Inhibition of the Texture Softening of Shrimp Litopenaeus vannamei Pressured at High-temperature in a Retort Using a Mixed Solution of Calcium Chloride and Potato Starch (염화칼슘 및 감자전분의 혼합용액을 활용한 고온가압 처리 새우(Litopenaeus vannamei)살의 물성 연화 억제)

  • This study was conducted to determinean optimal soaking solution for inhibiting the texture softening of shrimp Litopenaeus vannamei pressured at high temperature (S-P/HT) in a retort, and also to optimize concentrations of 0.5% calcium chloride (CC) and 5.0% potato starch (PS) for preparation of a mixed solution (MS) and soaking time (ST) in the MS. On the basis of the results of expressible drip (4.6%), water holding capacity (95.1%), hardness (18.4 N/cm2) and sensory texture (7.2 score), the MS was found to be the optimal soaking solution for inhibition of texture softening under S-P/HT conditions, The concentrations of CC (X1, %), PS (X2, %), and ST (X3, min) were selected as independent variables, and hardness (Y1), springiness (Y2) and sensory texture (Y3) were selected as dependent variables. The optimal conditions of X1, X2, and X3 were 0.51%, 6.34%, and 364 min, respectively. Under the optimal conditions, the experimental values of Y1, Y2 and Y3 were 18.3±0.8 N/cm2, 4.4±0.3 mm and 7.7±0.2, respectively, which did not diffr significantly from the predicted values (P>0.05). In conclusion, the optimized models of X1, X2, and X3 for the preparation of S-P/HT using CC-PS were suitably fitted.

  • Typhula incarnata grew over a temperature range of -5 to $20^{\circ}C$ with maximum growth at 10 to $15^{\circ}C$. Sclerotial production for T. incarnata was greatest at the higher temperature. Maximum mycelial growth of this pathogen occurred from pH 5.4 to 6.2. When carbon sources were added to a basal salt medium (Czapek's dox agar) at 5 g carbon sources/l, inulin, soluble starch, galactose, glucose, mannose, manitol, sucrose, maltose, cellobirose, trehalose, raffinose, and dextrin supported growth better than other carbon sources did. Of the twenty-three nitrogen sources tested, glycine, serine, ammonium sulfate, asparagine, asparatic acid, and ${\beta}-alanine$ were the most favorable for mycelial growth of T. incarnata. Cystine and cysteine were poor nitrogen sources. Ammonium salt of nitrogen sources supported growth better than nitrate salt of nitrogen sources. Potato dextrose agar, oat meal agar, and V-8 juice agar were the most favorable for mycelial growth and sclerotial formation. Appropriate addition of pepton to PDA decreased mycelial dry weight, but sucrose supported good growth of T. incarnata. Percent viable sclerotia of T. incarnate buried in bentgrass soil decreased from 2 months after treatment remarkably. Trichoderma riride and bacteria were isolated from non-germinated sclerotia. Live orchard grass leaf pieces within the soil were colonized by T. incarnata better than sterile and unsterile dead leaf pieces at $0^{\circ}C$. Saprophytic ability of T. incarnate on sterile leaf sheath occurred better at $0^{\circ}C$ than at $10^{\circ}C$. Saprophytic microflora consisting of Cladosporium sp., Fusarium sp., Mucor sp., Pythium sp., and unidentified fungi were the competitors for the sterilized and unsterilized substrate, but their colonization was not find on live leaf sheath buried in the soil at $0^{\circ}C$. In the effect of fungicides to Typhula snow mold disease of creeping bentgrass, mixture of polyoxin and thiram was the most effective, followed by iprodione, mixture of iprodione and oxine copper, thiophanate-methyl, myclobutanil, and tolclofos-methyl.

