Lipid Composition and Differences in Crude Fat Contents in Wheat Flour and Dry Noodles according to Determination Methods (밀가루 및 건면의 지방질 조성과 측정 방법에 따른 조지방 함량 차이)

  • Five types of determination methods including the Soxhlet method as well as 3 kinds of extraction solvents, were used for the determination of accurate crude fat contents in wheat flour and 5 kinds of dry noodles. According to the results, crude fat contents were 0.09~1.37% in the wheat flour and 0.07~1.36% in the dry noodle samples. This variation resulted from the types of lipids in the wheat flour and various kinds of dry noodles. Nutrition facts labels showing crude fat contents in the 5 kinds of domestic dry noodle samples indicated levels of 0~1.5%. Lipid composition and content were determined in order to investigate these differences. The results indicated free lipid at 1.02% and bound lipids at 0.21% in the wheat flour, and free lipids at 0.95~1.01% and bound lipid at 0.21~0.25% in the wheat flour. Polar and nonpolar lipid contents were also measured in all samples. Neutral lipid, glycolipid and phospholipid contents in the free lipid were 58.5%, 33.6%, and 8.6% in the wheat flour, and 49.2~58.2%, 33.3~41.6%, and 8.5~9.3% in the dry noodle samples, respectively. For bound lipids, amounts were 16.7%, 33.5%, and 49.5% in the wheat flour, and 13.2~15.3%, 35.6~45.7%, and 41.6~49.4% in the dry noodle samples, respectively. Based on these results, an acid hydrolysis methods should be used to determine accurate crude fat contents in wheat flour and dry noodles.

Quality Characteristics of Waxy Corn Noodles Containing Defatted Soybean Powder (탈지대두박을 첨가한 찰옥수수 국수의 품질특성)

  • This study was conducted to investigate the quality characteristics of waxy corn noodles (WCN) made with different defatted soybean powder (DFP). The WCN was evaluated for their cooking properties (weight, water absorption, volume, and turbidity), color values, texture characteristics, and sensory characteristics. The weight, water absorption, and volume of cooked WCN increased according to DFP content, whereas they significantly decreased relative to those of control noodles. The turbidity of cooked WCN decreased with increasing DFP content. The L-value of cooked WCN decreased relative to that of control noodle, whereas a- and b-values increased. The hardness, adhesiveness, springiness, and cohesiveness of cooked WCN increased with increasing DFP content, whereas chewiness and gumminess decreased. The texture characteristics of cooked WCN decreased compared to control noodles except for adhesiveness. Sensory evaluation indicated that the appearance, flavor, and overall acceptance of cooked WCN were better than those of control noodles. Overall, DFP can be used as an effective ingredient to improve the quality and sensory characteristics of WCN.

Effect of Soybean Protein Isolate on the Properties of Noodle (분리대두단백질의 첨가가 제면적성에 미치는 영향)

  • This study was conducted to investigate the effect of soybean protein isolate (SPI) on the properties of noodle which was made of composite flour blended with SPI extracted at acidic (pH 2.0, 3.0), neutral (pH 7.0) and alkaline (pH 10.0, 12.0) conditions. L-value of dry and cooked-moodle which were made of composite flour was lower than that of 100% wheat flour, but a and b-value wete higher than those of 100% wheat flour, Optimal cooking time of dry-noodle which was made of composite flour was longer than that of 100% wheat flour, but the weight, volume and water absorption of the cooked-noodle were lower than those of cooked-noodle of 100% wheat flour. Breaking force of dry-noodle which was made of composite flour blended with $SPI-2,\;SPI_3,\;SPI_{7}$, and $SPI-{10}$ was lower than that of 100% wheat flour, but the breaking force of dry-noodle which was made of composite flour blended with $SPI-{12}$ at level of 5% and 10% was same as that of 100% wheat flour. Springiness and cohesiveness of the cooked-noodle which was made of composite flour were same as those of 100% wheat flour, but chewiness and hardness were higher than those of 100% wheat flour.

Prediction of Shelf-life and Quality Changes of Dried Noodle During Storage Period (저장기간에 따른 건면의 품질변화 및 유통기간의 예측)

  • Dried noodles (somyon) were stored for 7 months at 25, 35 and 45$^{\circ}C$, and changes of water activity, amylograms and color of dried noodle at 4 week intervals were comparatively analyzed. The water activities during storage period were 0.43∼0.56 at all storage temperature. The breakdown of dried noodle by RVA(rapid visco analyser) increased as storage period increased. Color difference ($\Delta$E) was chosen for quality index due to the highest correlation coefficient between sensory score and color difference. The shelf-life of dried noodle was estimated from change of color, which was linearly increased as the storage period increased. The activation energy and Q$\sub$10/ value for color difference were 75.21 kJ/mol and 2.76 at 25$^{\circ}C$, respectively. Shelf-life of dried noodle at 25 were 27.9 months, respectively.

