Effects of Freeze-Drying Time on Quality of Freeze-Dried Kimchi (동결건조 시간이 동결건조김치의 품질에 미치는 영향)

  • Effects of freeze-drying time on the microbiological, sensory, and other characteristics of freeze-dried kimchi were investigated to optimize freeze-drying time for kimchi. Quality attributes of freeze-dried kimchi, including number of lactic acid bacteria (LAB), pH, sensory properties, brittleness, rehydration property, moisture content, and microstructure of Chinese cabbage were observed for 24, 48 and 72 h, respectively. Number of LAB and pH of the kimchi freeze-dried for 24 h were significantly changed in comparison with those of the kimchi not freeze-dried. However, further freeze-drying did not change markedly number of LAB and pH. Overall acceptability of the sample freeze-dried for 48 of 72 h was better than that of the sample freeze-dried for 24 h. As freeze-drying time increased, brittleness of the dried sample increased, and rehydration property was improved while dried weight and moisture content of the sample decreased. In conclusion, the sample freeze-dried for 48 h was better than the sample freeze-dried for 24 or 72 h, based on sensory properties and other characteristics.

Development of A Drying Unit of High Moisture Food Wastes (고수분 음식물 건조장치 개발)

  • 2012년 국내 총 폐기물(지정폐기물 제외) 발생량은 382,009 톤/일 으로 이 중 12.8%를 차지하는 생활폐기물 중 음식물 채소류폐기물 발생량은 13,209 톤/일 으로 이중 음식물 폐기물은 탈수 후 사료 제조 또는 매립 처리되고 있다. 본 연구에서는 고수분 음식물 쓰레기를 재활용한 고형연료 제조에 필요한 건조장치를 개발하고 실험을 통해 그 성능을 확인하고자 하였다. 본 연구를 위해 건조용량 500 kg/hr인 실험실용 열분해장치를 제작하였다. 회사 구내식당 및 창원시에서 수거된 음식물 쓰레기를 실험 원료로 사용하였다. 건조공기 투입 온도에 따른 음식물 쓰레기의 건조 특성을 파악하였다. 음식물 쓰레기 건조실험 결과, 총 건조소요시간은 약 20시간 정도로 나타났으며, 건조속도는 약 2.90 %/hr로 나타났다. 건조시간은 연구 목표치인 1회당 15시간보다 5시간 소요된 것으로 나타났으나 투입 및 배출에 소요되는 예열 및 냉각 시간을 제외하면 약 16시간으로 연구목표치에 근접한 것으로 판단된다. 투입건조공기 온도에 따른 건조시간은 큰 차이를 보이지 않았으며, 특히 $155^{\circ}C$에서 21시간으로 나타나 향후 폐열 활용 시 $200^{\circ}C$ 이상의 고온의 공기를 사용하지 않아도 건조작업이 가능함을 확인하였다. 건조시간 단축을 위해서는 투입공기의 온도보다는 투입공기와 음식물 쓰레기의 접촉 면적이 큰 영향을 끼치는 것으로 판단된다.

  • The appropriate drying method in medicinal compounds and color of peony root was that predrying at briquet fire $(40{\sim}60^{\circ}C)$ for 6 hours or more, and then hot air drying at $40^{\circ}C$ during 60 hours. But this method needs too much time in drying. And the method that drying at $40^{\sim}C$ with hot air drying has bad result in color. In case Peony was seld by cutting product, before cutting, the Peony root was retted for 30 min. and sealed for 12 hrs. is good for drying time, Peoniflorin content and commodity.

