Effect of Wood Charcoal and Pyroligneous Acid on Soil Microbiology and Growth of Red Pepper (탄화물이 토양미생물 및 고추 생육에 미치는 영향)

  • As a part of agricultural utilization of charcoal and pyroligneous acid, the effect of wood carbonization products on the growth of red pepper and soil microorganisms was investigated. The treatment of charcoal and pyroligneous acid provided good growth conditions to microorganisms through neutralizing soil acidity and improving the physicochemical properties of soil. Therefore the density of useful microorganism in the soil has been increased. In the growth of red pepper, the length, diameter, and the fruit numbers of red pepper have been increased by treating with wood carbonization products. It was especially shown that yield has increased about 50% in the fruit number, by treating charcoal 1kg, 1000 time-diluted solution of pyroligneous acid and bacteria, compared with the control. It was estimated that increasing the length of seedling and the diameter of red pepper stem contributed to the resistance against the prerequisites of various environmental changes in open field. Therefore, the final yield would be increased. In the antagonism experiment of red pepper mold (Colletotrichum gloeosporioides), the mold became extinct in the 2- and 10-time diluted solution of pyroligneous acid, compared with the control. On the other hand, their growth speed was delayed in the 100- and 1000 time-diluted solution.

Effects of Red Pepper Powder Addition Times on Ethanol Production from Apple Gochujang Mash (고춧가루 첨가시기를 달리한 사과고추장혼합물의 에탄올 생성)

  • Fermentation patterns of apple Gochujang mash prepared with different addition times of red pepper powder were investigated. Red pepper powder was added into Gochujang mash before and after fermentation of the mash. In the apple Gochujang mash without red pepper powder, viable yeast cell counts of Zygosaccharomyces rouxii Y-80 increased to 6.5 log CFU/g shortly after five days of fermentation, and ethanol concentration reached its maximum value (3.8% of the total volume) after 15 days of fermentation. On the other hand, in apple Gochujang mash prepared by the initial addition of red pepper powder before fermentation, viable yeast cell counts increased to 7 log CFU/g after 20 days of fermentation, and ethanol concentration reached 1.3% after 25 days of fermentation. Yeast growth and ethanol production were stimulated in the Gochujang mash without red pepper powder. Sensory evaluation scores were similar in the apple Gochujang regardless of addition time of red pepper powder.

Determination of Economic Control Thresholds for Bacterial Spot on Red Pepper Caused by Xanthomonas campestris pv. vesicatoria (고추 세균점무늬병 발생에 따른 수량 변화와 경제적 방제수준 설정)

  • This study was carried out to develop the economic thresholds for the control of bacterial spot of red pepper. The correlation between diseased leaf rate and yield in field was Y=-0.724X+281.58, $R^2=0.78$, $r=-0.88^{**}$. The correlation between diseased leaf rate and yield loss in field was Y=0.813X+15.95, $R^2=0.78$, $r=0.88^*$.We found that control thresholds was below 30.3% diseased leaves rate per plant in field. The economic control thresholds for bacterial spot of red pepper was below 16.3%.

Effect of Storage Conditions on the Chemical Characteristics of Traditional Kochujang (저장조건에 따른 전통고추장의 성분 특성 변화)

  • Effect of anti-microbial agents, such as alcohol, garlic, chitosan, K-sorbate, mustard, or pasteurization on the quality of traditional kochujang was investigated during storage at $30^{\circ}C$ for 24 weeks. The pH of kochujang decreased during storage and titratable acidity changed little in the group of mustard and garlic addition. Reducing sugar increased during storage, with higher values for K-sorbate of alcohol added groups than the other groups. Alcohol contents increased during storage with higher values in control or chitosan added group. Amino nitrogen contents of kochujang decreased gradually during storage and were lower in control or chitosan added group. Ammonia nitrogen contents were lower in alcohol, garlic, K-sorbate or mustard added kochujang. The content of total free amino acid increased slightly during storage and were higher in pasteurized, garlic or alcohol added kochujang. After 24 weeks of storage, the results of sensory evaluation showed K-sorbate, garlic or alcohol added kochujang were more acceptable than control in the sense of taste.