Digestibility of Infant Food and its Nutritional Meaning (유아식품(乳兒食品)의 소화율(消化率)과 영양적(營養的) 의의(意義))

  • Digestibilities of flour of white wheat, barley, potato, sweet potato, are $5{\sim}11$ percent (3hrs.) in unripe starch state and in gelatinization, digestibilities are up to $20{\sim}30$ percent (3hrs.). And in two states, digestibilities of flour of potato and sweet potato are lower than barley and white wheat flour. If it is not gelatinization, digestibilities of biscuit and cracker are much lower than popped cake (29%). In gelatinization, digestibilities of biscuit and cracker $(19{\sim}29%,\;3hrs.)$ are similar to gelatinized flour of materials. Digestibilities of bread and castern is $21{\sim}32$ percent, it is similar to gelatinized flour of materials. And bread is higher than castera. Digestibility of on the marketing weaning food (II) (15%, 3hrs.) is much lower than food (I) (24.1%, 3hrs.) When the date of manufacturing passed $1{\sim}2$ months, digestibility of some cookies have a tendency to low. When mothers choice the infant weaning food, they consider metritional value (42%) and digestibility (27%). Also when they make weaning food at home, they generally use flour of rice (41%) and white wheat (23%). And they think, the rate of digestion is 49% in the rice flour and white wheat (23%). It was sort of cooked of rice (16%) and weaning food on the marketing(13%), which accepts to good digest. Also it was sort of biscuits (44%) which comparatively high choice snack food.

Purification and Characterization of $\beta$-Cyclodextrin Glucanotransferase Excreted by Bacillus firmus var. aikalophilus. (호알칼리성 Bacillus firmus가 생산하는 $\beta$-Cyclodextrin Glucanotransferase의 정제 및 효소반응 특성)

  • Cyclodextrin glucanotransferase (CGTase) was purified from the culture broth of the Bacillus firmus var. alkalophilus, using ultrafiltration, starch adsorption/desorption, ion-exchange chromatography on DEAE-cellulose and gel filtration on Sephacryl HR-100. The molecular weight of the purified enzyme was determined as 77,000 by SDS-PAGE. The optimum pH and temperature for the CD synthesis were 6.0 and 5$0^{\circ}C$, respectively. The activity of this enzyme was stably kept at the range of pH 6.0~9.5 and up to 5$0^{\circ}C$. However, in the presence of $Ca^{2+}$, the optimum temperature for CD synthesis was shifted 55~6$0^{\circ}C$ and this enzyme was stable up to 6$0^{\circ}C$ because of the stabilizing effect of $Ca^{2+}$. The purified CGTase produced CDs with high conversion yields of 45~51% from sweet potato starch, com starch and amylopectin as substrate, especially, and the product ratio of $\beta$-CD to ${\gamma}$-CD was obtained at range of from 5.8:1 to 8.4:1 according to the kind of substrate. The purified enzyme produced mainly $\beta$-CD without accumulation of $\alpha$-CD during enzyme reaction using various starches as the substrate, indicating that the purified enzyme is the typical $\beta$-CGTase. The purified CGTase produced 25 g/l of CDs from 5.0% (w/v) liquefied com starch and the conversion yield of CDs was 50%, and the content of $\beta$-CD was 84% of total CDs after 8 hours under the optimum reaction condition.ion.

Dietary status of young children in Korea based on the data of 2013~ 2015 Korea National Health and Nutrition Examination Survey (한국 영·유아의 식생활 현황 연구 : 2013~ 2015년도 국민건강영양조사를 이용하여)

