Comparison of the Flavor Components of Barley Bran, Barley Meju and Sigumjang (보리등겨, 보리메주 및 시금장의 휘발성 향기성분 조성 비교)

  • This study was conducted to investigate difference of the flavor components of barley bran, barley meju and sigumjang. The number of flavor components identified in barely meju and sigumjang was 46, 67 and 61, respectively. Among the flavor components in sigumjang, tetramethylpyrazine was the most dominant and followed by 2-furancarboxaldehyde, ethyl palmitate, 4-ethylphenol. Among the 13 kinds of flavor components commonly identified in thest samples, butanoic acid, hexanoic acid, heptanoic acid, octanoic acid and 2-pentylfuran were the most abundant in barley bran and followed by barley meju and sigumjang. In the mean while the content of nonanoic acid, 2-furancarboxaldehyde, benzenacetaldehyde and tetramethylpyrazine were the most dominant in sigumjang followed by barley meju and barley bran.

Awareness of Zoonoses among Cattle Slaughterhouse Workers in Korea (소 도축 관련 종사자의 인수공통감염증 인지도 조사)

  • Objectives: Cattle slaughterhouse workers are known as the high risk group for the zoonoses. We surveyed the awareness of zoonoses among cattle slaughterhouse workers to suggest direction of education and public relations. Methods: We evaluated the epidemiological characteristics of zoonoses and the process of cattle slaughtering. We designed different questionnaires for the workers involved in slaughtering, the handlers of residual products, the inspectors and their assistants, and the grading testers and their assistants respectively. We visited 73 cattle slaughterhouses and 62 residual products handle houses across the country and conducted a questionnaire survey of the general characteristics and the awareness of zoonoses. The data collected was evaluated using the SPSS 17.0 statistical package. Results: The awareness rate of brucellosis, Q fever and Enterohemorrhagic Escherichia coli (EHEC) were 83.9%, 18.5%, 62.7% among cattle slaughterhouse workers. The awareness rate of zoonoses among the workers involved in slaughtering and the handlers of residual products was lower than other workers. The awareness rate of zoonoses tended to increase as the school career. In the correct awareness rate of the transmission of zoonoses, 'transmission by tick bite', 'person to person' and 'air transmission' were lower than other transmission items. The most common reason why cattle slaughterhouse workers think that it is difficult to prevent zoonoses was the ignorance of how to prevent. Conclusions: An educational program is needed for the cattle slaughterhouse workers on zoonoses especially Q fever. And publicity activities about prevention of infection are needed for high risk groups.

원유선물시장(原油先物市場)과 현물시장(現物市場)의 동태적통합(動態的統合) 및 효율성(效率性)

  • 83년 7월부터 NYMEX 선물시장에서 거래되기 시작한 원유선물은 90년대 들어 주식 채권 외환 등의 금융시장과 관련하여 크게 성장하고 있으며, 원유선물가격이 현물시장에서의 가격형성에 큰 영향을 미치고 있다. 따라서, 원유선물가격이 미래의 현물가격에 대한 최적의 예측치라고 하는 합리적기대모형(合理的期待模型)에 의거하여 원유선물 가격과 현물가격의 변화추이 및 그들 사이의 장(長) 단기(短期) 균형관계(均衡關係)(동태적통합(動態的統合))와 효율성(效率性)등을 일별(日別) NYMEX 선물유가(근월도래선물(近月到來先物)의 종가(終價))와 WTI 현물유가의 자료를 이용하여 계량분석하였다. 원유선물가격과 현물가격은 단위근(單位根)을 갖는 불안정(不安定)한 시계열이지만, 선물유가와 현물유가사이에는 공적분관계(共積分關係)(공통확률적추세(共通確率的趨勢))가 있어 장기적(長期的) 균형관계(均衡關係)가 존재하며, 또한 공시계열상관관계(共時系列相關關係)(공통안정적순환(共通安定的循環))가 있어 단기적(短期的) 균형관계(均衡關係)도 존재하는 것으로 보여진다. 그리고 선물유가는 미래의 현물유가에 대한 예측력이 있는 것으로 보여진다. 따라서, 원유선물가격이 미래의 현물가격에 대한 최적의 예측치라고 히는 합리적기대모형(合理的期待模型)과 일치하는 것으로 나타났다. 원유선물가격이 현물가격과 장(長) 단기적(短期的)으로 동태적(動態的)인 균형관계를 보이고 있으므로 정부의 합리적인 수입선다변화정책과 유가자유화에 따른 석유업계의 효율적인 운영방안의 하나로 원유선물시장의 활용이 더욱 더 필요할 것으로 생각된다.

  • The flow of remote field eddy current energy is studied at nonmagnetic coaxial tubes by using both experiments and finite element calculations based on commercial software package. The results showed that remote field eddy current energy at coaxial tubes flow along over the outer surface of external tube, not through the gap between internal and external tubes. This means that the through wall transmission characteristic of remote field eddy current testing (RFECT) is still valid at tube in tube configurations and the RFECT could be potential nondestructive technique for crack detection, spacer location and gap sizing at the coaxial CANDU fuel channel tubes.