  • One of the most important vegetables consumed in Korea, chili peppers (Capsicum annuum) are widely cultivated around the world. Chili peppers have been severely damaged by anthracnose during their growth, so it is important to study prevention and resistance varieties. K1 anthracnose was inoculated against four cultivar of chili peppers that are resistant to anthracnose and one cultivar that is sensitive. The area of the disease that appeared over time was photographed and quantified through the program was analyzed. Through the ratio of the area of chili pepper fruit and the area of the bottle, the sensitive variety An-S showed weak reactions to anthracnose with about 40%, the resistant variety An-12R (23%), An-Tan (21%), and An-9R (19%), and PBC81 showed a strong response to anthracnose with about 11%. These quantitative value can be used as a basis for comparison in conducting resistance studies for new varieties.

  • To confirm the factors concerning color changes of traditional kochujang, heating, U.V. and $N_2$ gas substitution treatment were conducted on duk(rice cake) kochujang and shikhae(malt digested syrup) kochujang. The value of L, a and b value by Hunter of each kochujang were gradually decreased during fermentation and ${\delta}E$ increased. The ${\delta}E$ value of duk kochujang treated by U.V. was higher than those of the other treatments and non heated shikhae kochujang showed higher ${\delta}E$ value. The main cause of color change by factor analysis on various factors of duk kochujang and shikhae kochujang were light, and light and heat respectively. The acetone and water extracted pigments had maximum absorbance at 450-470 nm and 200-205 nm respectively.

  • The essential factor for house cultivation is water management. Water requirement of crop is the most important for the water management. The water requirement of crop is different according to the area as well as climate condition and growth stage. However, the measurement of PET (Potential Evapo-Transpiration) and crop coefficient (Kc) is very difficult especially in house cultivation. Therefore, the PET and Kc of red pepper are estimated based on the lysimeter experiments carried out by the RDA for 11 years about the ratio of house cultivation to wild cultivation. Periodic PET, mean water requirement (MWR) and accumulated water requirement (AWR) of red pepper cultivated in house are evaluated.

Changes in β-Carotene, Vitamin E, and Folate Compositions and Retention Rates of Pepper and Paprika by Color and Cooking Method (고추와 파프리카의 색과 조리방법의 차이에 따른 베타카로틴, 비타민 E, 엽산의 함량과 잔존율)

  • ${\beta}-Carotene$, vitamin E, and folate contents according to color and species of Capsicum annuum were investigated. In addition, four C. annuum species were cooked by using different methods (boiling, pan-cooking, pan-frying, deep-frying, steaming, roasting, and microwaving), and retention rates of ${\beta}-Carotene$, vitamin E, and folate affected by color and species were evaluated. Weight loss was observed in all paprika and pepper species using all cooking methods. ${\beta}-Carotene$ and folate contents of C. annuum samples were significantly different by color, species, and cooking method (P<0.05), whereas vitamin E contents were not significantly affected by species. ${\beta}-Carotene$, vitamin E, and folate contents (mg/100 g) of raw C. annuum showed ranges of 95.4 (green pepper)~2,441.1 (red pepper), 0.7 (green paprika)~4.2 (red paprika), and 6.2 (green pepper)~148.7 (red pepper). As a result, the highest ${\beta}-Carotene$, vitamin E, and folate contents were detected in deep fried red pepper, roasted red pepper, and boiled red pepper, respectively, among the cooked samples. Retention rates of C. annuum varied by cooking method, resulting in ranges of 77.3% (boiled red pepper)~356.4% (roasted green pepper) for ${\beta}-Carotene$, 2.0% (microwaved red pepper)~789.3% (deep-fried green paprika) for vitamin E, and 20.9% (microwaved red pepper)~445.1% (steamed green pepper) for folate. Over 75% retention rates were observed for ${\beta}-Carotene$, vitamin E, and folate in all samples except for red pepper. However, in red pepper, vitamin E and folate retentions were remarkably lowered by deep frying and micro-waving, resulting in rates of 2.0~32.1%. This study provides information on effective cooking methods for vitamin retention in C. annuum depending on color and species.

