Comparison of lsozymes and Growth Characteristics of Cultivars in Dioscorea batatas DECNE (재배마의 동위효소와 생육특성 비교)

  • This study was carried out to compare isozyme band pattern, growth characteristics and tuber yield of Dioscorea batatas to get basic information for varietal classification. It could be identify clearly by protein and esterase band pattern of leaf, petiole and stem tissue in three cultivar but with peroxidase band it was difficult to identify because of similar pattern in leaf and petiole tissue. Three cultivars has different leaf shape as Dan-ma and Jang-ma were lanceolate, Sukunea was long-heart shape in upper part of plants. In phyllotaxis, Dan-ma and Jang-ma shows alternate and opposite but Suwon 2 shows opposite in upper parts of stem. Root length shows significant difference from 9.7cm to 51cm respectively as 30cm, 51cm and 9.7cm in Dan-ma, Jang-ma and Sukunea. Tuber yield of three cultivars were 27.5M/T in Dan-ma, 22.8M/T in Jang-ma and 22.8M/T/ha in Sukunea.

Tuber Enlargement and Chemical Components of Yams (Dioscorea opposita Thunb.) (둥근마·단마의 괴경비대 및 성분특성)

  • Tuber yield and content of general component and diosgenin which is a main bioactive property were investigated in order to determine the growth characteristics of round typed yam(Dioscorea opposita L.) and the potential of artificial culture at Suwon, Korea. Tubers of round yam was initiated to form at 60 days after planting and then enlargement of tubers lasted by 160 days after planting. Compared to short typed yam(108g), tuber weight of round yam was higher(127g) on the basis of dry weight at 200 days after planting. In comparison of general component between round yam and short yam, protein of round yam(3.62%) was higher than short yam(2.10%). Water content in round yam(64.5%) was lower in short yam(79.4%), indicating a higher dry weight ratio of round yam. Hardness of round yam was 2787.6 while short yam showed about two times higher hardness(4946.9). Lightness was higher in round yam(77.4). In tuber extracts analysis, diosgenin content was respectively 3.32% in round yam and 2.61% in short yam.

Aromatic Compounds in Flower of Chinese Yam (Dioscorea batatas Decne) (마(Dioscorea batatas Decne)꽃의 방향성분 조성)

  • The study was carried out to identify compositions and recovery yield of aromatic compounds of flower in Chinese yam (Dioscorea batatas Decne). Total 26 volatile aromatic compounds were identified and peak area percentage of aliphatic alcohol in Dan-ma was higher than in Jang-ma. Major volatile aromatic compounds analyzed by GC/MS were 1,2-butyleneglycol, phenylalcohol, caproic acid, cinnamic alcohol, and palmitic acid. Recovery yield of essential oils of Dan-ma was higher than in Jang-ma as 0.983%. As a result, it was concluded that Chinese yam was worthy of cultivating as perfume and medicinal crops.

  • The study was conducted to determine the effects of an optimum irrigation time as af­fected by the different soil textures in Dioscorea batatas DECNE. Water content change was decreased fol­lowing orders, non - irrigation > July 15 > Aug. 15 > irrigation of two times (July 15 following Aug. 15). It was appeared that sandy loam texture was sharply decreased compared with the loam texture in water loss. Dan-Ma was preemergenced about 6 to 8 days without soil texture. Epiphytic amounts in both Dan-Ma and Jang-Ma were about two times increased at tubberous fomation and enlargement stages comparing non - irrigation. In tuber yield without soil texture, Jang-Ma was increased compared with Dan-Ma and tuber yield in loam soil texture was promoted. As a result, it was concluded that sandy loam texture has more compatible than loam soil texture.

Analysis of Aroma patterns of Nagaimo, Ichoimo and Tsukuneimo by the Electronic Nose (전자코에 의한 장마, 단마, 대화마의 향기패턴 분석)

  • This study was performed to analyse aroma patterns of Nagaimo, Ichoimo and Tsukuneimo by the electronic nose with 32 conducting polymer sensors. Response by the electronic nose was analysed by the principal component analysis(PCA). Sensory evaluation also for organoleptic taste and odor of Nagaimo, Ichoimo and Tsukuneimo was performed. Nagaimo was very crunchy and sweet. Tsukuneimo was roasted nutty, hard, viscid taste and sticky. Ichoimo had intensive unique yam flavor and moderate hardness between Nagaimo and Ichoimo. Intensity of Ichoimo for unique yam flavor by the electronic nose was the strongest. The quality factor(QF) of PCA for normalized pattern by thirty two sensors showed less than 2, and so aroma pattern of three yam cultivars had no difference. But when the PCA was performed for normalized pattern by eight selected sensitive sensors, the QF for Nagaimo and Tsukuneimo is 2.057. Thus aroma pattern between Nagaimo and Tsukuneimo could be distinguished.

