at RH 85 and 100%. In addition, levels of total mesophilic bacteria, yeast, and mold were significantly increased after storage for 6 days or 9 days at RH 85% and 100%. However, levels of Escherichia coli and coliform did not increase significantly during storage. Based on these findings, dried and powdered foods should not be stored at high RH because the increased water activity enables microbial growth.

Relationships between Actual Sanitary Management Practices during Production and Distribution, and Microbiological Quality of Dosirak Items Marketed in CVS (편의점 판매용 도시락 생산 및 유통과정시의 위생관리 실태와 시판제품에 대한 미생물적 품질간의 상관관계)

  • Sanitary management practices from 8 packaged meals (Dosirak) manufacturing establishments were surveyd during production and distribution and their microbiological quality of dosirak items marketed in CVS were analyzed. Correlation coefficients were calculated to deternine significant relationships between sanitary management practices and microbiological quality of packaged meals. The results of self evaluation on sanitary management practices indicated 'doing practice well' in personnel and equipment sanitation management but time-temperature control management were practiced satisfactorily only about 55% as compared with the managerial standard guidelines. Significant relationships between the status of actual sanitary management practices and microbiological quality of Dosirak items were not found, but general status of microbiological quality of Dosirak items revealed positive relationship with the size of operational structure and the status of time-temperature control management practices.

  • 식품을 상온에 두면 내부에서 일어나는 생물화학적 반응이나 미생물의 증식 등으로 효소적, 미생물적 변질, 변패 등의 손상을 입고 마지막에는 부패되어 불가식품의 상태에 이르게 된다. 인류는 이러한 식품의 품질저하를 방지하기 위하여 고금을 통하여 많은 저장방법을 연구하여 왔다. 그 방법의 하나로 식품을 저온에 저장하는 냉동 저장법이 있으며 이 방법은 식품저장법중 가장 우수하고 현대적인 방법이다. 냉동 저장법이 식품에 응용되기 시작하면서 각국에서는 시장 유통 단계에서 필요한 기술을 도입하여 냉동 식품에 관한 제반 시설의 건설 설비 및 보급이 증가 추세에 있다. 또, 냉동은 식품 저장을 위한 수단 외에 가공 수단으로서 신가공 식품 제조, 동결 건조(freeze drying) 및 동결 저장 기술 등에 적용되기도 한다. 여기서는 농식품분야에 있어서 냉동기술의 적용 사례와 새로운 기술들을 소개하고자 한다. A Study on Microbiological Quality & Safty Control of Hard-boiled Mackerel served by a Industry Foodservice Establishment (II) (산업체 급식소에서 제공되는 고등어조림의 미생물적 품질 관리에 관한 연구(II))

  • This study was written to assess microbilogical quality by passage of time and holding method after making foods, by means of evaluating time, temperature and microbiological quality during vairous phases in product flow of hard-boiled mackerel served by an industry feeding operation for 500 persons a day, measuring pH & Aw and analyzing factors affecting nicrobiological growth conditions. The results were as fallows: 1. According to phases in product flow of hard-boiled mackerel, it showed 4.9 hours of mean of needed time, $27.5^{\circ}C$ of room temperature, 4.8~5.7 of pH value and 0.95~0.98 of Aw. these conditions were suitable for microbiological growth, and the phases with potential hygienic danger were pre-preparation and assembly & service. 2. As for holding methods and passage of time, holding as steam table was more effective than holding at room temperature as time past. 3. Food poisoning bacteria were not dectected from phases in product flow of hard-boiled mackerel.

초임계 이산화탄소를 이용한 돈육의 미생물 저감화 및 물성변화

  • 본 연구에서는 신선육 및 원료육의 미생물 저감화 및 안전성 확보를 위해 식육에 초임계 이산화탄소 처리를 실시하였다. 이산화탄소의 초임계점인 78 atm, $38^{\circ}C$에서 10분 처리한 시료에서 병원성 미생물의 저감화가 나타나기 시작했으며, 압력을 100 atm 이상으로 증가시켰을 때 5 log 이상의 억제 효과가 나타나 신선육 및 원료육의 미생물학적 안전성이 검증되었다. 하지만 초임계 이산화탄소의 압력을 증가시킬수록 안정성은 확보되는 반면 시료의 구조${\cdot}$물성 변이가 심화되어 원료육의 가공적성도는 떨어지는 것으로 판단된다. 따라서 신선육 및 원료육의 품질을 고려한 미생물적 안전성을 확보하려면, 이산화탄소의 초임계점수준의 처리가 요구되며, 향후 초임계 이산화탄소 처리에 따른 육질변이 및 가공적성도에 대한 다각적이고 심도 있는 연구가 요구된다.

