  • To determine and improve the holding machinery for the productin of convenient food (Dosirak) making Compnay in Seoul and Kyeongkido, a survey was conducted of 16 relative companys in 1986. The majority of the holding machinery are composed to work table, sink, rice cooker and fryer. It is necessary that the machinery are reinforced like packaging machine, air cleaner, cold and refrigeration room, sanitary arrangements.

  • The molding characteristics, hardness and overall quality of the Korean style disposible food tray made from the low and medium density polystyene sheets were investigated and the results were obtained as follows. The volume difference of 8 sectional trays was 56.4% between the two materials, and that of 5 sectional trays was 41.8%. The more the sectional number of the tray, the larger the volume difference. Medium density polystylene tray had the better solid characteristics and overall acceptance than the low density polystlene tray.

  • Purpose: This study was conducted to provide the results of the epidemiological investigation for outbreak of Clostridium perfringens enteritis among students at a college in Sejong City. Methods: This investigation was performed between May 25 and May 28, 2018. The Sejong City public health authority received a complaint which was about 40 university students experienced vomiting or diarrhea. We immediately set up an epidemiological investigation team and conducted a field epidemiological investigation. Results: The overall incidence was 86 out of 153 (56.2%). The estimated risk exposure time was 12 o'clock on the previous day, and the cause was contaminated during distribution and storage of the lunch box provided for lunch on the day of the athletic competition, with 13 hours of average incubation period. The outbreak was closed on May 28, and the identified pathogen was Clostridium perfringens. Conclusions: It was proposed that food poisoning by Clostridium perfringens was likely and contaminated during group meal.

  • 여름철에 유생하는 설사의 원인의 대부분은 세균성인 것이며 이 세균성으로 인한 설사는 그 세균자체가 원인이 되는 것과 또 그 세균이 생산한 독소가 원인이 되는 것이 있다. 특히 여름에는 자연조건 즉 높은 기온과 습도가 미생물의 발육에 좋은 환경을 제공하며 겸하여 파리 등 곤충매개체가 이를 운반하는 관계상 오염된 음식물을 섭취하여 생기는 급성위장염 즉 소위 식중독이 빈번하게 일어나는 것이다. 작년만 하더라도 서울시내 일류 화식요정에서 만든 ''도시락''에 의하여 집단식중독이 생긴 사실들이 아직 우리들의 기억에 새롭거니와 세균 이외에도 이질아메바 등, 기타 원충감염으로 생기는 설사, Virus로 생기는 설사, 기타 식중독 또는 화학약제 등에 의하여 생기는 설사 등이 있는데 이를 크게 구분하여 보면 다음과 같다.

  • The primary purpose of this research paper is to study the nutrition intake status of primary school children and their physique index. Three hundred and ten children of 4th grade, 10 years old, 4 school class in Junbuk province had been selected. Calorie and nutrients were found to be below the recommended level, especially in calcium an vitamin $B_2$. Animal-protein intake averaged about 33% of total protein intake. Total calorie intake were composed of 84% from carbohydrate, 5% from fat and 11% from protein in the case of boys. The girls were 83%, 6%, 11%, respectively. The staple of lunch-boxes for boys supplied 84% of RDA in calorie, 66%, in total-protein 38%, calcium, 32%, Iron, 56%, vitamin $B_1$, 37%, vitamin $B_2$ and 63%, in niacin for girls were 82%, 52%, 28%, 37%, 39%, 37%, 51% respectively.

Microbiological Quality and Safety Assessment of Salad in Lunchbox's according to the Holding Time and Temperature - Convenience and Franchise Stores - (보관시간과 온도에 따른 판매 도시락의 샐러드 미생물 품질 평가 - 편의점과 프랜차이즈 도시락 전문점 제품 -)

  • Purpose: This study was to evaluate the microbiological quality of salads in lunchbox's based on the holding time and temperature at convenience and franchise stores. Methods: Cabbage salad and crab meat salad were targeted for microbiological quality assessment. They were tested for aerobic plate counts, coliforms, Escherichia coli, Staphylococcus aureus and Enterobacteriaceae and assessment were performed by Korean Food Standards Codex. Results: In cabbage salad at convenience franchise store's at $5^{\circ}C$, the aerobic plate counts did not exceed the Korean Food Standards Codex. For cabbage salad stored at $25^{\circ}C$, the aerobic plate counts was 5.08 log CFU/g we hours after purchase, which exceeded the Korean Food Standards Codex. In case of cabbage salad in franchise store, the E. coli and S. aureus count exceeded Korean Food Standards Codex 3 hours after purchase. Microbiological analysis did not exceed the Korean Food Standards Codex at $5^{\circ}C$ in crab meat salad in convenience store. At $25^{\circ}C$, the aerobic plate count was detected at 4.45 log CFU/g after 32 hours, coliforms, E. coli, and S. aureus did not detect, but Enterobacteriaceae was found to be 2.34 log CFU/g after 9 hours in franchise store's crab salad. Coliforms was detected at 1.18 log CFU/g after 3 hours, and S. aureus was detected at 2.04 log CFU/g after 6 hours at $25^{\circ}C$ in the franchise store. The lunchbox' salad under cold storage ($5^{\circ}C$) generally meet the Korean Food Standards Codex. Conclusion: The results indicate an urgent need to implement proper management guidelines for the production of lunchbox foods to ensure microbiological safety, and to improve the shelf life from production to consumption.

Qualitative study on home delivery meal services for the elderly (배달 도시락 수혜노인의 '도시락 밥'에 대한 질적 연구)

  • As the importance of elderly's dietary life have increased, low-income elderly's meal should be taken care by social policies. Nevertheless, there is a lack of systematic management in home-delivery meal service. This study aims to investigate the elderly's experience on home-delivered meal service, especially identifying the symbolic meaning of home-delivered meal service on elderly's dietary life. Using an in-depth interview, qualitative data was collected from five elderly participants who received home-delivered meals. Data was analyzed based on Colaizzi's 6 steps method, deriving 148 significant statements, 18 formulated meanings, and 5 themes: , , , , and . Elderly participants regarded the home delivered meal as not only a decent meal but also felt appreciated. The home-delivered meals were found to be their only meal all day; thus, they considered these meals as a means of survival. Home-delivered meals are considered as a lack of consideration for the elderly's physical condition, including their tastes, portion size, and cooking method. Also, these elderly seemed to lose their appetite due to aging and it caused the enjoyment of eating. The elderly have kept silence never expressing any opinions regarding the home delivered meals because they were offered for free. The results suggested that the home-delivered meal service should be developed with the multilateral evaluation methods to reflect the elderly's needs to improve the quality of the home-delivered meal service.