  • Purpose: This study examined the dietary habits and nutritional status of young children in Korea. Methods: Data were collected from the 2013 ~ 2015 KNHNES (Korea National Health and Nutrition Examination Survey) by health behavior interviews and the 24-hour dietary recall method. This study included 1,214 (445 aged 1 ~ 2 years, 769 aged 3 ~ 5 years) young children aged 1 ~ 5 years. To analyze the dietary status of young children, the general characteristics of young children and their mothers, their dietary behaviors and health factors, and nutritional status and frequently consumed foods were analyzed. Results: The starting time of bovine milk and weaning were 14 ~ 15 months and 6.2 months, respectively. Eighty two percent of young children ate breakfast 5 ~ 7 times per week while only 2.3% of them skipped breakfast. The highest percentage (35.8%) of the frequency of eating-out was 5 ~ 6 times per week. The prevalence of asthma, atopy, and allergic rhinitis was significantly higher in young children 3 ~ 5 years old than in those 1 ~ 2 years old. The subjects with lower recommended energy intake were 44.1% and 57.4% of young children 1 ~ 2 years old and 3 ~ 5 years old, respectively. Most nutrients except calcium and potassium were taken enough. For the intakes of calcium and potassium, 51% and 64% of young children 1 ~ 2 years and 3 ~ 5 years old, respectively, were taking less than the recommended calcium intake, and 79.5% and 75.5% of young children 1 ~ 2 years and 3 ~ 5 years old, respectively, did not meet the recommended potassium intake. The frequently consumed foods of young children 1 ~ 2 years old were milk, white rice, apple, curd yogurt, and egg, and those of 3 ~ 5 years old children were milk, white rice, apple, egg, and mandarin. Conclusion: The results of this study can be used to provide basic data for the nutritional education of mothers and teachers and assist in the development of sustainable dietary programs for young children.

Estimated macronutrients and antioxidant vitamins intake according to Hansik consumption rate among Korean adults: Based on the Korea National Health and Nutrition Examination Survey 2007~2012 (우리나라 성인의 한식 섭취율에 따른 다량영양소 및 항산화 비타민 섭취현황 : 2007~2012년 국민건강영양조사 자료를 이용하여)

  • Purpose: The purpose of this study was to estimate intakes of macronutrients and antioxidant vitamins according to the Hansik consumption rate among Korean adults. Methods: Using data from the 2007~2012 Korea National Health and Nutrition Examination Survey, a total of 33,069 subjects aged over 19 years old were included in this study. We estimated individual daily Hansik consumption rates and intakes of macronutrients and antioxidant vitamins, including vitamin A and its subgroup such as retinol, ${\alpha}$-carotene, ${\beta}$-carotene, and ${\beta}$-cryptoxanthin, vitamin C, and vitamin E, by linking food consumption data with the nutrient and antioxidant vitamin database of commonly consumed foods. Results: Around 75% of subjects consumed Hansik in over 75% of their daily total consumed food. The most frequently consumed Hansik was cabbage kimchi (1.57 times/day), followed by multigrain rice (0.86 times/day) and white rice (0.80 times/day). The household income level and education level was inversely associated with the Hansik consumption rate. There was a positive relationship between Hansik consumption rate and vitamin A, ${\beta}$-carotene, ${\beta}$-cryptoxanthin, and vitamin C intakes. On the other hand, Hansik consumption rate was inversely associated with energy and fat intake. Conclusion: The results of this study suggest that Hansik consumption could provide more antioxidant vitamins and less energy and fat. Thus, further research will be needed to analyze the association between Hansik and health effects.

  • A feeding experiment was conducted using juvenile Korean rockfish (Sebastes schlegeli) to evaluate supplemental vitamin premix in a test diet containing fish meal as protein source for nutritional study. Triplicate groups of the 50 fish averaging 4.25 g were fed one of four isoproteic ($47\%$) and isolipidic ($9\%$) experimental diets to satiation twice a day for 10 weeks. Weight gain, feed efficiency and protein retention in fish fed the diet with vitamin premix-1 were significantly higher than those in fish fed the other diets (P<0.05). Moisture, protein and lipid contents of muscle and whole body were not affected by different dietary vitamin premix (P>0,05). These results indicate that premix-1 can be used to adequate supplemental vitamin premix in test diet containing fish meal as protein source for juvenile Korean rockfish.