Evaluation of Microbial Quality of the Vegetable Salad Used Dressing Added with Prunus mume Extracts (매실 엑기스 첨가 드레싱을 이용한 채소 샐러드의 미생물적 품질평가)

  • This study aimed to determine microbiological quality on vegetable salad used dressing added with Prunus mume extracts. For this study, Dressing were blended with Prunus mume extracts to different concentrations of 0, 10, and 20%. Microbiological effects of vegetable salad used dressing added with Prunus mume extracts were assessed during production process by measuring process time, temperature, pH and Aw and determining total plate counts and coliforms. Effects of vegetable salad used dressing added with Prunus mume extracts on total plate counts and coliforms were observed during holding at 3, $25{\pm}1^{\circ}C$ for 12 hours. Dressing added with Prunus mume extracts improved the microbiological quality and showed antibacterial properties when they are added to vegetable salad.

  • This study was aimed to determine microbiological quality by adding green tea extracts to chicken meat salad. For this study, Chicken meat salad were prepared with two production method. (method 1: addition of green tea extracts to boiling phase, method 2: addition of green tea extracts to salad dressing) Microbiological effects of green tea extracts were assessed during production process by measuring process time, temperature, pH and Aw and determining total plate counts and coliforms. Effects of green tea extracts on total plate counts and coliforms were observed during holding at 3, 10, $25{\pm}1^{\circ}C$ for 12 hours. Green tea extracts improved the microbiological quality and showed antibacterial properties when they are added to chicken meat salad.

가공한 현미의 특성과 이를 첨가한 쿠키의 제조 및 품질특성

  • 현미는 단백질, 지방, 식이 섬유 및 비타민 등의 영양성분 함량이 높은 우수한 식품소재이다. 현미의 맛, 식감, 기호성을 증진하기 위해 현미를 tempering, 증숙, 건조, 볶음공정을 거쳐 가공하였고, 이를 빵보다 저장성이 우수하고 미생물적 변패가 적은 쿠키에 이용하여 맛과 영양 및 기능성을 증가하기 위한 쿠키를 제조하였다. 가공한 현미를 분말로 하여 쿠키를 제조해 본 결과 고소한 향과 맛이 떨어지고 조직감 또한 기존의 쿠키와 큰 차이를 나타내지 않아 바삭거리며 부서지는 조직감을 주고 볶은 현미의 독특한 향을 줄 수 있는 통째로의 현미를 이 용하였다. 가공한 현미의 일반 성분을 분석하였고, 밀가루에 0%, 10%, 20%, 30%, 40%, 50% 수준으로 혼합하여 반죽의 기계적 물성을 TA(Texture analyzer)를 이용하여 측정하였고, 이어서 쿠키를 제조하여 각 혼합비에 따른 쿠키의 색은 Hunter 색도계로 측정하였고, 쿠키의 퍼짐성은 Califer 를 이용하여 측정하였고 현미쿠키의 조직감은 TA로 측정하였다. 관능검사를 통해 표면색, 견고성, 부서짐성, 향, 맛, 전체적인 기호도를 조사하였다.

  • Time and temperature, pH and Aw, and microbiological evaluation were made to identify critical control points during various phases in product flow of chicken soup preparation in a university foodservice establishment. The results are summarised as follows: 1) Time and temperature data indicated that the phases of cooling after cooking, post-preparation, and holding ingredients at room temperature before assembly were critical. 2) pH and Aw values were in favorable for microbial growth. 3) Microbiological data indicated that the phases of basic ingredients. post-preparation and holding ingredients before assembly were critical. 4) Critical control points identified were; basic ingredients, cooling after cooking, post-preparation, holding before assembly and service, and assembly and service. 5) Several guidelines were suggested for the effective qualitly control program.

Sanitation Effect of Sprouts by Chlorine Water. (염소수처리 의한 새싹채소의 살균 효과)

  • This study was attempted to provide basic data for effective sanitization of sprouts. Sanitization treatments were performed by dipping four sprouts (alfalfa, broccoli, clover and red radish) into chlorine water. Microbial analyses were composed of the total plate count (TPC), coliform count, and E. coli count. All examined sprouts exhibited high levels of TPC ($10^{7}$ CFU/g) and coliform ($10^{6}$ CFU/g). E. coli was detected in broccoli and red radish sprouts in the range of $10^3{\sim}10^4$ CFU/g. Among chlorine water sanitization, the microbial reduction was largest in 100 ppm chlorine water, and its TPC and coliform counts decreased to $8.0{\times}10^5{\sim}2.7{\times}10^6$ CFU/g and $4.3{\times}10^5{\sim}4.6{\times}10^5$ CFU/g, respectively. E. coli was not detected in all sprouts that were given 100 ppm chlorine water treatment. The effective dipping time in 100 ppm chlorine water treatment was 30 min and 60 min, in which TPC were below the microbiological safety limits of ${\times}10^{6}$ CFU/g. Coliform counts were decreased to $9.1{\times}10^4{\sim}2.4{\times}10^5$ CFU/g when the sprouts were dipped for 30min, and kept the similar level after that time. These levels exceeded the microbiological safety limits of $10^{3}$ CFU/g. E. coli was not detected in samples by 100 ppm chlorine water treatment.