Microwave Vacuum Drying of Germinated Brown Rice as a Potential Raw Material for Enzyme Food (잠재적 효소식품 원료로서 발아현미의 마이크로파 진공건조)

  • This work was to study the potential use of germinated and microwave-vacuum-dried brown rite as a raw material for enzyme food. Brown rice was soaked in water at $15^{\circ}C$ for 2 days and then germinated at $25^{\circ}C$ for 4 days. The germin ated brown rice was then dried by different drying methods: microwave vacuum drying 1(drying only), microwave vacuum drying 2 $(drying{\rightarrow}crushing{\rightarrow}drying)$, hot air drying, vacuum drying and freeze drying. Each drier except freeze drier was set to maintain the sample temperature to be $60^{\circ}C$. During microwave vacuum drying 1 and 2 the sample reached $60^{\circ}C$ much faster (5 min) and was dried much faster (2 to 3 hrs for microwave vacuum drying 1 and 2 than the other drying methods. The initial drying rate of microwave vacuum drying was ten times faster than that of hot air drying. The microwave vacuum drying produced a dry sample of the highly retained enzymic activity, followed by freeze drying, vacuum drying and hot air drying.

Changes of Salmon Meat Texture During Semi-Drying Process (조미 반건조 제품 가공 공정에 따른 연어육 Texture의 변화)

  • To obtain basic data for processing semi-dried salmon meat product, the results that were measured the textural properties of salmon meat during salting, sugaring and drying process followed. Drying time and temperature were longer, the moisture amount of salmon meat were reduced. Hardness of salmon meat was direct proportion to shear stress, but hardness was inverse proportion to cohesiveness during drying process. After sugaring and salting salmon meat, drying time was longer, hardness and shear stress of salmon meat were increased. The sensory evaluation of the textures of sugaring salmon meat dried for 3 hrs showed slightly good. In the changes of texture of salmon meat during steaming hardness and shear stress of salmon meat dried for 4 hrs were higher than that dried for 10 hrs. And steaming time was longer, hardness of salmon meat dried for 4 hrs was decreased and cohesiveness was not changed.

  • In this study, salting conditions and dehydration methods were investigated. Salting time, concentration and temperature could be considered to variables in salting conditions. The diffused salt amounts to beef jerky depending on time are sharply increased in two hours. This result is caused by the difference decrease of concentration gradient between bulk solution and beef jerky. The increase of salting concentration and temperature resulted also in the increase of a diffused salt. The deeper bulk concentration made diffusion to beef easily with the bigger driving force and the movement of molecules is more active according to temperature increase. Dehydration is conducted with various methods such as natural drying, cold air drying and hot air drying. Comparing with color and texture among the drying methods, cold air drying showed superior quality in color and texture. Beef jerky by cold air drying colored more reddish than other drying methods and good cutting shear stress and tensile strength. In case of hardness and chewiness, hot air drying method showed the highest value, which means the worst texture.

Development of Decompressed Dryer for Mushroom (버섯의 감압건조기 개발)

