  • In a trial involving 120 pigs, the effects of transport time on blood profile and meat quality in pigs were investigated. One group of 60 animals was subjected to 20 min and the others to 2 h transport time, and held in lairage for 1 h 30 min. There was not significantly different in the carcass weight, backfat thickness and carcass grade between groups. Cortisol and lactic dehydrogenase(LDH) concentrations were significantly(P〈0.05) higher in the group transported for 2 h compared with the group transported for 20 min. There was not significantly different(P〉0.05) in meat quality(pH$_1$, pH$_{u}$, drip loss, cooking loss, hardness, CIE L$^{*}$, a$^{*}$, b$^{*}$ and NPPC) and skin damage of pork carcass between groups. These results imply that the stress could be affected by transport time in transit without meat quality.

  • The carcass and meat quality of new native chicken strains (A, C, and D) being developed in the Golden Seed Project for Samgyetang were compared with a commercial native chicken (Hanhyup No. 3, H) and Baeksemi (white semi broiler, W) strains. In total, 250 male chicks were raised under the same feeding and raising conditions for 5 weeks. After slaughter, the carcass weight and percentage yield of parts from each strain were measured and the physicochemical quality traits (general composition, color values, fatty acid composition, and sensory evaluation) of breast muscles were comparatively analyzed. The carcass weight (875.10 g) of the W strain was significantly heavier than that of the other native chicken strains, while that of A strain (537.54 g) was the lowest. The percentage yield of breast meat was also higher in the W strain than in the other strains. The fat content of W strain was higher than that of the other native chicken strains. The new native chicken strains (A, C, D) had higher contents of linoleic acid (C18:2) than the H strain. The A and D strains especially showed relatively high content of arachidonic acid (C20:4), a characteristic fatty acid in native chicken meats. On the other hand, the fatty acid composition of C strain was similar to that of the W strain. This study provides important information on specific quality characteristics than can be used to select new native chicken lines for breeding program.

  • The objective of this study was to investigate factors related to carcass traits of Hanwoo. In the statistical model developed in this study, slaughterhouse, carcass year, carcass month and sex effects were used as fixed effects and carcass traits (carcass weight, marbling score, loineye muscle area, backfat thickness and meat yield index) as covariations. The grading service data for 285,515 Hanwoo, which were evaluated by Animal Products Grading Service from 2005 to 2007, were used in this study. The partial R-square values of the fixed effects and the marbling score (MS), loineye muscle area, back-fat thickness, meat yield index and carcass weight (CW) on auction prices (AP) of the carcass and carcass price (CP) of the animals were estimated. The most important estimated trait in AP was MS. However, CW is the most important estimated trait on the CP and the MS also has secondly significant effect on the CP. In conclusion, MS as well as CW should maximize the farmer profits and establish a breeding scheme for Hanwoo.

  • This study examined the effects of restricted feeding on the growth performance, carcass characteristics, and economic efficiency of finishing pigs for 27 days. A total of 24 finishing pigs (Landrace×Yorkshire×Duroc, average initial body weight of 81.52±1.11 kg) were allotted randomly to two treatments with 12 replicates (one pig per replicate). The experimental treatments were ad libitum feeding (AF), and restricted feeding (RF) with a 10% increase in offered feed than the day before if required. The results showed that the average daily feed intake (ADFI; p<0.001) of the pigs were improved in the RF treatment, but there were no changes in the average daily gain and weight gain to feed intake ratio (G:F). There were no significant differences in carcass weight and backfat thickness. In addition, the total pork price per pig was not affected by RF. Although total feed intake (TFI) and total feed intake cost (TFC) were significantly lower in the RF pigs (p<0.001), the feed cost per 1 kg weight gain (FCG) was similar regardless of the treatments. In conclusion, the RF method may decrease the feed cost due to a lower TFI and TFC.

  • This study was conducted in order to investigate the effects of supplementation diets of mulberry leaves powder on performance, carcass characteristics, blood characteristics, and meat color of chicken meat. Broiler chicks were fed diets containing 0% mulberry leaves powder (Control), 1% mulberry leaves powder (T1), 2% mulberry leaves powder (T2), and 3% mulberry leaves powder (T3) for five weeks. The weight gain, feed intake, and feed conversion were no significant difference among treatment groups. The carcass weight, carcass ratio, gizzard, cecum, heart, and abdominal fat weight were not significantly different. The liver weight significantly decreased by the supplementation of mulberry leaves powder compared to the control (p<0.05). The total cholesterol and LDL-cholesterol concentration of the control were higher than T3, but the HDL-cholesterol concentration, glucose, and albumin of the control were lower than those of the treatment groups (p<0.05). However, there were no significant difference in GPT and triglyceride concentration among treatments. In meat color, the CIE $L^*$ and $a^*$ value of treatment groups (T3) showed significantly higher value compared to the control, however, no difference in the CIE $b^*$ values was observed among treatment groups. In conclusion, these data indicate that 3% mulberry leaves powder supplementation was most effective in decreasing the total cholesterol and LDL-cholesterol as well as increasing the HDL-cholesterol, glucose, and albumin concentration.