Effects of Soil Texture on Tuber Characteristics and Yield in Dioscorea opposita Thunb (토성에 따른 마 괴경의 특성과 수량)

  • This experiment was conducted to investigate the effects of soil texture on agronomic characteristics and tuber yield in chinese yam (Dioscorea opposita Thunb). Tuber length and weight was greater and tuber shape was much better in sandy loam and loam soil than in sandy or clay loam soil. In loam and sandy loam soil, fresh tuber yield was increased by $21{\sim}27%$ in short-tuber type and 6% in long-tuber type, and large tubers yield (above 260g) was increased by $45{\sim}55%$ in short-tuber type and $20{\sim}22%$ in long-tuber type compared to those in sandy soil. There was no differences in large tuber yield at the 5% level of significance between loam and sandy loam soil. Malformation of tuber with bifurcation was extremely increased in sandy soil, and tuber diameter of long-tuber type was decreased in clay loam soil compared to those of the other soil texture.

Evaluation of Antioxidant Capacity and Antimutagen Activity of Bulbil Extracts of the Dioscorea japonica Decaisne and Dioscorea batatas Decaisne (단마와 장마 영여자의 항산화능 및 항돌연변이 활성 검정)

  • The bulbil of the $Dioscorea$ $species$ is produced, the amount of which is 2,000 tons annually, but it has been discarded without specific use. In this study the antioxidant and antimutagenicity of bulbil of the $Dioscorea$, which compared to bulbil of Danma($Dioscorea$ $japonica$ Decaisne) and Jangma($Dioscorea$ $batatas$ Decaisne), a major domestic cultivation species. The study was done by extracting bulbil of the Dioscorea methanol and the methanol extracts was re-extracted with chloroform, ethyl acetate, $n$-butanol and water. In methanol extract of Danma and Jangma, polyphenolic compounds contained 2.2 and 3.9 mg/g extract, respectively. The ethyl acetate fraction of Danma and Jangma had higher polyphenolic contents of 33.9 and 39.1 mg/g, whereas water fractions were much lower at 2.4 and 5.8 mg/g. Determination of antioxidant activity showed that the ethylacetate fraction strong DPPH radical scavenging activity and ABTS radical scavenging activity. The inhibitory effects of methanol extracts and chloroform, ethylacetate, $n$-butanol, water fraction from bulbil of Danma and Jangma on the mutagenicity in 1-NP, $AFB_1$, Trp-P-1 were investigated using $S.$ $typhimurium$ TA98. Danma and Jangma cultivars decreased the reverse mutation induced by 1-NP, $AFB_1$, Trp-P-1 in $S.$ $typhimurium$ TA98. The fraction of chloroform and ethylacetate showed strong inhibitory effects, in a dose dependant manner against the mutagenicities induced by 1-NP, $AFB_1$, Trp-P-1 in $S.$ $typhimurium$ TA98.

Studies on the browning inhibition of yam(Dioscorea aimadoimo) during hot air dehydration (단마(Dioscorea aimadoimo)의 열풍건조 시 갈변 억제 방안 연구)

  • This research was conducted to investigate the effective methods for browning inhibition on yam (Dioscorea aimadeimo) during dehydration by physical and chemical pretreatments. Moisture, crude protein, crude fiber and N-free extract contents of yam were 81.17%, 1.43%, 0.29% and 15.81%, respectively. Yams were sliced to 0.5 cm thickness and placed to single and poly layer in plastic tray, and then changes of their weights were measured during air dehydration at $50^{\circ}C,\;65^{\circ}C,\;and\;80^{\circ}C$. The dehydration time reaching to optimum moisture level for the pulverization of the yam slices were 10, 6, 3 hours(single layered) and 12, 7, 5 hours(multi layered) at the respective temperature. To inhibit browning at $80^{\circ}C$ air dehydration, water and steam blanching, microwave treatment effects were investigated on yam slices for 30 sec. and 60 sec. Steam blanching for 30 sec. was comparatively effective to inhibit browning of yam slices. Yam slices were immersed in single and combined browning inhibitor solutions and evaluated for browing degree during dehydration by the values of Hunter L, a, b and ${\Delta}E$. The most effective pretreatment to inhibit browning of yam slices was immersion In the solution containing 500 ppm of citric acid and 1000 ppm of cysteine for 1 min.