Effect of high amylose corn starch/dextrin on quality of non-fried instant noodles (고아밀로스 옥수수전분/덱스트린의 첨가가 건면의 품질에 미치는 영향)

  • High amylose corn starch and dextrin (acid-treated at 30, 40 and 50℃ denominated as Dextrin30, Dextrin40 and Dextrin50) were added to non-fried instant noodles. X-ray diffraction pattern, water absorption, cooking loss, microstructure, and textural properties of non-fried instant noodles were investigated. The addition of high amylose corn starch/dextrin induced a slight peak intensity at 20o in the X-ray pattern indicating the insignificant formation of amylose-lipid complex. Non-fried instant noodles including high amylose corn starch/dextrin showed lower water absorption than the control. Dense microstructure in transverse section of noodles was observed in non-fried instant noodles including high amylose corn starch/dextrin except Dextrin50. Also, the addition of high amylose corn starch/dextrin induced low tensile strength, high firmness, and high stickiness. However, non-fried instant noodles containing Dextrin50 showed a loose microstructure and high cooking loss (3.98%), which might be associated with the textural properties such as the lowest tensile strength (0.17 N), lowest increase in firmness (46.77 N) and highest stickiness (18.43 N).

Preparation and Evaluation of Dried Noodles Using Barley-Wheat and Barley-Soybean Flours (보리-밀 및 보리-콩 복합분(複合粉)의 제면성(製麵性) 및 제품특성(製品特性)에 관(關)한 연구(硏究))

  • A barley (20-30%)-wheat (80-70%) flour gave generally acceptable noodle-making characteristics, in which naked barley flour showed somewhat better results than covered barley flour. And also for over 40% barley flour in the barley-wheat flour, the addition of xanthan gum improved the noodle-making characteristics. A naked barley-defatted soy flour could make dried noodles with only high NSI (Nitrogen Solubility Index) defatted soy flour, however this mixture was not considered to be feasible for noodle-making. In cooking characteristics of barley-wheat flour noodles, naked barley flour was more acceptable than covered barley flour and xanthan gum influenced the water absorption and volume expansion of noodles during cooking. The firmness, cohesiveness and gumminess in cooked noodles made of the barley-wheat flour increased and then decreased as the amounts of barley increased. The mixing of defatted soy flour (high NSI) to naked barley flour increased the firmness and gumminess of cooked noodles.

Quality of Dry Noodle Prepared with Wheat Flour and Immature Rubus coreanus (Bogbunja) Powder Composites (미숙복분자 분말을 첨가한 건면의 품질특성)

  • Dry noodles were prepared with wheat flour and immature Rubes coreanus (Bogbunja) powder, and the effects of added immature bogbunja powders on dough rheology and noodle quality were examined. Particle size distribution of immature bogbunja powder ranged from 0.04 to $500\;{\um}m$, which was different from that of wheat flour. The initial pasting temperature, peak and final viscosities as well as setback increased in amylograph with the increase of immature bogbunja powder. The water absorption and dough development time increased, but the dough stability decreased in farinograph with the increase of immature bogbunja powder. Decrease of L and b values and increase of a value were shown with the increase of immature bogbunja powder in wheat flour-immature bogbunja powder composite as well as dry noodles. The cooked weight and volume of noodles decreased, but the cooking loss increased with the addition of immature bogbunja powder. Most of texture parameters (hardness, cohesiveness, chewiness, gumminess and tension) of cooked noodles decreased with the addition of immature bogbunja powder. From the result of sensory evaluation, dry noodles containing 1 and 2% immature bogbunja powder were rated as higher quality dry noodles than the others.

Noodle- Making Properties of Domestic Wheats Cultivars (국내산 밀의 제면 적성에 관한 연구)

  • Seven domestic wheat cultivars, Suwon 261, Suwon 265, Eunpa, Kobun, Alchan, Olgru, and Kumgang, and a standard wheat, ASW(Australian Standard White Wheat), were compared in noodle-making properties. The ash contents of domestic wheats and flours were 0.1-0.3% higher than that of ASW. Therefore, domestic wheats required the control of ash contents during milling process. The protein contents which suggest the flour gluten content were 10.32, 11.3, and 9.57% in Suwon 261, Suwon 265, and Kumgang cultivars, respectively. Valorimeter values of Eunpa, Olgru, and Kumgang which indicate the dough formation time and stability were similar to that of ASW. Resistance rate of domestic wheats was lower than that of ASW. Maximum viscosity in Amylograph for Eunpa, Olgru, and Kumgang were in the range of 500-800BU, which were suitable for making noodles. Increase in weight and volume of Olgru noodle was negatively correlated with protein content. Turbidity was not positively correlated with weight and volume increase, but domestic cultivars except Suwon 265 and Eunpa showed a similar turbidity with ASW. The mechanical properties of wet and dry noodles were evaluated by TPA test before and after cooking. Springiness and cohesiveness of wet noodles increased by cooking, and the domestic cultivars showed higher values than ASW. Springiness and cohesiveness of dry noodle were not increased by cooking in any cultivars. Gumminess, chewiness and hardness of domestic wheat cultivars showed higher values than that of ASW. In the tensile test, wet noodles showed no difference between domestic cultivars and ASW. But dry noodles of domestic wheat cultivars showed higher values than ASW. In the color test for lightness, redness and yellowness, there were no differences between flour and dough of domestic wheat cultivars and ASW. In the sensory evaluation, Kumgang wheat cultivar was the most preferred among the wet and dry noodles of other domestic wheat cultivars and ASW. These results suggested Kumgang wheat cultivar to be a practical wheat variety for noodle-making.