  • Megagametophyte and embryo tissue of Pinus densiflora were subjected to study the inheritance of glutamate-oxalate transaminase(GOT) and leucine aminopeptidase(LAP), and linkage relationship among isozyme loci coding both enzymes by starch gel zone-electrophoresis. Four zones of activity were observed for GOT. No variation was found in the fastest migrating zone (GOT-A). Electrophoretic phenotypes of the other two zones (GOT-B and GOT-C) showed 1:1 segregation ration, suggesting that each zone is controlled by a single locus. Foru and three alleles were identified at both loci respectively. The isozyme pattern of the fourth zone(GOT-D), migrated cathodally, coincided precisely with that of GOT-C. Whether the two zones are controlled by the same locus or by two tightly linked loci remained unknown. In all three variant GOT zones, heterozygoes embryos produced triple band patterns, indicating that GOT isozyme in Pinus densiflora is a dimer. Two zones of activity stained for LAP were found. The segregation of the two zones (LAP-A and LAP-B) suggested that tow loci control each of both isozymes. Two and three alleles were identified at both loci. GOT-B and LAP-B were found to be tightly linked, showing an average recombination frequency of 12.5 percent. Slight deviation from independent assortment was observed between GOT-B and GOT-C, with recombination frequency of 41 percent.

A Study on nutritional status and dietary quality according to carbonated drink consumption in male adolescents: Based on 2007~2009 Korean National Health and Nutrition Examination Survey (남자 청소년의 탄산음료 섭취 빈도에 따른 영양소 섭취상태 및 식사의 질 평가: 2007~2009 국민건강영양조사 자료를 이용하여)

  • Purpose: This study was conducted to evaluate nutrition intake and diet quality according to carbonated drink consumption in male adolescents (middle-school students = 480, high-school students = 417). Methods: We analyzed data from the combined 2007~2009 KNHANES (Korean National Health and Nutrition Examination Survey). Subjects were divided into two groups, the LCDI (low carbonated drink intake (< 1 time/week), n = 362) group and the HCDI (high carbonated drink intake (${\geq}1$ time/week), n = 535) group, according to carbonated beverage consumption. Nutrient and food group intake, NAR (nutrient adequacy ratio), and MAR (mean adequacy ratio) were analyzed using data from the 24-recall method. Results: Intake of plant protein, vitamin C, plant calcium, phosphorous, and potassium was significantly lower in the HCDI group, compared with the LCDI group. Percent of RNI (recommended nutrient intake) of vitamin C and phosphorous was significantly lower in the HCDI group, compared with the LCDI group. Percentage of subjects who consumed under EAR (estimated average requirement) of protein and vitamin C was significantly higher in the HCDI group, compared with the LCDI group. The NAR of phosphorous was significantly lower in the HCDI group, compared with the LCDI group. Food intakes from potato and starches, pulses and vegetables were significantly lower in the HCDI group, compared with the LCDI group. Conclusion: Consumption of carbonated drinks decreased the diet quality, including calcium, potassium, protein, and vitamin C. Therefore, nutrition education relating to consumption of carbonated drinks is required for male adolescents in order to maintain healthy dietary habits.

A Study on Intake of Adult Men and Women according to Intake of Improving Agents (성인 남녀의 건강 증진제 섭취에 따른 영양 섭취 상태)

  • This study was carried out to examine information regarding nutritional intake according to intake of health improving agents. For this study, 593 adults were interviewed face-to-face. The average ages of the participants were 58.8 years old in males and 56.1 years old in females. The percentage of individuals taking agents was significantly higher (p<0.05) among the females (22.1%) than the males (14.1%). Men showed a preference for taking animal protein bases restorative food and health supplements, while women preferred health supplements and nutritional supplements as improving agents. However, there were no significant differences between the two groups. The total daily food intake was also not significantly different according to intake of improving agents in the male and female groups. The male subjects who took improving agents showed significantly lower intake of potato and starches, pulses, fungi and mushrooms, seaweeds, oils and fat, as well as seasoning than those of non-users. Female subjects who took these agents also had a significantly lower intake of pulses, nuts and seeds than nonusers. No difference in the daily energy intake was reported in male and female groups whether the individuals were taking improving agents in male and female groups or not. However, in male subjects who took improving agents, there was a significantly lower intake of protein, dietary fiber, carotene, vitamin $B_1$, folate, vitamin C, vitamin E, plant calcium, potassium and plant iron than the male non-users. This study suggests that practical education be emphasized for proper nutrition intake thorough nutritional management according to improving agents.