  • This study was conducted to evaluate the effects of dietary Korean red pine bark extract as an antibiotic replacement on cecum microflora, immune functions, blood lipids, carcass characteristics, and growth performance in broiler chickens. There were four treatment groups: a control group, an antibiotic group, and two treatment groups receiving 65 and 80 ppm Korean red pine bark extract. Growth performance, carcass weight, dressing percentage, and breast and thigh muscle weight of the broiler chickens fed 80 ppm of red pine bark extract was higher than the broilers of the control group and the antibiotic group. Abdominal fat was lower in both groups of broiler chickens fed red pine bark extract, but the growth of immune organs such as the thymus, spleen, and bursa of Fabricius was significantly higher in the group that received a diet supplemented with 80 ppm red pine bark extract than in the control group and antibiotic group. Concentrations of triacylglyceride and total cholesterol were significantly lower in both groups that received red pine bark extract when compared to the control group and the antibiotic group. The concentration of serum IgG was significantly higher in the 80 ppm red pine bark extract group than in the control group and the antibiotic group. The numbers of Bifidobacterium and Lactobacillus in the cecum digesta were significantly increased, while the numbers of Escherichia coli and Salmonella were significantly reduced in the group that received 80 ppm red pine bark extract when compared to the control group and the antibiotic group. These results suggest that the a diet with 80 ppm Korean red pine bark extract as a replacement for antibiotics improve the cecum microflora, immune functions, blood lipids, carcass characteristics and growth performance of broiler chickens.

  • This study was conducted to determine the effects of dietary supplementation with conjugated linoleic acid (CLA) feeding levels (0, 0.5, 1.0, 1.5, and 2.0%) on the carcass characteristics, growth performance, serum cholesterol, and fatty acid in thigh of chicken meat. Two hundred broiler (Arbor Acre Broiler, male) were randomly assigned to five groups and were fed for five weeks and slaughtered. Thigh muscle was used for determining fatty acid composition. There was no significant difference in growth performance, such as weight gain, feed intake and feed conversion by CLA levels. Among carcass characteristics, percentage of carcass, thigh, breast, and drumstick was not influenced by the dietary CLA levels, but abdominal fat was significantly reduced with the increased CLA amount in the broilers diets (p<0.05). Higher CLA levels increased HDL-C and reduced total cholesterol and LDL-C (p<0.05). As the dietary CLA levels increased, muscular palmitic acid (saturated fatty acid) levels was increased, but the rates of oleic acid, linoleic acid, and arachidonic acid (unsaturated fatty acid) were decreased. In addition. CLA isomers were linearly increased with the increase in dietary CLA levels (p<0.05). As a conclusion, 2% of CLA feeding is possible to maximize accumulation of CLA in meat, but changes in fatty acid composition is not profitable. Therefore, 1% of CLA feeding i,j considered to be proper for accumulation of CLA and minimization of the change in fatty acid.

  • A theoretical presentation of evanescent coupling is offered with respect to the refractive indexes between a side polished optical fiber and an infinitely planar waveguide with a conductor cladding(PWGCC). The PWG is suspended at a constant distance from an unclad fiber core and attached with the perfect conductor(PEC) on one side. The behavior of the distributed coupler is examined using a coupled mode model, which takes account of the two dimensions of the waveguide configuration. The coupling and propagation of light were found to depend on both the relationship between the refractive index values of each structure and the configuration of the side polished fiber used in the PWGCC. The spreading of light in the unconfined direction of the PWGCC is described in terms of a simple geometrical interpretation of the synchromization condition that is in agreement with a previous investigation of the problem based on the coupled-mode theory(CMT). The power of the light propagation in the fiber decreased exponentially along the fiber axis as it was transferred to the PWGCC.

  • In this paper, we propose a new cross bar embedded structure for improvement of attenuation characteristics along the different lossy media. A general characterization procedure based on the extraction of the characteristic impedance and propagation constant for analyzing a single MIS(Metal-Insulator-Semiconductor) transmission line used and an analysis for a new substrate shielding MIS structure consisting of grounded crossbars at the interface between Si and Sio2 layer using the Finite-Difference Time-Domain(FDTD) technique is used. In order to reduce the substrate effects on the transmission line characteristics, a shielding structure consisting of grounded cross bar lines over time-domain signal has been examined. The extracted, distributed frequency-dependent transmission line parameters as well as the line voltages and currents, and also corresponding equivalent circuit parameters have been examined as function of frequency. It is shown that the quality factor of the transmission line can be improved without significant changes in the characteristic impedance and effective dielectric constant.