  • 본 연구에서는 버섯의 건조시간을 줄여 건조 후 버섯의 품질을 향상시키기 위하여 버섯의 감압건조기를 개발하였으며 연구 결과는 다음과 같다. 가. 버섯의 감압건조기의 시작기를 제작하였고, 시작기의 구조는 건조실, 감압블로워, 흡ㆍ배기구 솔레노이드 밸브, 제습장치, 송풍기, 전기히터로 구성되어 있으며, 건조실의 내부 압력이 표준대기압-900hPa, 열풍온도는 상온에서 5$0^{\circ}C$까지 조절할 수 있도록 제작하였다. 나. 시작기를 이용하여 표고버섯을 대상으로 건조특성시험을 실시한 결과, 열풍온도 5$0^{\circ}C$, 건조실 내부압력 900-940hPa에서 건조시간은 11.5h으로 대기압과 비교하여 6.5h 단축되는 것으로 나타났다. 또한, 건조 전ㆍ후의 색차, 수축률, 복원률의 품위가 우수한 것으로 나타났으며 F-test 유의성 검증 결과, 5%의 유의수준에서 갓주름의 색차, 갓직경의 수축률, 복원률에서 유의차가 있는 것으로 나타났다. 다. 열풍온도 5$0^{\circ}C$, 건조실 내부압력 900-940hPa로 표고버섯과 아가리쿠스에 대하여 건조성능시험을 실시한 결과, 표고버섯의 경우 건조시간은 13h으로 열풍식 농산물 건조기와 비교하여 건조시간이 4.5h 단축되는 것으로 나타났으며, 아가리쿠스의 경우 건조시간이 17.5h로 나타났다. 라. 성능시험 결과, 시작기가 열풍식 농산물건조기와 비교하여 건감률, 색택, 수축률, 복원률 등의 품위가 전반적으로 우수한 것으로 나타났다. 마. 시작기의 건조비용을 분석한 결과, 건조시간은 단축되었지만 시설투자비가 높아 건조비용이 표고버섯의 경우 2,461원/kg으로 열풍식 농산물건조기 보다 13% 높은 것으로 나타났지만, 추후 고품질 건조버섯 생산을 위한 기초자료로 활용이 가능할 것으로 판단된다.라갈수록 낮은 온도분포를 나타내고 있는 것은 상부에는 외부공기가 유입되면서 온도가 떨어지는 반면 하부에는 외부공기 유입이 적기 때문으로 사료된다. 또한 열풍실의 길이방향 위치별 온도 분포에서도 같은 현상으로 나타났고, 버너쪽과 송풍기쪽의 온도편차는 나타나지 않아 균일 건조를 기대할 수 있다. 마. 열풍온도를 45$^{\circ}C$로 설정하고 조사거리와 방사체 길이를 각각 119, 1,470mm로 하여 벼의 건조성능시험을 열풍건조기(대비구)와 비교시험 결과 시험구에서 건감률, 건조소요에너지가 각각 0.58%(w.b.), 470kcal/kg - water로 대비구보다 각각 건감율은 23% 높았고, 건조소요에너지는 2%의 절감되었다. 바. 건조기에서 발생되는 소음은 버너쪽 근처에서는 대비구 94.12㏈의 87%에 불과하였으나, 거리가 멀어질수록 차이는 크지 않았다. 이것은 버너에서 멀어질수록 외부적인 요인이 소음에 영향을 미쳤기 때문인 것으로 생각된다. 사. 시작기와 대비구간의 경제성에서 시작기의 구입가격이 20% 비싸기 때문에 시간당 고정비가 높았으나, 건조성능이 우수하여 건조비용이 69,350원/톤으로 대비구보다 14% 절감되는 것으로 나타났다.작용하는 것으로 사료된다.된다.정량 분석한 결과이다. 시편의 조성은 33.6 at% U, 66.4 at% O의 결과를 얻었다. 산화물 핵연료의 표면 관찰 및 정량 분석 시험시 시편 표면을 전도성 물질로 증착시키지 않고, Silver Paint 에 시편을 접착하는 방법으로도 만족한 시험 결과를 얻을 수 있었다.째, 회복기 중에 일어나는 입자들의 유입은 자기폭풍의 지속시간을 연장시키는 경향을 보이며 큰 자기폭풍일수록 현저했다. 주상에서 관측된 이러한 특성은 서브스톰 확장기 활동이 자기폭풍의 발달과 밀접한 관계가 있음을 시사한다.se that were all