Quality Characteristics of Gochujang Containing Dried Sea cucumber(Stichopus japonicus) Flakes (해삼플레이크를 첨가한 고추장의 품질특성)

  • The objective of this study was to determine whether sea cucumber flakes could be used in Gochujang. When the concentration of sea cucumber flakes added to Gochujang was increased from 0 to 3% or 5%, moisture content of sea cucumber flakes Gochujang was decreased from 44.13% to 5.52 or 5.58, respectively, although the difference in pH value between the 3% and 5% group was not statistically significant. Titratable acidity did not change with the addition of sea cucumber flakes. When the concentration of sea cucumber flakes added to Gochujang was increased from 0 to 3% or 5%, salinity of sea cucumber Gochujang was decreased from 8.83% to 7.92% or 7.42%, respectively. Amino-type nitrogen content was increased with the addition of sea cucumber flakes. However, the increase was not statistically significant. With increasing concentration of sea cucumber flakes added to Gochujang, color value a* was decreased from 13.82 to 12.25 and 11.14, respectively. Sensory results showed that color, flavor, test, and overall acceptance of Gochujang were all improved after the addition of sea cucumber flakes. There was no significance in color, flavor, test, or overall acceptance between the 3% and the 5% concentration groups of sea cucumber Gochujang.

  • In this study, combustion fields of the end-burning hybrid combustor with tangential oxidizer injectors are examined. Momentum ratio of oxidizer is used as a main parameter to analyse the combustion efficiency with temperature, pressure, swirl velocity and mixture fraction field. It was found that as momentum ratio decreases the overall combustion efficiency is enhanced with the pressure field being insensitive to momentum ratio keeping quasi-uniform distribution. Irrespective to the momentum ratio, annular hot region commonly occurred in the upper combustion chamber where this phenomenon was left for a future improvement to be followed.

  • The changes in the blood flow in the peripheral vascular system under strong pulsed magnetic fields (pMF) were studied by digital infrared thermal imaging (DITI). After pMF stimulus temperatures in stimulated area were commonly increased in both groups of age and gender. In order to reduce heat generated from coil in pMF stimulus system plastic moldings were fabricated, so that certain distance was kept between stimulus system and the skin and to prevent direct contact to the skin. It is believed that skin temperature is increased by internal electromagnetic energy stimulated the peripheral vascular system by non-contact method.

  • 본 연구는 TV 화질 설정치를 조절하여 제시된 실제 TV 화질에 대한 감성 평가를 실시하여, TV 화질에 대한 심리적 차원이 어떻게 구성되어 있는지를 알아보고, 또한 TV 최적 화질을 결정하는 감성요인을 규명하기 위해 수행되었다. 피험자들은 다섯가지 TV 화질 변인 (밝기, 명암, 선명도, 색상, 색농도) 각각을 각각 네 수준으로 조절하여 제시하는 네 종류의 자극 (인물, 실내, 정물, 풍경)을 본 후, 각 화질에 대한 감성을 평가하였다. 그 결과 TV 화질에 대한 감성 차원은 "깔끔함"과 "화려함" 두 주된 요인으로 구분되었다. 그리고 가장 만족스러운 TV 화질을 결정하는 감성 요인으로는 "자연스럽다", "침울하다-산뜻하다", "거칠다-매끄럽다" 순으로 나타났다. 네 자극중에서 TV 최적 화질을 결정하는 공통적인 요인은 "자연스럽다"였다.로 나타났다. 네 자극중에서 TV 최적 화질을 결정하는 공통적인 요인은 "자연스럽다"였다.다"였다.t;였다.

Novelty Seeking, Fashion Innovative Behavior and Personal Influence: What Gender Tells (진기함추구성향(novelty seeking)이 패션혁신행동과 대인영향력에 미치는 영향-성별에 따른 차이(gender difference)분석)

  • 진기함추구성향 (novelty seeking)이란 새롭고 다양한 경험을 추구하는 소비자의 욕구로서, 혁신행동의 인지적 근본으로 간주되기도 한다. 본 연구는 소비자의 진기함추구성향, 패션혁신행동, 그리고 대인영향력간의 관계를 조사하고, 이러한 관계가 성별(gender)에 따라 차이가 있는지 조사하였다. 대학생집단을 표본으로 한 설문지조사를 통해 자료가 수집되었으며 , 539장의 응답자가 분석되었다. 여자대학생이 모든 변인(진기함추구, 패션혁신행동, 대인영향력, 의복흥미, 정보추구)에 있어 남자대학생보다 높은 경향을 나타냈으나, 변인들간의 관계에 있어서는 뚜렷한 성차가 보이지 않았다. 정보추구행동이 패션혁신행동에 영향을 주는 공통변인으로, 의복흥미, 정보추구활동, 패션혁신행동이 대인영향력에 영향을 주는 공통변인들로 나타났으나 진기함추구성향은 패션혁신 행동과 대인영향력에 직접적인 영향을 미치지 않는 것으로 나타났다. 즉, 새로움과 다양함을 시도하려는 성향/의도는 채택이라는 실질적인 행동을 수반하는 패션혁신행동을 예측하는데는 충분하지 않은 것으로 보인다.