  • This study was conducted to investigate the effects of temperature and light conditions on the vigor and growth responses of red pepper(Capsicum annuum L.) seedlings in the nonheated plastic houses with triple and quadruple coverings during winter. The results obtained were as follows ; 1. The growth in terms of plant height, number of leaves, leaf area and dry weight of each organ was reduced up to 50% in the triple coverings compared to quadruple ones. The greatest difference between the triple coverings and quadruple ones was the leaf area, showing two to five times larger in the quadruple ones. Therefore, the differences of the early environmental conditions during raising seedling stage was well reflected. 2. The leaf expansion in the early stage of seedling was delayed in the triple coverings and subsequently crop growth rate(CGR) significantly reduced. The specific leaf area (SLA) in the triple coverings was less than quadruple ones. The net assimilation rate (NAR) was increased in the early stage of seedlings and then reduced in the quadruple coverings. In triple ones, however, the great reduction showed at six weeks after sowing and then increased sharply. 3. The linear relationship among leaf area, total dry weight and leaf dry weight was observed in the all experimental areas, while between leaf area and crop growth rate only in the quadruple coverings, and between leaf area and net assimilation rate in both triple and quadruple ones. 4. The dry matter partitioned to the leaf increased up to six weeks after sowing in the triple coverings but reduced in the stem and root. However, the adverse results were obtained in the quadruple ones. 5. In the triple coverings, the number of branches showed the exponential increment while fruit weight showed linear increment in both triple and quadruple ones. Higher yield was obtained in the quadruple ones. 6. The shoot dry weight among the characteristics of seedlings was greatly contributed to the yield of red pepper after transplanting. Accordingly, one of the decisive criterion for good quality of red pepper seedlings was determined by the highest correlation between shoot dry weight of growing plant and fruit yield of pepper plant.

Effect of Red Pepper Seeds Powder on Antioxidative System and Oxidative Damage in Rats Fed High-Fat.High-Cholesterol Diet (고추씨가 고지방.고콜레스테롤 식이 흰쥐의 항산화계 및 산화적 손상에 미치는 영향)

  • The purpose of the present study was to effect of red pepper seeds powder on antioxidative defense system and oxidative damage in rats fed high fat high cholesterol diet. Rats were divided into five experimental groups which are composed of normal diet group, high fat high cholesterol diet group, high fat high cholesterol diet with 5% red pepper seeds powder supplemented group (SA group), high fat high cholesterol diet with 10% red pepper seeds powder supplemented group (SB group), and high fat.high cholesterol diet with 15% red pepper seeds powder supplemented group (SC group). Supplementation of red seed pepper groups (SA, SB, and SC groups) resulted in increased activities of hepatic glutathione peroxidase and superoxide dismutase. However, there was no significant difference in the activity of hepatic catalase among all experimental groups. Hepatic superoxide radical contents in microsome and mitochondria were significantly reduced in red pepper seeds powder supplemented groups. Hepatic hydrogen peroxide contents in mitochondria were significantly reduced 15% red pepper seeds powder supplemented group. Hepatic carbonyl values in microsome were significantly reduced in 10% and 15% red pepper seeds powder supplemented groups. Thiobarbituric acid reaction substance (TBARS) values in liver and plasma were reduced in red pepper seeds powder supplemented groups. These result suggest that red pepper seeds powder may reduce oxidative damage by the activation of antioxidative defense system in rats high fat.high cholesterol diets.