  • 본 연구는 농산물을 건조할 때 배풍구로 버려지는 열을 회수하여 건조열원으로 재이용할 수 있는 배풍열 회수장치를 개발하여 연료절감 및 열회수장치의 성능을 분석한 연구 결과 다음과 같은 결론을 얻었다. 가. 농산물건조기의 열수지를 분석한 결과 투입열량을 100%로 하였을 경우, 배기열은 13.2%, 배풍역량 77.7%, 관류열량은 9.1%로 나타났다. 나. 고추를 건조시 배풍구입구온도가 55-6$0^{\circ}C$일 때 배풍구 출구온도 41-43$^{\circ}C$, 일때 흡입구 입구온도는 25-28$^{\circ}C$, 흡입구 출구온도는 41-43$^{\circ}C$로 나타나 건조실로 41-43$^{\circ}C$의 높은 온도를 투입할 수 있었다. 다. 배풍열 량이 단위 시간당 4700kca1에서 6000kca1로 증가할 때, 흡입 열량은 2200kca1에서 3000kca1로 나타났다. 라. 고추의 초기함수율이 80%에서 15%까지 떨어지는데 관행건조는 약 27시간이 경과했으며, 배풍연회수건조를 할 경우는 약 24시간이 경과했으며 그 결과 배풍열 회수건조가 약 3시간정도 소요시간이 단축되었음을 알 수 있었음. 마. 배풍열 회수장치를 사용하여 농산물건조기 투입량의 47%, 배풍열량의 64%의 열량을 회수할 수 있었다. 바. 배풍열 회수 농산물건조기 성능시험 결과 고추 100kg 건조시 연료소모량은 43%, 건조 소요비용은 21% 감소시킬 수 있었다.

Effect of Combined Osmotic Dehydration and Hot-air Drying on the Quality of Dried Apple Products (삼투건조와 열풍건조의 조합이 사과 건조제품의 품질에 미치는 영향)

  • This study was conducted to investigate the effects of combined osmotic dehydration and hot-air drying on the quality of dried apple products. Apple cylinders were steeped in 30% and 50% sucrose solutions at different steeping times. During the osmotic dehydration, as the concentration of the sucrose solution and steeping time increased, weight reduction and water loss increased, and the solid gain showed similar results. Osmotic dehydration in the sucrose solutions was followed by hot-air drying at 50 and $70^{\circ}C$. The experimental data were fitted successfully using the modified Page model. At the drying temperature of $50^{\circ}C$, the drying time increased from 4.15 hr for the control to 5.78 hr and 6.42 hr for the 30 and 50% sucrose solution treatments, respectively. Similar results were shown at the $70^{\circ}C$ drying temperature. The k and n values of the apple cylinders decreased by osmotic dehydration, and the k and n of the apple cylinders steeped in the 50% sucrose solution were lower than those of the samples steeped in the 30% sucrose solution. The qualities of the dried apple products were compared to samples that did not undergo osmotic dehydration. The shrinkage and rehydration capacity of the apple products decreased via osmotic dehydration, and decreased as the concentration of the sucrose solution increased. The compressibility ratios of the apple products to raw apple cylinders increased by osmotic dehydration, and increased as the concentration of sucrose solution increased. The sensory evaluation results for the apple products rehydrated in yoghurt indicate that osmotic dehydration greatly enhances the palatability of apple products in terms of appearance, taste, and texture.

Study on the Drying Method of Velvet Antler using Microwave Oven (전자레인지를 이용한 녹용의 건조방법)

  • Drying process is very important for commercialization of velvet antlers. So far, artificial drying has mostly depended on experience of farmers resulting in low efficiency of drying, deterioration during drying, and contamination by dust and bacteria. Various drying techniques for high-quality production have currently been commercialized in some developed countries, and one of them is a drying technique using microwave. In this study, application of the technique using an electronic (microwave) oven for drying of velvet antler was investigated. The results of this study are as follows. 1. It was found that the drying period was significantly affected by cornification of velvet antlers. Accordingly, it can be assumed that the velvet antlers should partly be sliced to save drying period and required drying energy. 2. It was also found that the drying speed was changeable according to tempering period and even with same drying period. The tempering period should be controlled according to processing rate. 3. The results indicated that a repeated drying of 2-min drying and 3-min tempering is the most effective when a microwave oven was used. 4. The results also showed that the drying technique using microwave of electronic oven can be effectively used for drying of velvet antlers. 5. Only drying and tempering periods were examined in this study, however, ingredient change of deer antler after drying is necessary to be investigated in the future.
