In this study the polymerase chain reaction (PCR) combined with denaturing gradient gel electrophoresis (DGGE) was evaluated as a method permitting the rapid detection of pathogens in fresh originally grown vegetables. A universal primer (341GCf/534r) was selected for its ability to amplify the V3 region of 16S-rRNA genes in their target pathogens (Salmonella typhimurium, Pseudomonas fluorescens, Bacillus cereus, Listeria monoytogenes, Staphyloocus aureus, E. coli). The 194 bp fragments in PCR were successfully duplicated as expected. The amplified fragments of the same size from six different pathogens also showed good separation upon DGGE. The detection limit of PCR-DGGE for six pathogens in fresh-cut lettuces were over $10^{5}$ CFU/g when sampled by stomaching. However, when the sampling method was changed from stomaching to shaking, the detection limit of six pathogens in organic vegetables was shown to increase by over $10^{1}$ CFU/g, but only those of B. cereus were over $10^{3}$ CFU/g. Therefore, PCR-DGGE was shown to be a reliable method for the detection of pathogens in fresh-cut vegetables.

This paper explores the triple helix innovation system in Food Valley in the Netherlands which is considered one of the most innovative food clusters in the world. The triple helix approach has been so far little tackled in the literature on innovation system and cluster. However, tills approach can be a useful tool for understanding the dynamic characters and knowledge transfer mechanism of industrial cluster. On the basis of an in-depth case study, we argue that Food Valley has evolved through four circles of growth in the triple helix innovation system. From the mid-2000s onward, it is seen that Food Valley has been on the stabilized circle in the triple helix system of innovation. Centered upon Wageningen UR, local universities and research centers play a pivotal role in building the triple helix innovation system. To cope with radical changes in markets and technology since the late 1980s, local firms have made a great deal of effort to reinforce the university-industry partnership. On the other hand, government agencies have played a critical role for establishing institutional milieu that facilitate university-industry partnerships and local knowledge transfer and spillover.

RFID와 USN은 전 세계적으로 매년 큰 폭으로 성장하고 있는 산업이며, 정부에서도 의욕적으로 지원을 발표하였다. 또한 RFID/USN 산업에 종사하고 있는 기업의 80%가 중소기업이기 때문에 이 분야에 대한 정부의 지원은 중소기업의 활성화라는 측면에서도 매우 중요하다. 본 논문에서는 RFID/USN 최신 기술에 대해 간략하게 정리하였으며, 농림수산업 분야에서 RFID/USN 기술을 적용한 연구 사례를 충실히 소개하고 있다. 또한 해외 사례를 토대로 RFID 및 USN 산업이 나아가야할 시사점을 제공함으로써, 정부가 유비쿼터스 분야의 커다란 로드맵을 구성하는데 있어 중요한 지표가 될 수 있을 것이다.

Quercetin is one of the main flavonoids from onion. To use quercetin as a functional component for onion food products, the effects of various extraction assisting methods such as juicing methods, microwave, ultrasound and enzyme treatments on the yield of quercetin and its glucosides were investigated. For conventional solvent extraction, the highest yield of quercetin and its glycosides was achieved with 0.8 mL/g of 60% methanol at 50$^{\circ}C$ for 15 min. The juicing methods using mixer and screw showed no influence on the yield. Microwave and ultrasound treatments showed 2.14 times and 2.06 times more quercetin yields than non-treated extraction, respectively. For cellulase and viscozyme treatments, the highest yields of quercetin were achieved with 0.5 mL/g of 1% enzyme-0.1M sodium acetate (pH 5.2) buffer solution. Cellulase and viscozyme treatment improved quercetin yield 1.65 times and 2.29 times more than non-treated one, respectively.
This study was investigated on optimal conditions of the functional activities of ${\beta}$-glucan which was extracted from rice bran (RB) and rice germ (RG) using response surface methodology. The extraction temperature was varied in the $80-100^{\circ}C$, the extraction time between 2-10 min, and the ethanol concentration was in the interval of 30-70%. A central composite design was applied to investigate the effects of independent variables of extraction temperature ($X_1$), extraction time ($X_2$) and ethanol concentration ($X_3$) on dependent variables such as electron donating ability of RB ($Y_1$), electron donating ability of RG ($Y_2$), total phenolics of RB ($Y_3$), total phenolics of RG ($Y_4$), ${\beta}$-glucan contents of RB ($Y_5$) and ${\beta}$-glucan contents of RG ($Y_6$). As a result, the highest $Y_1$ level was 84.02% at $92.60^{\circ}C$, 2.75 min and 60.41% in saddle point. This value was affected by extraction temperature (P<0.05). The value of $Y_2$ was found to be the highest at $87.52^{\circ}C$, 2.23 min and 54.40% in saddle point. The highest $Y_3$ level was $98.56^{\circ}C$, 6.69 min and 40.26% in saddle point, and this extraction was greatly influenced by extraction temperature (P<0.01) and ethanol concentration (P<0.05). The value of $Y_4$ was found to be highest at $95.73^{\circ}C$, 9.19 min and 53.67% in minimum point. The value of $Y_5$ was found to be the highest at $96.23^{\circ}C$, 7.70 min and 63.69% in saddle point. The value of $Y_6$ was found to be highest at $87.82^{\circ}C$, 2.10 min and 50.03% in minimum point, and this extraction was greatly influenced by extraction time (P<0.01).
Intracellular and extracellular oxidative stress initiated by reactive oxygen species (ROS) causes skin aging, which is characterized by wrinkles and atypical pigmentation. Use of antioxidant is an effective approach to prevent symptoms related to ROS-induced aging of the skin. Therefore, the antioxidant and anti-aging effect of Castanea crenata Siebold & Zucc. extracts (LCE) was investigated in this study. The LCE markedly reduced the hydrogen peroxide-induced cell damage, intracellular ROS, and oxidative stress-induced senescence in human dermal fibroblasts (HDFs). These results indicate that LCE might have beneficial effects on oxidative stress-induced damage and thus reduce skin aging.
The efficacy of the ozonated water (0.1, 0.2, 0.4, 0.6, and 1.0 ppm) in reducing the risk of food-borne disease was investigated in this study. After inoculation of Listeria monocytogenes (ATCC 19112), Salmonella enterica subsp. enterica biovar Typhimurium (ATCC 12598), Escherichia coli O157:H7 (ATCC 43890) to lettuce, spinach, and beef, inhibition effect with different washing concentrations, time, and methods with ozonated and tap water were evaluated. As a result, there were 2.16 to 3.85 log CFU/mL reduction in different foods and 7 log CFU/mL reduction on cutting boards after watering with ozonated water. Higher than 0.2 ppm of ozonated water treatment reduced the growth of food-borne disease bacteria with increasing washing time and ozone concentration. These results suggested that the ozonated water treatment effectively improved the microbiological quality and food safety.