홍국의 기능성과 홍국국수의 품질특성 및 저장성

  • 홍국 추출물로서 기능성을 조사하고 홍국 첨가한 국수를 제조하기 위하여 관능검사를 통하여 적정제조조건을 설정한 후 국수를 제조하여 품질특성을 조사하였다. 홍국을 물과 70%에탄올로 추출한 후 항산화작용과 아질산염소거능을 조사하였다. 홍국 추출물의 전자공여능은 물추출물 500ppm에서 46%, 1,000ppm에서 49%의 전자공여능을 나타내었으나 에탄올추출물은 500ppm에서 51%, 1,000ppm에서 56%로서 물추출물보다 높은 전자공여능을 나타내었다. 홍국 추출물의 아질산염소거능은 물추출 1,000ppm pH 1.2에서 32% 정도의 소거능을 나타내었으며 에탄올추출물 1,000ppm은 pH 1.2에서 37%의 아질산염소거능을 나타내었다. 홍국 추출물의 황산화능과 아질산염소거능 모두 에탄올추출물이 물추출물보다 우수하였다. 홍국을 0~4% 첨가한 홍국국수의 관능검사에서 건면에 대하여 색, 향, 맛, 뒷맛, 총괄평가 등을 7점법으로 관능검사를 실시한 결과, 색상은 홍국 4% 첨가한 것을 가장 선호하였으며(p<0.05) 향, 맛, 뒷맛은 각 첨가군간에 유의적 차이가 없었다. 건면에 대한 총괄평가는 3%와 4% 첨가한 국수를 가장 선호하였다(p<0.05). 한편 삶은 홍국국수에 대한 관능검사를 실시한 결과에서, 색상은 4% 첨가국수를 가장 선호하였으나(p<0.05) 향, 부드러움, 맛, 뒷맛은 홍국 첨가농도간에 유의적 차이를 나타내지 않았다. 촉촉한 정도는 4%에서 유의적으로 기호도가 높았으며(p<0.05) 총괄평가는 각 농도의 홍국 첨가군 간에 유의적 차이를 나타내지 않았다. 건면과 생면의 관능검사 결과를 종합해 볼 때, 홍국국수의 제조시에 홍국을 3~4% 첨가하는 것이 가장 바람직한 것으로 판단된다. 홍국국수(생면)를 5$^{\circ}C$에 4주간 저장했을 때의 균수는 저장 2주까지는 생균수가 증가하였으나 2주후부터 감소하는 경향을 나타내었다. 저장초기의 균수는 홍국을 첨가한 국수가 대조구에 비하여 총균수와 효모.곰팡이수가 많았으나 저장 1주일 후부터 3주까지 홍국 첨가구가 대조구에 비하여 균수가 적었으며 홍국 첨가농도에 비례하여 감소하였다.

Functional Properties of Brassica oleracea L- Extracts and Quality Characteristics of Korean Wheat Noodles With Brassica oleracea L. (적채 추출물의 기능성 및 적채를 첨가한 우리밀 국수의 품질특성)

  • Quality characteristics and functional properties of Korean wheat noodle with brassica oleracea L. powder were investigated to develop health promoting and high quality product. Brassica oleracea L. powder was extracted with water and $70\%$ ethanol, and the extracts were tested its electron donating ability (EDA) and nitrite scavenging ability (NSA). Quality characteristics of the noodle were evaluated by its color, flavor, moisture, softness, texture and taste evaluation. Microbiological Quality was also tested counting total viable cells. EDA was highest at 1000 ppm of both water extract ($64\%$ of EDA) and ethanol extract ($76\%$ of EDA). NSA was highest pH 1.2 of both water extract ($42\%$ of NSA) and ethanol extract ($46\%$ of NSA). In antimicrobial activity test, Korean wheat noodle with $3\%$ pine pollen powder displayed $0.5{\~}1$ log cycle of total viable cell counts lower than that of control at 5 days of storage. Sensory evaluation of Korean wheat dried and cooked noodles with $3\%$ Brassica oleracea L. powder showed significantly higher scores in overall.
