Analysis of Acorn Production of Quercus spp. in Mt. Jiri National Park (지리산국립공원 참나무류의 결실량에 대한 연구)

  • Acorn production of some oak species from 2008 to 2010 in Mt. Jiri national park(Pia, Bitjeom, Jangdang, Baemsa, Hansin, and Chilsun) was measured and compared among study area, altitude and aspect because acorns are an important wildlife food resources. Acorns were produced the most in Jangdang and Bitjeom area at year of good fruiting, and those of Bitjeom and Hansin area were produced the most at bad fruiting year. In terms of altitudinal characteristics on acorn production, acorn production in 1000 and 900 m was the most at good fruiting year, and 800 and 900 m at bad fruiting year showed the most production of acorn. Throughout the study period, acorn production on southern slopes was larger than that of northern slopes.

Studies on the Content of Triacylglycerol Species, Tocopherols, and Phytosterols from the Selected Nuts (견과류의 지방산, 트리아실글리세롤, 토코페롤 및 파이토스테롤의 조성 연구)

  • Including crude fat content, triacylglycerol species, tocopherols and phytosterols were analyzed in 8 kinds of nuts (sunflower seed, cashew nut, walnut, pistachio, pumpkin seed, ginkgo, hazel nut and pecan). The extracted crude fats showed 0.63~39.60 wt%, among which hazel nut showed the highest amount of fat content. Oleic acid (C18:1) was major fatty acids at sn-2 position in cashew nut, pistachio, hazel nut, and pecan while sunflower seed, walnut, and pumpkin seed showed linoleic acid (C18:2) as a major fatty acids at sn-2 position. Especially, ginkgo contained 10.72 wt% of vaccenic acid (C18:1-n7) at sn-2 position. The TAG species of 8 kinds of nuts were analyzed by reverse-phase HPLC, from which PN value ranged 40~52. Among the analyzed nuts, higher content of tocopherols were observed in ginkgo (48.57 mg/100 g), sunflower seed (38.35 mg/100 g), and pumpkin seed(31.43 mg/100 g). Total phytosterols were observed with the range of 88.60~947.20 mg/100 g.

Quality Characteristics of Basil Pesto added with Various Nuts during Storage (견과류를 달리하여 제조한 바질 페스토의 저장 중의 품질특성)

  • Pesto were prepared with five different nuts including pine nut, sunflower seed, pumpkin seed, walnut and almond to examine the antioxidant properties(total polyphenols, total flavonoids, electron donating ability) and sensory test(attribute difference, acceptance). Pesto were measured based on color value, pH, viscosity, total cell numbers for 0, 5, 10, 15 and 20 days at $4^{\circ}C$. The higher total phenol and total flavonoid content of pesto added with various nuts was higher antioxidant capacity. Basil pesto added with sunflower seeds and walnuts were considered to be more functional more than pine nuts addition. The attribute difference test results was the color intensity, nut taste, bitter taste, coarseness, oily taste, thickness were evaluated significant difference kinds of nuts. Gloss, basil flavor, nuts flavor, basil taste were not evaluated significant difference in kind of nuts. The preference test results reveal that the appearance, taste, texture and overall preference level was the highest in PNP(pinenut pesto) and SSP(sunflower seed). L value, pH, decrease while a value, b value and viscosity increased as kind of nuts in during storage. Total cell number increased and then decreased a little at a certain point. When prepared pesto, SSP(sunflower seed) was the highest in antioxidant property, and change of color value, pH, viscosity, total cell number were the lowest. In addition to the use of pine nuts, sunflower seeds have been identified are possible.