Sugar solutions (5%, 10%, 15% and 20%) were tested by seven sensors of Astree E-Tongue for selecting a sensor for sweetness. NMS sensor was chosen as a sensor for sweetness among two sensors (PKS and NMS sensors selected in first stage) by considering precision, linearity and accuracy. Sugar, fructose, glucose and xylitol (5%, 10% and 15%) were tested by E-tongue. The principal component analysis (PCA) result by E-Tongue with seven sensors at 5% concentration level of four sweetners was not satisfactory (Discrimination index was -0.1). On the other hand, the relative NMS sensor response values were derived as 1.08 (fructose), 0.99 (glucose) and 1.00 (xylitol) comparing to sugar. Only the E-Tongue relative glucose response 0.99 was different from 0.5~0.75 of the relative sweetness range reported as the human sensory test results. Considering the excellent precision (%RSD, 1.53~3.64%) of E-Tongue using NMS single sensor for three types of sweeteners compared to sugar in the concentration range of 5% to 15%, replacing sensory test of sweetened beverages by E-Tongue might be possible for new product development and quality control.
Propolis 에탄올 추출물(EEP)의 천연 보존제로서의 가능성을 확인하기 위하여 80% 에탄올로 추출하여 제조한 propolis추출물을 소시지에 농도별로 첨가한 후 $20^{\circ}C$에서 7일 동안 저장하면서 그 효과에 대하여 조사하였다. EEP가 농도별로 참가된 소시지의 pH는 저장 기간이 지남에 따라 대조군에 비하여 서서히 증가하는 경향이었으며, 생균수 및 대장균 군수는 저장시간이 지남에 따라 농도 의존적으로 낮게 나타나 향균활성이 있음을 나타내었다. 육제품의 선도 판단의 지표가 되는 TBA가 및 VBN 함량도 역시 EEP 첨가 농도에 비례적으로 감소하여 propolis가 식품의 천연 보존제로서의 가능성이 있음을 강하게 시사하였다. 또한 EEP의 아질산염 소거능은 저장기간이 지남에 따라 첨가 농도에 비례하여 감소하는 경향이었는데, 특히 EEP 5% 첨가 소시지가 가장 효과가 우수한 것으로 나타났다.
In accordance with the recent trend of environmentally friendly agricultural policy, product registration of agricultural chitosan among the organic materials has been displayed in various forms such as soil improving agent, crop growth, and pest control. Chitin production industry is expected to bring competitiveness by producing low-quality and low-cost chitin for agriculture, rather than high-quality and high-cost for food, medical products. Since there are various soil microorganisms that can decompose chitin and chitosan in farm soil where crops are produced, it can be applied usefully to agricultural sites suitably for crop growth and pest control using chitin and chitosan as substrates. The purpose of this study is to compare and analyze the registration status of organic materials companies using chitin and chitosan raw materials in the organic materials information system of the NAQS, and to provide an opportunity to further expand the agricultural use of domestic chitin and chitosan.
